Bongiorno, Ono readers! Beingthat my father is full Italian, I amproud to say that my love and

affinity for authentic Italian cuisine isalive and well! Whether it be al dentepasta, gnocchi, ravioli or lasagna — I’ma fan of it all. Now, nothing beats theItalian food found in Italy, but I am veryhappy to say that this week, while in themood for lasagna, I found some Italian/Euro-Asian eateries around town that comeremarkably close.So, instead of traveling thousands of

miles to Italia to lavish in layers of “Ono,You Know” lasagna, I took my taste budsto my favorite hot spots closer to home tomarvel in this zesty dish— even a uniquelasagna-like dish that stands in a leagueall its own.

Ready to take on thishearty meal? I’m sureyou are, because it’sabsolutely eccellente!Mangia, mangia, bella!

Romano’sMacaroni Grill

Classic Italian cui-sine is what Romano’s Macaroni

Grill is all about. Having opened itsdoors in November 2005 at Ala MoanaCenter’s Hookipa Terrace, this familyfavorite brings a taste of Italy right to ourisland home — all thanks to its talentedchefs and kitchen staff, headed by executivechef Michael Longworth.Gigantic portions are common here, so

don’t be surprised if you’re headed homewith a doggy bag or two. Romano’sMacaroni Grill specializes in plates ofpasta, among other tasty treats, and itdoesn’t take a rocket scientist to figureout that I’m crazy about perfecto pasta.However, on this particular visit I just sohappened to be wearing the wrongensemble — white! Knowing that I’dprobably splash tomato sauce on myself,I opted for lasagna instead of spaghetti— and a smart choice that was! Not onlydid I manage to keep my top marinarasauce-free, but Romano’s lasagna is deca-

dently delicious!Properly named Lasagna al Forno

($16.59), Longworth skillfully createsthis easy to eat, mess-free dish, bakedwith authentic Bolognese meat sauce,ricotta and mozzarella cheese, then toppedwith tomato sauce and fresh basil.“Our Bolognese sauce is very good,”

says Longworth, who has 30 years ofexperience in the culinary world. “It’s avery rich sauce with Chianti wine that wereduce down so that it has that nice hiantiflavor, and it also has extra meat and veal— oh it’s delicious!”Now if that doesn’t make your mouth

water, how about the fact that all the pastais freshly homemade to please your palate.“The Lasagna al Forno is one of our

It was there that weobtained an exclusive interview withRumFire executive chef Brett Villarmiaand Starwood Hotels & ResortsWaikiki public relations managerDiana Su who, for the first time ever,gave us a sneak peek into RumFire’snew and improved Pacific Rim-inspired menu set to be presented tothe public later this week. So, turn upthe heat and get ready to feast onimmaculate cuisine that emphasizes

sus-tainable local productsand the signature zesty spice of RumFire thatwe’ve all come to love— some amazing thingsare in store!

DO: So, before wedish about the newmenu here at RumFire,tell us what this estab-lishment is known for.

Villarmia: RumFire isknown for its contempo-rary tapas that aredesigned to be sharedand enjoyed by every-one — there’s a lot of

spice in our cuisine.

DO: Chef Brett, you came on boardin August, just in time to work on thisnew menu. What can people expect?

Villarmia:We’ve created a new con-cept with our new menu and we’recalling it social comfort food. Ourmenu highlights global influences witha distinct Hawaiian focus, and we dis-play this by utilizing local productswhenever possible. And since we areRumFire, there’s a lot of fire and spiceinfused into our food, so it’ll make youenjoy your drink a little more.

Su: We really wanted to bring back alot of the local favorites while also put-ting a twist on it. You can find localproducts anywhere, but it’s rare to finda place that serves up to 70 percent oflocally sourced produce in that localrecipe, and that’s really what we’re try-ing to capture. RumFire is a localfavorite — it’s a local bar that everyonehangs out at — it’s known for its cock-tails and ambiance, so it’s only naturalfor us to really take a more localapproach to the food and steer awayfrom the “Bahawaiian” and just go for

the local favorites. We also wantto give our visitors a genuinetaste of Hawaii.

DO: How does this new menudiffer from the previous menu?

Villarmia: The previousmenu concentrated on“Bahawaiian” cuisine, with a

local, island, Tex-Mex flair, and nowwe’re going into another phase of thecuisine, really making use of the fresh,local ingredients that our islands haveto offer.

Su: It’s now a lot easier for the localfarmers here to become certified tosell to the larger hotels and we’re ableto then purchase more produce, andthat’s why today we’re able to comeup with this locally sourced menu,whereas three years ago all of ourproducts would have been shipped infrom California or any other state.If you’re to compare Hamakua toma-

toes to tomatoes from California, youcan literally taste the difference in thejuiciness and the sweetness of thetomato. You take a vine-ripened toma-to that was picked yesterday and avine-ripened tomato that was picked aweek ago, there’s a huge difference.

DO: Great! So, what inspired thischange to the menu?

Villarmia: The changes camebecause we're trying to keep up withthe culinary trends, and we’re doingour best to stay current. The previousmenu was in place for two years, andwe knew it was just time to make achange — to give RumFire a new life.

DO: What are some dishes on thenew menu that patrons from all overthe world can look forward to?

Villarmia:Well, first off we have theSticky Chicken Wings ($12). The chick-en wings are brined in buttermilk,brown sugar and a little bit of garlic,served with a macadamia nutHawaiian chili pepper honey on ababy waffle that’s spread with somehoney butter.Then there’s the Spicy Ahi Poke

($16) with caramelized Maui onionsambar, habanero peppers, slowlysimmered and mixed with the ahi

It’s then finished with apoke water and sesame wonton.Also, we’re now featuring aGrilled Rib Steak “Pupu” Style($28), with a Kau coffee spice rubserved with smoked Kahuku cornpuree and local garlic confit. Andour “Angry” Mac n Cheese ($8) issomething special here atRumFire — it’s like your tradi-tional mac n cheese, only we uti-lize pepper Jack cheese andsmoked jalapeno. We basicallymake it RumFire-style and kick itup a little by adding chipotle andother spices to it, and it alsocomes complete with a tomato-powder crust. It’s very hip.

DO: In addition to all these won-derful new items, can loyal dinersbe on the lookout for any RumFireoriginals as well?

Villarmia: We’ve changed 90percent of the menu, but we’vekept some RumFire classics. Forinstance, we’re sticking with theKim Chee Fried Rice and theChipotle BBQ Rum Baby BackRibs, which are really popularamong the local guests. Another

classic that we’ve kept on themenu is the edamame that a lotof people seem to return for.

DO: What specific local ingre-dients are utilized in RumFire’snew creations?

Villarmia: Our goal is serve asmuch locally sourced produce aspossible and to be as sustainableas possible. The ribeye that we’refeaturing utilizes sweet corn fromthe North Shore, the ahi pokealso consists of the ogo from theNorth Shore, as well as theKahuku sweet asparagus andMaui onions. The chicken used inour sweet chicken wings is fromState Poultry and the honey itselfis from the Big Island.

DO: Chef Brett, where do youfind your culinary inspiration?

Villarmia: Well, I spend a lot oftime in Chinatown, and everySunday I walk around checkingout the new fruits and vegetablesthey have, and I’m always watch-ing Food Network and theCooking Channel — those type ofthings really inspire me.

DO: What is your overall goalfor this establishment? What doyou want your customers to walkaway with besides a full belly?

Villarmia: I want our gueststo want to come back and eatmore. I want them to havesuch a good time with thefood and drink that theycan’t wait to return.

DO: Chef Brett, you havean impressive culinary back-ground. What brought youto RumFire?

Villarmia: Just thechance to redesign themenu. And althoughthere’s been some stressin obtaining local prod-ucts, the reward is thateveryone will eventual-ly be able to enjoy the food. It’sgreat to see my idea on a plate,which in turn puts smiles on thefaces of many.

Su: Brett is very well known forhis creativity and his local boyroots, and when you pair those

two togetherthat’s exactly where we wantour menu here at RumFire to be— we want it to stay local and wewant it to be creative, and Bretthas done an amazing job.

What started as a place to share a few cherishedrecipes with family and friends has grown into aniconic local restaurant over the past 75 years.

Opened in 1935 by current owner Joy Morihara’s grand-parents, Sekiya’s Restaurant and Delicatessen on KaimukiAvenue is a community staple still serving up traditionalfavorites.

From soups and donburi to seafood dishes, burgers andmore, there is always something to choose from at thiseatery. “We offer a wide variety, the sort of food you caneat everyday,” says Morihara. And since all the delectablemenu items are home-style and cooked from scratch,Sekiya’s has become a home away from home for many. “Alot of customers eat here all the time.”

The establishment also specializes in Okazu, orJapanese delicatessen foods. As the first items sold there,Okazu make up the food foundation of this legendaryspot and are still offered today. Patrons can choose froman assortment of small dishes such as barbecue meat (85cents a slice), miso soup ($1.75 small, $2.95 medium,$4.95 large), and vegetable tempura ($1.10). Frequentersalso enjoy the various sushi options available at the deli-catessen counter as you enter the restaurant.

For dine-in customers, the full course meal accompany-ing the entrée of your choice includes miso soup, rice,tsukemono, and a pot of green tea to complete your diningexperience. However, save room for

dessert because you’ll love the old-diner feel of the fountain service favorites like hotfudge sundaes, milk shakes, and Root Beer Floats.

With a huge selection of homemade comfort foods,you’ll want to make this longstanding restaurant part ofyour family tradition if it isn’t already.

The Old SaiminHouse’s philos-ophy can be

summed up in twowords: simplicity andfamily. Upon enteringthe shop, you won’tfind an overwhelmingmenu or any hiddendining rooms. You’llsimply find the fourthgeneration of thisfamily-owned busi-ness cooking up their classic com-fort foods for a community of long-standing patrons. The restaurant has moved a few

times since its original opening in1962 by Tomizo and Mitsue Ikei,whose family immigrated to Hawaiifrom Okinawa. Back in the days,this iconic establishment wasnamed The Saimin House.

“A lot of people remember whenwe were by Tamashiro Market,”says manager Lois Ikei. Loyal patrons can still find the

same old-fashioned favorites at theeatery’s current location on NorthKing Street. First-timers are welcome as well,

and might like to try the most popu-lar menu item, Wun Tun Min. Softhandmade dumplings, or wun tun,are filled with savory seasoned porkand supplement a comforting, hotbowl of noodles. While they aremade traditionally, Ikei likes thewun tun at this restaurant to be larg-er than usual. It’s no wonder thesesilky treats are a customer favorite. Wun Tun Min comes in small (3

pieces; $5.75), large (5 pieces;$6.25) and x-large (7 pieces; $7.50).If you can’t get enough dumplings,you can order a bowl of plain wun

tun as well,in small (10p i e c e s$7.25), large(13 pieces$8), or x-large (16p i e c e s$9.50). They are so popular that,“we have a regular customer whoorders 21 pieces in one order withno noodles,” explains Ikei. Nowthat is an impressive way to get akanack attack.Another must-have dish is the

Fried Saimin ($8.25), cooked withchar sui, fishcake, cabbage andgreen onion, or however you pre-fer. Like all the menu items at thisrestaurant, the Fried Saimin is sim-ply delicious. Regulars also enjoyother varieties of this dish such asFried Udon ($8.25) and FriedOkinawan Soba ($8.25). In the spir-it of generosity, side soups arecomplimentary with any order offried noodles. Be sure to try the local grinds in

the Combination Plate ($6.60)with musubi, mac salad, Spam andbarbecue sticks, as well as otherfavorites such as Udon (small$5.25; large $6.; x-large $6.75) andWun Tun Udon (small $6.25; large

$7; x-large $8).There are no secrets behind The

“We are the only individual restau-rant that offers live Hawaiian musicseven nights a week,” Chaowasareeexplains. “You are able to come hereand enjoy the music with your meal,just for the price of the dinner. Wedon’t want to offer customers foodonly; we want them to have the wholeHawaiian experience … the food isisland fusion, so that’s why we have

island music. A lot of locals who haveout-of-town guests bring them here forthe unique experience.”

Although Singha Thai was popular,Chaowasaree decided to open Chai’sIsland Bistro so he could focus onfusion cuisine, something he alwaysenjoyed because he “likes to come upwith something different.”

“At Singha Thai, I would alwayscome up with (dishes) that had a littleThai in it, but it was more Euro-Asian,”he recalls. “The guests loved it, butthey said, ‘This is not really Thai food,but it’s really good!’ After a while, I

“That’s the one (entrée) we’ve wonmany awards for,” Chaowasaree states.

Other popular appetizers include theBaked Stuffed Quail ($15) — bonelessquail stuffed with Portobello mushrooms,fresh herbs, sun-dried tomatoes and foiegras — and the dinner menu’s SautéedEscargot & Prawns with HamakuaMushrooms ($15), featuringChaowasaree’s signature recipe.

“We have the best escargot, but it’s notwith traditional garlic and butter,”Chaowasaree explains. “We do a roastedgarlic, chili and ginger sauce with theescargot instead.”

In terms of entrees, Chaowasaree recom-mends the Crispy Whole Snapper ($34),served with sun-dried tomatoes, citrusbuerre blanc and Asian stir-fried vegeta-bles.

“Entrees run between $30-$40,”Chaowasaree says. “We don’t really havedaily or monthly specials, but in ourDining Out ad, we do 50 percent off on thesecond dinner entrée on Sunday, Mondayand Tuesday.”

from $6.95 to $12.95, while dinnerprices range from $14.95 to $18.95.The eatery also features weekendspecials, providing customers withdishes that are not on the regularlunch and dinner menus.

Japanese cuisine located on SouthKing Street.According to Eiki Tamaki, operations

manager at the restaurant, customersenjoy the “homestyle Japanese comfortfood,” and the heart and soul that gointo preparing each dish. The eaterygets its name from one of its can’t-do-without staples — rice. Hinone trans-lates to “sound of fire” and

Mizunone translates to “sound ofwater.” Together, the name captures theessence of cooking in the traditionalmanner, and that process filtersthrough to the food.

our noses. And just as wardrobe styles change at thistime to accommodate the shift in weather, so too dofood choices.After all, a measly salad isn’t going to warm your

bones the way, say, a big bowl of pasta or slice ofpizza would.At Bella Mia Italian Eatery, soul-satisfying Italian

fare is on the menu every day of the year. From hotsubs to oven-baked pastas and gourmet pizzas, thecozy Kaimuki trattoria serves up a slice of authenticNew York-style Italian food found nowhere else onthe island.

“We just wanted to put on the menu things (otherItalian restaurants) didn’t offer — just thinking out ofthe box and what I would serve back home in NewYork,” says Brooklyn transplant and executive chefJoey Gonzalez.Take, for example, the Stuffed Pizza ($26.95). True to

its name, this literal pizza pie begins with a base doughlayer and is stuffed with either a medley of meat(pepperoni, sausage, ham and bacon) or vegetable(spinach, tomatoes, mushrooms, onions, peppers andgarlic), topped with fresh mozzarella and is finishedwith another layer of dough.“It’s gonna look like a big pie!” Gonzalez says of the

It’s no secret that surviving in the restaurantindustry is a tough act. But when a businesscan not only flourish but has the popularity to

expand to a second location, well, that’s an evenrarer feat.Bella Mia Italian Eatery has managed to accomplish all this and

more over the span of two years. Opened in 2009, the casual Italianrestaurant began with its first location on the first floor of the 11thAvenue Atrium in Kaimuki. Thanks to a simple recipe of homemadeItalian favorites like Antipasto Salad ($8.95), Chicken Parmigiana($16.95), Baked Ziti ($9.95), Shrimp Scampi ($18.95) and made-to-order pizzas paired with a side helping of warm, friendly service, BellaMia was able to open an open-air restaurant on South Beretania Streetlast year.“We’ve been doing this a long time, we have a lot of experience and

we love what we do,” says executive chef Joey Gonzalez, who hasworked in kitchens from his native New York all the way to Texas forthe past 28 years.“It brings us a lot of joy and happiness to see customers enjoying

our food, because we enjoy it too.”The chef recently gave customers even more reasons to smile when

two months ago he introduced even more menu items, including BruschettaChicken ($17.95), and a slew of vegetarian options such as the Vegaboli($10.95), Veggie Lasagna ($11.95), Spinach Alfredo Pizza ($13.95),Eggplant Parmigiana ($14.95) and Eggplant Rollatini ($17.95).“There are a lot of healthy people on the island, and they love eggplant,”

Gonzalez says. “It’s nutritious and delicious, as I like to say.”The new menu also offers a little something for those with a sweet tooth,

including Tiramisu ($6.95), Cheesecake ($6.95) and multiple gelato andsorbet flavors including mango, lemon basil, coconut, spumoni, Kona coffeeand Tahitian vanilla ($5.95 each).“We have a very large menu,” Gonzalez says, noting there is a no corkage

fee for BYOB.“You bring the bottle, we got the glass!” he says with a laugh.“And then we do what the customer wants,” Gonzalez adds. “If they want

to sub things we can do that, or if there’s something they don’t like on thedish, we take it off.”The reason the chef can be so flexible with his recipes is because all

items are made fresh byhand every day, from themeatballs to the doughto the sauce.And to continue accom-

modating customers, ear-lier this year Bella Miabegan offering free deliv-ery service to anywherein the Honolulu area.“We’re the only ones

to offer free delivery onthe island, lunch and din-ner,” Gonzalez notes.“We also just startedcatering, and we’ll caterto anywhere on theisland within 24-hournotice. Just call theKaimuki location andask to speak with thechef. We can work withany budget. There’s noorder too small!”

here are a couple of things

you should know before you

venture to Waialae Avenue for

a taste of some excellent

Mediterranean food — the first is

that there is no fat Greek. There’s a

Frenchman, a couple of local cooks

and some very friendly waitresses,

but no fat Greeks. Unless they come in

for lunch once in a while.

Secondly, you should know that the food’s not

all Greek. While a good number of dishes are

popular Greek staples — Souvlaki, Gyros and

Greek Salad, to name but a few — many of the

dishes represent the colorful, olive oil-infused,

fragrant, healthful foods of the entire

Mediterranean region. From Chicken Alexander

($12.95) to Lamb Shanks ($14.95), to the

Levantine-inspired Babaganoush ($6) to

Merguez sausage popular in North African cui-

sine, Fat Greek owner Francois Provenza suc-

ceeds in bringing fresh, healthy food to enthusi-

astic patrons.

Provenza, with his loud laugh, enormous per-

sonality and unbridled passion for good food, is

an impressive host, and just the kind of charac-

ter you might expect to find at the center of this

bustling, Mediterranean-inspired city spot. I

stopped by to chat, laugh, have

lunch and find out more about

the man behind The Fat Greek.

Jo McGarry: Ever since you

opened The Fat Greek, you’ve

built a reputation for great food

and fair prices. Did you expect

that people would like your

cooking as much as they do?

Francois Provenza: (laughs)

Well, it’s good, yes, of course. But

I’m not going to tell you that the

food is good. You have to look at the people en-

joying it, and the people who keep coming back

and having a good time. They tell the story of

the food and if it’s good. But yes, I hoped the

people in Hawaii would like it.

JM: But this is not by any means your first

venture into the restaurant industry.

FP: No, you’re right. I had restau-

rants back in Europe. In San Tropez I

had a beachfront restaurant, and

back in London in the old days I had

jazz clubs, and back in 2000 I opened

a place with Sergio. (Sergio Mitrotti of

Café Sistina).

JM: So what inspired you to open

The Fat Greek ?

FP: All of the years of traveling and

eating good food, and seeing how

people enjoy good food and conver-

sation. I just wanted to bring Mediter-

ranean food — real Mediterranean

food — to people in Hawaii. I wanted

them to enjoy and to see how we eat

in Europe.

JM: How we eat in Europe is

really influenced by dozens of

different cultures, don’t you

think?

FP: Yes, yes, just look at the

Greeks. We traveled all over,

from Africa to Sicily, to India …

and they brought home lots of

good stuff … lots of different

foods. And actually in Greece

you will find good food from

Sicily, because Greece was oc-

cupied during the war by Italy,

so different influences come from all over.

JM: How do you describe the food at the

restaurant?

FP: Well, I think that what we do is Greek food

in the proper manner. And then we do any of the

foods that I love from Spain, Portugal, Italy — I

can cook from any of these countries. So we

taste, we test, and then I create more and more

dishes. It’s simple, healthy, fresh, fresh food.

JM: I love the couscous here. It’s not the

sweet, cinnamon/raisin-infused couscous that

many people might be used to. It reminds me

more of the staple of North Africa, or the kind

I’ve eaten in Tunisia.

FP: I learned how to cook couscous in the Sa-

hara dessert with the Bedouin. They cook it with

lamb in North Africa — not the same way as in

other places, which is sweet. The real way is this

way, the North Africa version. We serve it on

Monday nights with lamb shank and garbanzo

“What happens is theanchovies break down intoa sauce and mix with theother ingredients, the oliveoil, the marinara, the whitewine ... It’s delicious. It’svery good,” he says, addinga Chicken Puttanesca($17.95) and ShrimpPuttanesca ($18.95) alsoare available.

“We just started a newmenu two months ago, andthe Puttanesca’s the newkid on the block,” Gonzalezsays. “So far everyone lovesit; it’s the most populardish right now.”

Ingredients:• 2 racks of lamb, cutinto double chops• 3 tablespoons choppedgreen onion (prefer thewhite part)• 1 tablespoon whiskey• 1 tablespoon sesame oil• 1 tablespoon toastedsesame seeds• 1 1/2 tablespoonshoisin sauce• Pinch black pepper• 4 cups mashed potatoes• 4 cups sauteed vegetables

Preparation:• Cut and trim fat fromthe lamb rack and thencut into double chops; set aside.• In a bowl, add green onion,whiskey, sesame seed, sesameoil, hoisin and pepper and mixtogether. With your hands,squeeze the green onions alongwith mixture to release the oilfrom the onions until onionssoften. Use as a marinade.• Put the lamb into the bowland rub the marinade over thelamb evenly. Let it sit for anhour minimum or you can let itsit overnight• On medium heat, grill yourlamb for a minute on each side.Put in a preheated oven at 350degrees for about three to fiveminutes or longer, depending onhow you like your lamb cooked.

• To plate the dish, put onescoop of mashed potatoes andvegetables. Lean the lambchops against the potatoes tolet it stand up. Surround withthe sauce and garnish with astem of fresh herb.

For the sauceIngredients:• 1 cup red wine • 2 cups veal stock• 1/4 cup brandy• 1/4 pound unsalted butter• In a sauce pot, combine redwine and brandy, and bring to aboil to reduce the liquid by half.• Add veal stock and reduce theliquid to quarter, then add but-ter to thicken the sauce.
