Cheap Steak

When shopping for steaks, many consumers think that only the more expensive cuts can provide tenderness and robust flavor. Due to budget constraints, some shoppers have stopped buying steaks except for special occasions. While “cheap” and “steak” might seem like an odd combination of words,

there are many types of steaks that are both inexpensive and delicious.Once you familiarize yourself with the names and cuts of less-expen-sive steaks and master preparing them, you can enjoy a budget-friend-ly steak dinner more often! Here are a few varieties of “cheap” and flavorful steaks:Charcoal steak, top blade steak, chicken steak: This cut comes from the top of the shoulder blade, which is the second-most tender cut on the animal. It cooks up beautifully when prepared using high-heat methods in a pan, grilled or broiled and served rare. There is a piece of gristle that runs through the middle that is usually butterflied out when the same muscle is cut as a flatiron steak.Bistec Norteno: This isn’t the tenderest cut on the animal, as it comes from the heel of the steer. It’s lean piece of meat with a bold, beefy flavor. Serve sliced thinly.Sirloin tip/peeled knuckle: The most tender muscle in the round tip. Best prepared seared using a high-heat method and finished in a 375 F oven for both steaks and roasts. Keep a medium-rare, or 125-degree, center.Shoulder steak, shoulder clod steak, London broil: This steak can be pan seared, braised, grilled or broiled, keeping a medium-rare center and then sliced thinly.Top sirloin: Great beefy flavor and tender. Sear using a high-heat method and finish in a 375 F oven for both steaks and roasts. Keep a medium-rare center.Flank steak: Fibrous, lean, tight-grain, good beefy flavor. It’s commonly used for fajitas and stir-fry. This cut is best when grilled, but also can be pan-seared and sliced thinly.Brisket: The brisket is a fibrous and fatty muscle with significant connective tissue. It’s best cooked slow and low to achieve tenderness. A brisket consists of two parts, the point and the first or flat cut. The point is located on top of the flat and is connected by a thick layer of fat. The grain in each piece follows a different direction and must be sliced differently for best results. The point and flat must be trimmed of fat after being separated. The flat is simpler to carve because it is more symmetrically shaped and the grain of the meat is clearly defined. The point is more difficult because of its shape and the grain is more difficult to follow.

Slice the flat by determining in which direction the grain of the meat is following. Simply look at the top of the flat and the grain direction is clearly defined. It generally runs from one corner at the front of the flat to the opposite corner at the back of the flat. The flat is cut at an angle from front to back. Slice the point in the same manner, determine the direction of the grain and cut across the grain from front to back.My recipe for Southwestern Crock-Pot Brisket combines hearty beef brisket, pure chili powder and slow cooking to create a budget-friendly, tender and tasty dinner.

SOUTHWESTERN CROCK-POT BRISKET

For the leanest brisket, ask for the “first” or “flat” cut, without an overly fatty flap (also called the point) lying on top. Trim off any surface fat; there’s plenty left in the fibers to keep the meat moist.

1 cup beef stock1/4 cup apple cider vinegar2 tablespoons yellow cornmeal1 tablespoon dark, unsweetened cocoa powder2 teaspoons ground cumin2 teaspoons dried oregano1 teaspoon ground cinnamon1 1/2 teaspoons salt1 1/2 teaspoons black pepper1 canned chipotle pepper, seeded and minced with 1 tablespoon adobo sauce2 garlic cloves, minced1 (4-pound) beef brisket, trimmed of surface fat1 1/2 tablespoons chili powder

1. Mix the beef stock, vinegar, cornmeal, cocoa powder, cumin, oregano, cinnamon, 1/2 teaspoon of the salt and pepper, chipotle and garlic in a 5- or 6-quart slow cooker.2. Rub the chili powder and remaining teaspoon of the salt and pepper into the brisket. Place the brisket in the slow cooker and turn to coat. Cover and cook on high 6 to 8 hours, or until meat is fork-tender.3. Remove meat from slow cooker and skim fat from sauce. Slice meat and serve with the sauce. Serves 6 to 8

Old ToolsQ: I have a garage of old tools that belonged to my granddad. Some are even to repair Model T automobiles. I have been told that vintage tools are collectible. -- Steve, West Pueblo, Colo.A: One of the better references is the “Antique Trader Tools Price Guide” by Clarence Blanchard and published by Krause. Some of the values listed

are a handsaw manufactured by Henry Disston & Sons, $1,210; a plow plane from 1884, $14,300; a plumb and level with wooden arch and lead plumb bob, $440; early hatchet, $50; miniature brace, Dutch origin, $120; and a box of letter stamps, set of 27, A to Z plus &, $33.As you can clearly see, tool chests have become treasure chests, especially if they are filled with older, desirable tools. A good source to buy and sell older tools is Brown Auction Services, 27 Fickett Road, Pownal ME 04069.

***Q: I have a partial set of Sakura china in the Laredo pattern. Although I originally had a com-plete service for 12, I have managed to break several plates, cups and saucers during the past 20 or so years. I really like this pattern and would like to replace my missing pieces. Can you help me? -- Terry, Bluffton, S.C.A: Your pattern was discontinued during the late 1990s. Replacements, Inc. is the go-to source for missing pieces of sterling flatware, china and crystal. I checked the company’s website and found several pieces, including a cup and saucer for $9.99; a 9-inch vegetable bowl, $79.95; and a dinner plate, $23.99. The toll-free number is 800-737-5223.

***Q: I have an opportunity to buy a recording by Caruso, “Chanson de Noel,” issued by Victor on its red seal label. I can buy it for $50. Deal or not? -- Carl, Ramona, Calif.A: Your record was cut just before Christmas of 1916 and is valued in the $5 to $15 range, de-pending on condition. Most Caruso recordings are not as rare as many people have been led to believe. The ones to look for are his Zonophone recordings, which can sell for upward of $1,000 each, depending on selection and, again, condition. My advice is to pass on the “deal.”

Faith Corner is Sponsored By...

Read: 1 Thessalonians 2:11-12Walk in a manner worthy of God. (v. 12)

Mutual encouragement is a big theme in First Thessalonians. Paul frequently expresses how encouraged he is by their faith, and he in turn encourages them to keep growing in faith, hope, and love. Encouragement, of course, is crucial for any major life change—just ask anyone who’s trying to lose weight or quit smoking. Encouragement isn’t quite as crucial, of course, for a simple, straightforward task, like registering to vote or paying a bill. Paul’s focus on encouragement is thus a reminder that being a Christian is not an easy, one-time, check-the-box ac-complishment. The gospel changes the shape of our entire lives. Living a life that is worthy of God’s calling can’t be done in five minutes a day or by completing a to-do list of tasks—no matter how worshipful they are.

To really live lives that “walk the walk,” as Paul exhorts the Thes-salonians to do, means that all of our lives will be transformed. This demands a lot more than the popular gods in Thessalonica expected. With other gods you could simply go and make an offering, then live your life in whatever way you chose. But to follow the God we know in Christ means offering all we are and have to him. To see what encourages us to do that, we need look no further than Christ himself. He offered his entire self, in all his humanity and all his divinity, for us.

Prayer:Encourage us in our walk of faith, O God!

TempleIn first Corth. 3:16, we read, “Know ye not that you are the temple of God and that the spirit of God dwelleth in you?” I thank God that the Holy spirit dwells in us after we are saved. It is His spirit in us that helps, leads and comforts. Our bodies are temples of the Holy spirit. We are each the house of God. He lives in us. Whenever a body of believers gather together, they are God’s temple. Many people think God’s house means the church building, but it is the church that is the temple and the church is God’s people. The church building was built for God’s glory to use for a sanctuary in which worship Him.

Now in the old testament, the children of Israel did build a house for God to live in. First they built a tabernacle and finally built a temple. But under the new covenant, God no longer dwells in an earth building within the Holy of Holies. He indwells the body of Christ which is his church. His word tells us that our bodies are the temple of the Holy Ghost. When Jesus died on the cross, the veil of the temple that kept God’s presence shut within the Holy of Holies was torn into from top to bottom, Mark 15:38. The presence of God moved out of the earth-made Holy of Holies. Now Skekinah Glory, the divine presence of God is not only for us and with us, but in us.

A Note From the EditorIn my years of serving in children’s ministry this Sunday school handout always came highly requested by parents. One mom even told me, “I need a few more copies of the Country Kid 10 Commandments. I hang a copy above each of my kids’ bed-room doorways and when they get out of line I just point to the number and ask them to read the words. It’s important they identify for themselves where they went wrong.” I sug-gest a copy of these Commandments is posted on every avail-able refrigerator.

PICKS OF THE WEEK“Dark Skies” (PG-13) -- A nice young family moves into a pleasant suburban home, only to be harassed by the creepy whims of super-natural forces. There’s

a mom and dad (Keri Russell and Josh Hamilton) and two young boys who just can’t get the message when super-spooky stuff happens to them -- mysterious marks and wounds appearing on their bodies, moments of amnesia, temporarily losing control of their bodies. You know, the usual. This movie doesn’t really break from the “Paranormal Activity” pack, except that it looks more at the family than the (rather lame) mythos behind the haunting. Mom wants to sell the house, but the market isn’t favor-able. Dad isn’t happy being unemployed. The boys are going through kid stuff -- on top of being haunted.

“Lore” (R) -- Before Lore’s parents -- devout and high-ranking Nazis -- are taken by American forces, they tell their children to flee north and avoid soldiers. Lore (pronounced like “Laura”) must care for her four younger siblings as they travel through Germany in the immediate aftermath of World War II. Along the way, they are helped by Thomas, a young man who survived the concentration camps. Though they must depend on The Lovings

this strange man, Lore still remembers all of the things her SS father told her about Jewish people. The largest part of her journey is going through the ashes of her upbringing. That’s the most haunting part -- how do you know where you are when you’re forced to ques-tion everything you’ve ever known?

“The Loving Story” (NR) -- In the case of Loving v. Vir-ginia, the Supreme Court ruled that interracial marriages could not be restricted by law. Richard Loving married Mildred Jeter in Washington D.C. in 1958, but their mar-riage was not recognized in their home state of Virginia -- interracial marriage was illegal there and in more than 20 other states. Richard was a white man, and Mildred was half-black, half-Native American. This award-win-ning HBO documentary features old home footage of the family, as well as photographs and interviews.

“The Numbers Station” (PG-13) -- John Cusack is a CIA agent who gets assigned to what’s supposed to be an un-eventful post: protecting a secret bunker where encrypted messages are sent and received. So, from the beginning we’re promised a dull affair, and that’s what we get -- even after the bad guys breach the compound. Cusack has to protect the pretty blond cryptologist at all costs. This job apparently demands that any romance that might occur between the two agents be as brief and unconvincing as possible. A pleasant surprise is Cusack’s performance as an action lead; he’s a good at gunplay and portrays a good

veteran of espionage.
