panel. There are many photo competitions that photographers can enter, but the AIPP is considered the most prestigious, with photographers pushing the limits of their creativity and photographic skills each year.

‘I am thrilled to be the overall winner and NSW AIPP Professional Photographer of the year 2013! To get the highest scoring print and win the Portrait Category was amazing, but to be the overall winner from all different categories is like a dream that came true’, says Nelson Bay photographer, Linda Beks.

The saying “never work with children and animals”, does not count for local professional photographer Linda Beks, owner of ME Photography, who recently won three prestige titles at ‘The Australian Institute of Professional Photography’ (AIPP) Awards, after taking portraits of children with their best friends… their pets.

Linda was announced ‘2013 NSW AIPP Professional Photographer of the Year’ for her stunning images, in addition to ‘2013 AIPP NSW Portrait Photographer of the Year’ and ‘Highest Scoring Print’ award.

Prior to entering the awards, Linda decided last year to raise funds for Hunter Animal Rescue by taking portraits of families with their pets. This resulted in a fantastic animal art book featuring all participating families and their pets, with session fee and profits raised donated to Hunter Animal Rescue (HAR).

This animal art book was so successful that she decided to begin taking portraits for the book ‘Best Friends 2013’, with lots of different families showcasing their pets in front of the camera.

“It is such a joy to work with animals and kids, every day is different. We shoot in our studio or on location in Port Stephens. The shoots are quite hectic as you can imagine, as they often involve a mixture of kids and their pets, but the results are amazing and everyone loves to have a portrait of their family with their loved pet”.

The images taken for the animal art book Best Friends were entered in the AIPP competition, with professional photographers from all over New South Wales competing against each other. Judging of the competition took place by some of Australia’s most recognised photographers and each image entered was critiqued in detail by a judging

The diagnosis of a serious illness can have a devastating effect on individuals, as well as their families. These local people have been inspired by first hand experience, to raise money for charities close to their hearts.

Finding

On March 8th 2013, local Seaham mum Melinda Bertram found out that her Mum Sharyn had been diagnosed with Breast Cancer. Sharyn was told that she had a lobular form of cancer, which had spread to her lymph nodes – a sneaky cancer as it doesn’t present as a lump and moves about.

Since then, after many tests and procedures, Sharyn has bravely undergone a mastectomy, as well as a second operation after battling infection. She is now enduring 15 weeks of aggressive chemotherapy followed by radiation therapy, which increases her chances of survival by 30%.

Inspired by her Mum’s diagnosis, Melinda recently commenced fundraising activities for the National Breast Cancer Foundation (NBCF), the aim of which is to have zero deaths from breast cancer by 2030.

She has already raised hundreds of dollars by selling Cadbury chocolates for $1 each and she will shortly be dying her black hair pink for one month, for which she is seeking sponsorship. She is also currently in the process of organising a raffle, which will be drawn at the end of June. So far she has received donations for the raffle from Priceline at Raymond Terrace, Stu from Pure Surf Industries at Raymond Terrace, Nathan Jenner from Maitland SuperStrike, Angie from Angie-Lee Photography, Vicki from Giggle Designs, Skye and Luke from Hunter Power, TimeZone Charlestown, Pacific Dunes Golf Course Medowie, Hoyts Cinema Charlestown, The Australian Reptile Park and BattleZone.

Melinda is very grateful for the support she has received so far. She says, “special thanks are due to my best friend Chelsea who has been there for me through this tough time. I would also like to say thank you to the people that have sponsored me and a massive thank you to my Mum’s best friend Jude for helping me to organise all of this.”

Melinda and her family have of course faced many challenges since her mum’s diagnosis. She says “Helping mum while juggling Uni has been a big challenge for me. Not knowing what to do or say at times has also been hard. Probably the biggest challenge for all of us would be seeing mum get sick from the chemotherapy and knowing its only going to get worse before it will get better.”

And for other people faced with a similar situation, she offers these words of advice “There is a lot of support out there so never think that you are alone, stay positive and strong :)”

Last November, 19 Year old local lad Blake, was Diagnosed with Osteo Sarcoma. Osteo Sarcoma is a rare and aggressive form of bone cancer. Following a series of chemotherapy treatments, which made him very sick, he has since undergone a Limb Salvage Procedure where his knee and 20cm’s of his femur were removed and replaced with a titanium prosthesis. Blake is now

continuing with further treatment and regular checkups. Blake’s treatment began at Sydney’s RPA Hospital where he has received the very best treatment for his condition. Dad, Ian, says “The staff at the RPA are absolutely fantastic and have been right from the start, they are kind hearted and very caring.”During one of their visits to the hospital, Ian noticed a poster on the wall advertising the 2013 Sunsuper Ride to Conquer Cancer, benefiting The Chris O’Brien Lifehouse at RPA. Ian enjoys riding and decided to sign up for the challenge. The 200km ride takes participants through the scenic countryside of Sydney in 2 days, (100km’s per day). After the first 100km’s there is a camp set up to rest, ready for the remaining 100km’s the following day. Ian says of the fundraising, “We NEED a cure and its such a horrible disease, if we can all just help a little it will make a huge difference in saving the lives of many, many people.”So far, Ian and his family have raised over $7,800. Ian says “Originally our goal was $1500 and we thought that we might be really lucky if we can got about $200. We didn’t even dream that we would be able to raise this much money. It’s amazing. We can’t believe it. We got the whole family involved, we spread the word to everyone we knew and they have told others and so on. We have also had lots of help from a family friend who has done a lot of fundraising through holding a charity auction online and also a Zumba night, all to raise money. Both were very successful.”Long term the goal of Blake and his family is, in his dad’s words, “to just live life, treasure every moment.”Final thoughts: Ian says “This entire journey has changed us, it’s made us realise even more so now of what is important and what doesn’t really matter. It’s made us realise who our real friends are and also who really cares. Its defiantly brought us all a lot closer. As the new year started, many families looked to make some positive changes to improve their health and fitness. Mrs Hall, along with her daughter Chloe, were one of sixty families that registered in a Go4Fun Program. These FREE programs run in various locations across Newcastle, Lake Macquarie, Salamander Bay and Maitland.

Go4Fun is a family based healthy lifestyle program for children aged 7-13 years who are above their healthy weight. It is delivered by health professionals including Dietitians and Physiotherapists and uses a fun and interactive approach to support families to make sustained improvements in diet and fitness levels. Children and their families become fitter, healthier

and happier as they have fun, meet new friends and learn new skills to establish and maintain healthier lifestyles.

Mrs Hall reflects on their Go4Fun experience. “It is one of the best things I have done for my kids. Chloe has dropped almost 2 dress sizes and lost over 5 kilos.” Perhaps of more significance is the long term health benefits of the program, with Chloe now wanting to eat healthy foods and looking for opportunities to be more physically active. “She is a completely new person and so much more confident” Mrs Hall said. “I just want to tell everyone about this wonderful program.”

The Go4Fun Program runs after school, for 10 weeks over a school term. It is held at various locations and families can self-register for the program simply by calling 1800 780 900 or going to the website www.mendcentral.org/go4fun. GPs, Paediatricians or Allied Health can also refer families to the Program this way. Registrations are now being taken for Term 3, with programs planned across Newcastle, including Salamander Bay – at Tomaree Public School, on Wednesday afternoons 4-6pm. REGISTER NOW!

If you thought that singing just meant opening your mouth an screeching ‘laaaaaaa’ at the top of your voice, then think again! There is a lot more to it than that. Although nearly anyone able to speak can also sing, becoming

a great singer requires time, dedication, regular practice and good instruction. Your voice is an instrument – one which you need to learn how to play. Speaking and singing requires the exact same physiological mechanism. However, singers create sound by using the abdominal and back muscles, the rib cage, lungs, the oral cavity and more. So how do we learn to not only become singers, but great singers, using our instrument to the best of our ability?Dianne Fanning, Founder, Principal and Teacher of Good Vibrations Academy, launched in 2010, has been working in the Music Industry as a professional singer for more than 20 years. During this time Di has performed in bands and as a soloist in the Hunter Valley region, South East Queensland, and internationally in Europe and South America. Hair loss affects a large portion of my clientelle, both men and women. It’s prevalence is unfortunately abundant and the impact can be devastating for some.

Hair loss and thinning hair affects over 50% of salon clientelle globally. This figure will hopefully provide some reassurance to those faced with this problem: you are not alone.

Hereditary predisposed hair loss or baldness will affect up to 70% of men and 50% of women during their lifetime. The frustrating fact is that the baldness gene inheritance and it’s effects seem utterly random, skipping generations and affecting siblings with very different outcomes.

Although research has shown that 95% of hair loss or hair thinning is genetically predetermined, there are some environmental factors that may contribute to baldness. Common causes of hair loss and hair thinning are:

• Dietary deficiencies – poor diet and nutrition and/or limited food intake have been proven to have a strong causal relation to loss of hair. • Stress – has been shown to limit blood flow to the capillaries, inhibiting hair growth by restricting oxygen and nutrient uptake to the hair follicles. • Illness – is linked as a cause of hair loss triggered through sudden fluctuation in the body’s hormone level, or by deficiencies in nutrition caused by the illness. • Medications – that are known to affect hair loss include prescription medications for blood pressure, diabetes, heart disease and cholesterol. Other medications shown to affect the body’s hormone balance which contribute to hair loss, include the contraceptive pill, hormone replacement therapy, steroids and acne medications. • Trauma – childbirth, major surgery, poisoning and radiation treatments may trigger substantial and permanent hair loss. • Dermatologic conditions – an unhealthy scalp can play a significant role in your hair loss, starting with hair thinning. Air and water pollutants, environmental toxins, styling products and hair treatments all have the potential to chemically affect the health of the scalp. These chemicals and debris can block or cause the deterioration and consequent hair thinning and hair loss. If you are a woman affected by hair loss or hair thinning, you also have to take note of additional factors which may be contributing to your condition: • Styling & chemical hair processing – chemicals may stress the scalp and hair follicles, causing hair thinning and hair loss. • hormonal imbalances – on top of normal body hormonal imbalances, medication such as the contraceptive pill, hormone replacement therapy, steroids and acne medications can have a pronounced effect on hair loss. • hormonal changes – caused by pregnancy and menopause are known triggers for hair loss. Although we are limited as hair stylists and would never underestimate the importance of consultation with your chosen health professionals, we are able to offer some more conservative options. Is Pyrolle Disorder affecting the life of someone in your family? Suffered by 10% of the population, Pyrolle Disorder is a genetic blood disorder that results in a dramatic deficiency of zinc, vitamin B6 and arachidonic acid – a long-chain omega-6 fat.

Physical signs: Can include white spots on fingernails, larger mid-section, sweet fruity breath and body odour, pale skin that burns easily, overcrowded teeth and poor tooth enamel, creaking knees, cold hands and feet, even in summer.

I discovered Pyrolle Disorder when one of my children was struggling with learning and auditory processing at school. My first port of call was David Henderson at Visionary Health in Hamilton, who practices Orthomolecular Medicine - the practice of preventing and treating disease by providing the body with optimal amounts of substances, which are natural to the body.

After consultation, we were referred for a simple urine test, which confirmed the diagnosis of Pyrolle Disorder. Within just one week of taking the prescribed supplements the changes in my son were very noticeable. He started to engage and improve at school and there was a definite increase in energy levels. For the auditory processing problems, we have been working with a great local speech therapist called Nicole at Echospeech, as well as utilizing an online program called Fast ForWord – brain fitness software which actually exercises the brain to stimulate auditory processing.

I really feel like we are back on track now and making steady gains. Like anything though, if I fail to manage then I manage to fail, so lots of discipline is required to keep up the supplements and good nutrition but it is a small price to pay to have a child that is able to function at optimal health.

Here, we will attempt to help you understand child assessment and explain some of the most common reasons to have your child assessed.WHAT IS A CHILD ASSESSMEnT? When a psychologist conducts a child assessment they are seeking to compare your child to the ‘average’ for their age. Psychologists have a range of research-based tests that are used to compare children. Psychologists use these tests alongside observations and information provided by families, to help form an opinion and/or diagnosis. Common childhood problems such as learning disorders, intellectual disability and autism have specific criteria. A psychologist will select the appropriate tests to discover whether your child meets the criteria and will make recommendations to best meet your child’s needs.WHO SHOuLD ASSESS MY CHILD?While all psychologists have some knowledge of child assessment, it is important to access a psychologist who has had specific experience and training in the developmental assessment of children. REASOnS fOR ASSESSMEnT?Learning Difficulties – When a psychologist is assessing a child with learning difficulties they will attempt to discover whether it is an overall problem with the ability to learn, or if it is a problem in a specific area of learning. A thorough assessment will explore social, emotional and behavioural issues. An assessment will include a test of academic ability and overall intelligence. Giftedness – If your child is showing signs of giftedness the assessment will include a test of overall intelligence, academic ability and giftedness. A thorough assessment will also address social, emotional and behavioural issues. Attention and Behavioural Problems – If your child is having attention and behavioural difficulties the psychologist will investigate a range of possible reasons. An assessment will include information from parents, the child and school. An assessment of ability and academic performance may also be useful. The psychologist will form an opinion or diagnosis from the information they have gained and assist you to access the appropriate support.

What has been your biggest challenge? My biggest challenge would be time management. Discovering the right balance between time spent with my family and photography. For a while one or the other seemed to get the majority of my attention. I’ve now learnt only to take on what I can and work and grow at my own pace. I also have days where I can involve my family in my photography, as they very much like being a part of it and they are of course my favourite subjects. Since having my daughter Jada 6 years ago, I have been a stay at home mum, while also studying and completing my diploma of photography. Prior to that I was employed in a range of professions from sales assistant/administration to chemical worker. However, I’ve always had an interest in art, whether it be painting, drawing or photography, and so I always knew that I needed to incorporate my passions into my working life at some stage.What inspired you to start your business? My children are definitely my biggest inspiration. Every day their little fingers and toes grow bigger, their hair longer, their personalities larger. They are constantly changing and I find myself wanting to capture their every moments through photography, before they are lost in time. The idea of turning my hobby into a business had always been in the back of my mind, but started to become a reality when friends and family saw my photos and started asking me to take shots for them. I also began getting requests for wedding photography and soon realised that my hobby was becoming a business.When and how did you launch your business? I started about 2 years ago. I put my two little girls into day care two days a week and used this spare time to achieve my diploma, learn about starting a business, take photographs and building my portfolio. there are some exciting changes taking place at Blinky Bills Early Childhood Centre! We are renaming the centre Bright Tikes Early Learning (this is due to copyright issues with the name Blinky Bills). We also have a brand new director starting, who shares my vision to offer the best childcare possible at our beautiful centre. Over the coming weeks, we will see a fresh new look to our rooms, with the children’s artwork adorning the newly painted walls, new veggie and flower gardens, plus the introduction of an eco-friendly recycling facility.

We are also busily planning a possible end of year concert, which will result in the children singing Christmas Carols at some of the local retirement homes.

Plans are in place to ensure that our centre has the best school readiness program available in the area. We are hoping that this will include excursions to the ‘big schools’ on our very own bus to help the kids prepare for the big leap into the first 12 years of their education.

It is our number one priority to ensure that families who use our centre are 100% confident that their children are receiving the best care possible, while they are at work or busy with other commitments. Education–Tutoring

Local award-winning, in-home tutoring and child minding service, Steponafish Academic Coaching and Child Minding, has recently expanded and is keen to cater to your child and family’s educational needs. Below you will find some interesting background information on Director Jessi and her coaching staff, Tayla, Fiona and Brittany!

What’s your background and experience? J: I am currently in my fourth year of studying a Bachelor of Teaching (primary)/Bachelor of Arts. I have volunteered as a netball coach for the last ten years, working with eager young netballers. As well as babysitting, I started coaching in 2010, which led to the start of Steponafish Academic Coaching and Child Minding.

T: I have experience in babysitting and have completed a Certificate II in Childcare. I am currently undertaking a double degree in Bachelor of Primary Teaching and Early Childhood.

F: I am now in my final year of a Primary School Teaching degree. I have specialised in Special Education and will be undergoing my final practical placement in a special education setting. During my studies I have volunteered in several daycare settings and schools to gain experience, including training high school special education classes in tennis and cricket for the program “Special Olympics”.

B: I am currently undertaking my Bachelor of Teaching (Primary)/Bachelor of Arts degree at Newcastle University. I have also completed two university placements which required me to plan and teach for students in years 2 and 4.

What/who inspired you to work with children? J: My Year 6 teacher, Mrs Holt, inspired me to become a teacher. She is a very special woman and the epitome of the perfect teacher. She had the ability to work with every single student in her class, making them feel special and giving them the confidence to use their unique abilities to assist in all aspects of their schoolwork. My mum also inspired me to become a teacher. She saw that I had a natural gift when working with children and encouraged me to pursue that.

T: “Tell me and I forget. Teach me and I remember. Involve me and I learn.” Benjamin Franklin. I have always been inspired by teachers. Wanting to provide children with education, teaching children, watching them learn like sponges, absorbing knowledge. Children themselves have the ability to teach us as educators through their willingness to learn, eager to try new skills and experiment with different ideas and environments through play and interactive learning.

F: My mother was the one who inspired me to work in special education; I grew up influenced by her passion to work with children with special needs.

B: I had some great teachers throughout my schooling experience and these people inspired me to want to make a difference in someone else’s life, like they did in mine.

aheadWhat are your top three skills as an educator? J: 1. My passion for teaching: knowing that I have the ability to make a difference in the lives of children. 2. The ability to build strong relationships with students and their families and enhance the learning opportunities in individual children. 3. I ensure that I am creative in my teaching to make learning relative and engaging to each individual child.

T: 1. My passion for children and teaching. 2. My understanding of how to effectively communicate with children. 3. My passion and creativity towards learning and educating.

If you could have a superpower what would it be; or, if you could be an animal, what animal would you be? J: Superpower: The ability to clone myself and be in TWO places at once! That would mean I could help more children with their schoolwork.

T: Superpower: The ability to fly! Flying around the world - easy transport! Just like Tinkerbell and Peter Pan.

F: Superpower: I would have the ability of foresight, so I can change things before they happen!

Raised in a Greek home, one could not help but be excited and influenced by the possibilities of creating food that was once cooked and enjoyed by family and friends living in a quaint little village, somewhere in Greece.

I used to love going into my mother’s kitchen and pulling out whatever ingredients I could get my hands on and then creating a dish that not only I was proud of but which was also enjoyed by those I called family.

Growing up in Sydney in the 1970’s and 1980’s brought about some challenges for those of us who had roots in other places, but as we all pushed through I believe our nation became a far more richer and exciting place to live in, with much of this evolving through the introduction and enjoyment of many different cuisines from diverse cultures.

Through my early experiences with food and culture, a love for all people from all nations took hold in my heart. Today, I embrace inclusive attitudes and celebrate diversity. I see it as a privilege to cook for my family and friends, enjoying the food set before us, but even more significant are the friendships that are formed and the differences which are accepted and embraced, with wonderful opportunities to learn from each other.

More recently, I have enjoyed fantastic experiences visiting places like Earlwood, Sydney, tasting the delights that the Turkish cuisine has to offer and then just a short drive to Haberfield, inner west of Sydney, where your taste buds are offered an amazing treat at an Italian Pasticceria. But one cuisine that is certainly on my bucket list to try is the Afghan Restaurant in Five Dock. I look forward to making the trip down there and who knows, maybe we could organize a group to go down and share the fun!

Through my passion to share my experiences with many people, ‘A Taste of Culture’ was recently born. Plans are in place to publish a special magazine to create a platform that celebrates all cultures through food and travel, including recipes and short stories of how people live in their part of the world.

My philosophy is simple: I believe that all people from all nations are valuable and I am committed to empowering them to embrace who they are, where they have come from and where they are going.

A Taste of Culture will give people from all walks of life an opportunity to discover what is in their own backyard but also what is far beyond. It is my desire to support diversity amongst all nations by exploring food and travel. My dream is to support those that live in less fortunate circumstances such as orphans, widows and the poor, by contributing profits on a regular basis.

The magazine will also feature articles on how to raise capable and resourceful kids, cooking for a crowd, recipes from ‘Sofia’s Kitchen’, baking tips from ‘Pink Lavender Cakes’, growing your own vegetables, short biographies, discovering destinations and more.

METHOD – MEAT SAuCE 1 Lightly sauté leek and garlic with chilli in olive oil.

Add spices, honey and butter.

2 Add mince and lightly brown. Add pasta sauce, tomato paste, fresh herbs and one cup of water. Mix till combined. Season with salt and pepper.

3 Bring to boil and then lower heat and allow to simmer for 1 hour, covered. Allow to cool. Add 2 eggs to mince mixture and stir through.

METHOD – EGGPLAnT LAYER 1 heat oil in shallow frying pan. Add potatoes and cook

till golden brown. Remove and drain on paper towels. Place in lightly oiled baking dish.

2 Rinse eggplants after they have been salted and allowed to sit for 30 minutes. Pat dry with kitchen paper towels.

3 In same oil, add eggplants and cook till golden brown. Remove and drain on paper towels. Place in baking dish on top of potatoes.

4 Crumb feta all over the eggplant/potato layers.

5 Pour mince mixture over layers.

METHOD – BECHAMEL SAuCE 1 In a separate pot, place chopped butter and melt but

do not allow to boil.

2 Add flour and mix through till combined with wooden spoon.

3 Slowly add milk, stirring out any lumps that form.

4 Keep stirring until mixture thickens. Remove from heat.

5 Add egg yolks, cheese and nutmeg.

6 Pour sauce on top of mince in dish.

7 Sprinkle extra cheese on top.

8 Bake in moderate oven for 45 minutes or until sauce is golden brown. Enjoy!!

InGREDIEnTS500g of greek yogurt4 cloves of garlic, minced1 lebanese cucumber, peeled and gratedSqueeze of lemon juiceSprig of fresh mint

METHOD 1 Peel cucumber and grate onto plate.

2 Using kitchen paper towels, squeeze liquid out of cucumbers thoroughly.

3 Place grated cucumber into bowl.

4 Peel garlic and press through crusher into bowl.

5 Spoon greek yogurt into bowl with cucumber and garlic.

6 Add a squeeze of lemon juice.

7 Add finely chopped mint.

8 Mix together thoroughly.

Serve with your meal.
