Spotlight on ChardonnayThe winter season is here and while red

wines take the spotlight during the cooler

months, one particular white wine is an

excellent choice for a holiday meal or as asipping wine for a blustery winter night.

    Chardonnay is a noble, green-skinned

grape variety that originates from the Bur-

    gundy wine region in France.

    Chardonnay grape flavours are greatly

influenced by the terroir where the grape

is grown and the oak used for producing

the wine. Chardonnay truly is a chameleon

    grape.

    For example, cooler-climate Chardonnays

tend to have apple, pear, and other or-

    chard fruit characteristics.

    Ingredients:

2 tsp finely crushed white pepper

    1/8 tsp salt

    1/4 cup dry red wine

    2 tbsp olive oil

2 tbsp finely chopped shallots8 cups finely crushed ice

    1/2 cup kosher salt

2 dozen freshly shucked oysters on the

    half-shell

1 oz beluga, osetra, or servuga caviar

    Instructions:

Combine the white pepper, salt, wine, olive oil,

and shallots in a small bowl and whisk to blend.

    Set aside.

Put 1 cup of the ice in each of eight small shal-low rimmed soup bowls and press down gently

to make a level bed. Sprinkle 1 tbsp of the ko-

sher salt over each bowl of ice. Place 3 oysters

in the their shells on each bed and spoon an

equal amount of the sauce over each. Dot with

    caviar and serve cold.

    Makes 8 servings.

    Instructions

    4 oz eggnog

    1/2 oz white chocolate port

    1 oz Southern Comfort

    Chocolate flakes for garnish

Combine first 3 ingredients in a glass

    The holiday entertaining season is

here and what better time for this tra-

    ditional holiday celebratory beverage:

    Eggnog.

This twist on the holiday classic will

have you dreaming of warmer South-

    ern temperatures during those cool

    winter nights.

    Page 7Ce l lar NotesVolume 1, Issue 12

This winter, enjoy Chardonnay chilled with tur

    or shellfish like oysters.

    Our Chardonnay wines include:

    Heritage Estates Chardonnay - $55

    Grand Cru Chardonnay - $70

    GCI California Chardonnay - $79

CS Australian Chardonnay - $100CS New Zealand Unoaked Chardonnay - $100

En Primeur Australian Chardonnay - $138

    Additionally, the cooler-climate Chardon-

nay wines will occasionally be citrusy with

    definite mineral overtones. Warmer climate

Chardonnays, on the other hand, havemuch stronger tropical tones. And Char-

donnays that are oak-aged will have toasted

notes and a buttery mouthfeel with over-

    tones of vanilla.

While Chardonnays heritage can be found

in the burgundy region, we are seeing fan-

tastic Chardonnay wines coming from Italy,

New Zealand, South Africa, Chile, and

    Argentina. Additionally, California is also

    producing excellent Chardonnay wines with

    their own characteristic style!
