February Recipe

This month’s recipe originates from the Women’s cooking club. Thank you to Gayle Jennings for sharing!

Black Bread with Manchego, Marmalade

and Hazelnuts

Ingredients:• 12 half-inch slices black bread or baguette (i.e. pumpernickel)• Olive oil• 4 1/2 ounces Manchego cheese, sliced into 12 half-inch slices• 1/4 cup orange and tangerine marmalade (I couldn’t find this

so I mixed pineapple preserves with the orange marmalade)• 1/4 cup toasted hazelnuts, roughly chopped• Black salt (found it at Hubble and Hudson)• Black Pepper

Directions:Preheat oven to 375F. Drizzle the bread with a touch of olive

oil and toast for 10 minutes until crisp (I did it for 7 minutes)With the bread fresh from the oven, start assembling the

canapes. Place one slice of Manchego followed by 1/2 tsp marmalade, follow with hazelnuts and a final touch of black salt and fresh ground pepper. Arrange on platter and serve.

Bon Appetit!

If you have a favorite recipe you would like to share with your WC neighbors please call Kelli Adams at 281-374-6246 or email to kelli [email protected].

Wimbledon Champions Resident

– Demethra Orion

Family helps deck halls at senior community

Demethra Orion, right; Adrienne Satterfield, left; and a Paradise Springs resident enjoy the Christmas decorations they have set up.

Orion, who along with her husband owns Willowbrook Pharmacy, is dedicated to making a difference in the community, and she considers this to be one of the most important aspects of running a local business.

“Our motto is impacting lives of everyday people, so what we do on a regular basis is not only deliver medicine at no cost to people who just can’t get out,” Orion said. “We really try to make sure we get involved with the communities we built into.”

When she heard that the activity director at Paradise Springs wanted to put up Christmas trees around the facility, she immediately recognized it as an opportunity to help out.

“What I did was grab my kids and a couple of other kids I knew and go out and help her,” Orion said. “We just went in.”

The afternoon turned out to be a great deal of fun for everyone involved, residents and volunteers alike. During the four hours Orion and her friends and family were there, they put up numerous trees and decorations, and her daughter Gabrielle even played Christmas songs on her violin for the residents.

While the Orions have participated in events at Paradise Springs -- a regular delivery stop -- before, it is not the only way they have gotten involved in the community.

“In other facilities, we’ve put together Veterans Day events,” Orion said. “I always go through the facility and ask what’s going on and if there’s anything we can do to help. We don’t want to just be a business to them. We want to be a family.”

Orion and her family have lived in the Spring area since 1998, where she started out in the real estate business, a company she remains involved with, before branching out with the pharmacy.

Although their entrepreneurial efforts have been financially successful, Orion tries to emphasize that this is of secondary importance compared with the value of being a valuable member of the community.

“One of the things we did when we came to the immunity was stress to (my children) the importance of getting involved,” Orion said. “I stressed, when you own businesses in the area as well as you work or live in a community, the importance of really working within the community

I’ve been treating headaches for over 25 years and I believe they are very misunderstood by the general public.

It’s only human nature to have a reason for why something is occurring, so when people get a headache they usually try to determine the reason for their headache. Some of the reasons I hear are quite amusing. “My husband gives me a headache, …my boss, …my kids.” “I sit at a computer all day and THAT is the reason I have a headache.”Sometimes people think that headaches are just normal and everyone gets them. I can assure you that headaches are not normal. Headaches are a sign that there is something wrong. Just like all symptoms are signs that something is wrong.

Headaches can be caused by a lot of different things. They can be caused by exotic and dangerous things like a brain tumor, but more often they are caused by common things. The most common reason is pressure on the nerves of the neck that radiate back into the head. When the bones of the spine are misaligned it will put pressure on the delicate nerves that exit the spine. This will in turn cause the muscles of the neck and shoulders to become

tight and develop knots in them You can actually reach up and feel the knots in your muscles. These knots are not normal and are a sign of spinal misalignment and soft tissue damage. Once the spinal misalignments are corrected the muscles relax more and the headaches are gone. Just for fun, I sometimes ask a headache patient when was the last they had a headache, once they have had their spine corrected. They will usually say something like “Gosh I haven’t had a headache in months”. I will ask them if they got divorced and they will look at me funny and say “NO, why?” You said your husband was the cause of your headaches! “Oh I guess I was wrong!”

So headaches are not normal, but are very common. They’re usually caused by nerve pressure built up in the neck which causes tight muscles in the neck and shoulders. They can usually be corrected with gentle chiropractic therapy. You should get this checked even if the headaches are mild because if the bones of the spine are misaligned it will cause arthritic changes to form in the bones of the spine which will limit your ability to move and bend as well as other difficulties. Be proactive about your health.
