In order to serve you well and to keep up with the demand for increased service, we are looking forward to taking delivery, in late April and late May, of two more Fokker 50s. These additional aircraft will allow us to increase frequencies on the western routes to David and Bocas Del Toro.
We will also soon implement a new system to improve our “on-time” record and provide you with a more efficient service. It is always our mission to serve you well, and we apologize for the inconveniences you incur as a result of our growing pains. We do appreciate your patience as we continue working towards our goal of offering you an excellent product.

Ambos tenemos los mismos gustos, lo que nos facilita mucho las cosas, ya que viajar con infantes de dos y tres años requiere de organización y equipaje. The first thing that comes to mind when I think about a vaca-tion is spending quality time with my husband and daughters. We both have similar interests which makes things easier, espe-cially since traveling with small children (ages 2 and 3) requires planning and luggage. We prefer family friendly destinations with clean accommodations, a variety of food options, play and out-door areas, and definitely a place where we can take the girls’ strollers. Contadora and Boquete are our favorite destinations!

If you are looking to disconnect from the world and take it easy, this place will give you the relaxation you seek. I especially love that this place can be found right here in our country. Uno de los destinos preferidos por panameños y extranjeros son las
Tierras Altas de Chiriquí. The Chiriqui Highlands are one of the preferred
destinations for locals and foreigners alike.
Boquete y los demás pueblos de Tierras Altas sirvieron de refugio a los indígenas Ngo-be y los Misquito durante la colonización española. Sus montañas guardan la historia de sus habitantes, desde el período precolom-bino hasta hoy, en petrogli-fos y restos arqueológicos. La cultura de Barriles es una de las más interesantes; sus pobladores vivieron allí en-tre 250 a.c y 750 d.c. Se dife-renciaban del resto por sus cerámicas monocromas y bicromas escarificadas.
La historia continúa con la llegada de los inmigrantes europeos y americanos en el siglo XIX. Durante la co-lonización, éstos llevaron sus culturas y costumbres, así como el conocimiento en el cultivo del café, las flores, vegetales y legumbres. Es así como el café se convierte en el producto más popular producido en estas tierras.
En 1950 se celebró la pri-mera Feria del Café promo-viendo y mostrando al país el café que se producía. Hoy día el mismo es reconocido a nivel mundial y su exporta-ción es la principal fuente de ingresos de algunas fincas cafeteras. Por otra parte, el 80% de los vegetales del país se cultivan en estas fértiles tierras de origen volcánico.
Actualmente La Feria de las Flores y el Café en Boquete es una de las ferias más po-pulares del país.
En “Tierras Altas” la tempera-tura promedio es de 24°C, en Cerro Punta llega hasta 5°C. Average temperature in the

degrees F.
Boquete and the other Highland towns served as a refuge for the Ngobe in-digenous peoples and the Misquitos during Spanish colonization. Its mountains safeguard their history, dat-ing from the pre-Columbian period to modern day, by way of petroglyphs and ru-ins. The Barriles culture is one of the most interesting. Inhabitants lived there be-tween 250 BC and 750 AD. They are different from the rest because of their mono-chrome ceramics and scari-fied duotone.
The story continues with the arrival of European and American immigrants in the 19th century during the colonization period. They brought their culture and customs as well as knowl-edge in cultivation of cof-fee, flowers, vegetables and legumes. This is how coffee became the most popular product produced in these lands.
The first Coffee Fair was celebrated in 1950, allowing the country to see the cof-fee that was produced in the area. Today, this coffee is recognized globally and its export is the main source of income for some of the cof-fee farms. 80% of the coun-try’s vegetables are cultivat-ed in the fertile volcanic soil found here.

Aunque generalmente se realiza en el mes de enero, permanece abierta el resto del año para que los visitan-tes puedan observar la gran cantidad de especies de flo-res que allí se guardan. De igual forma también existen fincas privadas de orquídeas y otras flores maravillosas.
Es así como la industria del turismo llega a Tierras Altas y va creciendo en los últi-mos años, específicamente el ecoturismo. Se incorpo-ran a la oferta los tours en fincas cafeteras, desvelando una gran cantidad de in-formación muy interesante para todo el que disfruta de una taza de café. La historia, el proceso y catación atrae a muchas personas. La varie-dad de hoteles, hostales, res-taurantes y tour operadores hace de esta región una de las mejores para vacacio-nar. Su clima fresco y aire puro, además de las rutas de senderos, el canopy, tours panorámicos, tours gastro-nómicos y la gran variedad de spas, garantizan una es-tancia extraordinaria.

The Boquete flower and co-ffee fair is one of the most popular in the country. Though it is usually celebra-ted in January, it is open to visitors year round, so that they can witness the lar-ge species of flowers grown there. There are also private orchid and flower farms that are amazing.
The fair is credited for bringing tourism to the Highlands. Tourism con-tinues to grow, specifically ecotourism. In addition, there are coffee farm tours revealing a wealth of inter-esting information for ever-yone who enjoys a cup of coffee and its history. Coffee tastings are a big attraction. The variety of hotels, inns, restaurants and tour ope-rators make this region one of the best vacation destina-tions. Its cool climate, fresh air, hiking trails; canopy, pa-noramic, and culinary tours, and a variety of spas ensure an extraordinary stay.

El café es el producto agrícola más importante de “Tierras Altas” panameñas. Desde la llegada de inmi-grantes europeos y esta-dounidenses en el siglo XIX a Boquete y pueblos aleda-ños, empezó el cultivo de la baya del café. Hoy, casi un si-glo después, el café especial panameño es reconocido mundialmente y ha ganado diversos premios internacio-nales.
Los estilos antiguos de reco-lección y tostado del café se mantienen en las diferentes fincas cafeteras de Boquete y Volcán. El éxito en el cul-tivo de este fruto, tal como muestra la historia, es el resultado del arduo trabajo de los recolectores y dueños de fincas. En 1917 Tollef B. Monniche, ingeniero del Ca-nal de Panamá, erige Finca Lérida, en donde construye completamente a mano su casa de madera al estilo no-ruego rústico. En esta finca cafetera diseña y patentiza “El Sifón”, una máquina he-cha para separar las bayas de café buenas de las malas. Esta máquina es utilizada hasta nuestros días en cafe-tales del mundo entero.
En 1996, debido a la vola-tilidad del precio del café, los cafetales de tierras altas apuestan por cultivar gra-nos especiales. En Boquete se cultiva el grano arábigo, una de las líneas mejor co-tizadas del mundo. Dentro de este tipo se encuentran el geisha, typica, caturra, bourbon, mundo novo y pa-camara.
Coffee is the most impor-tant agricultural product from the Panamanian highlands. Coffee berry cultivation began when Eu-ropean and American im-migrants arrived to Boquete and the neighboring villages in the 19th century. Today, almost a century later, spe-cial Panamanian coffee is recognized and has won in-ternational awards.
The ancient methods of co-llecting and roasting coffee are preserved in the diffe-rent coffee farms in Boquete and Volcan. The history of the cultivation of this fruit is preserved in the stories and hard work of the har-vesters and farm owners. In 1917, Tollef B. Monniche, en-gineer for the Panama Ca-nal, built Finca Lerida. He built his wooden house in the Norwegian rustic style entirely by hand. It is in this coffee farm where he desig-ned and patented the “si-phon”, a machine made to separate good coffee berries from bad ones. This machi-ne is still used today in co-ffee plantations around the world.
In 1996, due to the volati-lity of coffee prices, coffee plantations in the highlands took a gamble on cultivating special grains. In Boquete Arabian grains were cultiva-ted. This is one of the best quoted grains in the world, and within this type of grain are geisha, typica, caturra, bourbon, mundo novo and pacamara.

El café Geisha destaca por su especial aroma, cuerpo y acidez; su terminación es frutal y es muy buscado por los fanáticos del café en el mundo. Cada año catadores de Asia y Europa llegan a los diferentes cafetales para ca-tar y hacer sus pedidos.
Debido al auge del turismo en el área, y al interés por conocer el proceso necesa-rio para disfrutar de esta deliciosa bebida, se abren las plantaciones al público y se crean los tour de café. En Boquete existen alrededor de seis fincas que se dedican al agroturismo. Los recorri-dos son muy interesantes, y además de aprender todo el proceso y la técnica para producir uno de los mejores cafés del mundo, también se disfruta de una excelente taza de café. En Finca Lérida, en específico, podrá conocer todas las fases para la cata del grano; la experiencia es inolvidable.
En Cerro Punta es famoso el café de Eleta y en Volcán el café Fino de la finca Janson.
Después de varios recono-cimientos mundiales, como en la famosa convención en Washington de la SCAA (Specialty Coffee Associa-tion of America), la más grande asociación de pro-ductores, el café especial se vislumbra como uno de los productos de exportación más importantes del País en el futuro próximo.
La clave del éxito es la altí-sima calidad que diferencia al café especial panameño, la cual le augura un mayor precio por kilo cada año.
The Geisha coffee stands out for its particular aro-ma, body and acidity, its termination is fruity and is sought after by the world’s coffee fans. Each year tas-ters from Asia and Europe arrive at the different coffee plantations for tastings and to place orders.
Due to the boom of tourism in the area and the interest in learning about the pro-cess behind enjoying this delicious drink, plantations opened their doors and co-ffee tours were created. In Boquete there are approxi-mately 6 farms that are de-dicated to agro tourism. The tours are very interesting, and in addition to learning the entire process and the technique for producing one of the best coffees in the world, you can also enjoy a cup of coffee. Finca Lerida specifically demonstrates all the phases in the coffee tas-ting, and it is an unforgetta-ble experience.
Eleta coffee is famous in Ce-rro Punta, and in Volcan you can find the elite coffee from the Janson farm.
After much global recogni-tion at the SCAA (Specialty Coffee Association of Ameri-ca) Washington Convention, the largest coffee producers association, among others, the future of specialty co-ffee is seen as one of the country’s most important export products.
The key to success is the high quality that differen-tiates special Panamanian coffee. This bodes well for a higher price per kilo each year.

Mantenimiento: La Clave del Canal de Panamá Con el nombre de cámara seca se conoce a los trabajos de mantenimiento de las esclusas del Canal de Pa-namá. Se le llama así porque es necesario extraer toda el agua de las cámaras, con el fin de realizar trabajos preventivos o reparaciones sobre estas inmensas estructuras, las mismas con las que ha funcionado la vía acuática desde su inauguración el 15 de agosto de 1914.. Maintenance jobs for the Panama Canal locks are known as dry chambers. They are called this because it is necessary to extract all the water from the lock chambers in order to do preventative jobs or repairs on these immense structures. They are the same structu-res that the waterway has been using since its inauguration on August 15, 1914.

Todas las cámaras de las esclusas tienen las mismas dimensiones – 110 pies de ancho por 1,000 pies de lar-go – y están construidas en pares.
El Canal de Panamá no utiliza bombas; el agua realiza su recorrido utili-zando solamente la fuerza de gravedad. El agua entra o sale a través de túneles gigantes, o alcantarillas de dieciocho pies de diámetro, que corren a lo largo de los muros centrales y latera-les de las esclusas. Alcan-tarillas más pequeñas se ramifican en ángulo a la derecha y corren lateral-mente bajo el piso de cada cámara de las esclusas; 20 en cada cámara. Cada alcantarilla cruzada tiene cinco salidas, haciendo un total de 100 hoyos en cada cámara para que el agua entre o salga, dependiendo de qué válvulas se abren o cierran. Este gran número de hoyos distribuye el agua de forma pareja sobre toda el área del piso para con-trolar las turbulencias.
Para llenar una esclusa se cierran las válvulas prin-cipales en el extremo más bajo de la cámara, mien-tras que se abren las que se encuentran en el extre-mo superior. El agua flu-ye del lago a través de las grandes alcantarillas hacia las alcantarillas cruzadas y sube a través de los ho-yos en el piso de las cá-maras. Para sacar el agua de las esclusas, se cierran las válvulas en el extremo superior y se abren las del extremo inferior.
Las compuertas de las es-clusas constituyen las par-tes móviles más llamativas del Canal, y se mueven como puertas dobles. La construcción hueca e im-permeable de las mitades inferiores las hace flotar en el agua, reduciendo gran-demente el trabajo de las bisagras.
All of the lock chambers are the same size - 110 feet wide by 1,000 feet long - and are built in pairs.
The Panama Canal does not use pumps; water does its job using only the force of gravity. Water enters or ex-its through giant tunnels, or culverts, eighteen feet in diameter, which run along the length of the central and lateral walls of the locks. Smaller drains branch off at an angle to the right and run sideways under the floor of each chamber of the locks, 20 in each chamber. Each cross drain has five outputs, making a total of 100 holes in each chamber that lets water in or out, depending on which valves are opened or closed. This great num-ber of holes distributes the water evenly over the entire floor area to control turbu-lence.
To fill a lock chamber, the main valve is closed at the lower end of the chamber, while the top end ones are opened. The water flows from the lake through the large drains to the cross drains and rises through the holes in the chamber floor. To draw the water out of the locks, the valves at the top end are shut, and the ones at the bottom end are opened.
Lock gates are the most striking part of the Canal. The lock gates move like double doors. Their hollow and waterproof construc-tion allows the lower halves to float in the water, greatly reducing the hinges’ strain.

El mono ardilla tiene una cabeza pequeña, rasgos finos y la-bios delgados. Su cola es larga, pero no posee poder prensil y sus patas son un poco más largas que los brazos. Es exclusi-vamente arbóreo. En Panamá vive en el bosque ribereño, en bosques primarios, bosques secundarios, frutales y cercas vivas; se cree que viven unos 4755 individuos en Panamá.En Chiriquí se encuentra en los pueblos de Burica, Renaci-miento, Guarumal, Gariché, Boquerón, Alanje, David, Con-cepción y Jacú. A diferencia de otros países, aquí viven en tropas de 18 individuos aproximadamente. Se alimenta principalmente de animales invertebrados, pequeños verte-brados, frutos y néctar de flores. El mono ardilla se encuen-tra en peligro de extinción. A finales de los 90 se exportó a Estados Unidos como mascota, lo cual causó una baja en las poblaciones de nuestro país.

The squirrel monkey has a small head, fine features and thin lips. Its tail is long, but it does not possess grasping power. Their legs are slightly longer than their arms. It is exclusively arboreal, living in Panama’s coastal forests, secondary forests, fruit trees, in primary forests and living fences. It is believed that there are about 4,755 individual squirrel monkeys in Panama, Chiriqui. They are located in the towns of Burica, Renacimiento, Guarumal, Gariche, Bo-querón, Alanje, David, Concepcion and Jacu. Unlike in other countries, here they live in troops of approximately 18 indi-viduals. They feed mainly on invertebrate animals, small vertebrates, fruit and flower nectar. They are in danger of extinction. In the late 90’s, they were being exported to the United States as pets, which caused a decline in their popu-lations in Panama.

seca, es uno de los componentes del curry, otorgándole su precioso
color amarillo intenso.
Turmeric is native to India, China and the Middle East, and offers a
slightly sweet flavor with a mild peppery and bitter taste. It has an-
tioxidant, anti-inflammatory and antitumor properties and agents.
We can find it in powdered or dried root form. It is one of the com-
ponents in curry, giving it its beautiful, intense yellow color
Receta
1. En el siguiente orden, poco a poco, licuar: aceite de girasol, aceite de ajonjolí, jengibre, cúrcuma, ajo y nati-lla, hasta formar una crema consistente. Generalmente la natilla tiene suficiente sal y no es necesario agregar más. Pasar por un colador fino. Refrigerar bien tapada; puede guardarse en el refrigerador hasta por 2 días.
2. Cortar los filetes de trucha en 2, de manera que que-den parejos y bonitos.
3. Calentar una plancha o sartén, mejor si es antiad-herente.
4. Rociar con aceite de girasol y espolvorear con sal kosher y pimienta.
5. Rápidamente sellar los filetes por ambos lados hasta que estén aproximadamente ¾ cocidos.
6. Para emplatar, colocar sobre un círculo de crema de cúrcuma fría. Espolvorear con semillas de amapola (ver fotografía).
7. Decorar con hojas de hinojo, rodajas de alguna fruta vistosa, o flores comestibles.

RecipeThis is a delicious, healthy, remarkable, and most of all, interesting, recipe!
Procedure:
1. Blend the following ingredients slowly in this order: sunflower oil, sesame seed oil, ginger, turmeric, garlic and light cream until you reach a consistent cream. Generally, the light cream will have enough salt, so that it is not necessary to add more. Pass through a fine sieve. Cover and refrigerate. This mixture can be refrigerated for up to 2 days.
2. Slice the trout fillets in half, so that they are even and pretty.
3. Heat up a grill pan or pan. Preferably non-stick.
4. Sprinkle with sunflower oil and dust with kosher salt and pepper.
5. Quickly sear the fillets on both sides until they are cooked about ¾ of the way through.
6. Plate the fillets on top of a circle of cold turmeric cream. Sprinkle with poppy seeds (see photo).
7. Garnish with fennel leaves, attractive fruit rounds or edible flowers.

This year, the International David Fair boasted 640 exhibition stands, a visit from Ricardo Martinelli, the country’s President, and Costa Rican President, Laura Chinchilla.
Many people traveled from within the country and abroad to take part in the fair’s 58th annual celebration. Cultural presentations, commercial, industrial, agricultural, artisanal, and tourism stands showcased the best of their products and services. Board President, Roberto Barria, sta-ted that trade in Chiriqui profited about 30 million dollars by showca-sing the province’s activities.
