advent by candlelight at 6:30 p.m.

at the First Presbyterian Church of Kendallville, corner of State and William streets. It will feature fellow-ship and dessert. Kendallville Mayor Suzanne Handshoe will be guest speaker. Reservations are required, as seating is limited, by calling 229-7162. Donations of canned and dry goods will be collected to help restock the Friendship Food Pantry.

perform at 7 p.m. at the Embassy Theatre, 125 West Jefferson Blvd., Fort Wayne.

• Auburn Business and Profes-sional Women will be holding a benefit auction with proceeds going to scholarships at Bridgewater Golf Club, 1818 Morningstar Road. A preview, silent auction and cash bar will begin at 6 p.m. and dinner will be served at 6:30 p.m. Checks may be payable to Auburn Business and Professional Women. • The Glenn Miller Orchestra Christmas will perform at the Blue Gate Theater, 175 N. Van Buren St., Shipshewana at 7 p.m. Details: 888-447-4725.

• The Cromwell Christmas Tree Lighting will be at 6 p.m. There will be crafts for the kids beginning at 6 p.m. At 7 p.m. there will be a tree lighting and a few carols sung around the tree. The West Noble fourth- and fifth-grade choirs will entertain with Christmas music. There will also be door prizes.

• Open houses will be held around Albion at area businesses from 4-7 p.m. Sign up (one entry per person per location) to win one of four $25 Chamber Buck Gift Certif-icates donated by the Chamber of Commerce. S.T.A.R. Bazaar, 4-7 p.m. A variety of vendors will be located

at the Opera House on the north side of the courthouse. Santa will be arriving in town on a horse-drawn wagon at 6:50 p.m. After the tree ceremony, he’ll greet children at Albion Pizza Depot. Treasured Memories Photography will be available to take pictures. Lighting of the tree ceremony will take place at 7 p.m. at the northeast corner of the Courthouse Square, with Christmas caroling. • Kendallville Christmas Parade will be held at 4 p.m. in downtown Kendallville, 100 S. Main St. The annual parade starts at North Side Elementary School on Harding Street and concludes at American Legion Post 86. A tree-lighting ceremony at Bixler Lake will follow at 6 p.m.

• Breakfast with Santa will be served 8-11 a.m. at the Albion Fire Station, 210 Firestation Drive. There will be free kids’ photo ID cards, Santa and his elf, a bicycle raffle and crafts.

• The 12th annual Holiday Bazaar will be held 8 a.m. to 2 p.m. at the Heimach Senior Activity Center, 1800 E. 7th St., Auburn. Christmas/holiday gifts, primitives, antiques and collectibles, crafts, jewelry and more, and a luncheon and bake Sale by the DCCOA Ways & Means Committee and the Auburn Community Band. • Christmas will get started in Fremont with the annual parade at 10:45 a.m., with lineup behind Fremont Elementary School at 10:30 a.m. To participate in the parade, call 495-9010.

• Santa Claus will roll into

Fremont from 11 a.m. to 12:30 p.m., arriving at the American Legion to greet children and take pictures. The Fremont Legion Auxiliary will serve cookies and hot chocolate and Fremont Public Library will have a book and craft for all children attending. The Fremont High School Choir will sing traditional holiday music.

• Women of St. John Lutheran Church Annual Winter Festival from 9 a.m. to 2 p.m. Lunch served from 10:30 a.m. to 1 p.m. Located on the corner of Oak and Rush streets, Kendallville.

• Santa visits Shipshewana. Take the little ones to the town offices for a visit with Saint Nick. Noon to 3 p.m.

Saturday and Sunday, Dec. 6-7• The 25th annual Bethlehem

Marketplace telling the story in Bethlehem the day after Christ was born will be held between 1-5 p.m. A walk-through drama features an all-indoors cast of more than 200. No admission charge at Fairview Missionary Church, corner of S.R. 827 and C.R. 200N, Angola.

Dec. 6, 12, 13, 19, 20• The Albion Lions will hold

their annual Citrus Sales of navel oranges and red grapefruit that will be available at the stoplight in Albion. Saturday, Dec. 6, 10 a.m. to noon; Friday Dec. 12 and 19, 3-5 p.m.; and Saturday, Dec 13 and 20, 10 a.m. to 2 p.m. Cost is $16 per case. Also available will be breakfast

with Santa Dec. 6 at the Albion Fire Station.

When the crust is baked, pour the caramel mixture over the crust, then return the pan to the oven. Bake for an additional 15 minutes, or until set.

Gently sprinkle the milk chocolate bits over the top and allow to melt from the warm bars. Use an offset spatula to gently spread the melted chocolate over the surface of the caramel, taking care to not disturb the caramel layer. Allow to cool completely before removing from the pan and cutting into small bars. Once cooled, store in an airtight container at room temperature for up to a week.

with a whisk, combine the egg whites, vinegar and salt. Beat on medium-high speed until very foamy. Slowly pour in 1/2 cup of the sugar. Continue to beat on medium-high until medium peaks form, about 5 to 6 minutes.

While the egg whites beat, sift together the remaining 1/2 cup sugar, the cornstarch and cocoa. When the

whites have reached medium peaks, stir in the vanilla. Gently fold in the cocoa-sugar mixture in two additions.

Drop by the tablespoon onto a baking sheet, leaving 1 inch between each mound. Bake for 25 minutes, then turn the oven off and open the door of the oven just slightly. Allow to cool slowly in the warm oven for another 20 to 30 minutes. Remove the pan from the oven and finish cooling at room tempera-ture. The cookies should have a soft, marshmallow-like texture.

Store in an airtight container at room temperature for up to a week.

patty, we get the sensation… That they’d be delicious transformed into a holiday cookie. So we did. The result is a simple drop cookie that is simultaneously delicate and fudgy with a heady punch of mint. They beg to be paired with hot cocoa.

CHOCOLATE PEPPERMINT PATTIES

Start to finish: 30 minutesServings: 5 dozen3 cups powdered sugar1 cup cocoa powder6 egg whites2 teaspoons peppermint extractHeat the oven to 350 F. Line 2 large

baking sheets with kitchen parchment.

In the bowl of a stand mixer fitted with the whisk attachment, combine the powdered sugar, cocoa powder, egg whites and peppermint extract. Stir together to mix, then whisk on high for 3 minutes.

Drop by teaspoon onto the prepared pans, leaving about 1 inch between the cookies. Bake for 10 to 12 minutes, or until just set. Allow to cool on the pans before moving. These cookies are very fragile and are best made and enjoyed immediately. They do not store well.

Snickers bar and flip it inside out? You get these delicious holiday cookies. We took that classic candy bar combination of peanuts, caramel and chocolate and turned them into a thumbprint cookie. The result is a crumbly chocolate cookie rolled in chopped peanuts with a Caramel Cream pressed into the center. The combination is outrageously good.

THUMBPRINTSStart to finish: 1 hourServings: 4 dozen1 cup (2 sticks) unsalted butter, room

temperature

1/2 cup granulated sugar1/3 cup packed brown sugar1/4 teaspoon kosher salt1 teaspoon vanilla extract1 egg2 ounces unsweetened chocolate,

melted2 cups all-purpose flour2 cups chopped salted peanuts48 cream center caramel candies (such

as Caramel Creams)Heat the oven to 350 F.In a large bowl, use an electric mixer

to beat together the butter, both sugars, the salt and vanilla until fluffy. Beat in the egg, then stir in the melted chocolate. Add the flour and stir until just mixed.

Roll the dough into small balls, about

1 1/4 inches. Place the peanuts in a small bowl, then roll each cookie ball it the peanuts to coat evenly. Arrange the coated cookie balls on a baking, leaving 2 inches between each. Press a caramel candy into the top of each ball, slightly flattening the cookie in the process.

Bake for 12 to 15 minutes, or until set and golden brown at the edges. Allow to cool on the baking sheets. Store in an airtight container at room temperature for up to a week.

Nutrition information per serving: 140 calories; 70 calories from fat (50 percent of total calories); 8 g fat (3.5 g saturated; 0 g trans fats); 15 mg cholesterol; 16 g carbohydrate; 1 g fiber; 10 g sugar; 3 g protein; 45 mg sodium.

many things, not the least of which is all those special treats that find their way onto holiday tables each year. Though moderation should reign when indulging in delicious holiday treats, what would the season be without a few extra cookies and confections?

Baking is popular come the holiday season, and the following recipe for “Triple-Chocolate Cookies” from Michael Recchiuti and Fran Gage’s “Chocolate Obsession” (Stewart, Tabori & Chang) is sure to add some joy to an already festive time of year.

Triple-Chocolate CookiesMakes about 48 cookies7 ounces unbleached all-purpose flour1-1/2 ounces unsweetened natural

cocoa powder1/2 teaspoon baking soda6 ounces unsalted butter with 82

percent butterfat, at room temperature3-1/2 ounces granulated cane sugar4-1/2 ounces dark brown cane sugar1/2 teaspoon pure vanilla extract1/2 Tahitian vanilla bean, split horizon-

tally1/2 teaspoon fleur de sel in fine grains3 ounces 41 percent milk chocolate,

roughly chopped3 ounces 65 percent chocolate, roughly

chopped

To make the dough:Sift the flour, cocoa and baking soda

together in a bowl. Set aside.Put the butter in the bowl of a stand

mixer fitted with the paddle attachment. Beat on medium speed until creamy. Add both sugars and the vanilla extract. Scrape

the seeds from the vanilla bean into the bowl. Sprinkle the salt over the top. Beat on medium speed just until combined.

Reduce the speed to low. Add the dry ingredients in three additions, pulsing the mixer to incorporate each addition before adding the next one. Pulse just until a crumbly dough forms. Add both chopped chocolates and mix on low speed just until incorporated.

Turn the dough out onto a lightly floured work surface. Knead a few times to incorporate any crumbs.

Divide the dough in half. Roll each half into a log about 11/4 inches in diameter and 12 inches long. As you roll, gently push the ends toward the center occasion-ally to prevent air pockets from forming and to keep the logs at an even thickness.

Wrap the logs in plastic wrap and refrigerate until firm, at least three hours or up to three days.

To bake the cookies:Preheat the oven to 325 F. Line the

bottoms of two 12-by-18 inch sheet pans with parchment paper.

Remove the logs from the refriger-ator and unwrap them. Using a ruler to guide you and a sharp knife, cut each log into rounds 1/2-inch thick. If the dough crumbles as you cut it, reshape each slice. Place the rounds on the prepared pans, spacing them 11/2 inches apart.

Bake on the middle shelves of the oven, rotating the pans 180 degrees halfway through the baking time, until set but soft enough to hold a slight indentation when pressed with a fingertip, about 14 minutes. Let cool completely on the pans on wire racks.

Store in an airtight container at room temperature for up to 1 week.
