Our cover shot this month is well known to most who live in the Hunter Valley and we daresay those from all over the world who have visited the world-renowned Hunter Valley Gardens. Humpty Dumpty s ll sits (albeit precariously) in the Storybook Garden where it has delighted children for 10 years and has possibly become an iconic character in the Hunter Valley!

This month we recognise and celebrate the amazing contribu on that Hunter Valley Gardens has made to the area for the past 10 years and discover some li le known facts about the construc on of the Gardens all those years ago. Plus, we talk to Sean O’Brien who has been the Hor culture Manager at the Gardens for almost as long as they have been open to the public.

This special “Gardens” issue also looks at special events being held at the Gardens throughout July.

Snow Time in the Gardens sees the Gardens carpeted in snow and transformed into a unique winter wonderland—just in me for the school holidays. Throw a snowball, build a snowman, ice-skate, toboggan and check out some amazing ice sculptures.

The rst weekend in July sees the Annual Chocolate Fes val come to

town. An in ux of celebrity chefs and plenty to taste and

learn make this weekend one of the highlights of the year.

In July we welcome a new annual event and a

sister event for the Gum Ball with “PigSty in July”

coming to “Dashville” Lower Belford. A great outdoor event for those who love local music, warm res and of course...good wine!

True Aussie tradi on see’s a number of Christmas in July events throughout the Hunter Valley. Notably Esca Bimbadgen have dedicated the en re month of July to feas ng, and a special night of fes vity at Ridgeview towards the end of the month. Keep an eye out for the Blackboard FLASH! as other events are announced.

Our wine variety of the month is Semillon, Sauvignon Blanc—more fondly referred to as SSB and of course we go behind the scenes at our wineries and restaurants to nd out all the news (and a li le bit of gossip too!)

WHAT’S ON SHOW? Cessnock Regional Art Gallery

STEEL SEAMS … Running un l 14th July, Steel Seams is a collabora ve show between two of the Lower Hunter’s most exci ng and progressive emerging sculptors and installa on ar sts, Joanna O’Toole and Maggie Hensel-Brown.

Joanna and Maggie are both recent graduates from the pres gious Newcastle Art School where they excelled in three dimensional works. They are both represented in major collec ons and have won numerous emerging ar st prizes and scholarships in their nal years of study.

Joanna has exhibited in the Sydney Biennale while Maggie has already been granted the honour of a solo exhibi on at the Maitland Regional Art Gallery, only a few years a er being a nalist in the CRAG Down to Earth Young Ar st Award. Now they are embarking on the next stage of their ar s c careers into full professionalism.

This exhibi on is at the leading edge of contemporary sculptural prac ce, and features pain ngs and small works in addi on to a major installa on within the gallery.

DHEO-KA … From 18th July un l 11th August, as part of NAIDOC Week celebra ons, the Cessnock Regional Art Gallery will present Dheo-ka, a stunning exhibi on from Aboriginal ar sts across the Hunter Valley and beyond.

Works will include tradi onal narra ves of the seasons, loca ons, food chains, customs and ceremonies along with astrological and spiritual themes of the Dream me. It will combine this with works examining 21st century social and racial issues.

The term Dheo-ka can mean mee ng place or coming together, and the exhibi on’s curator, highly respected Wonarrua elder, ar st and teacher Les Elvin, has taken the opportunity to bring together an amazing group of work from a diverse and talented group of Indigenous ar sts.

Steel Seams runs 13th June – 14th July, Dheo-Ka runs 18th July – 11th August. Entry to both exhibi ons is free.

Look out for the Hand Made in the Hunter Markets—everything at these popular markets is hand-made by the person selling it—making it the most unique markets held in wine country. They will be held on July 6th, 13th & 27th at Kevin Sobels Wines. Another not to miss is Sacred Tree Markets held at the Old St Brigids School Grounds on the corner of Station Street & the New England Hwy at Branxton on Sunday 21st July.

THE PERFECT INDULGENCE For Chocoholics!

If you love chocolate, then why not have a go at making your own? Hunter Valley Chocolate Company are holding great Chocolate Workshops on the 3rd Saturday of every month (this month’s will be July 20th). The hands-on chocolate making workshop is perfect for the inquisi ve and crea ve chocoholic who wants to nd out how real chocolate is made and experience the pleasure of making their own chocolate. You’ll leave the workshop with your own handmade chocolates and the skills to go home and make even more. The workshop is the perfect place to celebrate any occasion—corporate bonding classes, girls day out, team bonding, birthdays—anything!

Your workshop will begin with a glass of wine (this will help with the understanding of chocolate) then a brief discussion about the history of chocolate and how chocolate is made. Learn about why women need chocolate and nd out if chocolate truly is an aphrodisiac.

A endees will then choose a mould and get stuck into making their own delectable chocolates— ll the mould with one avour or choose several and whip up your own ‘box of chocolates’!

A er the chocolates have been created you’ll need to watch them set—while the me away by hand dipping strawberries, marshmallow, Turkish delight and nuts into chocolate or move onto making chocolate freckles. The best bit—you get to take it all home with you (provided you haven't eaten it before reaching the car!) . Classes run from 1.30PM and last for 2-2.5 hours. Have a snowball!The Hunter Valley Gardens has been transformed into a unique Winter wonderland as ‘Snow Time in the Garden’ gets underway. The new and improved event will run un l July 14th with more than 12 incredible ac vi es to experience that are guaranteed to excite children and adults of all ages – there’s no me like Snow Time!

The frosty two week event is a great opportunity to show o those ice ska ng skills (or lack of!) and indulge in some holiday fun! There will be tobogganing, a snow ball challenge, live ice sculp ng, Husky dog racing demonstra ons and so much more. There is literally something for everyone!

Children and adults can enjoy zooming around to lights and music on the new Real Ice Ska ng Rink which will be undercover (roof only) in the marquee. Ska ng sessions will run for 20 minutes for up to 200 skaters star ng from 10.00am every day. Ice skates, helmets and some Bobby Seals (ska ng frame) will be provided. (Children under the age of 10 years must wear a helmet.)

A highlight of this year’s event and new to Snow Time is the talented interna onal ice sculptor Kenji Ogawa. Kenji specialises in large scale snow and ice sculptures. Expect incredible demonstra ons while he uses a chainsaw to sculpt penguins, bears, a moose and a kangaroo right in front of your eyes!

On selected days marvel at the stunning husky dogs in full racing ac on. The husky dog trainers will show the whole family exactly how these wild animals run in teams – just like in Alaska! The trainers will also demonstrate harnessing, direc onal training (using voice commands) and also teach you about the origins of racing in Australia. A must see!

Kids can get crea ve and have the opportunity to play in the snow making their very own snowman or snow angel. All the equipment required for the snowman including hats, noses and eyes will be provided.

If you have a bit more energy to burn, get your adrenalin pumping and rocket down on the brand new 25 metre toboggan track or show o your skills on the awesome mechanical Snow Board and Alpine Racers. The longer you stay on the mechanical snow board, the faster it goes!

Of course—there’s plenty of other ac on including the jumping castle, face pain ng, origami workshops, treasure hunts and more. All ac vi es are included in the cost of your entry to the Gardens—so grab your mi ens and get out there!

A stroll through Hunter Valley Gardens is a wonderful way to relax and revive your senses and has become quintessen al to the visitors overall experience of the Hunter Valley – a visit to the Hunter simply isn’t complete without a spot of wine tas ng and a trip to Hunter Valley Gardens. So entwined is “the Gardens” in the tapestry of the area, that we o en forget that just over 10 years ago it was ca le grazing land and home to the area’s oldest Shiraz vineyard (s ll present today). As we prepare to o cially celebrate Hunter Valley Gardens 10 year birthday*, it’s ng that we take me out to marvel at just what has been achieved by one visionary and his team of dedicated and passionate professionals, in just 10 short years. Founder and mastermind of Hunter Valley Garden, Bill Roche AOM says that it is the experiences of the past which in uence our achievements in the future. “It’s amazing that the things that happen to you in the early part of your life in uence you , unques onably, for the rest of your life”. “My father used to have a garden, and taught me the value of gardening and nature. It’s certainly not the size or the nature of what we have here, but nevertheless it implanted that thought of gardening being an important part of everybody’s life— but it was something beyond the actual garden – it was the feeling of it.” he said. Whilst it may have been an extreme projec on of a childhood experience, it was this inspira on based in the feelings of being part of the natural environment that embodies the Hunter Valley Gardens experience. “We started o with the thought of, how many di erent gardens did we want. We wanted a Japanese Garden, we wanted a Kiddies Garden, we needed a Formal Garden, we needed an Indian Garden, we needed this lovely water movement right through the property. We wanted a lovely waterfall, which is a major a rac on here, and before we knew it we had 30 or 40 gardens here and of course, rather than the 25 or 30 acres that we might have thought we would have, it grew to 50, 55 and then to the 60 acres that we now have”. The construc on of the gardens took a whopping 4 to 5 years and the input in terms of blood, sweat and tears was extraordinary. Add to this the massive in ux of nature…600,000 cubic metres of soil was moved, 300,000 cubic metres of topsoil and 1,000 mature trees (many all craned in). 100,000 shrubs and over 1 million ground covers were planted – and that’s just above the ground! Over 100 km of irriga on lies beneath the surface, with almost 8km of walking paths comple ng the picture.

Of course, the Gardens themselves are only part of the completed works incorpora ng Hunter Valley Gardens and establishing it as the NSW Premier Tourist A rac on for 3 years running, eventually placing it in the NSW Tourism Hall of Fame. The Shopping Village surrounding the Gardens is home to 23 bou que and specialty shops, restaurants and cafes, a children’s playground, extensive picnic facili es and there’s even a pu pu and aqua golf facility to keep the kids, big and small amused – making it a fun day out for the whole family. The Shopping Village has a welcoming ambience and village charm that makes every visitor feel like a local. In the past few years, the concept of bringing annual agship events to Hunter Valley Gardens has seen an amazing increase in the number of visitors ocking to the Hunter Valley and establishing the area as more than just a wine des na on. A few of the diverse range of events featured amongst the pages of this issue, namely the Chocolate Fes val, Winter Rose Pruning and Hunter Valley Running Fes val are all July events. Of course the newly established annual “Snow Time in the Garden” will run for the rst half of the month a rac ng families from all over NSW wan ng to enjoy the experience of playing in snow, ice ska ng and tobogganing both during the day and also at night (read more on page 5). The Spring Fes val of Flowers, October Rose Spectacular, Easter Egg Hunts, Dinosaurs and of course the annual Christmas Lights Spectacular top o an events calendar that provides the visitor with a unique and exci ng experience each and every me they visit. The recent introduc on of annual passes has meant that families can enjoy the gardens all year round. Hundreds of thousands of people wander the paths of Hunter Valley Gardens each and every year, deligh ng millions of visitors since they opened in 2003. “Ten years. It’s astounding how quickly that has gone. It’s quite incredible how quickly it really does happen when they (the Gardens) are cared and tendered properly. Mr Roche said. “We invite visitors from anywhere in the world, and everywhere in the world. All the words that I can express can’t tell you what a walk through here will do. It’s quite unique and outstanding”. We couldn’t agree more. Congratula ons to the Roche family and your wonderful team on a job well done...and Happy 10th Birthday Hunter Valley Gardens! Organisers of The Gum Ball have announced a brand new winter event, Pigsty In July, to be held at the same venue as The Gum Ball, 'Dashville', Lower Belford on Saturday the 20th July.

Coinciding with the Singleton Arts Fes val grand nale, the one-day a air is a second-hand formal themed event, focusing on the indulgence of warm winter food and beverages.

In line with The Gum Ball's reputa on for providing quality live music, Pigsty In July will feature quality acts that include The Snowdroppers, Eagle and The Worm and star compe tor on Channel 9's The Voice, Simon Meli with his band The Widowbirds.

Other acts include James Brown tribute band Pow Wow, two piece blues-rock act Jackson Firebird, local jump-jive band Fish Fry, 11-piece

Sean O’Brien - Hor culture Manager at Hunter Valley Gardens must have the best and most sa sfying job in the world ! A er all his ''o ce'' is a 650 acre property of which 60 acres is made up of exquisite display gardens. While the role of Hor culture Manager at one of the largest privately owned gardens in the world, receiving in excess of 200,000 visitors a year, does come with some fantas c views and the sa sfac on of working out in the open as one with nature -the stresses that come with the job are very much like any other management posi on. Sean studied hor culture at Hawksebury Agricultural College and Ryde Tafe before accep ng a full me role at Rast Brothers Nursery in 1991. A er 5 years Sean was promoted to the manager posi on responsible for 13 sta , the daily opera on of the nursery and was instrumental to the nursery winning many awards and being recognised as one of the best nurseries in Australia. Joining Hunter Valley Gardens as Hor culture Manager in 2004 provided Sean with the opportunity for further development within both the nursery and garden industry as well as the opportunity to experience the tourism industry. For Sean, being Hor culture Manager means being responsible for the management of all hor cultural aspects involved on the 650 acre property with the key focus being on the 60 acre Interna onal Display Gardens. These Gardens consist of 10 ''garden rooms'' and include the French "parterre" Border Garden, Sunken Garden, Oriental Garden, Chinese Moongate, Indian Tea and the Rose Garden - to name a few. It also means managing up to 40 hor cultural sta , 8 maintenance sta and 12 visitor services sta . As part of his role, Sean is also responsible for the implementa on of appren ceship schemes which involves employing appren ces on a regular basis, conduc ng site inspec ons and private tours with students, visi ng dignitaries and journalists. Of course there is also the overseeing of plant care and maintenance, large scale turf care, irriga on systems, pest and disease iden ca on, pest management, chemical usage and safe handling prac ses and the produc on of grape, olive, fruit and nuts - all of which are used in the 3 kitchens and restaurants on the property.

Did I men on the plan ng? The display gardens alone require the plan ng of over 250,000 annuals, 35,000 roses, 6,000 mature trees, over 500,000 shrubs and 1,000,000 ground covers.

And then December comes along and with it the Hunter Valley Gardens Christmas Lights Spectacular - involving the laying out and display of more than 1000,000 Christmas lights around the gardens. Ok - I think I will keep my desk job. Thanks Sean - keep up the good work.

Hunter Valley Semillon is a unique Australian white wine which keeps improving with age and is considered to be the highest quality, purest example of dry white Semillon wine produced anywhere in the world. Although a popular stand alone variety, Semillon is also o en blended with Sauvignon Blanc to create a complex and delicious wine. The Semillon tends to add stability and structure to the blend - making it more agreeable to barrel ageing and producing a full wine with longevity.

Labelled as Semillon -Sauvignon Blanc (SSB) or Sauvignon Blanc-Semillon (SBS) - depending on the dominant grape used in the blend, this wine has captured the imagina on of wine consumers all over Australia and currently sits in the list of top selling white wines. The good news for wine drinkers is that there are many great examples of this blend to be found and you don’t need to spend a fortune to nd them.

The Semillon-Sauvignon Blanc blend is also extremely versa le and can be manipulated to produce very sweet or very dry wines. Depending on the amount of each variety used in the blend, these wines are transformed from a lighter, fresh and oral style, to a more complex and serious wine. The dry Semillon-Sauvignon Blanc wines are fresh when young and depending on the dominant grape will o en age well. Those that are more Semillon dominant can age for more than 10 years.

Although Margaret River is considered to be the premier region for Semillon Sauvignon blends in Australia, the Hunter Valley also produces some very nice examples - combining the world renowned characteris cs of vibrant young Hunter Valley Semillon with the lively Sauvignon Blanc. A very easy drinking, fresh, fruity and approachable everyday wine.

Semillon Sauvignon Blanc is a pale wine with hints of green and is just perfect when served as an aperi f. With long lazy lunches on the agenda at this me of year, these are the wines you should be looking for. Chill a few bo les as an accompaniment for turkey, barbequed meat and a variety of seafood. Semillon Sauvignon Blanc blends also match well with sh, shell sh, veal, chicken and bu ery sauces.

Pruning is the most important job carried out in the vineyard during winter. The aim of pruning is to check excessive growth and to provide enough fruit bearing shoots for the coming season. This is done a er leaf fall but before budburst when the vines are dormant and there is virtually no sugar transfer from shoots to roots. One of the reasons for pruning is that grape bunches only grow on new shoots and it is necessary to get rid of most of the old growth from the previous season.

Here are some of the latest happenings on the local Wine Scene.

Hunter Valley wine country could very well become part of a network of the world’s ''great wine capitals'', which include Bordeaux, Cape Town and the Napa Valley if Cessnock City councilors agree to join the global network and consider those areas for a possible sister-city rela onship. The bene ts to the Hunter Valley would be be er global industry rela ons, collabora ve marke ng and promo on as well as opportuni es to enhance knowledge and skills.

Lakes Folly is half a century old this year! Lakes Folly was established by the late Dr Max Lake in 1963 and was Australia's rst bou que winery. In 2000 businessman Peter Fogarty and his family purchased the winery from the Lake family. The winery has remained rela vely unchanged for the past 50 years and con nues to make its two agship wines - a Cabernet blend and Chardonnay under the skills of winemaker Rodney Kemp. The wines sell out each year with 60 percent of produc on pre-allocated to members and private collectors. As a result the winery is o en closed for 3 to 4 months of the year.

The Bou que Wine Awards 2013 are to be held on the 8th to 12 July 2013 - represen ng Australian and New Zealand wine producers who crush 250 tonnes and under.

The James Halliday Australian Wine Companion has announced the inaugural Australian Wine Companion Awards to be held in Melbourne on July 24 – the night before the 2014 Wine Companion goes on sale around Australia. The event will see James Halliday AM, announce the winners of four major awards- namely:

• Winery of the Year

• Wine of the Year

• Dark Horse

• Best New Winery

In addi on, 12 varietal awards will also be announced on the night.

This is a story about the Hunter Valley's newest cellar door and the winemaker with a burning passion for making a di erence. Harkham Winery owned by Terry and son Richard ''Richie'' Harkham, is an award winning winery, producing a unique range of wines with a natural winemaking philosophy.

Since the Harkham family purchased the estate in 2005, they have upgraded the facili es and taken an exci ng new direc on of incorpora ng

natural winemaking methods in the produc on of their diverse range of wines. Made from hand-picked and hand-sorted fruit, the winery is focused on small batches of high quality fruit selected from their onsite organically farmed vineyard and from other select hillside vineyards in the Hunter Valley. Minimal handling, bo ling without ltra on, the sole

use of French oak and low levels of preserva ves are just some of the techniques used.

Richie (who is also the winemaker) believes that it is only through minimal interven on in the winemaking process and interpreta on of the fruit, rather than manipula on, that they are able to truly express the “amazing terroir driven avours that the Hunter Valley is renowned for”. Harkham wines aren’t just preserva ve free, they are also kosher and the winery is the only Kosher winery in Australia. Being kosher means that the (grape) wine is produced according to Judaism’s religious law and speci cally, Jewish dietary laws.

For Terry and Richard, both decedents of a wine making family from Israel's renowned wine making region - Zichron Yaakov, this has signi cant meaning and a recogni on of their winemaking heritage. Terry’s father was a winemaker, and his Mother – Aziza – used to make wine from grapes grown in her back yard with no electricity and scarce running water.

Harkham’s preserva ve-free Aziza’s Shiraz is named in honor of Richard’s grandmother, Terry’s Mother – Aziza.

The 2009 and 2010 releases of the Aziza's Shiraz are now sold out but the prized 2011 release is s ll available, but be quick as only 600 cases of this wine was produced. This is a superb wine, preserva ve free and as rich and

avoursome as you would expect from a Hunter Shiraz and with a silky elegance.

When it comes to the sweet things in life you cannot go past Sabor in the Hunter - the thriving dessert bar in Lovedale, which is owned and run by husband and wife team Fernando and Renata Antao.

Although from Portuguese descent, Fernando was born and raised in Sydney while Renata was born in Brazil but spent her childhood growing up in Sydney. The two met through a friend when Fernando was just 20 years old but they soon discovered that their respec ve mothers knew each other - both having worked in the same shirt manufacturing business.

When it comes to Portuguese Chocolate Mousse, the Antao family can trace their family recipe back approximately 60 years to a li le village known as Poeares da Regua located in the Northern part of Portugal around 400 km from Lisbon where chocolate was a luxury and chocolate mousse a treat reserved for family gatherings and special occasions.

Before moving to the Hunter Valley just over 2 years ago, Fernando and Renata, owned a pizzeria in Pyrmont - Sydney where they started o ering the chocolate mousse as part of their menu. Made in the tradi onal way (the Portuguese do not use cream to make their mousse) and using their grandmothers recipe handed down through the family, the chocolate mousse was so popular amongst their customers that they sold the pizzeria and began to make the mousse to sell in gourmet delicatessens and at markets. Such was the demand that they soon expanded the range to include di erent avoured mousse and also rice pudding.

A er years of holidaying in the Hunter Valley several mes per year, Fernando and Renata decided to make the Hunter Valley their home and purchased the Wilderness Rd property adjacent to the historic Gillies Bridge where they refurbished the original cellar door to create the dessert bar and converted the winery and cold storage area into a factory which currently goes through approximately 1 tonne of chocolate each month and 50 kg and 100kg of bu er a week.

Sabor in the Hunter was opened in August 2011with a menu over owing with tasty treats and a range of classical and seasonal desserts paired with wines, dessert wines and Ports from the Hunter. They also o er a gluten free range and barista made co ee.

Now almost 2 years later, Fernando and Renata have a successful and highly popular business with Sabor in the Hunter a rac ng both locals and visitors to the Hunter. They now also distribute their desserts to Sydney, Canberra, Brisbane and Adelaide.
