Beef Strip Loin with Brandied Tarragon-Mustard SauceYield: 12 portions

3 garlic cloves, minced1 tablespoon ARREZZIO olive oil2 teaspoons salt2 teaspoons ground black pepper1 boneless beef strip loin (about 5 pounds)2 large shallots, fi nely chopped (about ½ cup)¾ cup brandy14 ounces less-sodium beef broth½ cup WHLFARM heavy cream1½ tablespoons cold water1½ tablespoons SYS CLS cornstarche cup country Dijon or coarse ground mustard1½ tablespoons chopped fresh tarragon leaves

1. Preheat oven to 450°. In small bowl, combine garlic, oil, salt and pepper. In large shallow roasting pan, place roast fat side up. Rub all sides of beef with garlic mixture. Roast beef 30 minutes. Reduce temperature to 350° and roast 30 to 35 minutes longer

or until internal temperature reaches 130° for medium-rare. Transfer roast to cutting board and loosely cover with foil. Letstand 20 minutes before slicing.

2. Meanwhile, remove and discard excess fat from roasting pan. Add shallots to drippings in roasting pan and cook over medium-low heat 2 minutes, stirring frequently. Add brandy and heat to boiling. Cook 3 to 4 minutes or until most liquid has evaporated, stirring to loosen browned bits from bottom of pan. Add broth and cream, and heat to boiling. Reduce heat to medium and simmer 8 minutes. In small bowl, combine water and cornstarch. Add cornstarch mixture to simmering liquid; heat to boiling and remove from heat. Whisk in mustard and tarragon. Slice beef across the grain and serve with sauce.

Cranberry- Orange Walnut Crunch PieYield: 2 (9-inch) pies or 16 portions

24 ounces SYS CLS frozen cranberries (6 cups)4 cups SYS IMP granulated sugar3 cups fresh orange juice4 teaspoons orange zest½ teaspoon salte cup cold watere cup SYS CLS cornstarch2 cups SYS CLS chopped walnuts1 cup unbleached all-purpose fl our½ cup packed light brown sugar¼ pound cold WHLFARM unsalted butter,

cut into small pieces2 9 inch frozen pie crusts

1. In large saucepot, heat cranberries, granulated sugar, orange juice, orange zest and salt to boiling over medium-high heat. Boil 8 to 10 minutes or until most cranberries burst and mixture thickens slightly, stirring occasionally. In small bowl, whisk together water and cornstarch. Gradually stir cornstarch mixture into cranberry

mixture; heat to boiling. Boil 1 minute or until mixture thickens, stirring constantly. Remove saucepot from heat.

2. In medium bowl, combine nuts, fl our and brown sugar. With fi ngertips, work in butter until pea-sized crumbs form.

3. Divide cranberry fi lling into pie crusts; sprinkle topping evenlyover fi lling. Bake pies on foil-lined sheet tray on lowest oven rack at 375° for 35 to 40 minutes or until topping is golden brown. Cool pies on wire rack 1 hour, then cover and refrigerate at least4 hours or up to overnight.

TOMATO SOUP withBROILED PARMESAN CHEESE

Yield: 1 servingTomato Soup14 oz Chopped Tomatoes¾ cup Extra Virgin Olive OilKosher Salt, to tasteFresh Ground Black Pepper,

to taste1 stalk Celery, diced1 Carrot, diced1 small Sweet Onion, diced 2 cloves Fresh Garlic1 cup Chicken Stock1 Bay Leaf2 tablespoons Unsalted Butter¼ cup Fresh Basil½ cup Heavy CreamParmesan Crouton1 loaf Ciabatta bread,

cut into round slices 1 cup Parmesan Cheese

1. Preheat oven to 450°F.

2. Strain the chopped tomatoes, reserving the juices and spread onto a baking sheet, seasoning with salt and pepper to taste. Drizzle with ¼ cup of the oil and roast until caramelized, about 15 minutes.

3. Meanwhile, in a saucepan over medium heat add celery, carrot, onion and garlic. Cook until softened and then add the roasted tomatoes, reserved juices, chicken broth, bay leaf and butter. Simmer for 15-20 minutes until vegetables are very tender.

4. Add basil and cream, then purée with a handheld immersion blender until smooth.

5. Place appropriate amount of soup in a soup cup, leaving ¼" of space for the crouton.

6. Float the crouton on top of the soup and top with an even level of Parmesan Cheese.

7. Place under broiler until golden brown and crisp.

8. Serve immediately.

Holiday Brie in Puff Pastry Prep: 15 minutes plus freezing and standingBake: 25 minutes • Serves: 10

e cup shelled SYS CLS pecans3 cup packed dark brown sugar3 tablespoons heavy cream All-purpose fl our for dusting1 sheet frozen puff pastry, thawed as label directs1 wheel (15 to 16 ounces) Brie cheese1 large egg yolk

1. In large skillet, toast pecans over medium heat 5 to 6 minutes or until fragrant and lightly browned, stirring occasionally; transfer to plate to cool. In medium bowl, toss brown sugar, 1 tablespoon cream and pecans.

2. Line rimmed baking pan with nonstick foil or parchment paper. Lightly fl our work surface. Unfold

puff pastry sheet on fl oured surface, and with rolling pin, roll out pastry into 12-inch square. Spoon pecan mixture onto center of pastry sheet and spread mixture to about a 5-inch circle. Place cheese wheel on top of pecan mixture; fold pastry up and over cheese to enclose cheese wheel. Place cheese, seam side down, on prepared rimmed baking pan.

3. In small bowl, whisk egg yolk and remaining 2 tablespoons cream. With small brush, evenly brush pastry with egg mixture. Freeze 30 minutes.

4. Preheat oven to 400°. Bake brie 25 to 30 minutes or until pastry is golden brown. Let stand 20 minutes before serving. Serve with crackers, apple and pear slices, or veggies.
