Historically, every civilization has had its version of pie, and we’re delighted to serve you a slice of our PIE—a show that features all the richness and diversity of the talented people and the places we savor here in the Northwest, with a sprinkling of the quirkiness that is our heritage on top.

This February, we also celebrate Black History Month (see page 4 for details), and for the 21st time, we will be honoring the best educators, programs and schools in Washington state with our Golden Apple Awards, Wednesday, 2/20, at 7:00 p.m.

V cup heavy creamB⁄ d cup Salmon Pâté (recipe follows) 8 ounces fettuccini, cooked al dente smoked salmon, flaked (for topping, to taste) Parmesan cheese, grated (for topping, as desired) green onion, chopped (for topping, to taste) parsley sprigs (for topping, to taste)

for the salmon pâté 1 six-ounce smoked salmon fillet (bones removed) 1 cup sour cream 1 cup cream cheese 2 green onions, chopped pinch of white pepper 1V tablespoons cooking sherry

to prepare the fettuccini Heat a nonstick sauté pan over medium heat. Add cream and Salmon Pâté; stir until well combined. Add fettuccini and stir until noodles are coated and heated through.

Divide pasta among four plates. Top with pieces of flaked smoked salmon and Parmesan. Garnish with green onion and parsley.
