cINQO DE MAYOIn 2015, Mexican food was finally given the respect it deserves and it was even said that it had managed to knock Chinese off the top spot as the nations favourite cuisine – by July around 1 in 3 had bought or tried Mexican in the previous year.
It’s no surprise then that the number of Mexican restaurants soared by up to 71% and a study conducted on behalf of Premier Foods found that 38% of consumers want to see more Mexican food on menus. With US Tex-Mex giant Taco Bell creeping in to the UK, it is clear the market is going in one direction. It may be April but cast your mind forward to the beginning of May as the 5th will bring about a real Mexican fiesta which offers the perfect excuse to tap in to the Mexican market: Cinqo de Mayo.
Often thought of as being Mexico’s Independence Day, Cinqo de Mayo actually commemorates an unlikely Mexican victory over the French forces of Napoleon III at the Battle of Puebla in 1862.
It’s time to get the margaritas out and enjoy some tasty Mexican dishes. Why not try this recipe from none other than Sir Paul (or is that Pablo?) McCartney?
Spicy Refried Bean Tacos with Mexican Corn Bread‘My Signature Dish’ by Sir Paul McCartney from Stir It Up March 2010
Portions: 4-6
Ingredients230g canned refried beans2 medium tomatoes, chopped small1 tbsp olive oil1 medium onion, chopped1-2 tsp hot chilli sauce or to taste4 taco shells, warmed as per instructions on the packGrated cheddar cheese (optional)For the garnish;Sliced avocadoSour cream optionalShredded lettuceSqueeze of lime or lemon juiceFor the mexican corn bread;1 free-range egg2 tbsp olive oil1-2 tbsp chopped fresh hot chilli pepper230g tin sweetcorn, drained or 2-3 fresh earns of corn, kernals cut off110g créme fraiche or sour cream130g yellow cornmeal1 tsp sea salt1 tsp baking powder460g grated cheese
Instructions1 In a large frying pan gently fry the onions in 2 tbsp olive oil for 4-5 minutes, stirring frequently.
2 Stir in the refried beans. Add the chopped tomato. Fry til heated through. Season to taste with chilli sauce and a little salt if desired.
3 Half-fill the warm taco shells with the mixture and top with shredded cheese and shredded lettuce (you can put the lettuce at the bottom of the shell if you prefer). Garnish with a slice or two of avocado and a dollop of sour cream.
4 For the mexican corn bread: beat the egg with the oil until blended. Add the chilli pepper. Stir in the corn, créme fraiche, cornmeal, salt, baking powder and all but 110g of the cheese. Pour into a 20cm square pan. Sprinkle the remaining cheese over the top. Bake in a pre-heated oven (180°)for 40 minutes. Let cool slightly in the pan, then un-mould and serve warm.
