• As with any of the less tender cuts of meat, the secrets are:

• (1) marinade - you can use commercial meat tenderizer in combination with a good marinade or just use meat tenderizer with beer or soda (cola or root beer). Also wine is a good marinade - usually red with beef.

• (2) Cook slowly and in some type of liquid. Such as in stew or a saucy dish - beef broth makes a good base for most sauces. You can make excellent pepper steak, stews, with cheaper cuts of meat.
