Seafood Extravaganza Seafood SpaghettiI N G R E D I E N T S

3 Tbsp. olive oil

1 cup onion, chopped

4 garlic cloves, minced

1 cup shiitake mushrooms or preferred type

3 cups canned diced tomatoes

1 cup carrot, chopped

¼ cup dry red wine

Zest of 1 lemon

1 tsp. dried oregano

1 tsp. red pepper flakes

D I R E C T I O N S

To prepare sauce: Add oil to a medium sauce pan over medium-high heat. When warm add onion, garlic and mushrooms and sauté for 3 minutes. Add the tomatoes, carrot, wine, lemon zest, oregano, pepper flakes and salt and pepper. Bring to a boil, reduce heat and simmer uncovered for 30 minutes, stirring occasionally. While the sauce simmers, cook pasta as per package directions and drain. Add the mussels, clams, scallops and shrimp to the sauce, cover and cook until mussels and clams open, about 5 to 7 minutes, stirring occasionally. Add the pasta to the seafood sauce and mix gently. Sprinkle with cheese and parsley to garnish. Serves 6.

Drain liquid from canned fish and place in glass bowl. Break up fish with fork. Mix celery, onion and mayo to blend completely with fish. Salt and pepper to taste. Serve or cover and chill before serving. Hint: Put canned fish in fridge prior to making salad to chill. Serve as a sandwich spread, with crackers or on cucumber slices, or in a whole, split tomato. Serves 4.

Place chicken and salt in a food processor and pulse to ½ inch piece size. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, simmer sauce and tomato paste stirring to combine. Cook for 8 to 10 minutes stirring occasionally to crumble, until thoroughly cooked. Remove from heat and stir in cucumber, onion, cilantro and lemon juice. Serve immediately by scooping onto lettuce leaves. Serves 4.

Chipotle Braised Short RibsI N G R E D I E N T S

1 Tbsp. vegetable oil

3 lbs. beef short ribs

Salt and ground black pepper to taste

1 mediun white onion, diced

1 green bell pepper, diced

2 stalks of celery, diced

1 can (28 oz.) crushed tomatoes

2 chipotle peppers in adobo sauce, finely chopped

D I R E C T I O N S

Heat oil in large stockpot over medium heat until hot. Brown beef short ribs evenly. Remove from stockpot and season with salt and black pepper. Add onion, bell pepper and celery to stockpot and cook 3 to 5 minutes or until tender, stirring occasionally. Add tomatoes, chipotle peppers and poblano

peppers to stockpot. Return beef to pan; bring to a boil. Reduce heat, cover tightly and simmer 1½

to 2½ hours or until beef is fork-tender. Remove beef and keep warm. Skim fat from cooking liquid. Spoon

cooking liquid over beef. Sprinkle with chopped onion and cilantro, as desired. Garnish with lime wedges. Serves 4.

Carrot and Coriander SoupI N G R E D I E N T S

4 garlic clove

1 Tbsp. coriander seeds

1 Tbsp. cumin seeds

1 Tbsp. fennel seeds

4 carrots, chopped

Preheat oven to 400ºF. Pound the garlic cloves, coriander, cumin and fennel using a pestle and mortar. Place the carrots and onions in a roasting tray and toss with the olive oil.
