DESCRIPTION

In our world, the colour is often used to create an airy and pure feel for a home. It’s inarguablethat white can make rooms feel and appear larger, while adding a freshness to the space.However, utilising the effects of the colour is not as straightforward as it seems – on its own, purebrilliant white can look sterile or high maintenance, depending on the interior style. The key here is to layer up tints (from chalky white to ivory) and textures to soften the look of a room and make it more inviting. This issue, HOMEWORKS features four spaces that pull off the extensive use of white accomplishedly, working to their advantage the positive effects of the colour while avoiding the sterility that an overkill could invoke.

Welcome to the white issue!

In our world, the colour is often used to create an airy and pure feel for a home. It’s inarguable that white can make rooms feel and appear larger, while adding a freshness to the space. However, utilising the effects of the colour is not as straightforward as it seems – on its own, pure brilliant white can look sterile or high-maintenance, depending on the interior style. The key here is to layer up tints (from chalky white to ivory) and textures to soften the look of a room and make it more inviting. This issue, HOMEWORKS features four spaces that pull off the extensive use of white accomplishedly, working to their advantage the positive effects of the colour while avoiding the sterility that an overkill could invoke.

The article Found In Translation on page 22 features a sea-front apartment designed by architects Alberto Miceli Farrugia, Edward Cuschieri and Alexia Rausi at Architecture Project (AP). The use of materials and textures, as well as the exploitation of mirrored surfaces, play a huge role in the creation of space with unclear boundaries in this apartment. Add to this flowing space features made from semi-opaque glass, reflective surfaces and light colours, and you have light penetrating every deep and distant corner of the apartment.

The Sliema townhouse in Daylight Cool, Lamplight Warm on page 30 was the first all-white experience for the homeowners. The result was a contemporary look with a traditional feel – a skilful display of how different shades of white can create such a magnificent interior.

Interior Designer Greta Apap Bologna designs a striking monochromatic penthouse apartment at Tigné Point from shell start to spectacular finish. With a relaxed brief from the homeowner, the interior designer was open to create with a free hand. (Page 38) On page 46, Architect Matthew Mercieca creates the ultimate bachelor pad – a highly functional apartment with excellent use of light, as well as incorporating the maximization of space. See how the architect retained the monotonic tones and pervading white throughout as a canvas metaphor.

FOUND IN TRANSLATION

In her award winning comedy-drama film starring Bill Murray and Scarlett Johansson, ‘Lost in Translation’ (2003), Sophia Coppola explored themes of loneliness, alienation and more acutely, culture shock against the background of the modern Japanese cityscape. Yet the contrasts that Japanese culture presents to the western visitor have not always been as severely uncomfortable as described in the film’s portrayal of Bill Murray’s predicament. On the contrary they have for centuries served as an inexhaustible and sought-after source of inspiration for artists, architects and writers alike.

Japan has exerted its influence on innumerable architects who have absorbed the lessons of this ancient culture as a way of renewing their own. Frank Lloyd Wright spent a lot of time in Japan in preparation for, and during the execution of his designs for the Imperial Hotel in Tokyo (1911–1923). In his designs he attempted to integrate traditional Japanese temple planning with the complex program of an international hotel; John Pawson, half a century later, spent his formative years as a student designer in Japan. His philosophy of Minimalism, as described by Bruce Chatwin, is a derivative of the Japanese ‘wabi’, which, in the Zen sense, means ‘voluntary poverty’.

It will not come as a surprise, therefore, that the owners of this apartment would ask the architects to create a space that is reminiscent of the calm stillness of a Japanese interior. All the family’s possessions were to be kept in cupboards that have become bare walls, allowing the eye to roam freely around, unimpeded by furniture or pictures to give the impression of limitless space; a quality accentuated by the view of the sea and the horizon line that is the most conspicuous and recurring presence in the new composition of spaces.

THE OWNER WISHED THAT THIS NEW SPACE, IN CONTRAST WITH THE CLAUSTROPHOBIC CLUTTER OF THE EXISTING DWELLING, EMERGE AS A UNIFIED ENTITY, A ROOM WITH ‘WABI’.

The underlining design ethos for this project was one that embodied both clarity and function simultaneously. As a result, the conversion from two relatively large apartments into one massive, Zen-like living space was carried out with a strategy of simplification in mind. Second to that, aspects such as privacy, security, accessibility, ease of maintenance and clarity of space were high on the priority list. The existing apartments were characterized by a labyrinthine series of rooms on different levels, curved steps, column partitions and a traditional compartmentalized plan. The owner wished that this new space, in contrast with the claustrophobic clutter of the existing dwelling, emerge as a unified entity, a room with ‘wabi’.

In order for the new apartment to work as an integrated whole, while allowing its diverse parts to function efficiently, the traditional approach to planning an apartment had to be abandoned: the conventional notion of the corridor with rooms leading off it was discarded. Instead, the different spaces were linked together by a carefully studied flow of natural light around a central core, containing the kitchen and dining area, which acts as a communal area for the whole apartment. This area leads off into four main zones. The first is the living quarters, an area flooded with natural light and enjoying the most prominent views. The next area off the kitchen is occupied by the owner’s private quarters, an end-of-day haven where soft and hard furnishings combine to create an excellent composition of function and tranquillity. The other bedrooms are also directly connected to the kitchen and dining area. The design of these bedrooms is derived from the specific needs of their occupants, combining privacy with openness and legibility of space. This part of the apartment is designed to contain facilities for the physical well-being of the client, such as a hydro-spa, gym equipment etc. and provides an outlet for relaxation and escape from the stress of daily routine.

Visual and spatial continuity throughout the apartment were paramount. This was achieved by means of broad sight lines and expanded openings, which allow for the optimum amount of light and ventilation to filter through. But more than anything else, it is the design and integration of storage units at the centre of the apartment that gave the client the desired stream-lined, clutter-free home. Giant storage cupboards house the entire personal belongings of the family. They serve as a divider between two spaces having different uses, thus also creating a backdrop to the main spaces. The repetition of these elements, with their sliding doors and ceiling-high length, make freedom of space abundant throughout, further enhancing the feeling of continuity where a dead end is unconceivable.

The use of materials and textures, as well as the exploitation of mirrored surfaces, play a huge role in the creation of space with unclear boundaries. Moreover, add to this flowing space features made from semi-opaque glass, reflective surfaces and light colours, and you have light penetrating every deep and distant corner of the apartment.

This new space is light, clean, legible and most of all a homage to simplicity. In spite of this, there is an element of surprise, of hiding and revealing. There is a focus on the combination of utility and luxury. Above all, there is an extreme complexity in the achievement of simplicity.

THE UNDERLINING DESIGN ETHOS FOR THIS PROJECT WAS ONE THAT EMBODIED BOTH CLARITY AND FUNCTION SIMULTANEOUSLY.

The homeowners’ brief to project manager Andre Arends was: “Big and white! Just make everything bigger and whiter. We wanted modern in an ethnic style and we just wanted to take it all further. In fact, we told Andre to take it just about as far as it would go.”

Now the townhouse is a genuine blend, giving a contemporary look whilst retaining its traditional feel. Undoubtedly, white has made the space seem much larger. It was a small townhouse – the previous owner had ripped out a substantial part of it, leaving it quite simple and basic – and attractive to the new owners.

The decision to go with an all white palette was something even the design-experienced homeowners had never done before.

“It’s just amazing how many shades and tones of white there are – plus it looks marvellous when distressed and aged. White is just such a blank canvas – exciting and inspiring. Another aspect that prompted us to go with this colour scheme was that we wanted the whole place to be flooded with light. Now it’s cool in daylight and warm by lamplight. So we went for it – with steel, chrome, aluminium, tin and metallic finishes.

“At first Andre thought we were a little unhinged to be so radical. His guys did too. To say the very least, there was a lot of scepticism. However, as work progressed everyone began to take delight and gain a real enthusiasm for the way things were developing.”

Andre: “Substantial changes were made to the townhouse. We began with the removal of the outside staircase. All the walls were constructed to include an arched aperture, which then had to be pointed and treated.”

“In some cases the ceiling, such as that over the shower room on the second floor, had to be totally removed and replaced with new ‘xorok’ slabs. Almost all walls, floors and ceilings were lime-washed and then painted in white epoxy paint. The laying of a small concrete balcony one foot out of the main building was added and a balcony handrail made from salvaged cast iron was fitted. French concertina folding wooden doors were fitted with shutters finished in white oil paint.”

The homeowners: “Andre and his guys are just brilliant – they dealt with all of the changes and construction details and challenges to best deliver our vision. We still have a way to go before it’s complete but we are so happy with how it stands today.”

INTERIOR DESIGNER GRETA APAP BOLOGNA DESIGNS A SUBLIME PENTHOUSE APARTMENT AT TIGNÉ POINT FROM SHELL START TO SPECTACULAR FINISH. WITH A RELAXED BRIEF FROM THE HOMEOWNERS, THE INTERIOR DESIGNER WAS FREE TO CREATE THIS STRIKING MONOCHROMATIC APARTMENT WITH TIGNÉ’S STELLAR VIEW TO BOOT.

Interior Designer Greta Apap Bologna was given an extremely free hand with the interiors of this undoubtedly chic penthouse. The homeowners’ brief was not demanding – the one thing that they required in particular was a relatively monochrome palette, keeping the finishes throughout similar to achieve a continuous approach. They also wanted some fun with the outdoors and suggested doing something out of the ordinary – hence the pink mosaic pool on the terrace upstairs.

Greta: “The clients were very daring and was ready to take a risk – she was sure that the pink pool would work well with the teak decking and the stunning blue sea just beneath the penthouse.”

The apartment has a wonderful sense of space and the high ceiling in the sitting/dining room lends to this factor. Built-in planters in the sitting/dining area also add interest to the space and over-sized vases enhance this height while also establishing a chunky, contemporarily accessorised space, reminiscent to that of a swank European city art gallery.

The penthouse was potentially a four double bedroom apartment but the clients opted to keep three rooms as bedrooms and use the fourth as a study. This room was chosen for the conversion due to its spectacular view of Valletta, which is enjoyed each time it’s glanced at above the laptop.

As requested by the homeowners, the colour scheme is white, black, charcoal, grey, stainless steel and shades of brown, while the textures are at the forefront of the design – large slabs of polished bianco sivec marble contrasting with textured charcoal natural sisal flooring. Elements of polished stainless steel add an element of sparkle to the finishes. Wenge furniture and other shades of brown fabrics enhance the monochrome effect. Almost all of the materials used were totally natural, even down to the rugs, which are silk, linen or leather.

The simple linen sheers throughout were chosen so that the spectacular view opposite would always be visible both day and night. Again, the natural textures of the fabrics complement the hard reflective surfaces of the marble flooring and the highly lacquered white BOFFI kitchen cupboards.

All the furniture was chosen by Greta and the homeowners but a lot of the design included custom made details, which gave the space a personalised feel, as well as quality finish. A specially designed marble border was laid, which incorporates different types of grey marble and accents of stainless steel to tie into the same theme.

Greta: “We had a great team on board – my office put all their heart and soul into this one-off project and architect Anton Valentino was instrumental in the works too. The space is a success due to its simple yet tasteful palette, its high quality finish and the use of such natural materials. It is a spectacular place to relax in.”

Architect Matthew J. Mercieca’s brief from homeowner Gianni Zammit was to create a space where he could kick back and relax with all the items that make him “Gianni”. The idea was to have the guitars on show to create a quasi exhibit when friends came in, after which they’d catch a glance of Gianni’s extensive, extensive collection of the KISS dolls that line his home office shelf. He’d have the space to entertain, as well as the feel of extensive space throughout. The custom-made discreet storage system to hold his extensive, extensive music collection… the space was to be a showcase of embodiment.

Matthew: “Working with a strong character and celebrity, this design job was the laying down of a canvas with the right detailing to take both the many normal and the more eccentric requirements.”

Gianni: “When Matthew and I met up to discuss the design and vibe for the apartment, I was safe, sane and single… I invited him over to the room I was living in at my parents’ place – so he could get an idea of what I like and, most of all, the junk I have. I knew Matt before, so he had an idea of my lifestyle and what my interests were, but I wanted him to see first hand. Then the ideas and designs were all in his hands.

“Ultimately we discussed and agreed upon a few basic points; I wanted modern, space maximization (as the apartment is not large), efficiency (both cost and energy) but most of all cool – a place that I would feel comfortable living in. Hence, the design of a glorious bachelor pad. When I moved in a few months ago it was with my girlfriend who was four months pregnant. So this cool ‘bachelor pad’ is being permanently inhabited by not one, but two women now – my girlfriend Kirsty and daughter Kay. Although there were some minor changes as we moved along, as we discovered that a bachelor pad it was not going to be, the overall designs that Matthew conceived and created worked excellently for a ‘family pad’ too.”

The apartment is a tremendously clever use of space. The main feature is the interconnecting terraces with all the kitchen, breakfast, dining and living requirements made dexterous.

“I live a very hectic life and so comfort was a must for me. I think that each room is very cleverly linked to the entire area creating a harmonious feel to the whole space.”

The main bed suite was custom-designed to accommodate as much storage as possible, as well as for a sense of simplicity and wellbeing. Now of course it’s a space where there’s an urgent sense of desperation to grab of few seconds of shut-eye before the parents might implode from the latter stages of sleep deprivation.

The monotonic tones and pervading white was retained throughout as a canvas metaphor, as well as satisfying Gianni’s wish to keep things clean.

“It’s not colour crazy – the overall colour scheme is grey (like my hair) and it suits me – the colour of the space, not the hair…

“An overall element that I wanted was the user-friendly aspect – I felt that it was useless having a cool, modern designed place if it wasn’t easy for me to live in. Now I’m residing in a place that complements my tastes, hobbies, likes and loves; it’s a space that I feel very comfortable living in and gives me the right vibe. Matthew managed to create the cool apartment that I wanted, which is also extremely functional, incorporating maximization of space and an excellent use of light.”

You are currently running your own successful furniture import and retail operation. What does your company involve?

It involves looking at the market and understanding what the consumer needs as well as wants. Having worked for many years designing bespoke leather furniture for modern classic interiors, I saw a niche in the market over 5 years ago for an outdoor design led-range, which has the durability to be left outside all year round. Your speciality is the design of outdoor furniture, which is substantially different to designing indoor furniture. What are the elements that you really need to focus on when it comes to designing high quality furniture of this kind?

When designing outdoor furniture it’s important to understand that your garden should be treated as an extension of your home. It must have the comfort, design and durability allowing you the same flexibility as you have in your living area. You are currently designing a range of garden furniture with Cleland & Souchet specifically for Malta. Was the design brief mostly based on Malta’s climate and consumer style, or were there various other elements involved in evolving the design?

The key factor was the Mediterranean outdoor lifestyle. The Pasha range that we have developed with Cleland & Souchet focuses on clean modern lines and the practicality of every day life. We also wanted the collections, particularly the RIVA lounge, to inspire a sense of indulgent comfort with its oversized armrests and abundant number of cushions.

We were also very focused on build quality so that each Pasha piece would be accompanied by a guarantee that would cover the structure and our rattan material against any weather conditions. It is also non toxic, recyclable and cleans easily with just soap and water. It is completely waterproof and UV resistant so the colour will not fade in the sun. The Pasha metal and teak range also follows the same principals. The teak we use comes from Myanmar in Southeast Asia. The natural beauty of teak can steal anyone’s heart and it is surprisingly low maintenance, highly durable and resistant to extreme weather conditions.

Is it possible to find very high quality garden furniture at good prices – do the materials used allow for this?

Price is always an important factor when working in the retail market and it has taken me five years to help create a range that does not compromise on either style or durability – I am delighted with the results in Pasha!

What are some useful tips to know when selecting garden furniture?

First, how much space do you have? Be realistic; get out your tape measure and figure out where you want to put your retreat. Second, account for the sun. Where will it be and how does any shade move across the area throughout the day? Third, what type of area do you want? Is it a patio/deck/pool area? Flat to the ground or raised? What is the shape? Next, what type of furniture do you want? Is it for relaxation, dining or conversation? All these questions need to be answered. Then, when you go ahead to bring your dream space to reality, things will go a lot more smoothly.

Debbie Brown Barnett’s main focus has been to design a high quality bespoke range of outdoor furniture for leading hotels and real estate developments. The range that she has helped create with Cleland & Souchet for Malta is contemporary, clean-lined, yet functional for either residential or commercial use. AFFABLE & AFFORDABLEInterview: Michelle Ivankovi

Michelle Ivankovic was born and raised in Toronto and currently works in Umbra’s Holland office. After spending two years as a fine woodworker and participating in various exhibitions she began designing for Umbra. Her creative experience marries a unique combination of fine craft with design for popular culture. Michelle’s Strass Stool design is part of the permanent collection at the Cooper Hewitt Museum. You have designed a lot of different things - from wine racks to plates. What is at the root of it? What do people really need?

In all my work I try to create a link between the structure of the design and the actual item, so that the way the product looks is somehow a story about what it does. For instance, the Vogue magazine rack is made up of numerous bars of aluminium that gently sway and mimic one another the same way the pages of a magazine open and curve over your lap when you are reading. Umbra designs seem to be making life more comfortable – a perfect instance of form meets function. How do you go about brainstorming a design – is it thinking about what’s necessary, or what makes life more comfortable?

The starting point of a design can come from anywhere, even totally random places. Often these “random” ideas are an unconscious knowledge of what the right answer is because for designers we often can express the right answer visually before we can rationalize it in words. Our language of communication is visual. The question of whether or not something is necessary or makes life better

is an absolute prerequisite for any design to go into production, but at the idea stage we can be freer to think of things that aren’t necessarily practical.

Dematerialisation – life being more about intelligence and less about material. If we had to consider in extremes, what would you create?

I really hope that dematerialization does occur; it would improve our lifestyle and our environment. Outside of a recession, it will take a major re-routing of so many industries, particularly marketing and advertising, which exist to fuel people’s desire to consume. I’ll always feel passionate about making and creating material things. If people reduce the amount of things they need to own I’ll gladly just focus on what remains necessary. What is your favourite design that you’ve created to date?

My favourite design has not yet been released, so it’s top secret! But of things that are already on the market I think my favourite has been the Strass Stool because it captures the action of creation and freezes it in time. It’s an expression of what a perfectly joyous moment looks like to me.

Do you consider culture when creating? For instance, would your design be altered for an Italian audience, as opposed to a Dutch one? Or is good design universal?

Yes, it’s amazing the difference that culture can make in both taste and needs. This has been a huge subject of study for me over the last year since I moved from Toronto to Amsterdam. I love finding

out what inspires people emotionally when they look at a product and how that differs from culture to culture and digging for why that difference exists. Recently I’ve been working with colours as they relate to different cultures. Europeans love colours, not the same colours from north to south, but colour is very important here. Europeans are exposed to art and design from an early age and develop confidence in their colour selections. In the U.S. people are very colour shy – they pick lots of neutrals.

Although colour can be a dividing factor, really outstanding design can transcend cultural differences. Umbra’s best selling products are bestsellers world wide, from Japan, to Europe, to South America and the U.S.A., not just regionally.

What are you working on at the moment?

Right now I’m working on textile design for Umbra’s line of drapery panels. I’m really excited about it, as it’s so different from traditional product design – far more subtle and taste oriented, it’s very dreamy.

Director at Italian based OMP PORRO, Paola Porro specialises in finishings for furniture and doors. The company currently produces over 32,000 different articles and is sold in 76 countries. I think that the comparison comes from the fact that our collections are synonymous with elegance, class and quality. the details and the knowledge of the material innate. This sensitivity guides us in daily life in the choice of clothes, colours and surely also in the furnishing. What makes the difference between a high quality door handle and a mediocre quality one?

The kind of raw material used, but principally the proportions and preciousness of the details. Tell us about the most exciting latest technology in handles/knobs.

Forging is a process that allows for more refined details, the compactness of a material free from micro-holes. The PVD (physical vapour deposition) is the most developed finishing process available nowadays and is also used in aerospace technology. We are now using a deposit of zirconium in a high vacuum with a superficial hardness 3 to 5 times superior to galvanic chrome (scratch resistance), which allows colour inalterability when exposed to UVA rays. Which materials are better for door handles and why?

The most renowned raw materials are stainless steel and brass. Stainless steel is the best material used for the production of modern handles, while brass is undoubtedly the most renowned historical material for the production of classical handles. Unlike stainless steel, brass guarantees the possibility of achieving very refined details. Alternative materials used nowadays by numerous producers, such as zinc-alloy, plastic or methacrylate are more economically workable and are priced substantially lower than brass or stainless steel. Products made from these alternative

materials do not last over time. What can we do about metals staining or wearing, particularly in our harsh summer climate of sun and sea spray?

As mentioned before, the PVD finishing is the most advanced technology. Our PVD collections are sold with a long lasting guarantee against the oxidation and are the best for external use. For internal use we protect all our products with cataphoresis lacquering (lacquering electro-deposition). This kind of transparent lacquering is not visible to the naked eye but guarantees high resistance to the hardest of climates. How much of a difference would you say handle/knobs make to furniture or doors?

I’m fully convinced that a knob or a handle can make a big difference to furniture and doors. When the aesthetic and stylistic rules are respected using the appropriate finishing and superior materials, the aesthetic value of the door or furniture is definitely maximized. The feeling of giving new breath to a piece of furniture by changing the knob is surprisingly extraordinary. Your company is Italian and you deal with a lot of clients in the Middle East - do they tend to go for typical Italian design (not that this can really be defined as “typical”, but for lack of a better word) or do they mainly request custom-made designs?

Both choices are possible. Italian design is renowned all over the world. There are customers who want tailor-made productions on their own design, but the interesting thing is that they almost always ask our design department to refine their drawings.

Geraniums

One of Malta’s most popular flowers, geraniums will grow in any soil as long as it’s not waterlogged. The flowers grow best where they receive at least 6 to 8 hours of sunlight daily and are normally grown in part shade to full sun, in well draining but moisture retentive soils that are rich in humus.

Water geraniums sufficiently to prevent wilting – at least once per week.

Geraniums are easy to transplant and establish quickly after soils are warm. The young seedlings must be carefully pricked out and transplanted into larger containers. Fertilize every 2 weeks with a water-soluble plant food from the time of germination until planting outdoors. Most geraniums root easily from stem cuttings.

Gardenias

Prized for the strong sweet scent of their flowers, Gardenias are at their best in a mild, humid climate and flower at their best in the warmer months of the year.

To plant, gardenia plants need high humidity and a loose, well-drained organic soil is recommended. For the best results, plant gardenias in full sun, partial shade, or shifting shade. Dig a hole twice the size of the root ball. Thoroughly mix one part soil and one part planting mix. Check that the top of the original root ball is slightly above the level of the surrounding soil and make a gentle mound of the soil mixture sloping away from the plant.

Be careful not to over-water gardenias and fertilize with an acid fertilizer.

Petunias

As petunias do best in full sun, this flower is adapted to the Mediterranean climate. Too much fertilizer can cause excessive vegetative growth and sparse flowers. The frequency of watering petunias will depend on the type of soil, weather conditions and the amount of mulch, but water to a depth of 6 to 8 inches when the soil becomes dry. Remove weeds from the plantings that compete with the petunias for moisture, nutrients and light. Damping-off can be a serious disease problem: good sanitation practices and maintenance of proper moisture and temperature levels can minimize damping-off disease.

Yellow foliage on petunias may also be caused by nitrogen or iron deficiency within the plant. Both can be corrected with the proper supplemental fertilizers.

Spathiphyllium or ‘Peace Lily’

Spathiphyllium need high humidity and the preferred climate of the plant is tempered, so the Mediterranean climate is well suited for it. After pushing up their pure white hoods above the foliage the flowers can be enjoyed for months.

The main way of propagating Spathiphyllium in a home environment is by plant division. New crowns will form at the side of the plant that can be cut away and re-potted. Pot the new plant in a small pot and use the same type of potting mix that the parent plant was growing in. Water the plant right after potting, but don’t apply fertilizer for at least three months. Try to keep it within 5 to 8 feet of a window for best results. Do not place your plant in direct sun. Direct sunlight can damage the plant’s foliage. If the leaves begin to yellow, it may mean it is receiving too much sunlight.

The main care requirement for Spathiphyllium is a heavy watering, but you must allow the soil to dry out in-between watering to a point as well. However, standing water will kill the root system – the most common reason Spathiphyllium die is because of over-watering. Normally watering about once a week is plenty for this plant.

Begonia Semperflores

Our Mediterranean climate opens up the possibility of a multitude of varieties of begonias. The flowers look good in flowerbeds, for hanging baskets, as container plants or for indoor houseplants. Begonias bloom all throughout the summer and need very little care to keep happy. The foliage appreciates spraying and will do better in a moist atmosphere. Remove the dead flowers,

leaves, and stems. Trim off the long stems to help retain its compact shape.

For houseplants and container plants, give them a dose of liquid fertilizer once a month instead dry fertilizer. Re-pot the plants if they appear crowded. Use rich potting soil to help them in their transition indoors. When first brought inside, keep them near a sunny window, gradually, reducing the sunlight. To plant, the dust like seeds must be started 4-6 months before transplanting. Do not cover the seed, just scatter thinly over the surface of well-drained, fine seed medium and press it in. Cover with glass or plastic until germinated. Plant a foot apart (closer if used in containers) in good rich soil that contains lots of organic matter, which drains well. Then allow the soil to dry before the next watering. Begonias thrive in a range of sunlight from full sun to shade.

Verbena

Verbena is great for summer because although they are one of the garden’s latest bloomers, they bloom through to early autumn with very little fuss.

Verbena looks great in a hanging basket plant, and also looks good in rock gardens or as an edging. To grow, place two seeds in each pot and barely cover them with potting soil. Once they have 3-4 leaves per plant, clip out the weakest plant from each pot. The seeds might take as long as a month to germinate, so don’t give up on them too soon. Harden off your plants by moving them outdoors for a few hours each day before planting them in the flowerbed. Then, plant verbena in the sunniest, best drained part of your garden. Plants that are kept too moist and don’t get enough sun are susceptible to powdery mildew and other diseases. Add a general-purpose fertilizer before planting, especially if the soil is poor. The plants will need 8-10 hours of sun each day. When you first plant verbena, you should water regularly until the plants are happy and well established. Thereafter, water them only when very dry. A light pruning of this flower will produce another crop of flowers within 15-20 days.

Gazanias

Gazanias are South African short-lived perennial flowers, which bloom at this time of year and appreciate dry summers. You should be careful to resist the temptation of watering too much when the weather gets hot (twice a month is enough). Good soil gives the best growth but the plant tolerates poor, sandy soil. Gazanias prefer full sun and grow well in rock gardens or in hot, dry areas, which is ideal for Mediterranean gardens. You have to plant gazania in full sun and well-drained soil. Add a light application of organic fertilizer to the planting hole and then place the plants no deeper than they were growing in the containers. Set the plants 6 to 9 inches apart and put mulch around but not on top of the plants with 3 inches of organic compost. Pour down the water well until soil is completely moist.

Ingredients

1 sea bass 25g spinach 50g fresh salmon 20g mussels, pre-cooked 2 small potatoes 2 small marrows 1 small carrot4tbsp olive oil 1tbsp sesame oil2 cloves garlic fresh coriander 1 tomato, chopped1 stick lemon grass dash of salt & pepper handful of fresh basil

Method:

De-bone the sea bass from the back part leaving it whole. Layer the spinach leaves, salmon and the pre cooked fresh mussels. Sprinkle with salt, pepper, add fresh basil and olive oil. Tightly close back together using cling film and foil. Cook in a steam roast oven at a temperature of 190 for about 15-20 minutes. Wash and turn the vegetables, boil until tender in salted water and continue cooking without colouring in a pan with clarified butter.

For the dressing, mix all the raw ingredients together in a stainless steel bowl and warm on a ban mare.

BEST WINE ACCOMPANIMENT: 2008 MEDINA SAUVIGNON BLANC D.O.K. MALTA

“There are nice clean flavours in this sea bass dish but some weighty flavours as well - in the spinach, mussels and salmon. I therefore opted for a clean dry Sauvignon Blanc to go with the sea bass, but chose one from a ripe vintage like 2008, which gives the wine added weight and alcohol to cope with the heavier flavours in this dish. The newly released Medina Sauvignon Blanc, which has also had skin contact has sufficient flavour for this dish whilst still remaining crisp and refreshing.”

Ingredients

150g spaghetti

100g clams

2 cloves garlic

4 tbsp olive oil

100ml white wine

1 tomato, chopped

handful of basil

handful of mint

Method:

Boil the spaghetti. Fry the fresh clams in the olive oil and garlic for few seconds, then pour in the white wine, letting it evaporate until the clams are opened. Add the chopped tomato, pre boiled spaghetti and fresh herbs. Add the salt and pepper to taste.

“In truth, a dry white wine will go perfectly well with this dish, but when I see tomatoes in the recipe I prefer to lean towards a rosé. I just find that the more noticeable fruitiness that comes from freshly bottled Grenache gives this whole food and wine accompaniment a bit of a lift. That is certainly the case here as the 2008 Medina Grenache blends perfectly with this great seafood spaghetti dish.”

Stuffed CalamariIngredients:

1 calamari 2 king prawns 25g rice, cooked1 tomato, chopped10g black olives 2 cloves garlic 4tbsp olive oil 1litre fish stock fresh herbs, basil or mint

Basket:

100g parmeggiano 50g rucola leaves

Method:

Sweat the king prawns in olive oil and garlic for few seconds, then add the chopped tomato, olives and the cooked rice. Pour in the fish stock and let it simmer for 5 minutes on medium heat. Enhance it with fresh herbs (basil or mint), salt and pepper.

Use this mixture to stuff the calamari and then close up the top part with the head of the calamari and secure it with toothpicks. Cover it with fish stock and cook for 20 minutes at a temperature of 200ºC.

Grate the Parmeggiano cheese and place on a silicone sheet circle. Cook in the oven at 210ºC until golden brown. Then place on a round mould until firm.

Place the rucola in the cheese basket. Slice the calamari into 3 rings and place them over the basket. Drizzle with herb oil.

BEST WINE ACCOMPANIMENT: 2007 VICTORIA HEIGHTS CHARDONNAY D.O.K. GOZO

That is why I have gone for a white Chardonnay that has a bit of weight because of its very brief barrel maturation and one extra year’s age. The 2007 Victoria Heights Chardonnay, which has just been awarded a bronze medal in the 2009 Chardonnay du Monde in Burgundy France, is a fattish wine that really copes well and compliments all the flavours in this delightful dish.”
