COOKING CORNERCorn Chip Taco Soup2 lbs. ground beef, browned1 onion, diced1 tsp. salt3/4 tsp. pepper3/4 tsp. garl ic salt2 cans kidney or pinto beans1 can chil i without beans1 can stewed tomatoes1 can rotel tomatoes1 lb. Velveeta cheese, cubed
Put meat, onion, spices, beans,chil i , tomatoes, and cheese incrockpot. Cook on low 6 8 hoursor high 3 4 hours. Pour over cornchips in individual bowls. Makes alot.
Salad w/Cottage Cheese1 c. Cottage cheese1 (3 oz. ) pkg. l ime Jello1 1/2 c. hot water1/2 c. mayonnaise1/2 c. whipping cream3/4 c. chopped nuts3/4 c. crushed pineapple2 tbsp. sugar
Dissolve Jello and sugar in hotwater. Let set in refrigerator unti lquivery stage. Whip cream,mayonnaise, add Jello and whiptogether. Add nuts, pineapple, andcottage cheese. Return to fridge &allow to become firmly set. Serveon lettuce leaf topped withwhipped cream and maraschinocherry.
Upside Down Apple Pie1/4 c. butter2 deepdish pie crusts2 c. pecans1 1/4 c. brown sugar6 c. sl iced apples1 lemon1 tsp. allspicepinch of salt1 T. flour
Spread butter in bottom of one pie
plate. Lay pecans roundsidedown covering bottom of plate.Press 3/4 cup brown sugar on top.Lay crust on top of this. Put applesin bowl and sprinkle juice onlemon over apples. In anotherbowl, add all spice, salt, flour and1/2 cup brown sugar and mix.Sprinkle this over apples.Carefully spread over crust. Coverwith second crust. Pierce crust forsteam vents. Bake at 450 degreesfor 10 minutes then bake.
Praline Pecan Candy1 c. brown sugar1 c. sugar1 c. milk1 tbsp. maple syrup1 tbsp. butter1/8 tsp. salt1 c. chopped pecans
Combine sugars and milk. Cookover low heat, stirring constantlyunti l sugars are dissolved andmixture boils. Cook unti lthermometer registers 224. Addbutter and pecans. Cook unti l asmall amount of mixture forms asoft ball when dropped in coldwater. Cool quickly to lukewarm.Stir in maple syrup and heat unti lthick. Drop on a buttered surfaceand flatten out into patties. Makes1 dozen.
Mix: Pumpkin Pie Spice4 T. ground cinnamon2 T. ground allspice2 T. black pepper (yes, blackpepper; )2 T. salt1 T. ground nutmeg1 T. ground cloves1 T. ground ginger
Combine all ingredients and storein an airtight container. Makesabout 3/4 cup. I use about 1 t. perpie.
A Bundt Cake3 c. unsifted cake flour3 c. sugar1/2 lb. butter1/2 c. Crisco5 eggs1/2 tsp. baking powder1 1/2 tsp. vanil la1 c. milk
Put everything into a large bowland mix unti l it is fairly smooth andfluffy. There wil l be some smalllumps, but just overlook them. Putin a greased Bundt pan. Place inthe cold oven. Turn the oven to350 degrees and bake unti ltoothpick poked in the centercomes out clean about one hourand 30 minutes. Do not preheatoven!
Peanut Butter Maple Candy1 c. peanut butter1 c. corn syrup, maple flavor11/4 c. powdered sugar11/4 c. powdered nonfat milk
In large bowl, mix all ingredients.Roll into l ittle balls the size ofwalnuts. Refrigerate one to twohours. (Best if made a day aheadof serving time.) Also may berolled in finely shredded coconutor chopped pecans and placed onwaxed paper l ined cookie sheetsunti l chi l led. Makes about 5 dozen.

Chop some cabbage and let fry in2 tablespoonfuls of butter; add 1/2cup of rice (dry) and 1 clove ofgarl ic chopped with 1/2 smallonion. Let fry a few minutes; thenadd 2 quarts of soupstockseasoned with salt, white pepperand a little saffron to taste. Add1/2 cup of grated Parmesancheese; let all cook unti l done.Serve with toasted croutons.
