Letter from the Editor

Fall is here! The weather in Florida is beginning to drop below the 80s, which makes it nice to play outside in the evening. My nephew, Tyler, has been playing high school football and we've enjoyed many games this year. My son, Jake, had to learn to dance at school and then they performed for all the parents. The funny thing was that the mother of the daughter that my son danced with was standing right next to me and we were filming our kids. Then we noticed we were filming the same kids and had a good laugh. They made it into the first round of eliminations and it was great watching them dance.

I took this month's cover photo at a local high school football game in Naples, Florida. The storms were just outside of the football field and when the sun went down it made a spectacular splash of color on the clouds. With the football season in full swing I thought it would make a perfect cover story.

What would bring meaning and fulfillment to you and the people you love? How could you make a difference in the world?

Directions:1. Preheat oven to 450°F.2. Toss broccoli with 1 tablespoon oil in a large bowl. Spread out on a baking sheet and roast, stirring once halfway though, until just soft and browned in spots, about 15 minutes. (Alternate: Use thawed frozen broccoli and delete the 1 tablespoon oil.)3. While broccoli cooks, heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add beef and onion and cook, breaking up the beef with a wooden spoon, until the beef is browned and the onion is softened, 10 to 12 minutes. Stir in Worcestershire, garlic powder and 1/4 teaspoon salt. Set aside.4. Whisk milk and cornstarch in a large saucepan. Bring to a boil over medium-high heat, whisking often, until bubbling and thickened enough to coat the back of a spoon, 6 to 8 minutes total. Remove from the heat and stir in Cheddar, 3/4 teaspoon salt and turmeric until the cheese is melted. (For speed, you might experiment and substitute condensed soup of your choice for the cornstarch and milk, making sure you have the same amount of liquid and only salt to taste.)5. Spread the beef mixture in a 9-by-13-inch (or similar 3-quart) baking dish. Top with the broccoli and pour the cheese sauce evenly over the top.6. Combine potatoes, egg, pepper, and 1/4 teaspoon salt in a bowl. Sprinkle evenly over the casserole. Coat the top with cooking spray.7. Bake the casserole until it is bubbly and potatoes are beginning to brown, about 40 minutes. Sprinkle with paprika. Let stand 10 minutes before serving.

Notes: To make in advance: Prepare through Step 6; cover and refrigerate for up to a day or freeze for up to a month (defrost in the refrigerator for 2 days before baking). Let stand at room temperature 30 minutes before baking (Step 7).Also, six cups of the vegetables of your choice could be substituted for the broccoli.Makes 8 servings. Fall summons up visions of hearty family dishes. And for most people, these dishes must be fairly easy to prepare or able to freeze or refrigerate in advance. This casserole reminds me of Shepherd’s Pie with a twist.

Ingredients:1-1/2 pounds broccoli or 6 cups, cut into 1-inch florets (You can also use thawed frozen broccoli.)2 tablespoons canola oil, divided1- 1/2 pounds 95%-lean ground beef 1 large chopped onion (to taste, as some families don’t care for onions)2 tablespoons Worcestershire sauce1 teaspoon garlic powder1-1/4 teaspoons salt, divided1/2 teaspoon freshly ground pepper1/4 teaspoon ground turmeric1/4 teaspoon Hungarian paprika (Recipe calls for hot, but you could use regular in this.)4 cups low-fat milk1/3 cup cornstarch2 cups shredded sharp Cheddar cheese, preferably orange4 cups frozen hash-brown or precooked shredded potatoes (see Note)1 large egg, lightly beaten

My friend, Mary Wiggins, suggested I contact Mindy Adams to see if she would be interested in swapping services. My daughter has a nightly short story for homework that she has to read and then answer questions. One night she read about Clara Barton from the Teacher Created Resources, Inc Daily Warm-Ups: Reading assignment.

Clara Barton was America's first nurse. When she was 11, her big brother fell off a barn roof. He was badly injured. She took care of him. That is when she knew what she wanted to do with her life.

When the Civil War started, there was no such thing as a nurse! Barton decided that the hurt and dying soldiers needed care. She went right out into the battlefields to help them. She refused to rest if even one wounded man needed care. Sometimes she worked for three days straight with only one meal and an hour and a half of sleep.

Barton had one goal, she wanted to be sure that every injured soldier was properly taken care of. And nothing stopped her. She burned her hands, but kept working. She got frostbite on her fingers. Still, she took care of the men. Twice she was nearly shot: one bullet passed through her sleeve, and the other tore off a part of her skirt.

After the war, she went to Europe to rest. But instead, she became a nurse to the men on the battlefields of Europe. There she heard about the Red Cross. The Red Cross gave any wounded person care and food. It did not matter what side they were on. And no one would attack a tent flying a Red Cross flag.

When she returned home, she formed the American Red Cross to meet people's needs during emergencies. The first people the American Red Cross helped were those who had lost their homes due to a big forest fire. Barton continued to work with the American Red Cross until she died at the age of 91.

While I was reading this story with Lizzie, my Aunt Suzie texted and we asked her if she'd ever heard of Clara Barton.

Aunt Suzie shared her family story with us: My mom’s sister, Margaret...was a nurse. She ran her own nursing home in NDG Montreal for many years. She told us about Clara Barton on many occasions and how she influenced her to became a nurse. She loved working with seniors as long as I could remember. As a young girl I loved to visit with her, I remember visiting her home and seeing all the old people listing to music & singing. She was such a flamboyant lady. Always the latest clothes from Montreal downtown, special hat, a scarf loosely around her shoulders, wonderful beads. She was the kind of lady everyone else would like to be. She was well off but not rich. She was just who she was, elegant.

Clara Barton’s name came up a second time when my Dad saved Gerald Kezar’s life after a barn accident. Gerald fell from the loft and cut his face severely. Clara also cared for her brother in a similar accident. The thing about it was, about 15 years later my sister, Beverley Hague Kezar, brought her new boyfriend home to meet my parents. He was Gerald Kezar, the boy my dad saved many years earlier, now grown up. They are still happily married…In life we never know…do we? - Suzie xoxoxo

I’m sure you’ve heard the slogan, “I think I can, I think I can…” many times. This adage dates back to the early 1900’s with stories, articles, books and films such as The Little Engine that Could. This example of positive thinking has been perpetuated through the years to help children believe they are capable and can succeed when they set their minds to it. I often read articles about how positive thinking can change your life for the better.

Positive thinking has many benefits: 1. Lowers depression.2. Lowers stress.3. Increases life span.4. Better resistance to the common cold and other illnesses.5. Reduced risk of cardiovascular disease.6. Better physical and psychological well being.7. Better skills in dealing with life’s hardships.

Developing positive thinking skills for you and your family can work wonders in attitude, discipline problems, and the health of parents as well as children. And positive thinking can improve your kids’ self-esteem, ability to get along with others, school achievement, and lead to a better life.

Here are a few tips:1. Keep thoughts, words, and corrections positive and non-combative.2. Smile and show affection.3. Be enthusiastic about work---school work, jobs around the house, etc.---explaining why it’s important to your child and the family.4. Help children find positive ways to think about and deal with life’s problems.5. Speak to others the way you’d want to be spoken to.6. Help them believe the words, I think I can! rather than I can’t!

Austin's brother, Robert, and my parents drove from Naples, Florida to Alaska. Robert is going to be helping with the care of Austin and his grandparents' wanted to visit. It was fun watching them post videos and photos from their long trip. The photo above is when they were in the state of Illinois with only 4000 miles left on their journey.

During their roadtrip they visited my Dad's brother in Wisconsin and family. They took a ferry and also stopped at many Cracker Barrel restaurants along the way. Once they saw a huge cross and snapped the photo below that made them feel like they were on the right path.

They drove through British Columbia and saw many bears and wildlife. The roads were a disaster but the landscape was beautiful. They called me and said I needed to track their progress by using the GPS Tracker app.

One of my favorite national parks is Alaska’s majestic 7,408 square mile Denali National Park and Preserve, the third largest in the United States. The focal point of Denali National Park is Mt. McKinley, or Denali,“The Great One.” Standing anywhere in view of Mt. McKinley and the surrounding wilderness I feel small, yet one with nature. Over the years the National Park Service has developed Denali National Park into a state of the art facility with visitor centers, a science and learning center, a working sled dog kennel, and many trails. You can drive the first 15 miles of paved road into the park, but to drive the gravel road to Mile 85 at the end of the road you must have a permit or take a bus.

Each year around 10,000 people submit applications for the Annual Denali Road Lottery to drive the length of the park. Only 1,600 people are selected for one of four days in mid-September. We were lucky enough to win permits for the Lottery in 2010 and 2014. The 2010 trip with our son was magical with sun and blue sky, constant views of Denali, and many wildlife sightings. We saw numerous grizzlies on or near the road, Dall sheep, coyotes, a lynx, moose, ground squirrels, and a golden eagle.

The weather in September 2014 had been overcast and rainy for weeks, but the night before our Lottery date, the sun came out. It was already 6:00 p.m., but sunset wasn’t until around 8:30. We had fifteen miles of open road to Savage River calling us to explore in the golden light! That evening we got out of the car to take pictures, hike around, and enjoy ourselves. We saw eight moose, including bulls with huge antlers, and cows with calves. And we were able to see most of Denali, North America’s tallest mountain, standing white against the azure blue sky. Seeing Denali is an experience not everyone has---you are said to be in “The 30% Club” if you are able to see Denali when you come to the park since it’s often covered in clouds.

The next morning, we were in the park by 7:00 a.m., ready for adventure! The weather was still partly sunny and a steady stream of other travelers were already on the road by 6:00. We passed moose grazing or walking on hillsides and grizzlies in the distance. Whenever there was a wildlife sighting, people lined up to take pictures or brought out binoculars and spotting scopes. It was a thrill seeing animals in their natural habitat!At lower elevations, spruce trees were scattered between areas of grass and occasional small pools dotted the landscape. Rolling bare-looking hills set the background for scrubby gold and red vegetation.

A couple driving an antique car enjoyed the fun drive. Fall colors were spectacular in the park. We saw grizzlies on the hillside and Dall sheep nibbling grass high on the rocks. The road narrowed and we had to pull over to let oncoming vehicles pass. As we increased elevation, a braided alluvial plain with the McKinley River meandered through the valley below. The narrow road was full of switchbacks as we steadily climbed almost to the top of mountain passes, reaching maybe 4,000’. Nearby mountains sported a kaleidoscope of colors---greys, reds, browns, greens, and tans. In full view across the valley was the Alaska Range with its many glaciers and Denali standing like a jewel above all other peaks.

We didn’t see as many animals as in 2010, but we added a fox to the list of wildlife we’ve seen in the park over the years. What will always stand out in my mind, though, is the views of Denali and the awesome vistas. In the back of my mind I keep remembering a quote from Robert Service’s “Spell of the Yukon:” …It’s the great, big, broad land ‘way up yonder, it’s the forests where silence has lease; it’s the beauty that fills me with wonder, it’s the stillness that fills me with peace.

Denali National Park is accessible by vehicle, bus, and train. Within the park there are tour buses, six campgrounds, hiking trails, ranger led tours, and more. This could be your trip of a lifetime! Further information about Denali National Park can be found at NPS.gov.

I was given the opportunity to review this book from Booklookbloggers.com. I enjoyed that I could read 20 short stories all in one book. The only problem I had was when I really liked one story and wanted it to continue further. The book took me to many different places, had a strong focus on relationships, and the locations were mostly in Michigan or Ireland. Here are my highlights from the book:

"Life gets complicated. As soon as you begin understanding that there's more to life than you, and become interested in other people, then you realize you can't live without them, and you stop telling the truth so that they'll like you." "Well, now that you put it that way, yes, it does make a lot of sense. People realize they need to be loved, right? So, part of the price you pay for love is to turn a blind eye to what could hurt somebody."

"You must have built up a whole ocean full of memories behind you."

"Because everybody has experiences that they need to tell other people about. If they don't they just stay there and build up until they're shared with someone."

"Maybe love trumps embarrassment

"It's better to have loved in vain than never to have loved at all"

"Whoever first quipped that a way to a man's heart was through their stomach wasn't too far off."

I've been watching a lot of Vines lately and wondering how they make the videos that are so cool. I added a few apps this month to help in my video production. Replay, Flipagram, Hyperlapse, TextOnVideo, and PicPlayPost are all the ones I've used to make my latest fun videos. I like Replay because each week they send me a notification that they have made a video for me of my week photos. It's great to have a quick view of what I've done for the week. The GPS Tracker was something my Dad recommended. They took a long trip to Alaska from Florida and thought it would be neat to track their locations. If you're looking for specific holidays, like Government holidays, check out the US OPM, Federal Reserve, or Redcort. There are plenty of religious holiday calendars available for many religions including Hebal for Jewish Holidays, Interfaith calendar for Christian Holidays and every other religion you could search for. Some holidays are just fun days that have become a tradition of celebrating like National Cheeseburger Day or World Smile Day. I was recently at a business meeting and met a new friend, Salvatore Grech, he is part of the local Naples Rotary Clubs and has many fundraising events to help support Gift of Life International.

Gift of Life International works with Rotary Clubs and other organizations worldwide to save the lives of children diagnosed with congential heart defects.

Gift of Life helps children in two ways. First, they may arrange for them to be flown to the United States where a volunteer team of medical professionals performs the necessary life-saving surgery. Alternately, they may arrange for Gift of Life affiliated hospitals, medical centers and healthcare professionals throughout the world to treat them. The latter practice reduces the need for extensive travel for their children and their families.

An essential aspect of the Gift of Life network is the mission. Missions are conducted on a regular basis. The three types of missions are: diagnostic screening, surgical, and medical/training. All of these missions are funded by individual Gift of Life programs, which are aligned with Rotary Clubs and Districts around the world.

Our mission is to provide hope to children from developing countries who suffer from heart disease regardless of their gender, creed, or national origin, by supporting autonomous Gift of Life programs in their efforts to care for these children in need, and coordinating the development of sustainable pediatric cardiac surgery and aftercare programs in select countries, through the empowerment of their healthcare professionals.

"Our Hearts Are In..." program has transformed Gift of Life International into a global-force with regard to providing care to children that suffer from congenital heart defects in developing countries. The strategy of focusing the Gift of Life network on one country a year has allowed them to make the difference, being able to develop a sustainable pediatric cardiac surgery program.

Gift of Life International partnered with the Gift of Life India to provide Simon from Zambia with the heart surgery he desperately needed...Here is the letter they received from Simon's parents:

"It is with great love and appreciation that we want to report on Simon’s progress. Since his surgery in February he has been growing very fast. He is now doubled in size and will soon be like any other 2 year old. We know that we have been granted this gift so that the door will be open for other children who need the same surgery and are waiting for someone to rescue them. As long as we both live this perfect gift will never escape our hearts and minds. Thank you!" (photo via Facebook)
