ORIGINSWhether sliced on bread, shredded into a salad or
molten in hot dishes, cheese is a prized delicacy
enjoyed throughout the world for its nutritional
qualities. Its origins, however, remain unknown.
According to legend, the first cheese was created
accidentally. An Arab merchant, riding through
mountainous terrain under a blazing sun, drunk
from a pouch of goat’s milk to quench his thirst, only
to be greatly surprised by what he found: the milk
had been solidified. The transformation had been
caused not only by the heat from the sun but also by
the horse’s gallop and the material of the container,
a pouch made from sheep’s stomach which still
held traces of rennet, a milk coagulating substance.
Throughout the ages, the art of cheese-making
underwent profound changes, especially after the
discovery of pasteurization, but the manufacturing
process still follows the same principle as in the
legend: it is the result of curdling the milk and
separating the whey.

Tété came into existence in 1960, right in the middle
of the saloia region (Portugal’s center coastal area),
in a small factory owned by the Amaro family. The
Amaro family has experienced three generations of
profound growth, always adapting to the demands
of both market and consumer.
At first production was small and methods
artisanal. The process of industrialization began in
1985, a shift which allowed Tété to diversify its
range of fresh cheeses according to different
weights and to begin production of cottage cheese.
Industrialization, however, never made Tété lose
sight of the traditional aspects of production,
evident in the quality of its products. This approach
makes Tété it a significant influence in the cheese
industry and a benchmark among its peers, with
strong representation in the sector.
In 1998, in order to ensure a stricter, more
continuous monitoring of the production process,
Tété inaugurated new, modern facilities equipped
with their own laboratory. All milk comes from dairy
farms carefully selected for their health and
hygiene processes, and is transported directly to
the factory on a daily basis. On arrival, milk quality is
tested according to the highest standards of
hygiene and freshness.
A keen concern with the protection and safety of its
customers and consumers dictated the company’s
efforts be directed towards outlining a food safety
policy, applied through a control system for the
production process – HACCP – which puts the
emphasis on better organization regarding food
safety issues, assuring consumers that its products
are safe and healthy.
Tété is also a socially conscious company. In order
to lessen the environmental impact of dairy
production, Tété made plans for building an
industrial water treatment facility and set aside a
parcel of land for trees and landscaped spaces.
The wisdom of ages is combined with cutting-edge
technology. Making use of modern equipment and
hygienic facilities; of production process control; of
rigorous selection of raw materials, ingredients and
packaging; of lab testing and attention to post-sale
customer service, the end result is without a doubt
a product of the brand Tété.
In 2013, the company competed for the first time in
the “Best Cheese of the Year” event put together by
ANIL (National Dairy Industrials Association), with
four product lines. Three of those won honorable
mentions: Fresh Cow’s Milk Cheese, Fresh Goat’s
Milk Cheese and Cow’s Milk Cottage Cheese.
In that same year, Tété launched its new line of
Traditional Butters and in doing so kick-started a
new period of growth, as well as a new concept of
product communication and packaging.

Tété’s Matured Cow’s Milk Cheese is a traditional product. Production methods combine traditional
wisdom with modern technology and strict hygiene control. Tété uses milk from select dairy farms to
present a cheese which, after the maturing process, takes on the characteristics of the traditional cheeses
of the saloia region.
Tété’s Matured Cow’s Milk Cheese is yellowish in color and firm in texture. However, as a result of traditional
production methods, its consistency may present variations, whether in texture or in flavor. Nevertheless,
quality level is certain to remain the same in all products.

CowThe bull or ox (Bos Taurus), along with the female of
the species, the cow, and their offspring, the calf,
make up bovine cattle, a denomination which
broadly encompasses the ruminant artiodactyla
mammals of non-ramified, hollow, perennial,
paired horn of the genus Bos in which the species
domesticated by man are included.
Domesticated cattle in Europe are descended from
the aurochs. The domestication of cattle began
over 5000 years ago. Domesticated bovines were
used as load beasts (like donkeys and horses), as
well as for milk, meat and leather production.
SheepThe male sheep (Ovis Aries) is called a ram, the
female sheep is called a ewe and their offspring is
called a lamb. The sheep is a ruminant bovid
mammal of the sub-genus Caprinae which also
includes the goat.
The sheep is a hugely important animal in
economic terms, as a source of meat, dairy, wool
and leather. Raised in captivity in all continents, the
sheep was domesticated in the Bronze Age from
the mouflon (Ovis Orientalis), which in the present
day lives in the mountains of Turkey and Iraq.
GoatGoats belong to the Capra Aegagrus genus. Young
goats are called kids. Their gestation period is 150
days. The medium life expectancy of a goat is
around twenty years. The vocalization goats make
is called “bleating”.
Goats provide us with wool, leather, meat and milk.
Many people consume more goat-derived products
daily than those of other animals. Goats are
excellent explorers and can forage their own food.
