I love white Bordeauxs! This is a classic Graves blend of Sauvignon Blanc and Semillon, giving big citrus, slate and melon notes along with great acidity. It’s very refreshing, and pairs quite well with fruit and cheese, chicken dishes, and light seafood. This is one of my favorite warm-weather wines, especially at this price. Enjoy!

BERANZINFANDEL CALIFORNIA 2012

CLARK

Beran California Zinfandel 2012 is a true representation of what Zinfandel can offer with the ripeness of the warmer regions and brightness from the cooler regions. Grapes picked at optimum ripeness combined with extended fruit maceration over 30 days at times then laid to rest for 12 months in a combination of American and French oak has created a flavor-packed, easy-drinking Zin with a soft, supple mouthfeel and balanced acidity. Zinfandel is one of the most expressive and distinctive grape varieties and when made well should continue to evolve and improve in the bottle. —Winemaker

LA CREMAPINOT NOIR MONTEREY 2012

This outstanding vintage delivers a complex nose that offers up both savory and sweet tones; ripe plum and forest floor aromas are highlighted by notes of violet and cocoa powder. Laird’s Applejack brandy is over 100 years old, and Laird’s is one of the first distilleries in the United States. INGREDIENTS:

• 2 oz. Laird’s Applejack• 3/4 oz. lime juice• 3/4 oz. grenadine

DIRECTIONS:

Combine ingredients in a shaker. Shake, shake, shake it off! Pour into Coupe glass, garnish with a wedge

CLARK TRIM, President

Gin has established itself in an interesting place among the categories of distilled spirits. At CWS we have watched over the past years and wondered when Gin would have its turn. First it was Single Malt Scotch that exploded onto the scene. We saw it go from possibly a dozen brands

to more than a hundred today. Vodka, Tequila, Rum, and Bourbon followed right along, flavors leading the way. And until recently, Gin has just maintained a slow plod, with most business being done in value brands. Now, slowly but steadily, Gin is showing growth as a category. The Gin category is experiencing what many industry analysts are calling a bubble; and, the big question is, “when will the bubble burst?” The fact is, Gin keeps beating the analysts’ predictions, and the category continues to see new market entries mostly in the import and craft categories. A lot of the credit is given to the resurgence of the classic cocktail, TV shows such as Mad Men, and millennials. Whatever the reason, there are lots of great new Gin entries in the market today, and the offerings continue to grow.

WHEN WILL THE BUBBLE BURST?

GIN IN THE SPOTLIGHT

CLARK’S FAVORITE:CITADELLE GIN$26.99 (750 mL)

The botanicals used to make Citadelle are juniper, violet root, coriander, almond, lemon rind, orange peel, angelica, cardamom, cassia bark, cinnamon, liquorice, grains of paradise, cubeb, cumin, savory, star anise, nutmeg, fennel and orris root. Neat from the glass one might expect an alcohol burn and high juniper content. Not so! It is surprisingly clean on the nose with soft subtle hints of flowers and herbs. It is perfect in my Martini, but also very nice to mix. This is a connoisseurs sophisticated Gin without the price tag.

My personal history with gin goes back to my Army days. My boss was Major General Niles Fulwyler, who had a favorite and simple libation: gin with an olive over cracked ice in the largest rocks glass available. It was christened the General Fulwyler Martini at White Sands Missile Range where we were stationed. I can promise you that when he walked into the Officers’ Club there, the bartenders had one ready by the time he reached the bar.

Even though the rocks glass is a little smaller these days and vermouth is now admissible, the General Fulwyler remains my go-to cocktail.

Not long afterward I discovered what is probably my favorite bottled spirit—Citadelle gin. Citadelle has been available in Central Arkansas before, but it’s being re-introduced after a long absence. We couldn’t be happier to welcome it back. Made with 19 botanicals, including cardamom, star anise, cinnamon, nutmeg and citrus, French-made Citadelle is clean and bright on the palate. It’s nicely balanced without the over-the-top juniper flavors common to many other gins. I insist on Citadelle when it’s available. Others have similarly high praise; Wine Enthusiast calls Citadelle “a refined standout” among gins; Spirits Review says it “shows what is possible when you take a careful, discriminating and thoughtful approach to producing a spirit.”

By no means am I a gin critic. I just know what I really like. And for my gin martini, the choice is Citadelle every time. You can find out more online at citadelle.com, and you can start discovering this wonderful spirit for yourself now at Colonial.

CHILEA viticultural paradise.

MONTES ALPHA CABERNET SAUVIGNON 2012A leader among Chilean Cabernets, aged for 12 months in French fine grain Allier oak barrels. Intense ruby color, with blackcurrant, chocolate and cigar box aromas; balanced with well-integrated oak. Great complexity of flavors in the mouth; mid-palate is full-bodied and balanced, with remarkably long finish. A superb wine ready to drink now, it can also be chosen for cellaring for future enjoyment. The first 1987 vintage was singled out by the UK’s Wine magazine as one of the best 10-year-old red wines in the world.

CARMENERE 2012Deep and lively ruby-red color. The wine shows elegant Carmenère character, with lovely black pepper aromas, and hints of red berry, chocolate, vanilla and plum. In the mouth it is distinctively smooth, with rounded soft tannins. Long finish. The oak is beautifully integrated and balanced. The grapes come from the El Arcángel Marchigüe estate, located at the western end of Colchagua valley, where, 18 kilometers from the Pacific Ocean, the relatively cool climate allows this late-ripening variety to mature slowly and smoothly and reach full ripeness. Clay soils give strength and power to the wine. After fermentation, the wine is moved to French oak barrels where it is aged for 12 months.
