As a chef, a father and the manager of a large and creative kitchen team, I feel a strong responsibility to live and work
as sustainably as possible.
It is a staggering fact that up to a third of the world’s food is discarded or spoiled prior to consumption. Coming from a
farming family I find this hugely disturbing; I understanding the enormous energy and effort that goes into growing a
simple tomato, so to see this kind of waste is heart-breaking. Another worrying fact is that most people don’t know
where their food waste goes.
On the flip side however, it is truly exciting that there is such a strong focus on environmental responsibility nowadays.
It is great to see people making positive lifestyle choices, such as avoiding single-use plastic bags and straws.
At Bangkok Marriott Marquis Queen’s Park, we are focusing our sustainability efforts in a number of areas. To reduce
food waste, our “Second Love” campaign looks at opportunities to make dishes out of perfectly fresh items that would
otherwise be sent to landfill, and our “Clear the Plate” initiative aims to reduce waste in our staff canteen. Our chefs are
also volunteering to look after our vertical hydro gardens, which is brilliant.
It is truly heartening to see how people, especially the younger generation, are embracing a greener lifestyle and
leading the way with new ideas. Something as simple bringing a reusable coffee cup to work helps to reduce plastic
and paper waste.
Since our hotel opened, I have always said: “We are a BIG hotel, which means we can make a BIG difference.” Our
daily operations, such as conducting food waste audits, responsible purchasing, cooking less more often, create plans
for leftovers, donating food, composting and educating our team are all high priorities in our hotel.
We can be happy with how much we have achieved so far, but there is still a long way to go. Together, we can walk the
green line together and eventually achieve the goal of “zero food waste to landfill.”

SUPPAROD SI THONGTrat Province
STORY
Nestled in the eastern corner of Thailand, bordered by Cambodia and the sea, the coastal
province of Trat provides the perfect growing conditions for pineapples. Farmers in Trat have
a long and proud tradition of fruit growing and the golden pineapple (“supparod si thong”) is
one of the region’s top economic crops.
Trat’s golden pineapples have a distinctive shape, orange skin, yellow flesh and a sweet,
crisp flavor. Demand is so high that farmers cannot meet demand, but Bangkok Marriott
Marquis Queen’s Park works directly with local producers to ensure that guests can
experience this delicacy.

KUAY HOM THONGTha Yang District, Phetchaburi Province
STORY
The Cavendish bananas produced in Tha Yang District, Phetchaburi Province, are fragrant,
sweet and completely free of chemicals. The local farmers focus on organic production,
despite the fact that their yield may be lower than industrially-farmed bananas. The water
used for cultivation comes from a local dam in the Petchaburi River.
Being located close to the sea on Thailand's Gulf coast helps the bananas, as the humid air
aids growth and the sea vapor repels insects that would otherwise eat the plants. This
makes Tha Yang the perfect place to produce high-quality bananas.

TAENG MELONPaisarn Farm, Lamphun Province
STORY
Paisarn Farm in Lamphun Province, northern Thailand, produces high-quality organic
melons in its tropical gardens. The conditions are perfect for melon production and this
traditional farm has achieved GAP certification - a guarantee of the quality of the fruit and
the farm’s non-polluting agriculture methods.
The melons from Lamphun Province are sweet, crisp, fragrant and have a thin skin.

KHAI KAISangthong Farm, Nakhon Nayok Provine
STORY
Sangthong Farm is free-range chicken farm that produces certified organic eggs. Located in
Nakhon Nayok Province, just a short distance from Bangkok (ensuring fast and fresh
delivery), the farm features four hen houses in 22 rai (3.5 hectares) of land, ensuring plenty
of space for the chickens to freely roam.
The chickens are fed on organic grass and local herbs such as fenugreek and turmeric,
which helps to keep the hens healthy. With no stress and or crowded conditions, the
chickens are relaxed, happy and produce premium quality eggs.

NAM POONG DOK LUM YAIBee Products Thai, Lamphun Province
STORY
Pharmacist Veerapan Tantipong swapped his life as a medical professional for that of a
beekeeper, and has dedicated his life to producing the finest quality organic honey. Based in
Lamphun Province, Bee Products Thai (BPI) produces natural honey that derives from the
nectar of many types of flowers, which flourish in the pure, fresh air of northern Thailand.
Following a mantra of “Green, Clean & Safe”, BPI produces a unique honey with a
distinctive fruity scent and taste.

We use every cut of meat and poultry without any waste. Trimmings and bones are used in gravies, sauces and
stocks. Whatever is carved off at the serving station is roasted and reused in jus.
In total, We use approximately 280kg of bones and trimmings to produce 75 liters of beef jus and
30 liters of chicken gravy every week.

Pineapple skin contains active yeasts and bacteria, so we ferment it to create a delicious pineapple vinegar. Guests can
try this in our signature pineapple and passion fruit gin cocktail! Every week we slice 150kg of pineapples resulting in
85kg of pineapple peel. After four weeks of fermentation and another four weeks of aging, we can produce 50 liters of
wonderful pineapple vinegar.

The beef chuck roll and prime beef rib on our carving station are
both slow roasts, which means they are only perfect on the night we
serve them. All the tender pieces that we don’t serve are used to
create a delicious pot roast and rich sauce. More cooking time
means the meat falls off the bone and creates a really rich sauce.
We serve a pot roast of double braised beef twice a week for dinner.

On a buffet there are always leftovers. Since we only want to
serve you the freshest bread, we always have a few bread
rolls left at the end of our meals. We let these dry out, cut
them up and toast them with homemade seasoning to create
delicious croutons! Add them to your soup for a satisfying
crunch! We reuse around 3kg of bread per day in this way.

The term pasta bake conjures up thoughts of rich and warming
comfort food. There is so many different ways to make a pasta
bake, and whenever we have sausages or ham left over from our
breakfast buffet preparations, we cut them up and turn them into
delicious bakes. By doing this, no pre-grilled sausages or pre-
baked ham gets thrown away and wasted.

The base of any delicious Chinese soup is a great stock. We make our base stock using
the bones left over from the Iberico ham carving station. Ham bones make incredibly
delicious stock bases; by using them in this way we’re extracting the maximum possible
flavor from each bone. We use two whole Iberico ham legs each week.

This popular stew is the Thai adaptation of a dish Chinese immigrants brought to the Kingdom in the early
19th Century. What makes this dish especially charming is the boiled eggs, which are braised in the rich
five spice broth. Whenever we have uneaten boiled eggs left over from breakfast, we feel inspired to cook
up a delicious palo. We boil about 150 fresh eggs for breakfast every morning.

Day-old bread is perfect for this popular warm English pudding. Even more delicious are
day-old croissants! We dry out leftover croissants from breakfast and then bake them
with vanilla and cream to create this delicious dessert. We bake around 300 fresh
croissants every day, and up to 50 of the leftover croissants are served the following day
as bread and butter pudding.

Bangkok Marriott Marquis Queen’s Park embarks on sustainable practice
and reduces 27.4 tons of food waste
Having set itself the ambitious target of sending zero food waste to landfill sites, Bangkok Marriott Marquis
Queen’s Park has successfully achieved the goal at its main all-day dining restaurant, Goji Kitchen + Bar.
From September to December 2018, this hugely significant initiative reduced the hotel’s wastage by 27.4 tons
of food. Bangkok Marriott Marquis Queen’s Park is now planning to roll out this program to all of its
restaurants and food-related departments.
The food waste crisis is one of the world’s most pressing concerns and tackling it is part of the UN's
Sustainable Development Goals (SDGs). As a hotel renowned for its sustainable and environmentally-friendly
focus, Bangkok Marriott Marquis Queen’s Park is committed to helping eliminate hunger and malnutrition,
promoting sustainable production and consumption of food, and reducing global climate change caused by
food waste.
FOOD WASTE
ENVIRONMENT
The hotel’s waste reduction initiative, which was overseen by LightBlue Environmental Consulting Company, helped to shed light on the significance of food waste practices
and create awareness among the hotel employees. Implemented by 80 hotel associates from a range of departments, including kitchen, catering, finance and human
resources, this program also led to the initiation of the “Clean Our Plate” campaign in the staff canteen.
In the three and a half months since the program was activated, Goji Kitchen + Bar has successfully reduced its food waste by 27.4 tons, or 294 kilograms per day. The
practice has also saved 68.4 tons of CO2 emissions during the whole period.
In addition to its in-house program, Bangkok Marriott Marquis Queen’s Park is also partnering with SOS (Scholar of Sustenance Foundation Thailand) to manage its surplus
food. Through this initiative, the hotel now contributes 37.5 kilograms of food per day from Goji Kitchen + Bar to the SOS network, which serves over 3,000 daily meals to
underprivileged people in Bangkok.
“Throughout the three months of the program, our entire team was determined to reduce food waste, starting from
Goji Kitchen + Bar - our biggest outlet. With this determination we have proved that we can achieve this, and we significantly reduced our food waste from 0.679 kg. to 0.490
kg. per plate, which increases food value by 10 percent. This is a very promising outcome,” said Michael Hogan, Executive Chef of Bangkok Marriott Marquis Queen’s Park.
Bangkok Marriott Marquis Queen’s Park is now moving ahead with plans to reduce food waste in all of its restaurants and food-related outlets, starting with Pagoda Chinese
Restaurant, Akira Back and M Club Lounge from January to April 2019, and followed by its catering department from April to August 2019. Through these efforts, Bangkok

Queen’s Park is striving to become the first urban five-star hotel in Asia Pacific to be awarded The PLEDGE* certificate, and first urban five-star hotel in Southeast Asia to
achieve zero food waste to landfill.
