Annual MeetingAll NCHS members and friends are invited to attend our Annual Meeting on

Wed., March 25th at 7pm. at the Arsenal, 30 Market Street.

We'll review our accomplishments from 2014 and preview our many upcoming projects for 2015.

We'll also be having a special reception in honor of our Education Coordinator, Bruce Dalleo, who is retiring at the end of March.

1 lb white artisan bread cut into 1″ cubes ■ 1/3 c. extra-virgin olive oil ■ 1 lb sliced smoked bacon,

cut into 1/2″ pieces ■ 1 lg onion, halved and thinly sliced ■ 1-28 oz can whole Italian

tomatoes-drained, chopped and patted dry ■ 1/2 lb extra-sharp cheddar,

shredded (8 oz) ■ 1/2 lb Monterey Jack cheese, shredded (8 oz) ■ 2 tbsp snipped chives ■ 1 3/4 c. chicken broth ■ 6 lg eggsCrank up the oven to 350o

Lightly oil a 9 x 13 glass baking dish.  In a large bowl, toss the bread with the olive oil and spread on a large rimmed baking sheet.  Bake for about 20 minutes, tossing once or twice, until the bread is golden and lightly crispy.Meanwhile, in a large skillet, cook the bacon over moderately high heat, stirring occasionally, until crisp. Transfer the bacon to paper towels to drain: reserve 2 tbsp of the fat in the skillet.Add the onion to the skillet and cook over moderate heat, stirring occasionally, until softened.  Add the tomatoes and cook until liquid is evaporated, about 3 minutes.Return the toasted bread cubes to the bowl.  Add the contents of the skillet, along with the bacon, shredded cheeses, chives and broth.  Stir until the bread is evenly moistened.  Spread the mixture in the baking dish and cover with lightly oiled foil.Bake the bread mixture in the center of the oven for 30 minutes.  Remove the foil and bake until the top is crispy, about 15 minutes longer.  Carefully remove the baking dish from the oven and using a ladle, press 6 indentations into the bread mixture (you can do 8 if you want to but don’t go bonkers).  Crack an egg into each indentation.  Return the dish to the oven and bake for about 15 minutes, until the egg whites are set but the yolks are still runny.  Cook longer if you do not want runny yolks.

Dish it up right away while it’s warm.

Waffle. Bacon. Listening now? Now that we have your undivided attention, its time to tell you about the Maple Syrup Cocktail.

Ingredients 1 oz dark rum - 2 ozs Irish Cream 1 tsp maple syrup - 2 ozs milk 1/4 cup crumbled bacon bits 2 mini frozen waffles

Directions Cook a few pieces of bacon, let them cool, then crumble into small pieces. Using the waffle recipe on the back of the box, make mini waffles to garnish and dip into the cocktail. Add the Irish Cream, milk, rum and maple syrup in a cocktail shaker with ice. Shake vigorously for a few seconds until ingredients are combined. Strain the cocktail into a martini glass. March’s featured artist is Dennis Young who is exhibiting a show of pastel and oil paintings entitled

“Waiting for Summer.” Young, a doctor from New Castle, De., generally works

outside on location, but retreats to his studio in cold weather, often painting portraits. He waits for the season when he can get back outside to paint and participates

in six to eight plein air events a year, including the August event in Ocean City.

The “Waiting for Summer” show will feature many of Young’s plein air paintings done in the vivid hues that

pastel paints bring to his art.

Yes...even the Teditoris a BIG fan of Lions Club pancakes!

On Saturday, March 21st the New Castle Hundred Lions Club held their Semi Annual Pancake

Breakfast at the New Castle United Methodist Church.  Over 20 ROARING members of the Lions Club, including several family members of Lions, as well as 12 student volunteers from Family Foundations Academy Charter School in New Castle,  served approximately 300 guests some of the fluffiest pancakes and the tastiest sausages in town!   The turn out was one of the largest in New Castle Lions history.Club President Jason P. Casper would like to thank all of the Lions, family members, and his FFA students for all of their hard work; as well as all of the members of the community who came out to support this important fundraising  event.   The club would like to add a very special thank you to the Teditor, Ted Joslin for all his support over the past several weeks in the Cobblestones.  The Teditor is always there to promote the New Castle Hundred Lions Club and we greatly appreciate all that he does for us.

Coming in next week’s COBBLESTONES
