    CHNG 1 - THC PHM RAU U NN TNG CA SCKHE

    Hai cn bnh gy cht ngi nhiu nht ti Hoa K l bnh tim mch vbnh ung th. Bnh tim mch bao gm nghn mch vnh tim (coronaryartery disease), nhi mu c tim (heart attack), tai bin mch mu no (nhimu no) (stroke), suy tim (congestive heart failure), v nghn mch muchn. Bnh ung th bao gm ung th v, ung th i trng v trc trng, ungth d dy, ung th tuyn tin lit v cc bnh ung th khc.

    CHNG 2 - TI SAO N THT NG VTC NGUY C B BNH?

    Theo cc nh khoa hc, c su yu t m nhng ngi n tht c nguy cmc bnh, phn ln l bnh tim mch v ung th: (1) Trong tht ng vt vnhng ph sn lin h nh trng, b, pho mt v sa c cha nhiu chtcholesterol v cht bo bo ha (2) Tht ng vt khng c cht x vcarbon hydrate (3) Tiu th tht ng vt v cc sn phm b sa lm yu htiu ha dn n nhiu dng ri lon ng rut (4) Cht c ca cc loithc n do cng nghip ch bin v phng php nui sc vt theo kiu hini mang li (5) Nhim trng trong tht ng vt, v (6) Cht m proteintht ng vt.

    (1)Cholesterol v cht bo bo ha: Cholesterol ch c trong tht, trong lng trng, b, pho mt, sa v tm c, m khng c trong cc thc phm cngun gc thc vt.

    Do cholesterol khng th ha tan trc tip vo mu, nn t n tm cch gnvo cc protein, vn c th tan c, i vo mu. Tuy nhin, lng

    cholesterol cao, nht l loi cholesterol xu LDL lun lun c khuynh hngtch t chung quanh cc thnh ng mch, gy ra hin tng co tht ngmch v lm hn ch s lu thng ca dng mu.

    CHNG 4 - CHA TR BNH TIU NGBNG THC PHM RAU U

    Thc phm rau u c th ngn nga hu hiu bnh tt, c bit l cc bnhthuc v tim mch, ung th, v tiu ng, ng thi lm gim tin trnh loha con ngi. Ngoi ra, thc phm rau u cn c th cha trc bnhtiu ng loi II. Trong chng ny chng ti trnh by chi tit v nguynnhn v phng php cha tr cn bnh ny bng ch dinh dng vithc phm rau u.

    Ng cc nguyn cht nn chim khong 50 phn trm trong khu phn n

    hng ngy. Cc loi ng cc l: go lt (brown rice), la m (wholewheat), la mch (barley), ht k (millet), v yn mch (rolled oats). Tt cu phi dng lt, c ngha l cha ch st v tinh lc.

    Bt c mt nn vn ha m thc no cng c mt th ng cc lm thcphm chnh. Nh Hoa K, ht la m (wheat), xay thnh bt (flour) v chthnh bnh m (bread) v cc th bnh nng khc l chnh. Bn cnh lng. Cc nc Chu, c bit l Trung Hoa, i Hn, Nht Bn, ThiLan, v Vit Nam, ht la xay v, b cm thnh go v nu thnh cm l

    thc phm chnh. Cc th ht khc l ph. Chu u dng hc mch, kiumch v yn mch. Nga v Trung dng bt kiu mch. Trung ngdng la mch.
