Chettinad Muttai Kuzhambu | Egg Kuzhambu                                        Egg is rich source ofproteins. Mutttai Kuzhambu is a south indianmasala gravy prepared by cooking egg inauthentic indian spices. It can be served as aside dish to rice, idly, dosa or chappathi. Freshly ground spicy masala is preparedand added to kuzhambu. It can be preparedeither with boiled eggs or just by breaking theeggs and adding to gravy. Ingredients: Table 1: To Roast and Grind

Oil 1 tbsp

Ginger chopped 1.5 tbsp

Garlic cloves 4

Black Pepper  1 tsp

Cumin seeds 1 tsp

Coriander seeds 2 tsp

Fennel seeds 1 tsp

Red Chillies 2

Onions chopped 1/2 Cup

Tomato chopped                1/2 Cup

Cloves 2

Cardamom small

Salt

Oil                                           2 tbsp

Mustard seeds 1/4 tsp

Onion(Finely chopped) 1/2 Cup

Curry leaves 4

Coriander leaves chopped   2 stalks

Instructions:

Heat Oil in the pan and add cumin seeds, Fennel seeds, black pepper, coriander seeds,cloves, cinnamon  and red chillies. When they splutter,add ginger garlic.Fry till raw smellgoes off. 

 Add onions.Fry till onions turn translucent. Add tomatoes and turmeric powder.Fry it inmedium flame till tomatoes turn mushy. 

Lastly add shredded coconut, mint leaves and salt. Switch off the stove and allow themixture to cool down. Grind the mixture by adding enough water and keep it ready.   

 Take oil from table 2 and heat it in a pan. Add mustard seeds and curry leaves. When theysplutter add finely chopped onion and fry till onions turn translucent.

 Once the onion turn translucent add ground mixture and add 1.5 cups of water. Allow thegravy to boil and break eggs and directly add to gravy. Add eggs one by one .Simmer it for5 mins. When the gravy turns thicken and eggs are cooked, add salt if needed. Garnishwith coriander leaves. Enjoy it with rice or chappathi.

Tips:

Ginger and garlic can be replaced by ginger garlic paste

Red chillies can be replaced by chilli powder

Instead of breaking the eggs and adding to gravy directly, we can use boiled eggs.

For authentic south Indian egg curry, replace onions with shallots.
