As we do in our other 60 plus non-wineauctions per year, the focus will be onprovenance and quality with a specialemphasis on relationships with theChâteaux.

As you will see in this catalogue forexample, a very rare original woodencase of 6 bottles of sought afterChâteau Cheval Blanc 1947 and an original wooden case of Châteaud’Yquem 1929 are on offer. Both of

these have been checked by the Châteaux and thesuccessful purchaser will be offered a private tour of theChâteau. Similarly we are offering very rare Imperialesdirectly from the cellar of the newly classified ChâteauPavie as a Premier Grand Cru Classé A. It was a welldeserved promotion and to celebrate this rareachievement, the owners of Château Pavie would bedelighted to welcome the buyers of the Imperiales totheir estate.

While it is our current intention to have all our wineauctions in Hong Kong, and maybe occasionally inSingapore, a good proportion of the lots are sourcedfrom our clients in Europe, so located in the EU. Henceour collectors from Europe and USA have a chance tocompete on some lots with our clients from Asia.

INTRODUCTION

It is with great pleasure that we presentthe first edition of our revamped auctioncatalogue of fine wines.

Spink Fine Wines, a fully owned divisionof Spink, will bring the expertise andintegrity that we are synonymous with inthe world of collectables.

Spink was founded over three hundredyears ago, in 1666, almost a full centurybefore the Prince de Conti paid 8,000livres outbidding Madame dePompadour, the mistress of Louis XV of France, for theDomaine Romanée-Conti. Sadly, DRC was not boughtin a Spink auction, but we are always looking for newideas, in terms of business strategy, client services andtechnology. Like the good vine Spink has deep rootsand is not averse to a bit of flamboyance from time totime.

Over the years travelling to Asia, where we have beenholding auctions for several decades in Hong Kong andSingapore, I was often asked by our Asian based clients,“why don’t you start a wine business? It would fit sowell in your portfolio, you know where there are a lotof rare wines, we trust you, and the vast majority of yourcustomers are also wine lovers”. Finally we did it withthe recent acquisition of Oeno China in Hong Kong,and this is the first fully rebranded edition of our newcatalogue, under the direction of our two wine expertsAnna Lee, Vice-Chairman, based in Hong Kong, andGuillaume Willk-Fabia, Director of our Fine WinesDepartment.

Levels for Bordeaux Bottles

HF – High FillThe standard level for young wines or older bottles recorked at the Chateau.IN – Into NeckPerfect level for a wine of any age. Indicates very good storage conditions. Outstanding level for a wine 10 years of age or older.BN – Base of NeckGood level for a wine of any age. For wines 10 years of age or older, indicates perfect storage conditions.VTS – Very Top ShoulderAcceptable level for red Bordeaux wines around 20 years old.HS – High ShoulderAcceptable for wine over 25 years old. Good for wine over 40 years old.MS – Mid ShoulderNot unusual for wines over 40 years old. Could indicate early signs of cork failure. LMS – Low-Mid-ShoulderUsually indicates deterioration of the cork.LS – Low ShoulderMay indicate poor storage condition and possibly an undrinkable wine.

Levels for Burgundy Bottles

The shape of Burgundy bottles does not allow for a level rating system based on the shoulder of the bottle; levels are describedin terms of centimeters below the cork.Generally, Burgundy bottles with a fill level of 2.5cm or above are considered normal for wines younger than 10 years of age.Wines more than 15 years old of age with fill levels of between 4cm and 6cm are generally considered to be sound provenance,though consideration should be given to the clarity and colour of the wine in the bottle, as well as the condition of the cork.Burgundy bottles with fill levels lower than 6cm may be at risk of being damaged or undrinkable.< 2cm considered an excellent fill for any age.< 3cm a perfectly normal fill for wines 10 years of age and older. It is an excellent fill level for wines 25 years of age or older< 4cm considered a normal fill for wines more than 20 years of age and excellent for wine more than 35 years of age.On the other hand, it should be the cause for concern in wines 15 years and younger.< 5cm not uncommon in older wines of 30 years and more. At this level, some oxidation is likely to have occurred and theremaining wine may be fragile at best and not enjoyable at worst.< 6cm a poor fill level for any wine and not recommended for purchase unless extremely rare.

Unquestionably the greatest Moutonsince the 1986 and 1982, this majestic effort willundoubtedly close down, but enjoy an exceptionally longlife.” Anticipated maturity: 2012-2050.

Tasting Note: “Perhaps the most beautiful packaging everon a Bordeaux bottle, Baroness Philippine de Rothschildliterally produced a work of art in the gold-engraved bottleof 2000 Mouton Rothschild. Of course, one can’t drink theglass, but this is a top-flight Mouton Rothschild, eclipsedonly by the 2006 and 2009. A rich, tannic, earthy style,with loads of crème de cassis and floral notes, the finalblend of 86% Cabernet Sauvignon and 14% Merlot is afull-bodied wine with plenty of coffee, earth, chocolatynotes, and still plenty of tannin to resolve. I gave it ananticipated maturity range of 2015-2050 back in 2003,and that looks on target.”

Tasting Note: “Tasted three times since bottling, the 1996Lafite-Rothschild is unquestionably this renowned estate’sgreatest wine. As I indicated last year, only 38% of the cropwas deemed grand enough to be put into the final blend,which is atypically high in Cabernet Sauvignon (83%Cabernet Sauvignon, 7% Cabernet Franc, 7% Merlot,and 3% Petit Verdot). This massive wine may be thebiggest, largest-scaled Lafite I have ever tasted. It willrequire many years to come around, so I suspect all of uspast the age of fifty might want to give seriousconsideration as to whether we should be laying awaymultiple cases of this wine. It is also the first Lafite-Rothschild to be put into a newengraved bottle (designed to prevent fraudulentimitations). The wine exhibits a thick-looking,ruby/purple colour, and a knock-out nose of lead pencil,minerals, flowers, and black currant scents. Extremelypowerful and full-bodied, with remarkable complexity forsuch a young wine, this huge Lafite is oozing with extractand richness, yet has managed to preserve itsquintessentially elegant personality. This wine is evenricher than it was prior to bottling. It shouldunquestionably last for 40-50 years. Anticipatedmaturity: 2012-2050. The wine of the vintage?”

Although this medium-bodied, fleshy, ripe,concentrated wine is not a blockbuster, as it unfolds, itreveals layers of flavour in addition to this vineyard’s tell-tale complexity. 1982 An Outstanding YearIt is rare that a year is so conducive to vine growth: dry in April, fine and dry in May, a few storms in June, before a sunny andhot July - on the 8th of this month the temperatures reached 40C. August was cooler, but the weather was fine, and even moreso during harvesting. These were ideal conditions for a great wine.

It has thrown off the backward, youthful stylethat existed during its first 25 years of life, and over thelast 4-5 years has developed such secondary nuances ascedar and spice box. The crème de cassis, underlying floralnote, full-bodied power, extraordinary purity, multi-layered texture, and finish of over a minute are a showcasefor what this Château accomplished in 1982. The wine isstill amazingly youthful, vibrant and pure. It appearscapable of remaining fruity and vibrant in 2082! ThankGod it is beginning to budge, as I would like to drink mostof my supply before I kick the bucket. This is a great, stillyouthful wine, and, on occasion, one does understand thehierarchy of Bordeaux châteaux when you see thecomplexity and brilliance of this first-growth. Anticipatedmaturity 2015-2050+.”

Château Pavie has diverse terroirs:

- Terroir typical of the Saint Emilion limestone plateau composed of clay-limestone soil on an asteriated limestone subsoil. Located at an altitude of approximately 85 metres above the Dordogne River

- Terroir called “milieu de côte” (middle of the slope) located approximately 55 metres above the Dordogne and composed of very fine brown limestone.

Many plots have been re-planted. The vines are trained high to increase the leaf canopy. Pruned to six spurs for old vines and 2 for young ones, green harvesting, leaf thinning, as well as picking and sorting by hand.

The way Château Pavie is fermented depends on the vintage. It is kept on the skins for 3 weeks in twenty temperature-controlled wooden vats. Malolactic fermentation in barrel and the wine is aged in new oak for 18-24 months.

Tasting Note: “Bottled the week before I arrived, the 2009Pavie appears to have barely budged since I tasted it twoyears ago. Many experts consider this phenomenal terroirto be nearly as great as that of Ausone. Made from a classicblend of 60-70% Merlot, 20-25% Cabernet Franc and therest Cabernet Sauvignon, this inky/blue/purple-colouredblockbuster reveals wonderful notes of blackberries, crushedrocks, roasted meats, spring flowers, cedar, blueberries,graphite and a hint of vanilla. With extravagant fruitand high extract as well as a hint of minerality, thisstructured, massively intense effort is typical of all theluxurious, perfect or nearly perfect Pavies produced underthe Perse regime (which began in 1998). While built for40-50 years of cellaring, the softness of the vintage and itsflamboyant style is slightly less apparent in the 2009 Paviethan in some of the other Perse wines. “A wine that is just hitting its adolescence, this spectacular Yquem is the greatest vintage of the early 1980s and thebest Yquem since 1976 and before the trilogy of 1990, 1989, and 1988. The wine has a medium-gold colour and anextraordinary nose of honey-dripped coconuts, pineapple, caramel, crème-brulee, orange marmalade, and no doubt afew other items. Just under half the vineyard (3.51 hectares out of 8.03) of Richebourg belongs to Domaine de la Romanée-Conti, spread overseveral plots. This is always a robust wine, deeper in colour than the Romanée-Saint-Vivant but not necessarily as elegant. Thevines currently average 45 years old. About a third of the holding remained in ungrafted vines 1946, with two cuvees beingproduced - a regular Richebourg and a version labelled Richebourg Vieux Cépages. When these vines were grubbed up andreplanted after the Second World War cuttings were taken from la Romanee-Conti which was also being replanted.

The Domaine purchased most of the 6.06 hectares La Tâche in 1933, completing the vineyards by exchanging small plotsin Les Gaudichots. It stretches from the top of the bottom of the mid slope band which contains the grands crus, thuscovering a complexity of terroirs. It is a more flamboyant wine than Romanée-Conti but needs a minimum of 10 years forall its aspects, including the tannins, to integrate.

“This fabled estate has had a brilliant track record since 1978. Lalou Bize-Leroy and Aubert de Villaine seem to have everythingtightly within their grasps, so it is unlikely that some of the lapses in quality control that occurred previously will resurface. I amsure they still cannot understand why their estate is so frequently singled out for malicious attacks, but no one should have anytrouble appreciating the domaine’s 1985s, which are their best wines in decades, even surpassing their sensational 1978s. Theproblem is coming up with the cash to finance them. The wines, aged in 100% new oak, are never filtered.”

Tasting Note: La Tâche 1985 vintage“While I have heard and read that brilliant bottles of the ‘85La Tâche exist, I have never experienced one and I have hadthis wine more than 25 times. So while I concede the possibilitythat such profound bottles do exist, I am frankly dubious. Ahighly complex nose offers lovely spice on the completely maturearomas with equally complex and fully resolved medium-bodiedflavors that deliver a long, fine and pure finish. There is nobenefit to holding the ‘85 further and even from magnumformat (see herein), I would be inclined to begin looking foroccasions to enjoy it; to be clear, it’s not in decline but it is asgood as it’s ever going to be. Consistent notes. Drink: now.”

Tahbilk’s “1860 Vines” Shiraz is produced from ½ hectare un-grafted, pre-phylloxera original Estate planting - amongst theoldest Shiraz vines in the world.

After careful hand-picking, fermentation takes place in century old oak vats followed by maturation in French oak for 18months prior to bottling and then a further 4 years “bottle-aging” before release.

Appropriately an original Tahbilk label dating back to the 1870’s has been tailored for this rare and unique wine.

Since its inaugural release in 1979 this piece of liquid history has become one of the most sought after and collectable winesthroughout the world.

Tahbilk “1860 Vines” Shiraz are listed as “Outstanding” in Australia wine auctioneers - Langton’s Classification of AustralianWine V - the noted reference to Australia’s secondary (auction) wine market - being a “high performing wine in exquisitequality”.

Also, in 2002 US Wine & Spirits Magazine nominated the Tahbilk “1860 Vines” plantings as one of the 25 Great Vineyardsin the World along with the likes of Hermitage La Chapelle, Chateau Lafite-Rothschild, Chateau Yquem, Vega Sicilia andKrug. The vineyards selected were those where the terroir - the French term that roughly translates to the total environmentof a place, including soil, climate, aspect, vine and even history - “is most clearly perceptible in the wine”. Based on theirown tastings, along with recommendations from world-wide industry experts, Wine & Spirits noted that “for all their flavourand richness…there is nothing blunt about them (1860 Vines Shiraz)… they share a transparency that lets the soil showthrough”. The same publication also listed “1860 Vines” Shiraz as one of the “Best Wines of the Year” in its 2005 annualinternational “Buying Guide”.

Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1980The 1980 Grange is predominantly Shiraz with a smallamount of Cabernet Sauvignon (4%) from the Kalimna andother Barossa vineyards, the Clare Valley, Magill Estate,McLaren Vale and Coonawarra. A generally good growingseason with fine and warm conditions, was followed by a coolvintage.

Considered an outstanding vintage, Tim White said of it at atasting in September 1999, Deep crimson brick red. Intense plum, blackberry/ menthol,mocha /liquorice aromas, confection-like small berries, cherriesand plums has a hint of treacle. Smooth and creamy, withflavours of mulberries, cassis and plums, it’s obviously a coolerseason Grange wrapped around by sweet oak. It opens up aftertime in the glass, the tannins are pronounced but offset by stylish,rich, concentrated dark berry chocolaty fruit. First vintageadopting consistent use of signature red Penfolds capsules.

The 1981 Grange is a blend of 89 percent Shiraz and 11percent Cabernet Sauvignon from the Kalimna and otherBarossa vineyards, Magill Estate and the Modbury Vineyard inthe Adelaide Plains. Maturation in new American oak hogsheads for eighteenmonths, a muscular Grange, the question being, will it eversoften out? Alcohol 12.70% Acidity 6.20g/L pH 3.58

Deep crimson brick red. Liquorice, dried fig, baked red fruitaromas. Coffee chocolate oak precede a plump, juicy andstraightforward palate. The tannins are soupy and dense andbuild up very chalky and dry at the finish.

Tasting Note: Penfolds Grange Hermitage 1.5LMAGNUM 1984Max Schubert’s experimental work in the 1950s determinedthat South Australian Cabernet was unreliable, he recognisedthat Grange should be based around a spectrum of fruit. Oneof the great strengths of Grange is, whilst mostly a Shiraz, itdoes not rely on the performance of a single vineyard. Fromfruit grown at the Kalimna and other Barossa vineyards,Magill Estate in Adelaide, and other superior vineyards in theCoonawarra, McLaren Vale and Clare Valley, the 1984 isbalanced with a small amount of Cabernet Sauvignon 5%.

No other red wine in Australia can rival the reputation,consistent quality or proven development pattern of PenfoldsGrange. The winemaking process involves great attention todetail; from selecting the best possible grapes sourced fromlow-yielding, old Shiraz vines through to fermentation andfastidious oak maturation. Generally good weather for thevintage, a cool summer followed by a dry harvest. Ameticulous regimen for vineyard selection, coupled withexacting winecraft, gives each Grange a different character. Aseductively smooth wine this year, early developing and withslippery tannins. Maturation in new American oak hogsheadsfor twenty months. Alcohol 14.2%

A classic Grange, from an outstanding year, the 1988 isexpected to develop superbly for twenty years past release.94% Shiraz, 6% Cabernet Sauvignon from the Kalimna andother vineyards in the Barossa, as well as Padthaway and theMcLaren Vale. An ideal growing season was followed by awarm dry vintage. As they say at Penfolds, it’s the fastidiousbarrel fermentation that gets the oak into the wine, and thewine into the oak. Cherry liqueur intermixedwith cranberry and cassis presented in a seductive, full-bodied,very soft, forward style is truly not the classic Grange in thesense of having huge structure and massive concentration, butthis wine is loaded, very corpulent, and fleshy. The wine isgoing to last for up to two decades, but it will beuncommonly succulent and delicious to drink young.The 1989 is already beginning to show some attractivematuration characters and is developing a little sooner bycomparison to it’s more robust 1988 and 1990 counterparts.91% Shiraz and 9% Cabernet Sauvignon from the Kalimna andother Barossa vineyards, and the McLaren Vale. CONDITIONS OF BUSINESS

Spink Fine Wines and Buyer hereby agree to the followingterms and conditions for auctions conducted by Spink FineWines:

1 The BuyerThe highest bidder shall be the buyer at the ‘hammer price’and any dispute shall be settled at the auctioneer’s absolutediscretion. Every bidder shall be deemed to act as principalunless there is in force a writ ten acknowledgement by SpinkFine Wines that he/she acts as agent on behalf of a namedprincipal.

2 The PremiumThe buyer shall pay to Spink Fine Wines a premium of 22% ofthe ham mer price on all lots.

3 Bidder RegistrationBidding is strictly by paddle only. All floor bidders arerequested to register prior to bidding.

4 PaymentImmediately after a lot is sold the buyer shall:-(a) give to Spink Fine Wines his name and address and, if sorequested, proof of identity: and (b) pay to Spink Fine Winesthe ‘total amount due’.

5 Any payments by a buyer to Spink Fine Wines may be appliedby Spink Fine Wines towards any sums owing from that buyerto Spink Fine Wines on any account whatever without regardto any directions of the buyer or his agent, whether express orimplied.

6 OwnershipThe ownership of the lot purchased shall not pass to the buyeruntil he has made payment in full to Spink Fine Wines of the‘total amount due’.

7 Collection of Purchases(a) The buyer shall at his own expense take away the lotpurchased not later than 7 working days after the day of theauction but not before pay ment to Spink Fine Wines of the‘total amount due’.(b) The buyer shall be responsible for anyremoval, storage and insurance charges on any lot not takenaway within 8 working days after the day of the auction.

8 Buyers responsibilities for lots purchasedThe buyer will be responsible for loss or damage to lotspurchased from the time of collection or the expiry of 7working days after the day of the auction, whichever is thesooner, and neither Spink Fine Wines nor its respective staff oragents shall thereafter be responsible for any loss or damage ofany kind, whether caused by negligence or otherwise, whileany lot is in their custody or under their control.

9 Remedies for non-payment or failure to collect purchasesIf any lot is not paid for in full and taken away in accordancewith Condi tions 4 and 7. or if there is any other breach ofeither of those Condi tions, Spink Fine Wines as agent of theseller shall, at its absolute discre tion and without prejudice toany other rights they may have, be entitled to exercise one ormore of the following rights and remedies:-(a) to proceed against the buyer for damages for breach ofcontract;

(b) to rescind the sale of that or any other lots sold to thedefaulting buyer at the same or any other auction;

(c) to re-sell the lot or cause it to be re-sold by public auctionor private sale and the defaulting buyer shall pay to Spink FineWines any resulting deficiency in the ‘total amount due’ (afterdeduction of any part payment and addition of re-sale costs)and any surplus shall belong to the seller.

(d) to remove, store and insure the lot at the expense of thedefault ing buyer and, in the case of storage, either at SpinkFine Wines or elsewhere;

(e) to charge interest at a rate of not exceeding 2% per monthon the ‘total amount due’ to the extent it remains unpaid formore than 7 working days after the day of the auction;

(f) to retain that or any other lot sold to the same buyer at thesame or any other auction and release it only after payment ofthe ‘total amount duel;

(g) to reject or ignore any bids made by or behalf of thedefaulting buyer at any future auctions or obtain a depositbefore accepting any bids in future;

(h) to apply any proceeds of sale then due or at any timethereafter becoming due to the defaulting buyer towardssettlement of the ‘total amount due’ and to exercise a lien onany property of the defaulting buyer which is in Spink FineWines’ possession for any purpose.

10 Liability of Spink Fine Wines and SellersAll goods are sold “AS IS”. Illustrations in catalogues are foridentification only. Buyers should satisfy themselves prior tothe sale as to the condi tions of each lot and should exercise andrely on their own judgment as to whether the lot accords withits description.

11 Unsold LotsSpink Fine Wines reserves the right to charge commission upto one- half of the ‘stated rates’ calculated on the ‘reserveprice’ and in addition ‘expenses’ in respect of any unsold lots.

12 Spink Fine Wines sells as agent for the seller and as such isnot re sponsible for any default by seller or buyer.

13 Any representation or statement by Spink Fine Wines in anycatalog as to authorship, attribution, genuineness, origin, date,age, provenance, condition or estimated selling price is astatement of opinion only. Every person interested shouldexercise and rely on his own judgment as to such matters andneither Spink Fine Wines nor its respective staff or agents areresponsible for the correctness of such opinions.

14 While the interests of prospective buyers are best served byatten dance at the auction, Spink Fine Wines will, if soinstructed, execute bids on their behalf, neither Spink FineWines nor its respective staff or agents being responsible forany neglect or default in doing so or for failing to do so.

15 Spink Fine Wines shall have the right at its discretion torefuse admis sion to its premises or attendance at its auctions toany person.

16 Spink Fine Wines has absolute discretion without givingany reason to refuse any bid, to divide any lot to combine anytwo or more lots, to withdraw any lot from the auction and incase of dispute to put up any lot for auction again.

17 (a) Any indemnity under these Conditions shall extend to allactions, proceedings, costs, expenses, claims and demandswhatever incurred or suffered by the person entitled to thebenefit of the indemnity.(b) Spink Fine Wines declares itself to be trustees for itsrespective relevant staff and agents of the benefit of everyindemnity under these Conditions to the extent that suchindemnity is expressed to be for the benefit of its staff andagents.

18 Any notice by Spink Fine Wines to a seller, consignor,prospective bidder or buyer may be given by pre-paid mail inHong Kong or Macau or airmail outside Hong Kong andMacau and if so given shall be deemed to have been dulyreceived by the addressee one week after posting.

19 These Conditions shall be governed by and construed inaccordance with Hong Kong law. All transactions to whichthese Conditions apply and all matters connected therewithshall also be governed by Hong Kong law. Spink Fine Wineshereby submits to the exclusive jurisdiction of the Hong Kongcourts and all other parties concerned hereby submit to thenon-exclusive jurisdiction of the Hong Kong courts.

20 In these Conditions of business:-(a) ‘catalog’ includes any advertisement, brochure, estimate,price list and other publication; (b) ‘hammer price’ means theprice at which a lot is knocked down by the auctioneer to thebuyer; (c) ‘total amount due’ means the ‘hammer price’ inrespect of the lot sold together with any premium, andadditional charges and expenses due from a defaulting buyer inHong Kong dollars; (d) ‘sale proceeds’ means the net amountdue to the seller being the ‘hammer price’ of the lot sold lesscommis sion at the ‘stated rates. and ‘expenses’ and any otheramounts due to Spink Fine Wines by the seller in whatevercapacity and howsoever arising; (e) ‘expenses’ in relation to thesale of any lot means Spink Fine Wines’s charges and expensesfor insurance, illustrations, special adver tising, packing andfreight of that lot.

21 The headings in these Conditions do not form part of theConditions but are for convenience only.

NOTICE

BidsIf instructed, Spink Fine Wines will execute bids, and advisethe intending purchaser. Lots will always be bought as cheaplyas is allowed by such other bids or reserves as are on Spink FineWines’ books. Bids may be placed in writing before thecommencement of the sale by giving to Spink Fine Wines a bidform for the lot, duly filled in with the name, contact phonenumber(s), full address of the buyer, number of the lot, andamount of the bid in Hong Kong dollars. All bids when placedby telephone are accepted only at the sender’s risk, and mustbe confirmed to Spink Fine Wines in writing, or by facsimile,before the sale.
