For several years, the first was held inDecember 2008, Townshippers’ Associa-tion, through its innovative intergener-ational and seniors’ projects led by EricAkbar Manolson, an annual cookie swaptook place, usually in Lennoxville.

Just as the name suggests, peoplegathered for music and socializing, andif they had a favourite cookie recipe, tobring that and a few samples to theparty.

At one of the first events, Rev. CaroleMartignacco, pastor of the UU Estrie Uni-tarian Universalist Church in North Hat-ley, shared her Spritz Cookies with thegroup.

“The recipe was given to me by myGerman mother-in-law,” said Marti-gnacco. “It has long been the favouriteChristmas cookie of my four daughters,who love baking as well as eating them.”

Martignacco graciously shared thisdelicious and easy-to-make recipe with•The Record.•

A cookie press is required, it’s a gad-get that looks a bit like a cake-decoratingtube, but made of metal.

With a bit of ingenuity, one recipe

can make several cookie shapes, and dif-ferent food colourings and flavouringscan also add to the variety.

“Our favourite shapes and flavouringswere candy canes with peppermint,camels with cardomon and star anise,flowers with lemon, wreaths, trees andbells with almond, and pinwheels andfluted sticks with chocolate,” she ex-plained.

Basic Spritz Cookie Recipe

1 cup butter, softened to room tem-perature

2 egg yolks1 1/4 cups icing sugar2 1/2 cups white flour 1/2 teaspoon flavouring (almond ex-

tract, lemon, star anise, etc.)1 teaspoon pure vanilla extract1/2 teaspoon salt

Cream together butter and sugar, stirin egg yolks and flavourings. Beat untillight and fluffy. Gradually fold in siftedflour and salt.

Fill the cookie press with dough,being careful not to leave pockets of air.Choose a design and press shapes lightly

onto ungreased baking sheet about 1 to2 inches apart, as they will spread.Coloured sugar or sprinkles may beadded before baking.

Bake for 6 to 8 minutes in a 400 de-

gree F oven. Let cool before removing tobaking racks.

Cookies freeze well - if they last longenough!
