As long as she can remember, the chef and cookbook author has turned to fresh fruit and warm crumbly dough to lift her spirits. Though caramel cake has been known to do the trick, too. “The cobbler is dead simple, and it’s deli- cious,” Willis enthuses, speaking by phone from her home in Atlanta. “When we were growing up, we would always freeze peaches, and so we would have peach cobbler year- round.” And there it is. The makings of the story behind the recipe. Cobbler is not just cobbler for Wil- lis; it’s her memories of summers with her grandparents and walks in the woods to col- lect berries, memories of a time that makes Willis sigh. One bite takes her back. “It was so wonderful,” she says slowly. Now, Willis finds fulfillment in helping others reconnect with their own comforting food memories. “I have so much satisfaction in the fact that I can write something that touches someone or makes them hungry or makes them remem- ber their food memory ... a food memory from their childhood.” The Albany, Ga., native’s roots run deep with stories of her mother’s and grandmoth- er’s kitchen and of years as a culinary student in France. And she was a history major to boot. But while “Bon Appe-tit” was a look at Willis’Southern-French roots,“Basic to Brilliant” is a lookat Willis’ two lives thesedays: teacher and chef. Thebook’s 150 recipes are writ-ten in Willis’ style — sim-ple, fresh and with a touchof class. But at the end ofeach, the chef includes a“chef’s touch” note, a wayto take the recipe frombasic to brilliant.For example, a bitter-

sweet chocolate breadpudding gets a boost fromthe addition of chevre cara-mel sauce. A warm saladprepared with shrimp,tomatoes, fresh corn andbasil gets a brilliant tweakwith the addition of pop-corn.“So you’ve got corn and

corn, and then a differenttexture and a differenttemperature,” Willis says,clearly excited to share therevelation. “Who wouldthink of putting popcorn ina salad? But that’s a verychef-driven thing to do.”Willis’ grandmother

always said her grand-daughter should be a teach-er, but Willis always pro-tested. That’s why it hassurprised her howmuchshe now enjoys the role.She finds infinite passion insharing ingredients withpeople and then watchingthe understanding creepacross their faces. Cookinginstructor is but one of themany hats Willis wearsthese days, and yet it’ssurprisingly one of herfavorites.The teaching has trans-

lated to educating as well,which is directing Willis’next move, a possible tele-vision show. She just com-pleted the pilot for “Cook-ing From Scratch.” Theshow takes her on the roadto discovering the roots offood. Not the science be-hind it a la Alton Brown,but rather the people, theculture and, of course, thestories that fuel the thingswe eat.“There’s a season to

things,” Willis says. “Whenyou’re buying zucchini andsquash in February in thestore that’s from SouthAmerica and that waspicked half a world away. ...I think it’s important forpeople to learn where theirfood comes from.”

Sweet Potato GritsServes 4 to 6

2 cups water2 cups low-fat or wholemilk

1 cup stone-ground grits2 medium sweet potatoes,peeled and grated

Coarse salt and freshlygroundwhite pepper

¼ teaspoon ground gingerPinch of ground cinnamon1 tablespoon unsaltedbutter

In a large, heavy saucepan,combine the water and milkand bring to a gentle boil overmedium-high heat. Slowly addthe grits, whisking constantly.Add the sweet potato. Seasonwith salt and white pepper.Decrease the heat to low andsimmer, stirring often, until thegrits are creamy and thick, 45to 60 minutes.Taste the grits and sweetpotato to make sure both arecooked and tender. Add theground ginger, cinnamon andbutter. Taste and adjust forseasoning with salt and whitepepper. Serve immediately.

Sweet PotatoSpoonbreadTo go from basic to bril-liant, add a bit of techniqueand transform the basic coun-try classic into a brilliant souf-fle-like spoonbread. Preheatthe oven to 375 degrees F.Butter an ovenproof casseroleor round 2-quart soufflé mold.To the sweet potato-gritsmixture, add 2 large egg yolks,one at a time, stirring aftereach addition. In a separatebowl, using a hand-held mixer,beat 2 large egg whites with apinch of salt on high speeduntil stiff peaks form. Gentlyfold the egg whites into thewarm sweet potato mixture.Transfer the lightened mixtureto the prepared pan; smooththe surface with a spatula.Bake until the outside is puffedand risen, the inside is firm butmoist, and the top is goldenbrown, 35 to 40 minutes.
