    PUMPKIN BUTTERSCOTCH GINGERBREAD TRIFLE

    Ingredients 1 package (14-1/2 ounces) gingerbread cake mix 1-1/4 cup water 1 egg 4 cups cold fat-free milk 4 packages (1 ounce each) sugar-free instant butterscotch

    pudding mix 1 can (15 ounces) solid pack pumpkin 1 teaspoon ground cinnamon 1/4 teaspoon each ground ginger, nutmeg and allspice 1 carton (12 ounces) frozen reduced-fat whipped topping,

    thawed

    DirectionsIn a large bowl, combine the cake mix, water and egg, beat on low speed for 30 seconds. Increase speed to medium and beat for an additional 2 minutes. Pour into an ungreased 8-in. square baking pan.Bake at 350 for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. When completely cooled, crumble the cake. Set aside 1/4 cup crumbs for garnish.In a large bowl, whisk milk and pudding mixes for 2 minutes or until thickened. Stir in pumpkin and spices until well blended.In a trifle bowl or 3-1/2-qt. glass serving bowl, layer a fourth of the cake crumbs, half of the pumpkin mixture, a fourth of the cake crumbs and half of the whipped topping. Repeat layers. Garnish with reserved cake crumbs. Serve immediately or refrigerate until serving.

    Ingredients 1 cup butter 1/2 cup icing sugar 1 tsp. vanilla 1 tsp. cold water 2 cups pre-sifted all-purpose flour 1 cup finely ground almonds Icing sugar to sprinkle DirectionsCream butter and icing sugar until fluffy. Add vanilla and water. Stir in flour and almonds gradually; mix until well blended.Roll and shape dough a teaspoonful at a time into small crescentsPlace dough 1 inch apart on ungreased baking sheets.Bake at 350 degrees for 12-15 minutes and remove from oven when just starting to brown. Cool cookies on a rack. Sprinkle with icing sugar just before serving.

    FESTIVE SPINACH & FETA PIZZA

    This white, green and red pizza is perfect for the holidays. We serve it up on Christmas Eve when a quick, tasty-and healthy- snack is appreciated, amid all the holiday sweets.

    Ingredients 2 pre-cooked, store-bought pizza crusts 2 cans (ea. 156 ml) tomato paste 1 pkg (340 g) shredded part-skim mozzarella

    cheese 1 pkg (284 g) baby spinach (pre-washed) Chopped garlic (bottled) 1 pkg (400 g) light feta cheese 1 or 2 red peppers

    DirectionsSmear tomato paste over the top of pizza crust. Layer

    crust (generously) with mozzarella and then a BIG mound of spinach (it flattens in the oven.) Sprinkle chopped garlic (about a heaping teaspoon, or to taste) evenly over top of spinach. Chop feta into small cubes and drop them, again evenly, over spinach and garlic. Bake crust right on top of oven rack at 350 F for 10 minutes. Pull pizza out of oven and decorate the top with thin slices of red pepper that have been pre-softened by two minutes in the microwave. Return pizza to oven for an additional 10 minutes of baking.

    Take out of oven, slice up and ENJOY!

    Ingredients 30 mini tart shells, baked 1/2 cup chopped pecans

    Filling 1 can sweetened condensed milk 1 cup brown sugar 1 cup butter 1/3 cup light corn syrup

    Topping 2 squares semi-sweet chocolate 1 tbsp. butter or margarine 30 pecan halves

    Directions Bake tart shells until golden brown as directed on package, usually about 15 minutes. Put approximately 1 tsp. chopped pecans into the bottom of each of the baked tart shells.

    Filling: Combine filling ingredients and microwave on high for 3 minutes. Stir. Microwave for another 2 minutes until smooth and combined.Spoon filling into tart shells to fill.

    Topping: Using the microwave on a medium setting, melt the chocolate squares and butter or margarine until just melted and smooth.Top each tart with 1 tsp. chocolate and a pecan half.

    *You may need more tart shells for the amount of filling, depending on the size of tart shells you use.

    RASPBERRY CHOCOLATE CHIP BARK

    Ingredients cup fresh or frozen raspberries 1 cup fat free yogurt Tsp. vanilla 1 Tbsp. honey 1 Tbsp. chocolate chips 1 Tbsp. coconut

    Directions Directions Combine yogurt, vanilla and honey.Fold in raspberries.Spread in 8 x 8 inch pan lined with foil.Sprinkle with chocolate chips and coconut.

    Freeze overnight break into pieces and enjoys.

    CHRISTMAS RUM CAKEIngredients

    1 (520 g) package yellow cake mix (You just use the cake mix as is, do not add other ingredients listed on cake box.)

    1 (92 g) package vanilla instant pudding mix 4 eggs 1 cup of rum (the stronger the better)

    Glaze 12 cup cold water 12 cup cooking oil 1 tbsp of salted butter 2 tbsp of sugar 1 cup of rum (the stronger the better)

    Directions Grease a 10-inch tube pan or 12-cup Bundt pan.Stir together cake mix, pudding mix, eggs, water, oil and rum.Pour batter into pan.Bake in a 350 degree oven for 1 hour.Cool 10 minutes in pan. Invert onto serving plate and prick top.

    GlazeMelt butter in saucepan.Stir in water and sugar.Boil 5 minutes, stirring constantly.Remove from heat.Stir in rum.Brush glaze evenly over top and sides of cake.Allow cake to absorb glaze.Repeat until glaze is used up.

    Ingredients Ingredients 3/4 cup butter or margarine, softened 3/4 cup icing sugar 1 1/2 cups all-purpose flour, sifted Pinch of salt 1/3 cup cocoa powder

    Directions Measure soft butter or margarine into a mixing

    bowl. Cream the butter until fluffy. Sift flour, cocoa, icing sugar and salt together and add to butter. Mix together until blended into soft dough. Chill dough in refrigerator for 1/2 hour. Shape into one-inch balls; place on ungreased cookie sheet about two inches apart. Flatten dough with fork and bake in 300-de-gree oven for 20 minutes. Cool slightly then remove from pan. Yields 2-3 dozen cookies.

    IngredientsAny kind of Crackers1 cup Margarine1 cup Brown sugar1 cup chocolate chips1 cup chopped nuts any kind

    Directions Line a cookie sheet with foilPut crackers on foilMelt margarine and sugar bring to boil, 3 minutesPour over crackersBake in 400 degree oven for 5 minutesLet cool 5 7 minutes.Layer chocolate chips and nuts over the warm cracker layer. When melted, spread.When cooled, break into pieces

    Ingredients 5 ounces unsalted butter 5 ounces granulated sugar 5 ounces grated almonds 5 ounces flour 1 egg teaspoon cloves teaspoon nutmeg teaspoon cinnamon teaspoon salt Grated rind of one lemon cup jam, raspberry or red currant 1 egg yolk

    Directions Place all ingredients except the jam and egg yolk

    in a bowl. Work the ingredients together with your hands. When cohesive dough is formed, divide the dough into two pieces, wrap in plastic and refrigerate for a hour to chill.

    Press half the dough into a 9-inch round spring form pan. Spread with the jam. Press or roll the other half of the dough flat and cut into strips. Arrange a lattice pattern over the jam. Brush the lattice with the egg yolk to which has been added two teaspoons of water. Bake in a 350-degree oven for an hour and until golden. Cool in pan before removing to serve.

    Ingredients 1 bag chocolate chips

    bar Parawax

    1 cup peanut butter

    1 cup icing sugar

    4 cups cornflakes

    Directions Melt wax and chocolate chips over a medium heat. If you have a double boiler it makes the chocolate mixture easier to work with. When wax and chocolate have melted turn to low temperature.

    Pour 4 cups of cornflakes into the food processor and crush. Pour into stand mixer bowl.Add icing sugar and mix.Add peanut butter and mix thoroughly.

    Roll cornflakes mixture into balls and place on sheet of wax paper ready for dipping. Using a spoon, dip the balls into the melted chocolate, coating completely and place back on wax paper. Store in fridge until serving. If its more than a day, transfer to an airtight bag or container.

    This recipe makes about 48 small balls.
