As a traditional French palate cleanser (trou normand) betweencourses, the vineyard offers the following recipe for a granita.
Givré rosemary granita375 ml Givré ice cider35 g sugarRosemary sprigIn a saucepan, heat ice cider, sugar and 100 ml of water without
bringing to a boil. Remove from heat; add a rosemary sprig and letsit for five to ten minutes. Strain, if required, and cool. Place in thefreezer. Every hour, mix with a fork to loosen the ice crystals, untilthe consistency of granita is achieved.
Serve as a trou normand, or as dessertwith fruit and cookies.
