Chicken Biryani

Chicken Biryani is a classic Indian dish that is served on special occasions. However, it is made occasionally at home for lunch/dinner. Preparing chicken biryani is a bit lengthy process, but you will enjoy it once you taste it. This traditional chicken biryani recipe is a must for non-vegetarian lovers. Chicken Biryani is savored in different parts of India, the best Mughal version dates back to the royal kitchens of Mughals.

Chicken Biryani Recipe

Ingredients Basmati rice - 2 cups

Chicken cut to pieces - 500 gms

green chillies - 2

onions chopped - 1

tomato chopped - 1

coconut milk - 1 cup

cardamom - 1

cloves - 3

star anise - 1

coriander leaves - a bunch

salt as needed

Chilli powder - 1 tsp

oil - 3 tbsp

Ginger Garlic Paste - 2 tbsp

bay leaves - 1

garam masala - 1 tsp

Method The method is divided into 5 steps marination, making barista for chicken biryani, boiling the rice, preparing the gravy, assembling chicken biryani.Step 1 - MarinationMarinate the chicken in 1 cup yogurt, garlic paste and salt for 8 hours.

Step 2 - Making barista for chicken biryaniHeat oil in a kadhai and deep fry the sliced onions till brown. Drain on an absorbent paper.

Step 3 Boiling the riceBoil water in a deep pan. Add cloves, bay leaves, cardamoms, cinnamon. Add salt and rice. Cook till rice is one third done. Drain and spread on a plate.

Step 4 Preparing gravyAdd ginger& garlic paste, red chilly powder, salt, turmeric, half chopped coriander leaves, lemon juice, green chilly, yogurt and the oil in which onions are fried to chicken. Mix well and leave to marinate in fridge for 1 hour.

Heat oil in a non stick pan. Add garam masalas and saute for few seconds. To this add chopped onions, saute till light brown. Add garlic paste and saute for a minute.

Now add tomatoes ,coriander powder, biryani masala, garam masala powder and saute till the spices starting leaving oil. Add chicken along with marinade and cook on medium heat till chicken is tender .Add a tbsp of ghee to enhance its flavour. Set off the flame.

Step 5 Assembling the biryani

Put ghee at the base of a non stick deep pan. Add the gravy of chicken. Now spread some rice all over the chicken evenly. Sprinkle one tablespoon of saffron milk over it, some coriander leaves and some fried onions. Now again add chicken pieces with some gravy. Add rice again and Keep on layering it alternatively. Add some ghee on topmost layer.

Cover pan with a lid and seal it tightly with dough from all sides. Keep on slow flame for 30 minutes. Now serve with raita and enjoy.

My Tip -

Use only good quality basmati rice

The key to good biryani is the way you boil the rice

Try to use all the ingredients without skipping any ingredient

Use the spices in small amount, instead of filling the biryani with spices
