Baileys Cheesecake

Recipe by Chef Dean Samsudin

at the Brambletye Hotel

Ingredients 100g (3 ½ oz) butter, melted

240g (8 ½ oz) crushed digestives

600g (1lb 5oz) cream cheese

25ml (1 fl oz) Baileys

100g (3 1/2oz) icing sugar

300ml (10 ½ fl oz double cream)

¼ tsp cocoa powder

Method1. To make the base, melt butter and mix with crushed digestives. Line a

8/9”spring cake tin with the biscuits (or we use individual moulds about 3” round at the Brambletye).

2. Next, whisk the cream cheese, baileys and icing sugar together to blend.

3. Separately, and this is important, whisk the double cream to soft peaks, then gently fold into the cream cheese and baileys mix. Finish with ¼ tsp cocoa powder to give a nice colour.

4. Top your biscuit base with the mixture, then chill for 1-2 hours.

5. Optional: garnish with strawberry, mint and a chocolate sauce for a dessert the whole family will enjoy.

A good way of using up any Baileys left over from

Christmas, this simple recipe will go down well.

Bill starts, “My mum was the most wonderful lady (he admits everyone says this but it’s true). As you can tell from the book she used to collect sayings: “Never be afraid to try anything. The worse thing that can happen is that you’re back where you started” (and another), “Never be afraid to ask anyone anything, the worst they can say is: b**ger off”, that’s it. So I’ve never been afraid of trying anything’. Thus his foray into the writing world…

His daughter nagged him for years to write his life story, ‘Before you can’t remember anymore,’ she said - though I can’t imagine that happening. At nearly 70 Bill’s memory’s as keen as the eyes of an eagle and his mind is as full of energy, ‘ age is a state of mind… your body might get a bit more tired but your brain shouldn’t’, he said.

Submitting a 5000 word entry to the Alan Titchmarsh writing competition he came second out of just over a 1000 entries. Approached by a publisher, he signed a 3 book deal.

The second book, Billy Brown, If Your Mother Only Knew is about coming of age in the days of Elvis & Teddy boys. The third will be about his time in the fire service. Concurrently penning

a fictional novel based on the art world (Bill owned 4 art galleries after retiring from the fire service), he’s got the writers bug good and proper! Bill said, ‘There’s been fan mail from all over the world. One lady was so thankful for reminding her what a wonderfully simple childhood she had’.

Billy Brown Telling us how it isWhen I met Hartfield resident, Bill Brown, at the East Grinstead Arts Festival last summer, 2 minutes of chatting to him was enough to decide to buy his book, Billy Brown, I’ll Tell Your Mother. I decided to read a couple of chapters to see if it was any good and not bother to finish if it became a chore. A week later it was done and dusted – no mean feat for a mother of 3 young children.

Often real life childhood stories are strewn with tragedy (the writer being the unwilling victim) yet this was no sob story. It was an uplifting, treasured and honest account of a young boy living in post-war London. With mawkish, gushing & tearful entertainment seemingly the mantra of the moment, Billy Brown was refreshingly sincere and true to life. Not all rosy but full of fun, best summed up as the opposite of a depressing read. Gaining popularity through grass roots, even when I mentioned it to the bookshop owner in Salcombe, Devon she had something good to say.

I knew that when it came to interview Bill I was going to hear some gems of wisdom that would be perfect for this month of resolutions – January.

seen through his life, he admits some changes are good and some are bad:

‘It’s difficult to simplify but I will say the worst thing that’s happened to society is the drugs... by far…The biggest change is respect. Respect for elders, for your parents, for the police, respect for other people’s property. When I was a little boy (as you know from the book) I was a terror, a rascal. But if my local policeman told me to get on home I would go, because if I didn’t he would have told my father... he lived in our flats! You did as you were told.

‘I might sound like an old grump but you’ve seen all these things. If only we had old values back, it would make such a difference’.

Talking about his time in the fire service it becomes obvious that whatever Bill does, he does it well. As a fireman he became the most highly qualified man in the service, admittedly taking even obscure courses so he could never be in the position of being told, ‘oh you can’t do so and so, it shouldn’t be done that way… etc.’ Thus another gem of wisdom spilt out: ‘if you’re going to do something... then do it to the best of your ability’ and ‘I’ll only do something if I know I can do it well’.

Such things are easy enough to say but Bill puts his money where his mouth is. He started at Battersea Firestation, moved to busier Brixton (his home turf), and finally got to, at the time, the busiest fire station in the world: North Kensington. ‘Because you’re either going to be a fireman

or you’re not…’ Bill states. ‘In all professions there are some who want to do the profession and some who come along for the ride’.

He served 21 years in the fire service; for the last 15 he was in charge of a specialised rescue unit who don’t fight fires but rescue people in machinery, cranes & even firemen who get into trouble. ‘You have to volunteer to do it (you can’t be forced) and it’s serious. By the end of I was getting a bit saturated, it’s like being at war... dealing with death and destruction every day. But I loved that job’.

He pulls out a book that his partner Jane came across called: “Great Fires of London” It’s literally strewn with pictures of Bill back in the day.

Among his awards he received the Chief Officer’s commendation for bravery for what Bill thought was an uncanny reason: A drunk was throwing tiles at the police from a roof, he’d slipped down and was hanging from the guttering, if he’d let go that would have been it. Bill dragged him up, still kicking and lashing out, tied thick rope around him, slung him over his shoulder and got him down to safety. When he was untied, the drunk legged it, the police in chase. They were impressed by Bill’s non-chalant fearlessness and recommended the award.

As a retired fireman I asked him about his thoughts on Health & Safety: ’Health and Safety is a good thing but it’s been overdone’. He goes on to explain how he came out of his local supermarket, there was a commotion in

the car park. An elderly lady had lost control of her car, it had turned sideways on her as she was getting out. The door was jammed against the lamppost and crushed her ankle. She was trapped and couldn’t move. Bill told the supermarket people that if they just lifted the back of the car and pulled it away from the lamppost she would be freed and they could get her out. But ‘oh no’ said they, Health and Safety regulations. Luckily an off-duty fireman showed up and he and Bill moved the car and got her out. ‘What many people don’t realise is that old people can go into shock, that can be the killer, not the injury itself. So you have to move fast’.

In an age of ‘cover-your-backside’ this is a refreshingly different attitude.

Here’s another gem: ‘You learn as you get older (it’s very rare that a young person will learn it) just how precious life is. Life is so precious. Some young people throw it away

by taking drugs. No matter what your status is in life, you can enjoy it. Even when you get up in the morning, watch the sunrise… it costs you nothing. To look at a sunrise or sunset it’s free. Jane (his partner) grew up in Hastings. Whenever we go to a coastal place she pauses for a moment just to smell the sea… and it’s free…. A walk on the Ashdown Forest, it’s free’.

He continued: ‘I mean children are going to become zombies… If they’re not looking at the

TV they’re looking at another screen. Get away from the bloody television… There’s a report in London that there’s an increase of cases of Ricketts (caused by sun deprivation), they’re stuck in doors all day… Why don’t they go out and play…

‘Don’t I sound like an old grump!’

Well I’m not that old yet (I hope) and it sounds like grounded sense to me.

I realised the biggest impression Bill made is that when you talk to him, it’s just simply him. He hasn’t attached shades of others personalities onto himself. This is rarer than people might think. I left the interview with a spring in my step and an upbeat feeling, looking forward to the next book…

Why table tennis?

When I was seven I was diagnosed with Non-Hodgkins Lymphoma. After chemotheraphy & fighting my way back to health my Grandma bought me a table tennis table to encourage me to get active again…. She thought it would be an easy game for me to play…

What attracted you to this sport?

Although at first I played table tennis for fun, I found that it was one of the few sports I could play competitively. I just had to concentrate my efforts at one end of a table; not have to run the length of a football pitch! In the early days I played for Kent’s able-bodied team and one of my friends told me I should get into the Paralympic set up. I was very reluctant to begin with and was in denial that there was anything wrong with me, in fact I was determined to become the best able-bodied player in England! Eventually I came around to the idea and went along to a Paralympic camp and the rest is history!

What advice would you give to those wishing to compete in their sport at the highest level?

Train hard and give your best all of the time. The effort you put into training and fitness will pay off. Always strive to give a little more and think how you can improve your game next time around.

Talk us briefly through a typical day’s training for you.Training is split into two sessions daily, 9.30 – 12.30 and 3.00 – 6.00 pm. No two days are the same. Training sessions are a mix of ball exercises on the table. Time is also spent on strengthening and conditioning exercises, which are table tennis specific. We also spend a fair amount of time doing stretching exercises, which we need to ease the pain of our disabilities, but which also helps us to recover and prepare for the sheer amount of work we put in. We are very lucky to have both fantastic facilities and a host of great coaches, physios, etc. at the EIS (English Institute of Sport) in Sheffield, which is where I train during the week.

Will was born with arthrogryposis, a rare congenital disorder that affected all four limbs. His feet were splinted from birth and at 3 months old he underwent the first of many operations to assist mobility.

With these beginnings to winning Gold at the European Table Tennis Championships in 2011, quite a journey has been travelled.

What was the highlight of 2011?Without doubt my achievements at the European Championships in Split, Croatia, in October last year. I took a Gold medal in the Class 7 singles event and as one of the GB team we took a Silver medal in the Class 7 team event. The Europeans are a major competition on the tournament calendar and this has been the crowning moment so far in my career. I was also voted European Players Player of the Year, which was something very special for me because around 500 fellow table tennis players are able to vote for who they think deserves to win…. It is certainly quite an accolade to feel that players you respect yourself have voted for you.

What was the toughest moment of 2011?Losing badly in Italy in March when I was knocked out in the first round and then later on that month in Slovenia I was knocked out in the quarter-finals. I had a really bad start to the season and was not playing well at all, but as in all sport you have to put it behind you, look at what went wrong and improve upon it.

What’s your mindset when entering a competition?It’s important to focus on the game in hand and not on future rounds. I take each game as it comes and focus on each point because every point is hard to win.

Who or what gives you inspiration?Two athletes that inspire me are Mohammed Ali and Raphael Nadal, they both have a great attitude and work ethic and that’s why they have got to the top of their sport.

London 2012 certainly inspires me too. I want to play my very best table tennis at the games and to ensure that happens you have to be prepared to focus, work hard, train hard and give your all and then a little bit more. It’s an amazing opportunity to showcase your talent and I am very proud to be representing Great Britain.

What’s the best part of living in the Ashdown Forest area?I absolutely love the stunning countryside, the relaxed atmosphere and the peace and quiet. For the past three years I have been living and training in Sheffield at the English Institute of Sport and I always look forward to coming home.

What local support have you had? Any message to the people of this area?Since April of this year Groombridge folk have been fundraising for me and I really have been blown away by their kindness and generosity. Local companies and organisations in this area have also contributed both financially and in kind. To compete internationally is a very expensive business. I was struggling financially, so I would like to thank everyone for their support; I will do my very best at London 2012!

The year has turned & we are now well on the way

to Spring!

1.75 miles/3km

From Linton’s car park cross the road (with care) into Ridgecar park (summer only). Walk out of the rear past a seat ontoa grass path and in about 50m turn left onto a ride. Remain onthis gently descending ride, ignoring another that bears offright, for about 400m.

On both left and right are linear quarries,now filled with scrub and trees. Suchquarries dot the Forest landscape andprovided stone for roads. Typical heathlandbirds such as nightjar, stonechat, tree pipitand woodlark usually breed in this area andthe ride edges in particular are one of thebest places on the Forest (indeed in Sussex)to see, in May, the yellow flowers of thesmall spiny shrub, petty whin.

The ride bears left, then right through a break in the quarriesand continues descending for 400m to a metalled drive (SandyLane) . On the left is a bowling green and ahead are thecricket pitch and pavilion of Coleman’s Hatch Cricket Club.

On the hill-top in the distance is Gills Lap Clump, the Galleons Lapof the Winnie-the-Pooh books. One old name for the Clump was TheCamel’s Hump, from the shape formed by the silhouettes of its pinetrees. In the 1920s, when the picture (left) was taken, there werevery few trees on the surrounding slopes, just open heathland.

Cross the drive and walk to the right of the cricket pitch. Wherethe ride divides, bear right, leaving the pitch, and bear rightat the next divide after 300m . The ride descends more steeplyand swings right and downhill into woodland and to a bridgeover a stream .

This area is known as Tabell Ghyll. Itswoodland is most unusual for the publicpart of the Forest with its many largetrees, especially beech, and severalhectares of planted sweet chestnutcoppice. The area was sold off from thecommon land of the Forest in 1693 andonly ‘returned’ during World War Two inexchange for the compulsory purchaseof land elsewhere for military reasons.In the map of 1931 (below) the heavilywooded Ghyll is in marked contrast to the heath to the north of thestream – a reflection of different land use over 250 years.

We are always optimistic here on Ashdown Forest. For example every year we hope that dog walkers take their responsibilities seriously and help us protect our livestock by keeping their dogs under control; that motorists adhere to the speed limits and avoid collisions with deer; that visitors pick up their litter and take it home with them; that the Government will take their green and environmental responsibilities seriously; that the funding keeps flowing and, most important of all, that the Dartford warbler, Nightjar, bees, butterflies have made it through the winter and will breed successfully this year and far into the future. We live in hope and certainly most of these wishes are, with your help, achievable!

The English Language: is there method to the madness?

In the seventeenth century a renaissance of the classical languages lead to the ‘b’ being inserted into the words debt and doubt. Previously these words had been spelt ‘dette’ and ‘doute’ and the new spellings were a nod to the Latin words: debitum and dubitare. These other words picked up their odd spellings for the same reason: island, scissors, anchor, rhyme.

Sometimes words which spellings were thus ‘latinized’, also then changed in pronunciation: describe, with a ‘b’ sound, was once descrive; perfect once perfet: verdict once verdit and adventure once aventure.

Millions of school children have the language meddlers to answer for extra hours of stressing over spellings!

Before the 14th Century, in England, it was possible to see where a letter came from by the spelling. With the advent of the printing press this became impossible.

In 1582 the English scholar Richard Mulcaster stated that the English language was of small account and stretched no further than our island (and even there not all over). Little did he know what was in store for our language...

Hospice in the Weald is going for goldDouble Olympic gold winner Dame Kelly Holmes has been unveiled as the very special guest at Hospice in the Weald’s 2012 black-tie corporate dinner.

‘The Torchlight Dinner’ will be taking place on Friday 24th February in the sumptuous surroundings of Hever Castle.

Dame Kelly was born in the area, in Pembury and brought up in Tonbridge: she has been a keen supporter of Hospice in the Weald for a number of years.

“We are delighted that Dame Kelly has agreed to support The Torchlight Dinner and we know that local business people will be really interested to hear what she’s got to say in Olympic year,” says Rachel Holweger, Fundraising Director at Hospice in the Weald. “2012 is a very busy one for her and we appreciate that her time is precious. She’s been a great supporter of Hospice in the Weald over the years and has come to our help again.”

The Torchlight Dinner follows the success of Hospice in the Weald’s very first black-tie corporate dinner – Red8 - which took place in February last year and raised more than £20,000 for the charity.

With Christmas over the question everyone is asking is it going to snow? (as this goes to print it hasn’t yet…) There are a lot of berries on the holly this year. Is nature trying to tell us something that the weather forecasters can’t? With the mild winter our shepherd Caroline is pleased that the grass is still growing and her lambs are getting fat. A mild winter will mean that the bird population will survive and the herds of fallow deer will thrive, which is why we have so many deer. In the past when snow lay on the ground for six weeks or so there was a shortage of food which controlled the deer numbers by natural selection. This is why country gardens get ravaged in the winter months. A well stocked garden is a larder for deer. A seven foot deer fence or stout hedge and a dog is the only way to keep them out and enjoy your garden. There are large herds of Fallow deer on the forest; it is common to see 40 or more Fallow grazing in fields and paddocks. They are now being culled on private estates in significant numbers. There are a few Roe deer on the Forest,

these are our native deer whereas the Fallow were introduced to Britain by the Normans who had a passion for hunting and turned the Forest into a deer park with a pale round the boundary to keep the deer in. A small number of Sika and Muntjack, which are native of Asia, are also on the Forest. Again we urge motorists to reduce their speed whilst driving at this time of year to avoid deer crossing the roads especially on the journey to and from work when the deer are moving.

From Linton’s car park cross the road (with care) into Ridgecar park (summer only). Walk out of the rear past a seat ontoa grass path and in about 50m turn left onto a ride. Remain onthis gently descending ride, ignoring another that bears offright, for about 400m.

On both left and right are linear quarries,now filled with scrub and trees. Suchquarries dot the Forest landscape andprovided stone for roads. Typical heathlandbirds such as nightjar, stonechat, tree pipitand woodlark usually breed in this area andthe ride edges in particular are one of thebest places on the Forest (indeed in Sussex)to see, in May, the yellow flowers of thesmall spiny shrub, petty whin.

The ride bears left, then right through a break in the quarriesand continues descending for 400m to a metalled drive (SandyLane) . On the left is a bowling green and ahead are thecricket pitch and pavilion of Coleman’s Hatch Cricket Club.

On the hill-top in the distance is Gills Lap Clump, the Galleons Lapof the Winnie-the-Pooh books. One old name for the Clump was TheCamel’s Hump, from the shape formed by the silhouettes of its pinetrees. In the 1920s, when the picture (left) was taken, there werevery few trees on the surrounding slopes, just open heathland.

Cross the drive and walk to the right of the cricket pitch. Wherethe ride divides, bear right, leaving the pitch, and bear rightat the next divide after 300m . The ride descends more steeplyand swings right and downhill into woodland and to a bridgeover a stream .

This area is known as Tabell Ghyll. Itswoodland is most unusual for the publicpart of the Forest with its many largetrees, especially beech, and severalhectares of planted sweet chestnutcoppice. The area was sold off from thecommon land of the Forest in 1693 andonly ‘returned’ during World War Two inexchange for the compulsory purchaseof land elsewhere for military reasons.In the map of 1931 (below) the heavilywooded Ghyll is in marked contrast to the heath to the north of thestream – a reflection of different land use over 250 years.
