    on Sunday, December 8 at the historic site.The Hammonton High School Choir, under

    the direction of Marrissa Carrafiello, will per-form Winter Music in the Wharton State ForestVisitors Center beginning at 1p.m. Admission is

    The stately Batsto mansion, dressed in the splendor of the winter season, wbe available to tour for $3 and tickets are available on site at the Visitor Center

    The Jewish celebration ofChanukah is often associatedwith the Christian holiday of

    Christmas, but that association haslittle to do with the significance ofeach holiday and more to do withthe timing. Each is celebrated at theend of the year when the holidayseason has hit full swing. But muchlike the story of Christmas, the storyof Chanukah is a rich one.

    The celebration of Chanukahhas a deep history that can be tracedback to a successor of Alexander theGreat. Upon conquering Syria, Egypt and Palestine, Alexander the Greatallowed these lands to remain relatively autonomous, a gesture that ex-tended to allowing residents of these conquered lands to observe their

    own religions.However, more than 100 years later, Antiochus IV, a less tolerant suc-

    cessor of Alexander, began to oppress the Jewish people under his con-trol, desecrating their temples and even ordering the massacre of manyJews.

    This treatment eventually sparked a revolt led by Mattathias the Has-

    monean and his son, Judah Macbee.

    This revolt would ultimat

    prove successful, and the temwas rededicated. But at the tiof rededication, oil needed to lithe menorah was very low, rougenough to keep the menorah lit just one night.

    However, the oil stunningly laed for eight days, enough timeprepare an additional supply of for the menorah. An eight-day ftival was then declared to celebr

    this miracle, and that festival is now known as Chanukah, which is ofreferred to as the "Festival of Lights."

    Though Chanukah is not as religiously significant as the Jewish ho

    days of Yom Kippur, Rosh Hashanah and Passover, many Jewish peostill look forward to the holiday and its traditions.

    One such tradition for many families is cooking potato latkes, a ratively easy yet delicious food that Chanukah celebrants can enjoy weekend mornings when gathered around the breakfast table.

    The holiday countdown is on and it's time to get your house razzle-dazzle ready. But before you do, make sure to check that your lightsand decorations are still in good working order after a year in storage.

    Not only can old decor look worn out, but it also can put you and your fam-ily at risk-which is the last thing anyone wants at this joyous time of year.

    CSA Group, a leader in public safety testing and certification, offers thesetips to help you stay safe this holiday:Carefully inspect light strings each year. Discard any with frayed cords,

    cracked lamp holders or loose connections. Inspect for storage damage frommoisture or rodents.Turn off the electricity to the supply outlet before working with out-

    door wiring. Unplug light strings before replacing bulbs and check to ensurereplacement bulbs match the voltage and wattage of the original. To avoid ashock from damaged wires, use insulated fasteners rather than metal nails ortacks to hold light strings in place.Make decorating a family activity by planning this year's theme with

    the kids, but don't let children or pets play with light strings.

    Keep electrical connectors for outdoor lights above ground, out of wter and away from metal gutters. Connect outdoor lighting into receptaprotected by weatherproof ground fault circuit interrupters (GFCI). Thcan provide protection from electric shock by sensing ground leakage cutting electrical power.Use heavy duty extension cords for high wattage decorations and la

    electronically-animated displays, and don't overload extension cords. If yneed to purchase new lights, look for a certification mark to ensure they certified by an organization such as CSA Group. And remember: outdoor hiday lights are made for seasonal use only; extended exposure to the elemecan lead to damage. So when the holidays are over, take down the festive derations and place them back in their original packaging for next year.

    Potato LatkesServes 41 pounds russet potatoes, peeled cup finely chopped shallots2 large eggs, lightly beaten2 tablespoons flour1 teaspoons salt and freshly ground black pepper Vegetable oil for frying

    In a food processor, grate the potatoes. Line a sieve with cheesecloand transfer the potatoes to the sieve. Set the sieve over a boil and twthe cheesecloth into a pouch, squeezing out some moisture. Let the mture drain for 15 minutes. After 15 minutes, pour off liquid from t

    bowl but leave the white potato starch that settles in the bottom of tbowl.

    To that starch add shallots, eggs, flour, salt and freshly ground peppReturn drained potatoes to this mixture and toss to combine.

    Preheat the oven to 200 F. Line a baking pan with paper towels. Whready to eat, in a large skillet heat 1/4 inch of oil over medium-high huntil hot. Drop heaping tablespoonfuls of potato mixture and cook foto 4 minutes a side; latkes should be golden and crisp on both sides. Eright away or keep warm in oven. Serve with applesauce, sour cream cottage cheese mixed with sour cream.

    Although poinsettias are most often associated with the holiday season,they are actually tropical plants. In spite of their origins, poinsettias

    can thrive during the holiday season and even last long after the holi-days have come and gone.

    Poinsettias are native to Mexico and Central America. Aztecs called theplant cuetlaxochitl.

    The flowering plant was first introduced to the United States by JoelPoinsett, the U.S. ambassador to Mexico, and was subsequently renamedthe poinsettia.

    The flowers of the poinsettia are actually the yellow blooms at the mid-dle of the bright red or white bracts that form on the plant. Perhaps due tothe bright red of the bracts, the plant quickly became a popular Christmasplant.

    It's important to note that poinsettias grow in a warm climate and there-fore must be kept in tropical conditions to ensure the plant's health. Further-

    more, poinsettias bloom in response to shortening daylight hours.That means they will need ample darkness each night in order to simulate

    the dark nights of short, winter days. To achieve this, you may need to putthe plant into a dark closet for 12 to 14 hours each night.

    During the day, the plant should be in a sunny window where it willhave access to bright light. The more light the better. Keep the soil evenly

    moist. Misting the plant will help it to retain sohumidity. Also, fill the overflow saucer on yo

    flower pot with gravel to allow water seepthrough the pot to evaporate from the gravel.

    Hot temperatures indoors combined whigh humidity will help the plant to thrive. Evone day without adequate moisture can cause leaves to drop.

    Furthermore, decreasing temperatures cause leaves to fall off. The goal is to keep the door temperature consistent.

    While many poinsettia plants are discardedter the holiday season, these plants can actually be cut back and saved for nseason. Trimming back any remaining leaves and continuing to care for plant by keeping it moist can help.

    To force the blooms next season, start reducing the plant's exposuresunlight in mid-September to October. Again, this will mean removing plant to an area that is shrouded in complete darkness. Even streetlightsindoor lighting can affect blooming. If the plant does not begin to turn cobefore the holiday season, you may need to purchase a new plant and again next year.
