A flat white and a mushroom coffee please!

We all know that coffee trends are big news, we have had chai lattes, turmeric lattes and now mushroom coffees are popping up in cafes and supermarkets. At the end of 2017 I had my trends crystal ball out and a trending ingredient that I called out for 2018 was the chaga mushroom, fast forward a few months and this trend has come to life. Mushrooms like chaga have anti-inflammatory properties and its these types of mushrooms that are being used in mushroom coffees rather than the more familiar mushrooms that are used for cooking. Look out for mushroom coffee coming to a coffee shop near you soon!

Coke is adding to its range in the US market

Two new Coke products are hitting the shelves in the US. Coca-Cola Georgia Peach and Coca-Cola Californian Raspberry are available in retail and foodservice. This is the first flavour addition to the Coke range since Vanilla coke came out in 2002 (am I the only one feeling old?!?)

Who knew there could be so much controversy about Camembert!

Camembert is synonymous with France but controversially, at the World Championship cheese contest held in the US, a Canadian Camembert made in Montreal was voted the world’s best, beating out French Camembert’s to claim the title. There are now calls for Camembert to get protective status, similar to champagne.

Vanishing packaging ... it's a thing!

Skipping Rock labs is a start up in London that has developed “Ooho” a sphere made from seaweed that is filled with water. The sphere is completely edible. The company’s goal is to make packaging disappear, such a cool product. It’s currently on sale in Selfridges in London.

Fancy changing up your fitness regime and helping the environment?

If you haven’t heard of “Plogging” you will soon. It’s the latest fitness craze in Sweden, it combines jogging with you guessed it, picking up litter. You’ll burn calories and do your bit for the environment!

Tell us a little about yourself, how did you become a mixologist?I'm a bartender over from the States and I came over to Ireland over two years ago. Mixology is big in the U.S, so when working in bars, one must have a background cocktail knowledge.

What is your philosophy on bartending?It's all about connecting with customers, "shooting the breeze" and quick and efficient service with a personal touch.

What do you predict to be the next big thing in drinks?It sounds like Tequila is slowly gaining momentum in Europe, but I'd like to see Mezcal, Tequilas smokier cousin, come into its own.

Would you list the TOP 3 requested drinks by Lemon & Duke customers?Oh, that's a tough one but I feel our L&D Espresso Martini, Money 47 & Elderflower and Peach Fusion are quite popular - the peach fusion goes down very well in our cocktail classes!

How do you think the drinks at Lemon & Duke distinguish themselves from other bars in town?We have a nice combination of classic and contemporary cocktails, all finished with a personalised and attractive touch. All this is coupled with our legendary customer service.

What are some of your favourite ingredients to work with?Well, I'm a huge fan of Whiskey Sours, my favourite drink to drink and to create- so that's the egg whites, the froth!

What is your favourite drink?Anything with Whiskey!

James’ Seafood Chowder with a Bacon and Blue Cheese Savoury Scone and Floating Islands with Bailey’s Irish Cream impressed the international judges.
