JRDN You can actually credit the Tower’s creativewine list to another establishment in the samehotel. It’s JRDN (or “Jordan,” for the puristswho prefer the phonetic pronunciation), a veryhigh-end restaurant that swears by the magic itperforms on beef and other meats. Red winesgo swimmingly with that kind of thing — andthat translates to a comprehensive selection atthe bar (the powers that be didn’t forget thewhites, either). Those are the two giantorganic beef patties that come with the Bare Big& Dirty, the central jewel in the Bare Back Grill’samply adorned crown. And that’s not a piece ofdriftwood sitting on your placemat, you big sillyagain. It’s the menu, hand-cut and laminated byBare Back co-owner P.J. Lamont himself. Lam-ont is one of a trio of New Zealanders who builta lot of this place from the ground up — but thatwas fine by them, because the final product wasthat much more genuine.
