After 1000 days of attending to the relationship between China and New Zealand, Chinese consul general Tan Xiutian said goodbye recently.

The fi rst consul general in Christchurch, Madam Tan, whose area of responsibility covered the South Island, hosted her farewell party at the Christian Cullen Lounge.

Guests were entertained with cultural performances and a presentation of photography and poetry created by Madam Tan’s husband Zhang Ji Chun, as well as a selection of fi ne food and wines.

Following her career which strengthened the interests of both countries, Madam Tan leaves, as her legacy, a well-established consulate in Canterbury.

Avonhead residents believe they have won a two-year battle with the city council, after get-ting backing from Gerry Brownlee, the Earth-quake Recovery Minister.

The Avonhead Community Group was formed two years ago to fight a land zoning proposal in the Land Use Recovery Plan.

The zoning change would allow industrial development on rural zoned Russley Rd prop-erties.

But Mr Brownlee took the residents’ side at a meeting of the group this month.

“Industrial is not an acceptable use. My per-sonal view is that there should not be any in-dustrial or commercial activity on that land,” he said.

“The mayor and I both disagree with council planners that it should be used for limited com-mercial and industrial.”

He told the group the land would be more suitable for the expansion of cemetery or sports facilities. •Turn to page 2

Angry volunteers have called thefts from the Riccarton Com-munity Garden a “crime against the community”.

They are upset that about 20 fruit and vegetable plants have been stolen from the garden.

Volunteer Loretta Te Paa said the plants had been stolen sys-tematically over a number of nights last week.

“They’ve been disappearing gradually. I think they tried to do it strategically so we don’t notice, but we know.”

She said that the produce from the garden had been intended for the community to use, but the plants had been stolen before they could produce anything.

“We know that they will take the vegetables, but taking the plants is just selfish. It’s a crime against the community.”

She said that the plants had

been donated and tended all winter by volunteers, most of them over 70 years old.

“It has taken a long time go-ing round getting the donations for all the plants, and we’ve been

down there all winter just toil-ing away, through all those cold days. So this is heartbreaking.”

She said the thefts had been reported to the police, but she did not expect the plants to be recovered.

The garden had been operat-ing for close to a year, and she believed it was the first time plants had been stolen from the garden.

The volunteers are looking for fruit, vegetable or flower seed-lings to replace the stolen plants, and said they would welcome donations.

spokesman Mark Thomas said residents had been told by city council planners that the chang-es were “foregone conclusions” for the area, as the Land Use Recovery Plan had Canterbury Earthquake Recovery Authority behind it.

But Mr Brownlee told the group that the city council could make changes.

Mr Thomas said it was a wel-come reassurance.

“It very much helps to have the CERA minister clarify the real position and let us know he per-sonally shares the community’s concerns.”

The proposed zoning changes will still be looked at in the city council District Plan Review this year.

But Mr Thomas said the group had the backing of the majority

of the city councillors, so he did not believe the changes would be approved.

The sites marked in the plan for zoning changes were both on the east side of Russley Rd, op-posite the airport.

One of the sites was on the corner of Russley Rd and Memo-rial Ave. The other was a larger area between Russley Rd and Hawthornden Rd, from Avon-head Rd to Avonhead Park.

Both sites are bordered by resi-dential areas.

Mr Thomas said people in the area had already made several thousand submissions to the city council on the issue over the past two years.

He said that the group planned to make another submission to the city council as part of the District Plan Review process.

Submissions on proposed dis-trict plan close next month.

Worry over expansion planBY GABRIELLE STUART

City councillor Jamie Gough has described a plan to form a bigger city council as “death by red tape and bureaucrats”.

Several city councillors would like to divide the city into smaller wards, and appoint extra city coun-cillors to represent them.

They say it would improve de-mocracy, and allow the city coun-cillors to represent communities more effectively.

The idea will be looked at in a city council representation review.

But Cr Gough said he was wor-ried by the plan.

“A decade ago there were 24 councillors around the table, and I don’t know how they got anything done. So I think returning to that

would be a terrible idea, an abomi-nation – it would be death by red tape and bureaucrats.

“Admittedly we’re the second largest city in the country and you do need representation, but it’s tough enough already with 14 of us around the table.”

But fellow city councillor Glenn Livingstone said there had been a feeling of “a lack of democracy” in communities since the earthquake, He believed smaller wards centred around communities would help.

He said he was open to expand-ing the city council to allow for more wards.

“I’m open to having a big-ger council too, not as big as the previous one but slightly bigger. You’ve got to think of the dynamics and management of it, but I think 20 councillors would be fine.”

Riccarton-Wigram ward coun-cillor Jimmy Chen said restructur-ing was needed, but did not believe shrinking the wards would be help-ful.

“In Riccarton-Wigram we com-bine both the high socio-economic and low socio-economic areas in the ward, so combined it provides that balance and I think that’s okay. But perhaps if we were to increase to three councillors that would be helpful.”

Deputy Mayor Vicki Buck said she would like to keep an open mind before the review took place.

But through the review, she said she would like to see more decision making placed in the hands of the communities.

“One thing I have learnt is that people know their own communi-ties incredibly well, so if decisions rest in their hands they will gener-ally make the right decisions for their community.”

She said that the internet opened up possibilities for more commu-nity consultation on projects, simi-lar to what is being done in the east through the Evo::Space proj-ect.

All city councils need to review how their communities are repre-sented at least once every six years.

The review was postponed in 2011 due to the earthquakes, but must be completed by August next year.

Decision delayA decision about the future of properties around Ruapuna Race-way has been delayed. The city council bought six properties on Hasketts Rd near the raceway in 2007, because they were the most affected by noise from motorsport there. The city council was due to decide last week whether to keep or sell the properties, but decided to delay the decision after a depu-tation from a residents’ group. The residents would like to see the land planted in forest, which would dampen noise from the track. The decision was delayed until more information could be collected on options for the land.

School speed zoneA permanent 40km/h speed limit has been approved for Kirkwood Ave and Ilam Rd. Concerns have been raised about the safety of pedestrians on the roads, which serve Ilam Primary School, Kirk-wood Intermediate School and Canterbury University. A 40km/h school speed zone limit has been in place during school hours, but this will now be made permanent.

After years of service in their communities, 19 “older but excep-tional” Age Concern Canterbury volunteers have been recognised for their work. They were present-ed with awards for their service at the Papanui RSA last Friday. This is what was said about the work of some of the local volunteers.Andrea Baker – Upper Riccarton

Andrea has volunteered with Age Concern Canterbury on a Thursday afternoon for nine years. She is always keen to be busy and enjoys any extra administrative jobs put her way. Andrea is also involved in teaching new New Zealanders English. She has a very international background herself, having worked and taught in many parts of the world, including China and Africa. A recent trip to China was a highlight this year. Talk with Andrea for long and you appreciate the extent of her knowledge and wit.Norma Emmerson – Russley

Norma has given outstanding service for 27 years as a volunteer host for Age Concern Canter-bury’s mini-bus service. Yvonne enjoyed many years in the theatre contributing to the Gilbert and Sullivan Society with her beautiful voice.Ian Weir – Halswell

Ian has been volunteering as a mini-bus driver for Age Concern Canterbury for 14 years. Ian drives every week collects up to nine people and will take them for a drive, with humour and stories to tell. His concern for those that he takes out is shown by his empathy and sharing of Age Concern infor-mation. Regularly seen gathering life tubes from the storage box at Age Concern Canterbury, where he explains to those that he gives to the importance of a having a life tube. Age Concern Canterbury often gets calls the next day to say

what a wonderful time the clients had and how they have enjoyed Ian’s company. Until recently Ian and his wife, Stella, have also hosted groups at their own home on a regular basis. They have received numerous Community Garden Pride awards over the years for their beautiful gardens. He and Stella help with the deliv-ery of Age Concern Canterbury’s Keeping On magazine every three months, taking almost a full day at a time. Ian received a community board Community Service Award in 2008 from the Burwood-Pega-

sus Community Board, and he is also a member of the Centaurus Branch of Probus.Maxwell Sword – Spreydon

Since the late 1980s Max has been a volunteer in the police kiosk (then in Cathedral Square). He has also volunteered as a crime camera operator and front counter receptionist at the district HQ station. Max gives up numerous hours of time in these voluntary roles where he interacts with members of the public (at times when those members of the public are distressed). He interacts in a very professional and engag-ing way that supports police by providing either a welcoming or watching role over members of the wider Canterbury community. Max can be commended for his consistent and dedicated service to the community as a person who genuinely cares about the commu-nity and its functioning.Pam Harris

Pam came to New Zealand in 1999 having volunteered and then worked in paid work for a local community organisation in the United Kingdom. Pam has been volunteering at Age Concern Can-terbury for 14 years, working either on reception or as a client liaison. In the liaison role Pam works as a bridge between Age Concern and the individual who is often quite lonely and vulnerable. She has a patient and kind manner and does a great job ringing and speaking with them at length, and ensures that they have ongoing support.

Once its application is approved, the group will be able to apply for funding grants. The group is lead by Merivale resident and mother of three, Charlotte Gray. The group aims to raise more than $70,000 to build a playground at the Merivale Reserve on Rugby St. Once the funds are raised, the playground is expected to take about six weeks to build. Hornby High School Commitment, Achievement, Resilience, RespectYears 7 – 13

In 2013, the Canterbury Earthquake Recovery Authority, CERA, commissioned a survey on Youth Wellbeing. During the September-December period, 3300 12-24 year olds responded and their views were recently published in a report. See: cera.govt.nz/youth-wellbeing-surveyIt is a complex area. As the report states, interpretation of the results must be made with caution as the views of those who chose to participate in the online survey may differ greatly from the total population. Nevertheless, the report is a valid “time and place” representation of the many young people who responded.We are talking with our students about the report and asking how we, the Hornby HS community, see ourselves in relation to the results; Quality of Life, Health and Wellbeing, Social Connectedness and others. I have focused in particular on one question, Perceptions of greater Christchurch as a place to study, work and play in 2013. The results to this are: •  52% agree that “there are good employment opportunities for me in greater Christchurch if I wanted to find employment or change jobs.”•  57% agree that “there are good opportunities for me to advance within a career within greater Christchurch.”I hope that these results are not representative of all young people.  To have 43-48% believing Christchurch is not a good place to advance a career would be concerning. Yes, things are slower than we would want and there has been recent commentary that the rebuild is only 10% complete, but without being simplistic, the 10% statistic shows how much further opportunity over the coming years awaits young people as the renewal and its supporting infrastructure continue to grow. Despite the variation of experience within our city, the overall message that young people should be receiving about Christchurch is one of supreme optimism. How will they contribute to the “new Christchurch”, the renewal of our – of their – city? As this page shows, Hornby HS, like all schools, is playing its part to prepare students, academically and socially, for their part in the exciting renewal of Christchurch. Whilst acknowledging the unevenness of people’s past and present experiences, there is so much ahead of us about which we should be optimistic.

Senior students recently had an assessment week to prepare for examinations at the end of the year. They had practice examinations, opportunities to complete internal assessment and extra time in their practical subjects. Reports containing useful advice will be issued by the end of term. Senior students are beginning to realise that the end of the academic year is not so far away.

Saturday ski trips were offered to students over three weekends in August. They are an ideal opportunity to learn to ski, snowboard, or just have fun at Mt Hutt. The trips this year were blessed with fantastic weather. Pictured on the beginners’ slope are Krizia Dominguez and Rose Eaton.

Hornby High School recently hosted nine students and a teacher from Fu Jen Catholic High School, in Chiayi City, Taiwan. The visit included taking part in lessons at Hornby High as well as opportunities for shopping and a trip to Queenstown. By the end of

two weeks firm friendships had been made and many of our Taiwanese visitors wished they could stay longer. The school would especially like to thank the host families who took in students and helped make the visit so successful.

Year 12 students and selected Year 11s are able to attend the annual Senior Leadership Camp, this year held at Blue Skies in Kaiapoi. Students learnt some leadership and followership skills from group activities as well as hearing from visiting speakers and senior students currently in leadership roles. On Thursday August 14 the auditorium was packed with several hundred children and parents for the annual Pasifika Fia Fia night. There were performances by children from Hornby High and Sockburn, Hornby, Gilberthorpes and St Bernadette’s primary schools. Each school also made two awards to their students acknowledging their positive leadership or academic progress. At Hornby High Mrs Tuiloma and Mr Peseta are working with the senior Pasifika students to ensure NCEA success.

The Cantamath interschool competition is an important and fun part of the annual school calendar. Hornby High had teams in all levels from Years 7 to 10. While we didn’t win, all teams participated and performed well. Pictured in the foreground of the centre group is the Year 10 team of George Khella, Jack Woodgate, Shontelle Wallace and Josh O’Brien.

The Level 2 Outdoor Education Course is a popular option for students who are interested in a career in tourism, the police or armed forces. A track for land yachts could be opened by Christmas in the Bex-ley Reserve, if plans are approved this week.

The business has been started by Ian Brown who has lived in South-shore and Sumner for 30 years.

He owns a Muffin Break fran-chise.

Mr Brown said he hoped the new venture would “bring a bit of fun” to the area.

“I’ve been thinking for a while I would like to do something a little bit different. We saw all that land out in Bexley just waiting for something to be done there, and we thought it would be something really positive for the area,” he said.

“There’s no shortage of wind out in Bexley, and I think it’ll be a good, positive step toward revitali-sation in the area.”

He put the idea to the city coun-cil in November 2011, and said the planning process had been a long one.

But he said both the city coun-cil and Environment Canterbury have been consulted through-out the planning process, and he hoped the paperwork could be

approved next month.Once approved, the track is ex-

pected to take about a month to build.

He plans to build a track for BloKarts, New Zealand designed wind-powered land yachts, and another track for electric drift karts.

The Burwood-Pegasus Com-munity Board will decide tonight whether to support his applica-tion for a five- year lease of

part of Bexley Reserve.The application will then go to

the city council for final approval.Mr Brown said he hoped to

provide cheaper sessions for schools in the area, and believed the karts would appeal to families.

“Our kids are 21 and 19, but they’ve sailed Blokarts since they were knee high. I have a relative who is in his 80s and also loves the Blokarts, so we know this will re-ally appeal to anyone.”

Cashmere residents hope a planned mountain bike park in the Port Hills will keep problem people off private property.

The park is planned on privately-owned land off Worsleys Rd, which is currently used for forestry.

However, residents have reported people camping, using drugs, driv-ing, biking and hiking on the land, as well as people hunting there.

Bert Govan, director of McVicar Holdings which owns the land, said there was potential for a tragedy there.

“There is potential when there are so many activities there which are not monitored. As a registered forest there aren’t staff there all the time, so we can’t monitor it.”

He said that there was also a lot of damage to fences and trees being caused, mostly through people us-ing four-wheel-drive vehicles on the land.

The company plans to lease the land to international adventure park developers Select Evolution for a mountain bike park.

They plan to build more than 120km of bike trails on the land, as

well as a chairlift and adventure ac-tivities like zip lines and rock climb-ing.

The have not yet been approved by the city council, but a $2 million gov-ernment grant has been pledged for the project.

Residents association chairman Rik Tindall described the current use of the land as chaotic.

“At the moment it is a bit of a free for all up there. I think a lot of people are assuming it is public land, and it isn’t.”

He believed there would be better regulation of the land if the plan went ahead.

He said most residents were very positive about the plan.

“We’re on board because of its ben-efit to the city and the widespread interest in cycling in the city, and because of the commercial draw pro-vide for tourists.”

He said his only concern was around increased traffic in the area, on roads which were not designed for high traffic volumes.

That will be looked at by the city council before they approve the ad-venture park plan, which is currently open for submissions.

Submissions on the plan will close on Friday.

ALL SMILES: Middleton Grange School’s girls’ football team finished third at the Grant Jarvis tournament, which was held in Wellington as part of winter tournament week. The team headed up to the tournament with no idea what to expect, except that the standard of football was likely to be higher than what they were used to in Christchurch. In spite of playing with no substitutes and without their regular goalkeeper, the team went through pool play unbeaten, with four wins and a draw. They lost in the semi-finals to Baradene College, but beat Carmel College in the playoff for third and fourth, taking home bronze medals.

UNBEATEN: St Thomas of Canterbury College went undefeated as they won the Linwood Cup secondary schools’ football tournament in Timaru, scoring 32 goals and conceding just two. Michael White was their leading goalscorer with 12, and Kakeru Yamamoto was named their most valuable player.

Bye to surgical guessworkScientists have developed a new technique to counter the “rapid rise” in knee replacements.

The computerised method will improve the success of replace-ments and prevent costly and unnecessary revisions to existing implants, say researchers of a new study in the Journal of the Royal Society.

Modern knee replacement is a highly successful method of reliev-ing the pain and disability of knee osteoarthritis, usually affecting those aged over 40.

Studies suggest that almost one in two people will suffer from symptomatic osteoarthritis —the degeneration of joint cartilage and underlying bone— of the knee during their lifetime.

More than 90,000 knee replace-ments are performed in the United Kingdom each year but this figure is expected to rise by more than 600 per cent by 2030 because of an ageing population, obesity, and younger people needing to have the surgery.

Patients often require a second knee replacement or “revision”, which can cost up to four times as much as the original surgery and bring increased risk of infection and failure.

Researchers at the University of Bath have developed a semi-automated computer programme to assess the condition of a knee replacement, a task usually per-formed visually by surgeons.

The technique gives an inde-pendent score for determining radiolucency surrounding a hip or knee replacement, which is dark

on an x-ray and can progressively worsen. Radiolucency is transpar-ent to radiation and doesn’t show up on an x-ray.

Richie Gill, professor of Health-care Engineering at the university, said the program would provide a more accurate, independent method to assess the need for a revision.

“Until we did the work that we did all radiolucency lines were looked at by eye by the surgeons,” Professor Gill said.

Standardisation will mean effi-ciency. “What was interesting to us was the lack of agreement between different surgeons looking at the x-rays.

“Surgeons are given limited guidance of how to define radiolu-

cency and use different assessment criteria, which explains the wide and concerning variation found in the surgical assessments in this study,” he said.

“Using a digital computerised tool that accurately identifies pa-tients with progressive pathologi-cal radiolucency, showing severely loosening knee replacements, would ensure correct surgical procedures are applied.

“This will improve patient outcomes and save money spent on operations which may not ulti-mately be successful.”

Prof Gill added that there is a “rapid rise” in the number of knee replacements in the UK, with an increase of seven per cent in the past year.

Now it appears the idea could become fact after a study dis-covered the extent to which our emotional recollections of life may be “reversible”.

In a novel experiment, scientists have successfully manipulated the brains of mice so that they remember unhappy experiences in a positive way, having identified which parts of the brain were involved in forming emotional responses to remembered places or events.

They were able to eradicate a fearful memory associated with a particular part of the mouse’s enclosure, and also to associate fear with an area the mouse had previously linked with pleasant experiences.

The emotions that we attach to events in our past are one of the key pillars of our sense of self, but can also be the root of serious psychological problems.

Scientists at Massachusetts Institute of Technology and Japan’s Riken Institute, who carried out the study published in the journal Nature today, said the insights gained into memo-

ry-forming could help develop drugs to treat people suffering from painful memories.

Our memories are believed to involve two separate parts of the brain. Information about a memory’s context, such as where and how something happened, are stored in the hip-pocampus. Emotions linked to that memory are stored in the amygdala.

In the study, one group of mice was exposed to amild electric shock in a new part of their enclosure, while another group was given the pleasant experience of “socialising with a female mouse”.

Mice which had experienced the electric shock would ini-tially avoid an area of their cage where the lighting was set to “activate” the negative memory, while mice which had been conditioned with the pleasant memory spent more time in the area where that memory was activated.

“In the future, one may be able to develop methods that help people to remember posi-tive memories more strongly than negative ones,” said Susumu Tonegawa, the senior author of the paper.

After 1000 days of attending to the relationship between China and New Zealand, Chinese consul general Tan Xiutian said goodbye recently.

The fi rst consul general in Christchurch, Madam Tan, whose area of responsibility covered the South Island, hosted her farewell party at the Christian Cullen Lounge.

Guests were entertained with cultural performances and a presentation of photography and poetry created by Madam Tan’s husband Zhang Ji Chun, as well as a selection of fi ne food and wines.

Following her career which strengthened the interests of both countries, Madam Tan leaves, as her legacy, a well-established consulate in Canterbury.

Four years on from the Septem-ber earthquake, there are new residents moving in to the red zone.

Native pukeko, bellbird and kereru are just some of the birds making their homes in red zone areas, while there have been re-cent sightings of rare kookaburra, ibis and bittern in the area.

There are no complaints from the new residents about the state of roads, housing or insurance, but local bird experts are con-cerned they may face bigger problems.

Graham Evans of the Christ-church Bird Club said predators, like feral cats, rats and possums, were also moving into the area.

“One of our concerns is that fe-ral cats and rats could be a threat to the birds as they move in, and their numbers could increase just as quickly. Measures need to be looked at to keep those predators away from birds that are mov-ing in, especially when they are vulnerable.”

He said that birds were particu-larly vulnerable when they were nesting in spring, or moulting in late summer.

“The concern is that if some-thing isn’t done there could be a lot of natives killed by these predators.”

Niall Mugan, founder of the Birds of Christchurch birdwatch-

ing site, agreed.He said if efforts weren’t made

to preserve the habitat for the birds, they could disappear as quickly as they arrived.

“There have been birds seen in the red zone that hadn’t been seen for a long time. Birds are very quick to take up homes, but once the rebuild starts we are likely to lose them again.”

He said that similar things had been seen in other cities after disasters.

“I’ve been told about times after the war, when London was flat-tened, and some very rare birds came and nested in the rubble.”

He said most rare birds were endangered because of lack of habitat, and believed setting aside

space for a reserve could make a difference.

But he said that the first step towards creating a sanc- tuary would be identifying which birds were in the area.

The Avon-Otakaro Network, a group formed after the earthquake to look at issues around the river and red zone, has already developed plans for a bird sanc-tuary.

The group would like to build a predator proof fence around the Travis Wetland and part of the

Burwood red zone, which would be open to the public and could include an education centre.

They estimate the cost of the project at about $7 million, with the fence alone priced at about $200,000 per kilometre.

The Canterbury Earthquake Recovery Authority recently released a report which recom-mended grassing the red zone and grazing sheep on it, as the cheapest way to maintain it.

But growing grass on the cleared red zone land has been costed at about $7.5 million, and concerns have been raised about dog attacks and rustling if sheep were grazed in the city.

A week for gas. LPG to be more precise. There were two separate in-cidents that involved plenty of work for firefighters and other agencies.

The first, on Monday was just a short stroll from the Sockburn Fire Station at the Wigram Control Tower where a digger managed to fracture a gas supply line.

The incident took well over an hour and involved the evacuation of a lot of people in the area. This is a precautionary measure.

Any ignition source and the right mix can be catastrophic, as in Man-gere in Auckland on Wednesday when some young folks huffing propane were smoking while doing so. They were critically injured at the time of writing.

The second incident occurred on Wednesday afternoon in Basil Pl, Mt Pleasant when a gas deliv-ery truck left the road and crashed down the hill. Three fire appliances, and a command unit responded to work with the gas company to en-sure no major escape of gas.

More arson in Peterborough St and River Rd earlier this week. These incidents die down and then rise up regularly. They are a danger to anyone who may be dossing in the empty house targeted, they are a danger to the firefighters attend-ing and they are even a danger to the arsonists themselves.

A simple kumara rosti

Ingredients1 Kumara1 tsp Salt1 tsp Coconut oil

DirectionsPeel and grate the kumara and mix through the salt. Cover and leave to sit for 15-20 minutes.

When ready to cook, take handfuls of the mixture and squeeze out as much liquid as you can (the more the better to prevent soggy rosti).

Place the squeezed kumara in another bowl and mix through a little pepper.

Heat some coconut oil in a frying pan to a medium heat. Form the kumara into flat rounds and fry until golden on both sides. You want your rosti cooked through, so ensure your pan is not too hot.

Season with salt to taste and top with a fried steak, fillet of fish or egg.

Stir-fried hokkien noodles with chilli prawns and lemongrassServes 4

Ingredients400g Hokkien noodles, fresh400g Prawns, raw, head and shells on1 Tbsp Vegetable oil, plus 1 Tbsp extra½ Tbsp Peanut oil200g Bean sprouts3 Shallots, finely sliced3 cloves Garlic, finely sliced1 Tbsp Lemongrass, minced1 Tbsp Lemongrass, minced (use the in-ner white part of the stalk)1 stalk Celery, finely sliced2 Red chillies, minced2 Tbsp Garlic chives, chopped1 Lemon, quartered to serve

DirectionsPut the noodles into a large bowl. Pour boiling water over then leave for 3 minutes. Drain in a colander.

Shell the prawns but reserve the heads and shells to make a stock. Devein the prawns.

Put the vegetable oil into a hot wok, then add the prawn heads and shells, toss until they turn red. Add 1 cup of water, bring to a boil then cover and simmer for 5 min-utes. Strain the stock and return to the wok.

Mushrooms in mustard sauceServes 4 This unusual salad or hors-d’oeuvre is easy to make and brings out the best in a mush-room. The longer you marinate them, the softer and juicier they become.

Ingredients3 Tbsp Dijon mustard1 clove Garlic, mashed with ½ tsp salt1 Tbsp White wine vinegar1 Lemon, freshly juiced3 Tbsp Extra virgin olive oil2 Tbsp Walnut oil500g Mushrooms, we used brown, white button, and portobello1 Lemon, freshly zested1 handful Chervil, or parsley leaves

DirectionsFor the sauce, to a screw top jar add dijon mustard, garlic, white wine vinegar, lemon juice, extra virgin olive oil, walnut oil and lots of freshly ground black pepper. Shake like mad to emulsify into a dressing.

To marinate, brush off any loose dirt from the mushrooms using your fingers, that’s what they’re for after all! Using a sharp knife, finely slice into a large mixing bowl. Pour the sauce over the mushrooms, toss well and leave to marinate for 1-3 hours.

To serve, toss through lemon zest and chervil (or parsley) leaves. Taste and season accordingly.

Moroccan fish

Ingredients1 Lemon, rind only, cut into thin strips2 cloves Crushed garlic1 tsp Sumac powder2 tsp Ground cumin½ tsp Crushed chilli, paste800g Canned tomatoes, 2 x cans, chopped Moroccan style4 pieces White-fleshed fish fillets, skinned and boned1 to serve Fresh coriander1 to serve Lemon, wedges2 Onions, peeled and finely chopped

DirectionsHeat oil in a large frying pan and add onion, garlic, lemon rind, sumac, cumin, crushed chilli paste and tomatoes.

Cook, stirring often, for 2 minutes.Cut fish into 6cm pieces. Add to tomato

mixture and cook over a medium heat until fish is cooked through.

Serve with couscous and garnish with coriander and lemon wedges.

Drop the shelled prawns into the sim-mering stock and leave until they just begin to change colour. Strain again and reserve the stock.

Heat the second measure of vegetable oil with the peanut oil in the wok. Fry the beansprouts, shallots, garlic, lemongrass and celery until soft and golden.

Add the remaining stock, noodles and prawns. Stir fry for two minutes then serve with plenty of garlic chives and chillies - of-fering lemon wedges on the side.

With the arrival of spring, the promise of warmer weather is just around the corner.

While some plants like it hot, many of us have plants in our gar-dens that require regular and effec-tive watering.

Plants, like people, need more water over the warmer months.

Moisture is lost through leaves, bark and roots in the soil.

Wind is one of the most moisture-sapping elements we have to deal with.

Symptoms of inadequate plant watering are poor plant perfor-mance, plant death, visible water run-off without penetrating the soil, and dry spots and increased levels of pest and disease.

Weak plants are easy targets for bugs and diseases.

Some soils through the summer get so dry, they actually repel water. When this occurs the soil can be described as hydrophobic.

Water your garden once every few days rather than applying a small amount every day.

By watering a little every day you encourage the plants roots to stay on the soil surface to find water.

By deep watering every few days you encourage the roots to go deep-er into the soil to seek moisture.

This benefits the plant as its roots secure the plant further into the soil.

It is wasteful to apply water faster than the soil can soak it in. If you add too much water too fast it will pond, run off and maybe even wash away the soil.

To prevent run-off, water for sev-eral short periods if you are having trouble getting the moisture into your soil.

Add organic matter like manures, pea straw and composts to your soil.

These help the soil hold onto more moisture and make it avail-

able to the plants to take up through their roots.

Remember the golden rule – the more you feed your soil the more it will feed you.

Saturiad is a watering storing product that you will find at your garden centres. You simply add to your soil and it works almost by magic. It enables dry soils to hold onto water and make it available to plants.

Plant groundcover plants in soil that is totally exposed to the air and sun. This exposed soil leeches out the most moisture.

Take care when you apply water

MEASURED: Encourage roots to go deep into the soil for moisture.

CARE: Hand-held watering cans are gentle on new plants.
