Every so often, my mind wandersaway from the stresses of daily lifeand back to my travels along the

Mediterranean Sea and to the land ofGreece, where I spent one of the bestweeks of my life. My days consisted ofrelaxing by the pool sipping mimosas onthe Santorini isle, enjoying the magnifi-cent sunsets, and discovering the ancientruins of the Acropolis and Parthenon inAthens. And while I took this journey toGreece more than a year ago, I rememberit like it was yesterday. The people wereso friendly, and the food was out-of-this-world delicious — not to mentionhealthy.There’s just something about the

Mediterranean that I can’t get enough of.The beauty of the countries bordered bythis majestic sea is beyond words. I’m

currently planningan adventure toSpain, and it hasalways been adream of mine toexplore the pyra-mids of Egypt first-hand.Yes, while I can

endlessly dreamabout these exoticdestinations, one

thing that is realisticallyaccessible to me at this very moment isthe food! Mediterranean cuisine is char-acterized by its wide range of ingredientsand many regional variations.This week, I scouted out the best “Ono,

You Know” Mediterranean cuisine at thefollowing establishments, where I foundthat grilled meats, pita bread, hummusand falafel are very popular forms of thistasty fare!

The Fat GreekThey say never trust a skinny chef, but

believe me, even though the chefs areskinny at the Fat Greek, I give them mywholehearted trust when it comes tofeeding my appetite. Owner FrancoisProvenza opened the doors to this classicGreek eatery on Waialae Avenue in 2007,and since then its award-winning culinarycreations have kept new and loyal cus-

tomers coming back for more. The FatGreek also has an additional location inWaikiki and a kiosk at Ala Moana Center’sfood court, run by Provenza’s son,Darien.Provenza and his business partner and

adviser, George Stephanos, take theirjobs seriously by only offering the high-est quality of Mediterranean cuisine,which is why I couldn’t resist samplingthe generous portion of The Fat Greek’sTaverna Shrimp ($14.95).Served with pita bread, basmati rice

hen thinking of your tradi-tional saimin stop inHawaii, visions of mom-and-pop, hole-in-the-wall

type of noodle shops often cometo mind. But last October, Joanand Paul Watanabe foreverchanged that image. The coupledecided to turn away from yester-day’s look and modernize everyaspect of the typical saimineatery by opening Tanaka Saimin,a picturesque and spaciousestablishment located on NimitzHighway next to Party City.Booths and tables are contempo-rary and plentiful throughout the5,000-square-foot restaurant,while exquisite artwork by Joan’ssister, Joyce Tanaka-Shields, linesthe walls and graces the cover ofeach menu.

Yet although the eatery sports abrand-new decor, head chef Sing Leecontinues to serve up a variety of tried-and-true favorites.

Dining Out recently sat down withgeneral manager Nani Lee Christian,who whet our appetites by not onlytalking about the classic dishes alreadyserved at Tanaka Saimin, but also therestaurant’s new fare coming in June.

DO: Tanaka Saimin seems like theclassic one-stop shop for local Japanesefood. What can customers expect fromtheir dining experience here?

Christian: Customers can expecthome-cooked meals that offer some-thing for everyone — be it children,teenagers or adults. Our restaurant isvery family-friendly and the ambience isvery relaxing. We want everyone to feelcomfortable here, so we always havemusic playing and big-screen TVs on forpeople to enjoy. However, it’s all about

DO: Tanaka Saimin offers a widespectrum of dishes, many of whichare offered throughout the day andnight. What are some of the morepopular items?

Christian: One of the top sellers isour Saimin Combo ($8.70 large, $8.20small), featuring a bowl of saimin, apiece of teri beef, a pieceof shrimp and yourchoice of macaroni pota-to salad or tossedgreens. Our saimin isvery special, as the per-sonal recipe for ourdashi goes back 55 years.It’s a blend of shrimppaste and Hawaiian saltthat is actually brewedfrom scratch. First-timers here also must trythe Tanaka Special withteri beef and shrimp witha choice of white orbrown rice, or friedsaimin. We also recentlyupgraded our barbecueshort-ribs, and cus-tomers love our barbe-cue sticks, cone sushiand ox tail soup and oxtail stew (available onMonday).

DO: Tanka Saimin’shighly anticipated ben-tos are now available.Tell us about these deli-cious plate lunchesoffered from 6 a.m. to 9p.m. (weekdays) and 6a.m. to 11 p.m. (week-ends).

Christian: We created Bento 1,consisting of teri beef, mahi mahi,Spam and chicken with furikake rice.However, our most popular bentohas been titled the Hearty Manbento with pork chop, hot dog, Spamand chicken with furikake rice. It’snot common to find pork chopincluded in a bento, so it’s veryunique to us here. Customers canenjoy their bentos here or placeorders to go.

DO: Where do the recipes for allthese local favorites come from?

Christian: Many of the recipesoriginate from Joan and Paul. Some Ibrought on to the menu and ourchef, Mr. Lee, also added a few.

DO: Tanaka Saimin will be includ-ing new breakfast items on its menumenu sometime next month, cor-rect?

Christian: Yes! For the month of

June, we have a special promotiongoing on where customers can orderwaffles with topping (strawberry orblueberry) for $4.99. Diners also canreceive the Portuguese SausageOmelet with rice for the same price.These options are all part of ourearly bird special available from 6 to10 a.m. daily.

DO: You recommend that patronssave room for dessert. What aresome of the scrumptious options

available?Christian: Our famous dessert,

Banana Cream Pie ($3.45), is home-made by Paul and the crust consistsof macadamia nut shortbread. Wealso offer a variety of 20 differentflavors, including strawberry, blue-berry and mango, but Banana CreamPie is our most popular. We alsoserve Häagen-Dazs ice cream, whichnicely complements the pie.

DO: The restaurant is alwayspacked with kamaaina enjoyingmouthwatering dishes. To what doyou attribute Tanaka Saimin’s suc-cess?

Christian: The food is alwaysmade-to-order and we have greatspecials like prime rib, which isavailable on Fridays. And you couldsay that our success is attributed tothe wide variety of food that we havehere — we have more than 75 itemsto choose from.

DO: Is it true that Tanaka Saiminwill be revamping its menu soon?

Christian: Yes. In the near future,we will be offering a Japanese break-fast, featuring salmon, mahi mahi ormiso butterfish with egg, furikakerice, miso soup, ocha tea and tsuke-mono, in addition to an Ochazukebreakfast, which is very popularwith locals. It’s served with salmon,furikake, crispy wonton strips andtea over hot rice. It’s set to be a part

of our daily menu, available allthroughout the day. We also will beintroducing a special keiki menu forchildren 10 and under, featuring miniwaffles, mini hot cakes and Frenchtoast for breakfast, and plates withany choice of teri beef, chicken orhot dog with rice and cooked vegeta-bles served all throughout the day.Also, we’ll be replacing our beef cut-let with pork cutlet.

‘Dare to Create’Hanakiat

t’s Memorial Day weekend,which can only mean beach-side barbecues, backyardcookouts and potlucks atthe park — in other words,

three days filled with foods likegreasy burgers, creamy salads andgooey desserts that leave mostfolks dreading the impendingapproach of swimsuit season.

Not to worry. There is still a way to fill up with-out filling out, and that’s with a delicious andnutritious meal from Hanaki Restaurant.

The locally owned restaurant first opened inManoa Marketplace in 1996 as a Japanese all-you-can-eat buffet but switched to shabu shabulast year in order to accommodate customers’changing tastes.

“We decided over a year ago to change overour Japanese buffet to a more healthy style ofrestaurant, yet still maintain great quality infood selections and especially in the taste,”explains general manager Mark Mitsuyoshi.“With our new menu style, anybody can enjoy agreat tasting and affordable meal.”

In shabu shabu, diners cook their meals intable-top hot pots filled with a bubbling broth orsoup base. Not only does the boiling liquid cookthe raw vegetables, meats and other ingredientsto perfection, it also injects a healthy dose of fla-vor to the dish without adding a ton of caloriesor fat (depending on the soup).

“I believe we are the only shabu shabu restau-rant using traditional soup base such as konbudashi, miso and curry, but with a blend of local-style favorite flavors as well,” says Mitsuyoshi ofthe house-made broths that also include a lighthanaki, medium sukiyaki and special spicyrecipe.

All soups cost $5 each, which also includesaccess to a sauce station and shave ice bar in thedining room.

“We also have a healthy herb soup for $9,” hesays of the refreshing blend of goji berries, drieddates, ginseng and special herbs recently addedto the menu.

Once a soup is selected, customers pick outwhich vegetables and meats they’d like to add tothe mix. Vegetable plates cost $2.50 to $3.50 eachand include a variety of fresh produce — enoughto fill an entire 6-by-6-foot refrigerator! — whilemeat and seafood plates start at $4.50 for itemssuch as pork loin, prime rib, lamb, tsukune meat-ball, arabiki, hot dogs, chicken, fish balls, crablegs, shrimp, clams, oysters, squid, salmon, misobutterfish and baby octopus.

Rice, noodles, hot tea and desserts also areavailable, as is a long list of soft drinks, beer, wineand sake.

“For those who don’t want shabu shabu, wealso have an a la carte menu with udon ($10.95-$12.95), donburi ($11.95) and combo plates,”Mitsuyoshi says.

The freshly prepared combination plates ($9.95-$12.95) are a true favorite at Hanaki, according toMitsuyoshi, because customers get the chance toadd even more items like fried fish katsu, takoyaki, homemade gyoza, deep-fried oysters, shoyuchicken and shoyu tofu to their meals.

“Most tables do the shabu shabu with sideorders of shrimp tempura or chicken karaage,” hesays.

And it is exactly this freedom to order whatthey want, how they want it thatkeeps customers satisfied, not

overly stuffed.“With our shabu shabu,

guest can customize theirwhole meal to satisfy their ownunique tastes,” Mitsuyoshi says.“‘Dare to Create’ may be our slo-gan, but it’s true; with our manyselections of soups bases,

meats, vegetables,seafood and noodles,

it’s your own imagi-nation that willcreate the bestshabu shabupot ever … ifyou let it.”

welcomes crowds during alltimes of the day with a menufilled with a variety of entreesat value prices.

“We’re open 24 hours except for Tuesdaynights — Tuesday nights, we close at 10 p.m.and open at 6 a.m.,” says Kenton Tom,Wailana’s general manager. “Breakfast andlunch are our busiest hours. For weekends,

our midnight shifts are really busy, and from10 p.m. to about 2 a.m., it’s pretty busy. Thedinner shifts are steady throughout thewhole week.”

“Our pancake batter is original; wedon’t use a mix,” says Tom. “Customerscan order the banana, macadamia nut,blueberry, pineapple or coconut pan-cakes for just a little more. We sell hun-dreds of those a day.”

Another popular breakfast itemis the Eggs Benedict ($9.85), whichTom considers one of Wailana’ssignature dishes.

“(In the Eggs Benedict), you have thehollandaise sauce, the poached eggsand the smoked ham and turkey breastatop a toasted English muffin,” he says.

While the restaurant is known for itshearty breakfast entrees, customerswill not be disappointed by the restau-rant’s choice of desserts. As of late,among the most popular dessert itemshas been the fried ice cream, accordingto Tom.

“That’s ice cream dipped in batter,then rolled in bread crumbs and it’sfried,” he explains. “You have the icecream inside and crust on the outside,with topping and chocolate. We haveother desserts — like banana splitsand sundaes — but that one (the friedice cream) has been very popular,lately.”

Wailana Coffee House offers differentspecials every day, which has previouslyincluded entrees like leg of lamb androast turkey. Thursdays, though, areconstantly busy because of the restau-rant’s featured oxtail soup. WhileWailana does not offer monthly specials,the restaurant has promotions for holi-days and special occasions, such asMother’s Day, Kamehameha Day,Father’s Day and the Fourth of July. TheKamehameha Day menu includes aHawaiian Luau Dinner ($15.95), com-plete with kalua pig, laulau, lomisalmon and poi, and a ChickenPapaya entrée — seasoned and roast-ed chicken half with a tropicalpapaya-orange sauce. The Father’sDay menu features dishes such as theNew York Steak with Onion Rings($16.95) — steak served with beerbattered onion rings and fresh mush-rooms — and the Chicken Florentine($12.95) — chicken breast atop a bedof bacon and spinach, topped withhollandaise sauce and garnished withcrab meat. Complete dinners areserved from 11 a.m. to midnight.

In addition to its special menus,Wailana Coffee House also offers abanquet menu and banquet facili-ties.

“Our banquet menu is especiallypopular during this season — with

graduations —and around Christmas,” Tom says.“We have two banquet rooms and vali-dated parking.”

While its menu may continue to devel-op in the future, Wailana strives to reachthe same audience — families.

“That’s who we cater to … it’s(Wailana) maintained that theme allthe way,” Tom says. “Of course, we’veupdated the menu and changed items,but the basic theme’s always been thesame — casual family dining.”

distinctly different from other major pizza brands.“The Shakey’s traditional thin crust is well-known, and

the sauce is more on the sweeter side tomato sauce,which I think, with all the different kinds of toppings andspecialty pizza options, really bring out the flavors ofthe pizza,” says local owner Brad Vandeman. “I don’twant to knock the competition, because we’re all differ-ent, but you’ll just have to try it for yourself!”

fundraising opportunities to sports teams, schools and other organi-zations.“We call it ‘fun-raising’ because you can basically come in here and

Pan-Seared Salmon with Coconut Ginger Rice and Pineapple SalsaBy Chef Chai Chaowasaree

Ingredients: • 6-8 ounces salmon filet sea-soned with salt and pepper• 2 tablespoons vegetable oilor butter• ¼ cup steamed broccoli • 2 tablespoons diced pineap-ple• ½ tablespoon diced red bell pepper• ½ tablespoon choppedonion• ½ tablespoon choppedChinese parsley• dash Tabasco• sugar and salt, to taste• 2 cups coconut ginger rice

Coconut GingerRiceIngredients:• 1 cup long grain jasmine rice• ¾ cup coconut milk• ½ cup chicken stock• 1 large piece of ginger• 3 cloves garlic• salt and pepper, to taste Preparation:• Combine all coconut gingerrice ingredients and steam forabout 1/2 hour to 45 minutesor until rice is cooked. Set

coconut ginger rice aside.• To make pineapple salsa,combine pineapple, bell pep-per, onions, Chinese parsley,Tabasco, sugar and salt.
