working to end childhood hunger in Colorado. OFL brings to-gether professional chefs, dieti-tians, nutrition professionals, financial planners and other community leaders to volunteer and give back to Colorado com-munities. Volunteers donate valuable time and make a com-mitment to help families at or below the poverty level.

OFL offers five core nutrition curriculums: Adu l t s (E a t i ng Right), children (Kids Up Front), teens (The Power of Eating Right), a par-ent/child series (Side By Side) and a class for adults living w i t h H I V / A I D S (Eating Well). In 2003, a new course was introduced: S a v i n g S m a r t , Spending Smart,

which teaches the basics of budgeting. Classes are hands on, allowing participants to chop, mince, cook and get a little messy. Professional chefs add flair and culinary arts to the class and teach participants that cooking can be both fun and exciting. A nutrition lesson is given each week by a nutrition professional, along with tips on how to shop on a budget. At the

A ccording to the 2000 United

States census, 20% of children are living in poverty and are at risk of hunger in the Denver Metro area. And with Colorado’s popula-tion continuing to grow in leaps and bounds, the poverty percentage is likely to be much higher in 2006. Operation Frontline Colorado (OFL), a non-profit organization operating in nine Colorado coun-ties, actively promotes long-term solutions to hunger and food insecurity by providing low-income families with the cook-ing, nutrition and food budgeting skills needed to make healthy and economical food choices. Program participants are en-couraged to make healthful choices and to become more self-sufficient. This fall, OFL celebrated 11 years of operation in Colorado, resulting in direct impact to over 12,100 individu-als in Denver and surrounding counties. OFL offers courses in Denver and has previously held courses in Idaho Springs, Boul-der County, Weld County, Larimer County and Colorado Springs. In 2005, 200 volun-teers donated more than 4,522 hours to our program. Operation Frontline and its par-ent organization, Share Our Strength, believe “It takes more than food to fight hunger!” And it does. It takes education, skills and sharing our strengths with those who are less fortunate, which is exactly how OFL is

end of class, the participants eat food they helped prepare and receive a bag of groceries with ingredients from the week’s les-son so that they can make the recipe at home. A recent study of OFL Colo-rado’s Eating Right course con-cluded that course participants demonstrated positive knowl-edge and behavioral changes after completing the course, and that healthy eating and smart shopping behaviors continued or were maintained at 3 and 6 months. Ruth Stemler, M.S. R.D., Director of Operation Frontline Colorado, explains “In our strategy to fight hunger, food insecurity and poverty, we are not distributing fish, rather we are teaching families how to fish.” ○
