It’s that time of year again. Preparations are well under way for the annual fair. On behalf of the board of directors of the Port Perry Agricultural Society I’d like to welcome you to the 161st Port Perry Fair. Come join us this year as we have some popular return-ing events and a few changes. Saturday begins with the return of the Show and Shine. Other afternoon events are the Team K-9 show returning as well as the 4H lawn trac-tor pulls. Capping off the evening is the ever popular Truck & Tractor Pull. Sunday you can take in the sights & sounds of the fair with family & friends enjoying everything from the exhibits & animals to the Demo Derby and the Midway. This year’s concert will feature The Small Town Pistols with opening act and local talent Julien Kelland from Uxbridge. Monday features the return of the expanded Extreme Rodeo! We hope you enjoy a great weekend packed with many things to see and do! Thanks to all our volunteers & sponsors, as well as the community, we couldn’t do it without all of you! So come join us this Labour Day Weekend for a fun filled time! See you there!

It is my pleasure to welcome you to the annual Port Perry Fair. Every Labour Day weekend the Port Perry Agricultural Society hosts a spectacular fair celebrating agriculture. The Port Perry Agricultural Fair offers both the traditional agriculture exhibits that provide a glimpse into rural life and an opportunity for fun and excitement with a variety of activities. The fall fairs are a wonderful tradition that celebrates the importance of agriculture in our community.

Entertainment

When you’re declared Group of the Year at Canada’s biggest country music awards show, that’s major validation from a com-munity with high standards. Ontario’s Small Town Pistols won the CCMA title in 2014 af-ter the brother and sister reunited for their 2013 self-titled debut.Now Amanda and Tyler Wilkinson — formerly of country trio The Wilkinsons — are back with the follow-up, Pistology, an album that is personal and sometimes edgy, covering everything from parenthood and family val-ues to vices and rivals. The first Small Town

Pistols album was written and recorded over three years, in Vancouver, Toronto and Nashville. The group name was chosen as a tribute to their grandma, Ida, whose pistol-like quality Amanda shares.

It is hard to believe that Julien Kelland is only 16 years old when you hear her sing. She has been impressing audiences all over Ontario since her sold out EP release show in March 2013 and Opened for Doc Walker to rave re-views six months later.Playing current and classic pop songs with originals and hauntingly beautiful ballads in between, Julien and her band of five are making huge strides toward their goals in the music industry. Julien found her love for music at a very young age. She started sing-ing around the same time she started talking

and has been performing ever since a surprise wedding performance at the age of six. With two live television performances behind her, Rogers York Daytime show and Uxbridge Today on Rogers Cable10 Durham, Julien has big dreams for her music.

ENTRY FEE: A $5 Exhibitor Membership must accompany all entries foradult classes. This membership entitles you to vote at the Annual MeetingHeld on January 23, 2016.

DEADLINE: Entry forms received by August 21, 2015 will have tags mailed.

To enter after August 21, 2015 please contact the Secretary and special arrangements can be made to receive your tags.

1. In all sections, the competition is open to exhibitors from all parts of the world except where indicated in the prize list.2. Any person who knowingly violates the regulations of the Port Perry Agricul- tural Society, or who seeks to obtain a premium by false pretences or by im- proper interference with the judges, shall forfeit any prize money that may be awarded.3. The Directors will avail themselves of the power vested in them by Section 116 of the Agricultural Act, respecting gambling, etc. exhibiting without the permission of the President and Secretary. Anyone breaking these rules will forfeit all claim upon the Society for premiums awarded.4. The Agricultural Society will not be responsible for any exhibits not picked up at 6:30 pm on the Monday of Labour Day Weekend.5. Exhibitors may send a list of their winnings to the Secretary immediately after the fair.(not compulsory.)6. The Port Perry Agricultural Society reserves the right to interpret its own rules and regulations. Should any dispute or question arise not provided for in the rules and regulations, the decision of the Board of Directors shall be final.7. Exhibitors must provide delivery for articles upon the show grounds and all expenses for transporting to and from the show grounds connected there with.8. While the Directors will take every possible precaution under the circumstances to ensure the safety of the articles sent for exhibition, they wish it to be distinctly understood that the owners themselves must take the risk of exhibiting them. Should any article be accidentally lost, injured or stolen, the directors will give all the assistance in their power toward the recovery of the same but, will not make any payment for the value thereof.9. The Directors reserve the right to pay the prize money on a percentage basis if, through lack of funds, they deem it necessary. This also applies to horse races.10. No prize money will be paid on animals or articles of inferior merit, even though there may be no competition.

NOTE: Stock and all articles must be entered in the name of the bona fide owner. Unless this rule is observed, no premium will be awarded and, if awarded, will be withheld.

order: a waltz, a jig or clog and a reel.• Each contestant is allowed four minutes to complete these three tunes.• Each contestant shall have only one accompanist. The accompanist may chord

RULES AND REGULATIONSEXHIBITING:• All exhibitors must be 18 years of age or older.

JUDGING:• Decisions made by the Judge(s) will be based upon the guidelines suggested

in the Ontario Judging and Exhibiting Standards Horticulture and Floral Design 2003 (OJES) in conjunction with any criteria included in the Show Schedule specific to the Section.

• Criteria in the Show Schedule takes precedence; if there is ambiguity, criteria will defer to OJES and/or the Chairperson.

• Decision(s) of the Judge(s) is/are final. • Name new or unusual flowers/plants if possible (NIP). • Flowers and plants should be free of insects and disease.

CONTAINERS: (glass preferred to avoid spillage) • Shall be clean, clear, plain, uncoloured. • Glass is preferred.

PLANTS & FLOWERS: • Must be grown by the exhibitor for at least 3 months prior to showing. • Plant material for floral design sections may be purchased unless otherwise

stated.

UNIFORMITY: • For sections requesting more than one specimen, uniformity of size, form, colour

& stage of development are important in the judging process. • Collections/Displays & other Sections where different types of plant material is

requested may be exempt (at the discretion of the Judge(s)).

ACCESSORIES: • Definition: Accessories are inorganic (were never living) objects used to enhance

an exhibit; the display/design should be able to stand on its own without the accessories.

• Permitted in Display & Floral Design Sections unless otherwise specified.

FLOATING IN WATER SPECIMENS: • Container should be only slightly larger than the bloom. • Specimen should not touch the sides nor the bottom of the container; remove

as much stem as possible. • Avoid water droplets on the specimen (transport separately).

GROOMING: • Grooming may affect the placement. • Remove spent blooms, ragged leaves, water stains, critters, dust & other “for-

eign” & unsightly material. • Plant/foliage polish is NOT permitted; use warm water for grooming.

MEASUREMENTS: • All measurements (specimens & Floral Design) include the container. • Measurements, where applicable, are taken from the show table top. • Stem length is measured from the surface of the table top to the upper tip of

the specimen or along the progressive length to the end of the stem/bloom for curved stems.

• Bloom size is determined from the largest diameter, in any direction, petal/sepal tip to tip.

• Pot sizes are measured across the diameter from top inside edge to top inside edge.

• Floral Design exhibits are measured in every direction, height, width, & diagonal from the table top & include the container(s)/tray & any accessories.

STAGING/PLACING EXHIBITS:• Show Chair and assistants reserve the right to determine the final staging/place-

ment of the exhibits. • Some exhibits may be moved due to space considerations and/or to allow all

exhibits fair advantage; this includes Floral Design entries. Every effort will be made to ensure the integrity of each entry.

• Final decisions on placement of exhibits rests with the Show Chair.

Roasted Red Pepper Tapenade

Roasted red peppers are divine on their own, but when mixed with fresh herbs and tangy vinegar in this vibrant spread, they get even better.Makes about eight 4 ounce (125 mL) or four 8-ounce (250 mL) jars

Tips: It’s best to roast your own fresh bell peppers for this tapenade. Commercially prepared roasted peppers are often treated with preservatives, which take away from the fresh, homemade flavor. Add any extra finely chopped roasted peppers to a vinai-grette salad dressing or a soup.

• Preheat broiler or preheat barbecue grill to medium6 large red bell peppers 61 cup finely chopped red onion 250 mL2 tbsp minced garlic 25 mL1 tbsp granulated sugar 15 mL1 tsp pickling or canning salt 5 mL1 cup white wine vinegar or red wine vinegar 250 mL1⁄4 cup water 50 mL1 tbsp chopped fresh basil 15 mL1 tsp chopped fresh rosemary 5 mL

1. Prepare canner, jars and lids.2. If using broiler, place red peppers on a baking sheet. Broil or grill, turning often, for about 20 minutes or until blackened on all sides. Transfer to a bowl, cover with plas-tic wrap and let cool completely. Peel off skins and remove stems, cores and seeds. Discard any accumulated liquid. In a food processor or by hand, finely chop peppers (do not purée). Measure 3 cups (750 mL). Reserve any remaining peppers for another use.3. In a pot, combine onion, garlic, sugar, salt, vinegar and water. Bring to a boil over medium heat, stirring often until sugar and salt are dissolved. Reduce heat and boil gently, stirring often, for about 10 minutes or until onion is softened. Stir in roasted peppers and return to a boil, stirring often. Boil for 1 minute. Stir in basil and rose-mary.4. Ladle hot tapenade into hot jars, leaving 1⁄2 inch (1 cm) headspace. Remove air bubbles and adjust headspace as necessary by adding hot tapenade. Wipe rim and place hot lid disc on jar. Screw band down until fingertip-tight.5. Place jars in canner and return to a boil. Process for 10 minutes. Turn off heat and remove canner lid. Let jars stand in water for 5 minutes. Transfer jars to a towel-lined surface and let stand for 24 hours. Check lids and refrigerate any jars that are not sealed.

Competition. To enter this competition, the Grand Champion Quilt must compete in the District 4 Competition. RULES AND REGULATIONS• Open to all Elementary School children. No entry fee at all this year. Pre-regis-

tration is highly recommended. Grades listed refer to the grade the child com-pleted in June 2015, not the grade they will be entering in September 2015.

• High school students are only eligible to enter Class 34.• Send completed Entry Form to the Secretary, Box 401, Port Perry, ON, L9L1A4.

Entry tags will be mailed upon receipt of entry form if received by August 15. After August 15, arrangements can be made to pick up tags.

• One entry per person, per class section. Entries must be new work made since last fair.

• Entries will be accepted on the Friday of Labour Day Weekend from 4 pm to 7 pm, and Saturday of Labour Day Weekend, from 8 am to 10:30 am, at the east door of the Junior Fair building. All entries must be left until 5:30 pm on Monday of Labour Day Weekend. The Port Perry Agricultural Society will not be respon-sible for any exhibits not picked up by 6:30 pm.

• All entries are left at the owner’s risk but will be protected as much as possible by Fair management.

• Any person found guilty of wilfully breaking the rules of the Fair, shall not receive a prize and will be barred from exhibiting for one year.

• Fourth prizes are only awarded if there are more than six entries in any one sec-tion. Fourth prize is NOT awarded on specials.

• Original poems, stories and essays will be judged using the following criteria: 1)Content 2)Grammar and Spelling 3)Penmanship - worth 5 points each

NOTE TO PARENTS:The exhibitor must do all work. Parents are urged to encourage their children but to allow them to complete the work themselves.

Helpful Hints for Exhibitors• Vegetables and flowers are judged on quality and uniformity.• Do not peel or wash Onions, just remove rough outer skin.• Leave 1.2 cm tops on carrots, beets and onions• Leave calyx attached on Tomatoes.• Leave stem attached on Pumpkins and Squash.• Leave 1.2 cm stems on Peppers.• 1/3 of husk and silk removed on Corn, kernels well filled.• Leave foliage and a reasonable length of stem on all flower specimens.• When the list indicates number of blooms, that also includes buds showing colour.• The buds may be left in a spray.• Flowers and vegetables should be in good condition and free of insects.• Houseplants must be grown by exhibitor (minimum of 3 months).• A Gladiola spike should be measured approximately 50 cm from bottom Floret

Dough:2 cups all purpose flour4tsp baking powder1tbsp granulated sugar1/2tsp salt1/4 cup cold butter3/4 cup milk1/4 cup Ontario maple syrup

Filling:1/3 cup butter1/3 cup packed brown sugar11/2tsp cinnamon1/2tsp nutmeg11/2cups peeled, diced Ontario apples.

Prep time: 20 mins, Baking time: 20 mins, makes 10

Dough: In large bowl, combine flour, baking powder, sugar and salt. With pas-try blender or two knives, cut in butter until mixture resembles coarse crumbs. Stir in milk to make soft dough. Gather up and place on lightly floured surface. Knead about 8 times. Roll into 12x8 inch (30cmx20cm) rectangle.

Filling: In microwave safe bowl, melt 1/3 cup of butter in microwave; set aside. In small bowl, combine brown sugar, cinnamon, and nutmeg; set aside. Brush dough with 1tbsp of melted butter. Sprinkle apples evenly over dough. Sprinkle brown sugar mixture over apples. Starting at long side, tightly roll dough up; pinch seam to seal. With serrated knife, cut into 10 pieces.To remaining melted butter, add maple syrup; microwave on high until simmer-ing, about 30 seconds. Pour into 9 inch round cake pan.

Poster Rules and Regulations:1. “Promoting Your Fair” – Name and date of fair must be clearly shown on poster. 2. Must be hand drawn. 3. Poster size: Minimum – approximately 22cm X 28cm, without border
