day, depending on the weather and debris volume, will be installed in July. Wartsila reached out to us because they knew that the Club is passionate and dedicated to conserving and protecting marine biodiversity.

Besides maintaining the vibrancy of the ecosystem at our Marina, we have also carried out a series of maintenance work to enhance your experience at the Club over the last few months. The latest refurbishments are at the Men’s and Ladies’ steam rooms. The Men’s steam room now has new tiles, while over at the Ladies’ section, we have replaced some old tiles. I would like to thank all Members for your patience during the upgrade.

I am also excited to announce that we are continuing to build a strong community with our Members. Through the interest group survey conducted last year, the results showed that Wine and Fitness are the most popular interest groups within our community. As such, we are inviting Member volunteers to form committees for these two activities. If you’re keen to be part of the Committees, you can register your interest with the Membership Department or fi nd out more on page 25.

While on the topic of fi tness, two of the greatest sporting events—2018 FIFA World Cup and 2018 Wimbledon Championship—are happening in July, and we would like to invite our Members and their guests to be part of the exciting action as we stream the fi nals of both events live on a big screen at Boaters’ Bar (details can be found on page 27). We hope you will come and join in the fun with us.

Teo Joo LengGeneral Manager

Greetings to all Members. Time fl ies and we have already pushed past the halfway mark of the year. I hope everyone has enjoyed the activities we have organised for you so far.

As you know, the Club has been playing an active part in protecting our Marina. In fact, ongoing studies conducted by the Reef Ecology Laboratory at the National University of Singapore identifi ed ONE°15 as a great place for sea creatures to thrive. The reports also found our Marina structures stable enough to support rich marine biodiversity (see page 10) with at least 50 sea creatures recorded fl ourishing in the area.

I am proud to say that we have stayed committed to protecting the Marina through various initiatives. One such endeavour was our Eco Dive project, which we started in 2017. For the last two years, more than 100 people have volunteered to do their part in keeping the Marina clean. This year’s Eco Dive turned up a staggering 200kg of trash, with plastic bags topping the number of rubbish collected.

As caring for our marine environment is critical, we have added a signifi cant activity to our Anniversary celebrations this year. This special event happening in October is a new eco-initiative—we will participate in a coral-reef planting exercise, leading us into the next phase of protecting, developing and maintaining the ecosystem at our Marina.

Speaking of good work, we are pleased to announce that Finnish company Wartsila will be donating a seabin to ONE°15 to help us maintain a clean Marina. This special bin, which can haul out 1.5kg of rubbish per

WHAT’S ON

Get ready to be blown away by the world of Theo Jansen, a sculptor from the Netherlands who spent 28 years developing a series of wind-powered machines called Strandbeests (“beach animals” in Dutch). A physicist by training, Jansen later became a painter before going on to work on sculptures. The beests were fi rst conceived to address the threat of fl ooding caused by rising sea levels. He had applied his background in art and science to utilise wind power so that his creations can walk in a lifelike fashion. A total of 13 large-scale Strandbeests will be exhibited in ArtScience Museum and one of the key highlights is Animaris Siamesis, the largest Strandbeest in the exhibition, measuring 10 metres in body length and weighs over 240 kilo. Till Sept 30, ArtScience Museum.

ONE°15 Marina Sentosa Cove may have scored several environment awards including the prestigious Green Maritime Company of the Year 2015, but that has not

stopped the Marina from making concerted efforts to ensure that biodiversity in the water is well protected and thriving. In fact, ONE°15 aims to prime the marina and its surrounding body of water for the public to dive and snorkel, and learn all about the marine world.

With the development of the Marina around the coast of Singapore, much of the original marine life has been affected. However, all is not lost as there are positive signs of renewal of the marine habitat.

ON WATER

In a 2013 survey of the Marina by Reef Ecology Laboratory at the National University of Singapore (NUS), marine researchers found at least 50 types of animals including worms, crustaceans and brittle stars, sea cucumbers, seahorses, even algae and zoanthids growing happily in the waters. The stable marina structures such as berthing pontoons and seawalls allowed sea life to thrive and grow. The survey also uncovered 22 genera of hard corals, with new ones forming. Even better, the survey found that these hard corals had attracted 29 species of fi sh, many of which were reef-associated fi shes such as the copperband butterfl yfi sh, white-patch tuskfi sh and eightband butterfl yfi sh.

As Singapore continues to develop its shorelines, much care has gone into ensuring that marine life is preserved, and the result is evident with a thriving habitat as the survey showed. In fact, the Marina has been helpful in supporting and sustaining rich marine biodiversity.

It is heartening to know that the team at ONE°15 has gone into such great lengths in its eco-initiatives to conserve marine biodiversity. And encouraged by so many of its Members, we are looking forward to the coral-reef planting exercise come October 2018.

Besides planting corals, cleaning up the coastal areas and the Marina, as well as ensuring it’s safe for marine biodiversity, it’s also important to dispose rubbish responsibly. Enter the Seabin Project, a fl oating rubbish bin project that was created by Pete Ceglinski and his friend Andrew Turton to collect sea trash and to help clean up the oceans. Wartsila, a company from Finland and a partner of the project will be donating a Seabin to ONE°15 as part of their corporate social responsibility initiatives. Installation of the bin will happen sometime in July and Members can fi nd out more about the benefi ts and functions of the bin on the information panel that will be installed at the pontoon.

JULY-AUGUST 2018 LONGITUDE // 13

Although Dr Andrew Unterweger is a qualifi ed medical doctor, he admits with a laugh that he only practiced for three months before moving on to fi nance

and property. “I like commerce more than science so I went down that route,” he says.

He started a fi nancial advisory business in Australia that was geared for the professional market of doctors and lawyers. When that grew, he began a property business for those wanting to buy investment properties. “We deal with expats mainly, who want to buy properties in Australia. We help them with the fi nancing and all the other issues involved with owning an Australian property,” he says.

Dr Unterweger is the founder and CEO of The Unicorp Group, and Chairman of Wise Guru. He was born in Austria, but has lived in many parts of the world, including several Australian cities. He has been in Singapore for the last four years, and became a Club member three years ago.

“It was a combination of things that drew me to join,” he says. “I was living on the island so it’s part of the Sentosa lifestyle if you want to access the water and go boating. And it’s very convenient to go and sit at the balcony of LATITUDE Bistro and have a casual meal. There are lots of good attributes. It was also more of a family thing.”

His family—he has fi ve children between the ages of 10 and 27—enjoys different facilities at the Club. The younger kids like the pool and activities with other children, while the older ones prefer to play tennis and work out at the gym.

Personally, he comes mostly to dine, once or twice a week, depending on his sometimes-busy travel schedule. “The food at the bistro is casual and easy, and WOK°15 is nice when you feel like something Cantonese,” he says. He also likes bringing guests and entertaining at the Club, including at the Boaters’ Bar. “I like bringing guests from overseas and showing them the beautiful view of the Marina.”

When he does manage to visit, he typically spends a couple of hours at the Club’s dining outlets and leisure facility.

Dr Unterweger describes the ambiance at the Club as a “seaside holiday atmosphere”. “You can just cross the bridge and it already feels much more of a holiday atmosphere. It’s like a resort,” he says.

Although he counts all his Club outings and activities as being very enjoyable, one of his favourite memories is of coming by with his family during the festive season. He loved the decorations that had been put up around the Club, which gave it a very warm feel.

“I think the way the Club has been set up is good in terms of the various areas you can utilise when you socialise here. I can even bring my dogs. It’s also good for the younger children because many of our friends have younger children. It’s relaxed. You don’t have to worry too much,” he says.

A key feature that he likes about the Club, is how much the setting resembles seafront views in Australia. This helps him showcase the lifestyle to potential clients. “When I have guests from overseas and I talk to them about Australian property, I show them the view here, which bears a massive resemblance to so many places in Australia. You could be in the Gold Coast or the Sunshine Coast,” he says.

When Dr Unterweger and his family used to live on Ocean Drive, they would cycle or walk the two minutes it took to get to the Club. They have since moved and are about a 15-minute drive away. Even so, he admits that the distance hasn’t curbed the desire to come to the Club. “It’s not that far away,” he quips. “And on some level, I think it’s even more fun now. Even though you’re not living next door, it gives you a bit of entrée to the harbour front.”

The food at the bistro is casual and easy, and WOK°15 is nice when you feel like something Cantonese.

JULY-AUGUST 2018 LONGITUDE // 19

LONGITUDE: Hi Ismail! First of all, you’re really tall! How tall are you? Chief Security Manager Ismail Bin Senin: I’m 1.9 metres tall. My son, who’s 30, is almost my height, and my daughters, who are 22 and 24, are also pretty tall.

Tell us about the work you do here. As the Chief Security Manager for the past two years, I take care of the safety and security of the Members at the Club. My task is dynamic—there’s no set schedule. I monitor the operations and make sure the daily plans run smoothly.

I also plan the deployment of offi cers and make adjustments if there are any issues. I make sure there are no lapses and that the offi cers follow the rules and regulations. For example, when offi cers are manning the guard house, they should be alert at all times and there is strictly no smoking.

I also investigate when there are security breaches, such as someone entering the Marina without a valid pass. I then do the paperwork, after which I evaluate and identify what are the causes for the lapses.

Can you describe a recent breach and how you dealt with it? A vendor had come into the Marina without having acquired a pass. Our team had to locate the subject and investigate how he got in. We found out that he had tailgated someone to

gain entry. The subject is now barred from the area, which is the stiffest penalty.

How often do breaches happen? Not that often but it does happen. It’s like that saying, “Low crime doesn’t mean no crime”.

What are the challenges of the job?I think the challenges are not specifi c to this job because I’ve been in security for over two decades. My challenges pertain more to time management as I don’t work regular offi ce hours. It helps to have a supportive family, especially my wife, and friends who understand the demands of my job.

Tell us about some of the new implementations you’ve made since you started here. I instilled a sense of camaraderie within the group and I fi nd that the team works very well together now. The offi cers help and look out for one other. I also updated some of the administrative processes and made them digital, instead of still using paper, which saves us some time.

You were a Central Narcotics Bureau offi cer for 20 years. What skills did you bring from that line of work? I think it has helped a lot in ensuring that I have good security knowledge. I’m also comfortable talking to people and doing investigative work.

Are there any security measures that are unique to the Club? This is an exclusive Members club and only Members are allowed in to use the premises. Even in terms of parking, only Members and hotel guests are allowed to park here. It can sometimes be hard to manage that as some people will argue with us and ask why they can’t come in. A little bit of humour, wittiness and wisdom will help tackle that issue. I think my team does well in that.

What is your favourite part of the work?Seeing things get done properly. For example, once we complete any investigative work, we’ll send the report to higher management to have a look. If they’re happy with the work, that provides a lot of job satisfaction. And at the end of the day, when it’s time for me to go home, just knowing that the security of the club is in great hands creates a great sense of accomplishment for me.

ISMAIL’S TOP THREE

1. Spending Time with Family

On my days off , I love spending time with my family, especially my wife. We’ll have a meal or go for an evening walk together.

2. Keeping Active

I go jogging and I also spend a lot of time cycling, mostly over the weekends. I used to go to the gym but not so much anymore.

3. Going to Changi Beach

That’s my favourite haunt. We go as a family about once a month, and I cycle and swim when I’m there.

BEST FACE FORWARDMembers had a great time getting advice from our experts on how to age gracefully and gain perfect vision.

Members who attended the talk walked away with useful information on how to age gracefully and how treatments such as lasers and lens implants can correct imperfect eyesight.

AGEING IS AN INEVITABLE PROCESS but that doesn’t mean we can’t age with dignity. On 10 May, Dr Daphne Han, Senior Consultant and Ophthalmologist from the Singapore Medical Specialist Centre and Dr Chiam Chiak Teng, member of the American Academy of Aesthetic Medicine shared with our Members the various options available on how to be free from wearing spectacles and achieve perfect vision. With the advancement in technology, treatments such as lasers and lens implants are able to help correct imperfect eyesight, and they are no longer as invasive as they used to be. Moreover, post-surgery care for eyes have become more developed and advanced, so we can rest assured that 10/10 vision is within our reach.

Our panel of experts also shared tips on how to tackle common ageing skin concerns such as sagging skin and how effective skincare regimes can

help slow down that process. Of course, medical advances these days mean that there are non-invasive and “scarless” treatments that allow us to achieve the ideal perception of beauty.

It was a fruitful session and Members not only walked away armed with useful information, they also enjoyed themselves.

(Standing): Pamela See, John Kuo, Charmain Phor and staff from Singapore Medical Specialists Centre. (Sitting): Josephine Lopez, Alan Bickham, Margaret Siew, Angie Yee, Jorge Lau and Lionel Lopez.

Besides useful information, this was a also a great opportunity for Members to catch up with one another.

NEW MEMBERS NIGHT

Another successful Members’ Night at the Club.

We would like to extend our warmest welcome to our new Members.

ON 25 APRIL, the Boaters’ Bar was alive with laughter and chatter as members of our Affi liate Club—the Swiss Club—mingled with other ONE°15 Members over canapes, wine and beers. More than 30 Members turned up for this special evening and all had a good time. Besides networking, it was also a great time for our Members to forge new friendships and catch up with old friends.

IT WAS A MEMORABLE NIGHT FOR ALL. On 18 April, ONE°15 Marina Sentosa Cove threw a warm reception for our new Members at the rooftop terrace. More than just a welcome party, this quarterly event is also a chance for the Club to get to know our Members so that we can serve them better in the future. DEVOTED TO YOUDolce & Gabbana, known for its extravagant designs, have created a new object of worship for women—the Devotion bag. This new arm or shoulder candy, whichever way you prefer to carry it, looks set for the “It’ bag status. While there’s no religious overtones to the bag, it is marked by a distinct sacred heart, which hides the closure with a metal frieze of micro-forged brass and copper as well as fi ne antiqued gold fi nish seen in jewellery-making. The DG logo sits in the centre of the heart, framed by delicate pearls and leaves. Bag the envy, carry it.

In a world where oenophiles are enjoying more wine from around the globe than ever before, each wine’s unique sense of place and faithfulness to terroir has become increasingly important to many enthusiasts. Unsurprisingly,

this comes at a time when winemakers are striving to produce wines that are the truest expressions of the land and fruit from which they came, and runs congruent to the emphasis being placed on viticulture as a key element in producing the greatest possible wines.

While many connoisseurs continue to endeavour in acquiring knowledge on the various regions, grape varietals, and particular styles or blends, current wine conversations are frequently taking the spotlight off oenology—and shifting attention to the work being done to the soil and on the vines. Essential in understanding today’s viticulture climate is the ability to differentiate between the organic and biodynamic farming philosophies that are utilised by many growers and producers, ultimately leading to an appreciation of how natural viticulture affects the quality of the wine produced. While organic and biodynamic are similar, the two should not be used synonymously.

Organic farming is something that has become very familiar over the past two decades and it’s encouraging that many winemakers have embraced a return to more natural techniques to replace industrial fertilisers in cultivating their fruit. In an organic vineyard, biodiversity is prized, so the soil is rich with worms and insects, while mineral-rich vegetation is grown for the benefi t of the fruit. Basically, the soil is healthier, resulting in healthier

vines that bear healthier fruit. Due to these natural growing conditions, many people say that organic wines “simply taste better.” These wines also possess more subtle aromas, enjoy better acidity and usually have less alcohol.

While all organic wines are made from grapes that have been grown in soil free from synthetic chemicals such as fertilisers, herbicides or pesticides, it’s important to note that wines made with certifi ed organic fruit are not necessarily organic wines. In the United States, wines can only be listed as “certifi ed organic” if the grapes used are organically grown and the wine doesn’t have any added sulphur dioxide or fi ning agents. In the winemaking process, sulphites are added to lengthen a wine’s shelf life and many deem them to be critical in wine preservation. In Europe and Canada, organic wines must be made from organically grown grapes, but they’re allowed to contain a limited amount of added sulphites. It’s also worth knowing that many vineyards practice organic farming techniques, but have not fi led for the necessary “organic” accreditation due to the time and money involved.

Biodynamic wine production takes organic farming and winemaking a few steps further, and many of its proponents claim that the biodynamic

wines are the clearest expressions of their terroir. In addition to strictly adhering to the principles of organic viticulture, the biodynamic approach to grape-growing views the vineyard holistically and recognises that the entire parcel is an organism unto itself, where various life forms coexist and are interdependent of one another. The vineyard is seen not as solely as a plot of land that grows fruit for wine production, but as a larger environment for biodiversity.

A certifi ed biodynamic vineyard must subscribe to the set of practices outlined by Rudolf Steiner, an Austrian philosopher who predates the organic farming movement. In a lecture given by Steiner in 1924 to the Austrian farming industry (one that was dismayed with the ill effects that pesticides were having on their farms), he presented an ecologically sound and sustainable approach to agriculture that promised to increase the soil’s productivity without using harmful chemicals.

A back-to-basics approach to winemaking is believed to create the truest expressions of the land and the grape.

In Europe and Canada, organic wines must be made from organically grown grapes, but they’re allowed to contain a limited amount of added sulphites.

His philosophy wasn’t only concerned with how things at the ground level affect farming, but also took into consideration how celestial bodies and lunar cycles would infl uence activities such as planting, pruning and harvesting. He promoted ways that farmers could best take advantage of the relative positions of the sun, moon, stars and planets to maximise crop production. This practice of interconnectivity between man, earth and the heavens isn’t new—it dates back to ancient Greek and Egyptian civilisations, and is still currently considered in the modern-day American Farmers’ Almanac.

In his research, Steiner also outlined nine biodynamic preparations that could be used as sprays and compost at the vineyard. They include ones that make use of cow manure and quartz, placed inside cow horns and then buried in the ground. Other preparations include medicinal plants such as yarrow and chamomile—which are wrapped in a stag’s bladder and a cow’s intestine, respectively—before being buried in the soil.

While there have been critics suggesting that many of these preparations are more ceremonial than scientifi c, there is no denying that some of the best bottles out there are produced by employing biodynamic practices. And the world certainly has room for more good wines.

BIODYNAMIC BAROLOIn the heart of Piedmont is Monfalletto, one of the oldest wine-producing estates in the country. Strategically situated in the town of La Morra, the centre of Italian Barolo production, the vineyard is marked by a large Lebanese cedar tree, which can be seen from every vantage point throughout all of the 28 hectares that house the Cordero di Montezemolo vineyards. Owned by the Falletti family since 1340, the land and the winery are now managed by Alberto Cordero, a member of the family’s 19th generation.

The property primarily cultivates local grape varietals—nebbiolo, barbera, dolcetto, and arneis—but it also grows chardonnay grapes, its only international varietal. In 2013, Alberto decided to undergo the organic certifi cation process for the vineyards and the winery. Today, biodynamic viticulture is practiced here, using natural alternatives to treat the soil and vines as well as organic substances to keep the soil nutrient-rich. A network of ducts collects and recycles rainwater for vine treatment and irrigation, making the vineyard 100 per cent water-independent.

Renowned for its DOC- and DOCG-classifi ed wines, the estate’s signature is the Monfalletto Barolo, characterised by delicate tones, with hints of rose, cherry and violet, and soft, sweet tannins. Other premium estate bottles include the Bricco Gattera Barolo, made from grapes sourced at the highest peak of the hill. However, the Barolo Riserva Gorette is the most prized wine—and the most recent addition to its catalogue, with fi rst production in 1998. Produced solely in great vintages, only 1,000 magnum bottles are sold at the winery each year. This wine is made from grapes from the oldest vines, which are situated at the foot of the Lebanese cedar tree.

Another of the estate’s premium wines is the Enrico VI, while other noteworthy bottles include the Barbera d’Alba, and a Langhe chardonnay.

Many people say that organic wines “simply taste better” due to

the natural growing conditions.
