In this issue we’ve taken a look at the theme of simplicity. We were inspired by a Valletta home designed by AP and by the fact that everyone is talking about how fast-paced life has become. Our homes are the one space where we can decide to provide not only beauty, but also whatever the body, mind and spirit need. Simplicity is not just the thought that ‘less is more’. It is that there is a point of no return, a balance point where whatever is, is just enough. Konrad Buhagiar gives us his thoughts on the ‘simple’ concept.

Welcome to the February edition of HOMEWORKS, our first magazine of the year.I would firstly like to thank Lisa on behalf of the HOMEWORKS team for her work over the last four years. This is not goodbye, It is our continued pleasure to collaborate with her as she moves into the role of Executive Editor.

In this issue we’ve taken a look at the theme of simplicity. We were inspired by a Valletta home designed by AP and by the fact that everyone is talking about how fast-paced life has become. Our homes are the one space where we can decide to provide not only beauty, but also whatever the body, mind and spirit need. Simplicity is not just the thought that ‘less is more’. It is that there is a point of no return, a balance point where whatever is, is just enough. Konrad Buhagiar gives us his thoughts on the ‘simple’ concept.

Simplicity can also mean low-maintenance, and that is what we have looked at in our gardening article. It isn’t just Japanese gardens that can be serene – the Mediterranean garden has traditionally been a simple one. A single earthenware pot containing a hibiscus or geranium is very much part of our culture. In our gardens article, we look at creating a restful and low-maintenance garden by understandng how the principles of shape, contrast and repetition should be taken into consideration. Plants that are the easiest to care for also have very strong, defined shapes. I am breathing a sigh of relief just thinking about them.Still very much on the theme of simplicity, the ground floor Balzan ‘maisonette texturale’ takes its occupants on a journey through space which encourages an expansive and tranquil atmosphere. The Portomaso apartment designed by _spacestudio is another example of a property where simplicity was the driving concept behind the interior.

I hope you enjoy our interview with Canadian designer Candice Olson from the television programme Divine Design. She shares some of her design ethos and tips with us.

The wallpaper feature on page 49 takes a look at a trend that has changed the way we look at walls – wallpaper is here to stay, using natural fibres, metallic finishes, textures and even jewels in ways never seen before.

We have a new food section too, where we are bringing you seasonal dishes that can be easily made at home. We love to cook, we love to eat and we love local produce, so we have asked chef Claude Camilleri to bring us his secrets into turning seasonal produce into quick and tasty meals that are also perfect for entertaining. This month, the unassuming globe artichoke takes centre stage. If you have never tasted a raw artichoke heart, I urge you to do so. What could be simpler?

O ne of the hardest

things to understand in

architecture if you’re not

submersed in the world of design

is that simple is not simple at all.

Simplicity is man-made, not natural;

nature is complicated and it usually

looks that way. An architect has to

create simplicity and in the words

of architect Michael Pace: “The

more successful we are at creating

simplicity, the better the chance of

that simplicity manifesting itself as

elegant.

“The simpler an architect wants a

space to look, the more thought

needs to be invested in its creation

in order to make it look that way.

Ultimately, this all boils down to

detail. It’s easy to sketch out how

we would like things to appear,

but then we need to make them

a reality. Seamless joints, slender

sections, screw-less details,

invisible lighting and floating shelves

are all examples of what one

would associate with elegance in

simplicity.”

“Of course the aim of the initial brief with the client was to identify the items

that were most important to her. On the other hand, I made a conscious

effort to avoid applying these preferences to the actual property. I do this

to prevent the client from creating a premature image of what to expect –

which would later prove very difficult to erase – whilst I get to work on a

preliminary concept. Only once the concept was there did we then discuss

the actual property. I find this technique extremely helpful, because it

ensures that our mind’s eye give us the same or very similar image, making

the rest of the process more streamlined.”

With the help of the assertive and decisive homeowner, _spacestudio’s

vision was consistent throughout the design process. The result was a

functional, clearly defined and elegant space.

T he clients bought the maisonette with

the idea of gutting it and rebuilding.

Their brief included a combined

kitchen, dining and living room space opening

up to a large back yard, with a separate study

and three comfortably sized bedrooms. The

owners particularly wanted a full-blown view

of the entire property.

Matthew J Mercieca: “Although the

maisonette is on one level and open plan, I

wanted to create the experience of a journey.

The new passage through the home now

leads from the entrance straight through to

the back yard.

“The hallway first creates a psychological

bubble by cocooning the entrant. A peephole

effect is created by the hallway unit, which

extends beyond the wall. This unit projects

outward into space onto a cruciform column

which acts as a space divider and is the one

final frontier before entering the open space.

The black column was inspired by Mies van

der Rohe who created a similar feature at the

Barcelona Pavilion. Beyond this point is the

most important view which reaches all the

way through to the garden.

“From this final frontier to the yard sliding

doors, there is a feeling of stepping down

which is created by the descending levels of

the furniture, from kitchen island to the dining

table to the sofas.”

Correlations lead the way

Matthew J Mercieca has utilised a correlation

of both materials and of dimensions to create

the outward-bound visual route.

“The size of the kitchen island is the same as

that of the fin wall, dining table, skylight and

the artificial light projection that also houses

the AC unit. This correlation functions by

leading the eye up to the sky and bouncing it

back down.

“Vertical surfaces are echoed in adjacent

horizontal planes using the same finishes.

This is a device used throughout the property

in the masses of light, marble, timber, paint

and natural light.

“The apartment’s colour scheme is tied

together by a predominance of grey. The

concrete floor acts as a backdrop throughout

the corridor and living spaces, while in the

study and bedrooms, the use of parquet

creates a change in feeling and warmth.”

The seamless flow from indoor to outdoor

creates the ideal entertainment environment,

which is further enhanced by the sliding

doors which recess completely into the walls.

Achieving one level in the indoor living space

and the outdoor space was easily achieved

by implementing more advanced detailing

and preparation. It was lighter work in the 54

working drawing package prepared for the

project implementation.

Into the zone

The first zone in the open-plan space is the

kitchen. The owners wanted to be able to

conceal the appliance area completely. To

do this, the kitchen has been kept to one

side and the appliance area hidden behind

full-length folding doors. A darker shade of

grey frames the concealed appliance storage

units.

The grey stained oak timber facing on the

island and the pendant extractor act as one

large lacquered surface. Beneath the island,

a bar, wine cooler and oven are out of sight.

The dishwasher has been located close to

the sink under the breakfast counter.

Connecting the kitchen to the dining area, the

fill wall and the dining table are sheathed in

the same brownstone marble, machined and

installed by G + R Lautier Marble Works. The fill

wall was cut from four pieces of marble, joined

to give the impression of one solid piece and

mitred precisely so that the thickness of the

marble was not evident.

This precision of craftsmanship is also evident

in the master bedroom. Veneers in the chest

of drawers match up at the corners, and

all drawers are mitred to create the purest

possible forms while keeping them purely

functional. All the custom-made carpentry is by

David Abela of Woody Woodworks.

The configuration in the main bedroom puts to

one side the bathing and changing functions

and clears up the sleeping area. A freestanding

double vanity center in white statuario marble

wraps around a corner, in an echo of the

hallway unit. The marble has been sanded

down to give the texture of leather.

A white padded eco pelle wall, which doubles

as a headboard, meets the light parquet

flooring to give the impression that the bed and

bedside tables are floating, giving the room a

suitably dreamy quality.

Clever FLOS lights suspended over the

bedside tables can be extended and directed

for reading or general lighting purposes. Grey

sheer curtains provide privacy while allowing

the light in, also matching the grey of the

lacquered wardrobes.

A stainless steel railing will create a balcony

effect for the main bedroom, while segregating

the experience of the yard in relation to the

living space.

The study had to function

as a family room, work as a

fitness room, fit a drum kit,

the children’s toys, a couple of

computers and the family filing.

In this multi-functional room, a

huge push-to-open cupboard

was created for toys and enough

storage provided under the

counter top to keep it clear.

Matthew J Mercieca: “The

whole project was based on

storage. There is a laundry room

next to the kitchen, storage

in the hallway unit for keys, a

cloakroom unit, the bathroom

vanity and the kitchen is a

massive storage space. It is only

the living room that has minimal

storage.”

Energy-saving solutions

“Environmentally, the property

has worked very well. Insulation

was given priority. Because this

was a ground level unit, we were

careful to put in a good ground

slab. All outdoor walls were

given insulation and argon filled

double glazing has been used

throughout.

“The insulation is fully compliant

with standards. Spray-on

polyurethane was used on the

roof, and dense polystyrene

bolted onto the walls followed

by a net to take plaster, what the

Italians call a ‘cappotto’.

“The result is a home that feels

warm and that needs minimal

added heating.”

V alletta, the city of stairs, has been

for centuries under pressure to

go higher, limited as the town is

by its walls and the sea on its three sides.

Whether due to the rise in trade that became a

characteristic mainstay of the town’s economy

or to the cosmopolitan lifestyle that attracted

inside its walls thousands of foreigners and

Maltese alike, the building density of the town

had been constantly on the rise until the

Second World War dealt an irreversible blow

on the growth of the town. Many of the tall

buildings that characterize Valletta, in fact,

have been left vacant and derelict for decades.

The small dimensions of these habitations

have made these properties for a long time

undesirable. Add to that the sheer physical

effort to reach the top floors, albeit via elegant

central masonry staircases winding their way

up towards the light and views, and you have

an equation that condemned these premises

to abandon. Moreover, it is often the case that

apartments on the 6th floor are not serviced by

a lift. Although density issues in Valletta have,

for the past two centuries, fuelled the need for

tall apartment block buildings, density is not the

driver today.

The top floors of these previously unloved

buildings have become valuable since the

topography of Mount Sciberras allows the spaces

perched at the top to gain panoramic views

of the Valletta harbours. 298 St. Ursola Street

was such a site. Wonderful views of the Grand

Harbour from the back of what was originally

two small apartments were perhaps the most

important quality of these otherwise sub-standard

habitations. On the other hand, adding a floor,

developing the living quarters at the top for the

views to be maximized and creating a roof terrace

for summer enjoyment was all it took to bring

these dead spaces to life. A simple brief, true, but

stitching it all together coherently was not an easy

task. The creation of an interesting upward bound

route was the most important key to the success

of the project.

This exquisite route starts at the front door which

is reached at the top of a traditional winding

masonry stairwell. This stairwell typology began

to be used mostly during the English period

and in fact is described, in Maltese construction

vocabulary, as ‘la Ingliza’. At this entrance level,

the master bedroom and bathroom are discretely

tucked away while the internal stairwell introduces

itself here and propels you up towards the light

and the views.

The first stop on the climb up is the marble clad

kitchen that aligns itself with your first sight of

the Grand Harbour, as it appears above the

rooftops of the buildings of St. Anthony Street. A

lightweight steel and glass staircase then leads

you up to a lounge that hovers over the entire

panoramic sweep of Grand Harbour. However, if

your vertigo has not been challenged yet, take the

drop-down steel ladder that will lead you up even

further, perhaps to one of the highest points of

Valletta, the roof top terrace.

The frame of the internal structure of the

apartment is left exposed, uncluttered by

other decorative materials. It is made of steel,

galvanised and silvered for visual effect. A shaft

space of light has been introduced on one side

of the building by means of a skylight that allows

light to fall down onto the internal stairs that

connect the three levels, at the same time creating

a streaked pattern of shadow and sunlight along

the wall. The effect is that of a sundial, with the

strips of light in motion throughout the day serving

to illuminate the three levels of the apartment with

reflected light.

The space has been described by the owner

as having been built like a ship. This parallel

is likely to have been drawn as a result of the

simplicity of design solutions that allow the

small space to accommodate its inhabitant’s

needs without introducing any clutter. A storage

area has being created out of the airspace in

the block’s main stairwell, the bath sinks into

the floor for maximisation of headroom, the

wardrobe serves as a floor-to-ceiling partition,

and, on the roof, the skylight window panes

fold out to serve as low tables. All these design

solutions contribute to providing a space that

combines clean aesthetics with pure function.

The materials employed in the design of the

apartment put emphasis on the unique feeling

of each of the different floors. The use of

material is in fact testimony to how texture

and colour can be used simply to transform

the character of a space. On the first floor,

the deep blue resin tiles bestow a rich, cool

feeling to the area, which is made up of the

inhabitant’s most intimate rooms; the bedroom

and bathroom. The two levels above are

dominated mainly by chunky wooden planks

and steel, making both areas more open,

warm and light. The kitchen is perhaps the

most airy of all three levels, being characterised

by cool marble and large windows. The third

level, which is once again more of a personal

space, reintroduces the blue through the soft

furnishings, but carries on with the wood and

steel material palette allowing it to become a

culmination of the predominant elements of all

three floors.

All these small but thrilling spaces provide

exciting, urban living at its best. Grand

city projects are currently in the process of

transforming Valletta irrevocably, and yet it

is these small projects that constitute true

rehabilitation.

S ince the invention

of paper itself, it

has been used on walls

to create different feelings in living

spaces. There are even signs of

papyrus wallpaper being used

in Ancient Egypt. Today we are

reaping the benefits of a wide

choice of different types of papers,

alongside the results of new

technology and materials.

I have been inclined to use a lot of

woven wallpaper recently. This is

made from natural fibres that are

actually woven on looms and then

have paper attached to the back

to make it possible to attach them

on to walls in the same way as any

regular wallpaper.

Woven papers give such warmth

to interiors. Their natural earth

tones and textures work in tune

with all sorts of interiors, be they

modern or classic, or even when

blending both styles together.

Some of these wallpapers are

woven out of natural materials

such as bamboo, linen and jute.

The yarns are left to dry and then

woven into sheet-like lengths. One

of the new collections consists

of woven grass that is knotted

together to form continuous

lengths. The cut length results in

the texture including these actual

knots and the final result is really

interesting.

Woven papers also dress up

gypsum features, such as

bulkheads, panels or fireplace

surrounds. They make a nice

change from traditional paint and

allow for creativity in textures too.

Gypsum is the perfect surface

on which to use wallpaper and

its increased use locally is the

one factor that has influenced the

popularity of wallpaper. Uneven

and damp masonry walls are far

from ideal.

Large patterns

Large patterned wallpapers make

much more of an impact than the

natural woven ones, so one must

be careful on just how daring to

be. It all depends on the general

tone desired, whether calm and

earthly or with a more flamboyant

energy.

A passing fad?

Many clients ask me whether the

use of wallpaper is just a phase

and whether it will fade out soon

and leave them regretting having

used it. All I can say is: not if it

is used wisely. This is like opting

to go for a really way-out curtain

– after a short while it will start

tiring you. One must create the

effect desired by blending it into

everything else that surrounds

it, to make it fit and not stick out

like a sore thumb. It must work

in harmony with everything else

in the room: curtains, upholstery,

floors and also the light fittings.

On my return from the Maison

& Objets fair in Paris, I can say

that wallpaper is far from being

phased out. It is making a strong

comeback and is here to stay.

wallpaper trends

There is a revival of vintage-style

prints inspired by the current

demand for all things retro.

Retro-style prints are all about

eye-popping colours, flamboyant

designs and rainbow hues - the

perfect combination for spring/

summer. Play around with

shapes and patterns. Incorporate

geometric shapes, simple floral

patterns, colourful retro designs

as well as vintage elements into

the design.

Florals are one of the key stories.

From bold leaf prints to feminine

flowers, this season is all about

taking inspiration from the natural

world.

Uber modern, hi-tech inspired

design meets vintage baroque

may sound crazy, but 2010 seems

to be a fearless year when it

comes to design. Think classic

black and white wallpaper with

bold baroque textures.

If you’re not sure about

T he glut of pop music

videos that invades our

lives today, flooding even

our most intimate spaces with its

accumulation of shifting colours

and thumping sounds, contains

one quite marvelous gem that

stands out for the simplicity of

its content and form. This is I

Want Love sung by Elton John.

It is one of my favourites for

its combination of Hollywood

style-popular appeal and the

subliminal workings of western

artistic tradition. Robert Downey

Jr with his Masaccioesque figure

and face of an early Picasso

portrait simply walks, as he

sings, along the axis of symmetry

of an enfilade of empty rooms

and corridors with checkerboard

marble floors and paneled walls.

The whole video is shot in one

continuous take which further

emphasizes its simplicity. No

fancy editing, just Downey, the

architecture and the song. Light

streams in laterally to bring

out the sculptural qualities and

proportions of this pseudo-

Renaissance Man at the centre of

architectural space.

It’s as simple and as noble as the

title of the song. And yet even

a well-proportioned, sparsely

furnished and sun drenched

space cannot exist without the

bowels of the building which

it represents: the drudgery of

daily routine that plays its role

out in the hidden mazes of utility

rooms, storage spaces and

back entrances, subterranean

passages and service elevators.

Elegant simplicity clearly is

hard work. It never tells the

whole story and always comes

at a price. Greek architecture,

Georgian houses and the

obsession of the Bauhaus

movement with reducing design

to essential forms all hide the real

truth: simplicity is not natural.

You have to make an effort to

make it happen.

Achieving simplicity is equivalent

to being constant with your gym

sessions. You cannot be a wimp,

and you mustn’t give up.

The second piece of advice I

would like to give, is always

understand what is really

important for you. This is vital

knowledge whether trying to

keep a relationship afloat or

decorating your home. The

parallel is uncanny. Sometimes

you have to forgo some items to

emphasize others that have more

meaning to you or trade-off one

idea against another. Sometimes

you need to discard objects with

no real sentimental value and

which have been in your life for

a considerable amount of time.

Otherwise you can run the risk

of diluting the simple strength of

the result that you are hoping to

attain.

Your choices are a reflection

of yourself, your character and

aspirations. So, if that’s the

case, knowing yourself is the

first and most essential step

towards creating a simple home;

simple in that it suits your life

best. I remember a quotation

from Hamlet that my father

gave me before I left home to

study restoration in Rome, my

first unsheltered encounter with

the real world. It is the advice

that Polonius gives his son

Laertes before he leaves for

Paris. It ends: ‘This above all,

to thine own self be true; and

it must follow as the night the

day, thou canst not be false to

any man.’ Being honest with

yourself, and understanding

your true needs, is a hard thing,

certainly not an operation for a

wimp. And it is the recipe for a

successfully simple home, one

that will distinguish itself from

that of your neighbour or from

those published in the glossy

magazines.

I will hazard pronouncing only

two rules in deference to Zillah’s

request for a practical, hands-

on, concrete and reader-friendly

article. The first is: always use

concepts. Detail will follow.

Concepts will give you direction

and purpose. They will help

you keep the focus and prevent

you from wandering off into

complicated eclectic clutter. And

when you are stuck or moving

sideways and away too much

from the original aim, you can

always go back a few steps

towards the original concept and

start again. A concept that you

stick to will help you keep things

simple.

The second rule is about that

complicated eclectic clutter.

The Madonna generation will

appreciate this. Never settle

for second best. If there is

something you like but cannot

afford, live without it till the right

time comes and you can acquire

it. This way your home will not

only be true to your taste, but will

also remain always simple and

unassuming.

Finally, I would like to conclude

on a bit of a corny note. The

best things in life are free, and

a simple and beautiful home is

made of all those things you

cannot buy in the shops: the

sensation of a cool breeze on a

summer afternoon, the pattern

of the sun coming through the

shutters, a well proportioned

room with finishes chosen and

laid with care, objects that

remind us of happy times and the

love of others. Recognizing these

simple things and moments is

the secret of a successful life and

of the beauty of the home that

provides it with shelter.

SWEET ONCANDICE

What inspired you to become an interior designer?

I was always very good at drawing and art but I wanted a professional career that provided a better opportunity for success; the life of a struggling and starving artist was not for me! I went to university for several years, studying both art and sciences before applying for design school. I graduated with a degree in Interior Design over 20 years ago and worked my way up through some of North America’s top design firms before establishing my own business in 1994.

What would you say is your design signature? Is it a colour scheme, a look, or the way you tackle each project?

My personal design vision embodies a refined, eclectic fusion of contrasts; old and new, rustic and refined, minimal and adorned, matte and lustrous. The result is a look that is current yet timeless; fresh yet familiar; casual and relaxed yet tailored and modern. My goal is to create a truly personalized environment that looks like it has grown and evolved effortlessly over time to truly reflect the distinct personality of my clients. I love when a client says: “it looks like me; like a designer hasn’t been here”!

What is your favourite colour scheme?

My favourite palettes are those found in nature: I love the contrast of warm wood tones… bark, walnut, mahogany… against cool tones like watery mist and vapour blues and fresh pear and celery.

You have your own collection of products for the home décor market. What differentiates them?

I design each and every last product, personally, by hand; if you see a sofa, a table or a lamp in my collections, I can show you a hand drawing of that piece. The products all come from a very personal place –literally. Whether it’s a chair or a chandelier, I approach the design of each piece the same. I start with a beautiful traditional silhouette and then I break it down to its very simplest and purest line.

The pieces are clean, pared down and contemporary but all have silhouettes and design details that reference the past… this attitude adds familiarity to the new, ultimately creating a collection that is both classic and contemporary.

Candice Olson is the 6-foot Canadian interior designer whose work tackling design dilemmas inspires millions of television viewers every week. It is her personality as well as her ability to create a current, but classic look that have created a worldwide following and a foray into her own collections. Homeworks speaks to the designer and host of Divine Design to find out more about her own design vision.

You have spoken about the need for people to find their own decorating style instead of going with the latest trend. What advice can you give our readers on how they should go about discovering their own classic style that will stand the test of time?

Good design is an investment; in money, time and often energy. As a general rule, I think investing in neutral coloured, quality core (or larger scaled) pieces – sofa, lounge chairs, carpet – provides the greatest room for discovery. Wall colours, small accent pieces, cushions, lighting and accessories can be changed up with relatively little expense, to keep the space fresh and current.

Fundamental to your television show is your aptitude and natural feel for space. How do you approach this element of design?

I approach each project with a detailed understanding of the functional requirements of the space and exactly how the client and their family want to use it. Each space and each client are always very different but defining the client’s function needs always precedes the shaping of the form.

Could you comment on how simplicity comes into your design ethos?

The more chaotic our lives become, the more we yearn for calm, order and simplicity in our homes. Whether it is an efficient space plan, clutter disguising cabinetry or merely a restful palette, design is a powerful tool that helps me create the look and feeling of simplicity. The real challenge however, is to create a space that is pared down and refined but that still has personality and soul.

Nuala and David’s bedroom:

A large dysfunctional space has become

a master retreat. The bedroom now also

has a sitting area with cabinetry that hides

the ugly heating system and comfortable

seating that focuses on what was an

unattractive ‘ornamental’ fireplace.

In a blend of rustic and elegant, Candice

designed a box from the mantle to the

ceiling, framed in traditional moulding,

and filled with cut firewood. In a stroke

of brilliance, she had Chico install crystal

sconces, set into the wood off-cuts. So,

in the seating area, the traditional and

elegant elements are balanced with rustic

touches. This eclectic feeling flows through

the entire space as the elegant fabrics are

balanced by the rustic woodcarvings from

Nuala and David’s world travels.

What has the TV show Divine Design taught you about the average homeowner’s dilemmas?

I started my career, over 20 years ago, working in commercial and hospitality design. I have designed everything from restaurants and department stores to tractor seats and meat freezers… Yes, some jobs are a bit more glamourous than others! I got into residential design as an offshoot of the commercial side of my business because clients that own stores, restaurants and meat freezer companies have homes. As much as I love commercial design where the process is matter of fact… design, tender, build, opening... I love the personal side of residential design where you have an effect on how people live every day of their lives not just for the duration of a shopping trip or a dinner out. My years doing Divine Design

have taught me that smart, creative, good design can cure any dilemma, no matter how big or small the budget. I leave every project with an immense sense of satisfaction knowing that clients will live their lives a bit better after we’ve gone.

Here in Europe we’ve gone from minimalist to eclectic, which is where we’re hovering at right now. What do you think, or hope, is next?

In this era of mass manufacturing, big box discount retailers and instant-everything, I see a thirst for unique, handcrafted, quality design elements that temper the mundane that comes with “mass”. The more heritage the better, but if it doesn’t have history it needs, at the very least, a story that brings meaning to it and a purpose for it being part of the design landscape.

Nalini’s kitchen: Candice installed new

white cabinetry and a reclaimed piece for

the island. It is an antique cabinet topped

with Carrera marble to make a functional

island for work surface and space for

dining and for guests to sit while Nalini

prepares dinner.

The backsplash tile is a perfect compliment

to all the existing wood in the space.

The floors are the original old wood and

industrial beams have been exposed.

Modern fixtures work in contrast to the

surrounding antiques and original 125-year-

old vibe.

Zen. What does it take to turn a garden or balcony into an oasis of calm? It’s all in the initial choice of plants and the mix of simplicity, contrast and repetition. An outdoor space that is low on maintenance and designed with a Mediterranean-meets-the-orient vibe allows every element to conjure up serenity.

I n the creation of a

low-maintenance and

minimalist garden, the

selection of plants is the most

crucial step, says Herman Scifo,

Operations Manager from

Calamatta Landscapes Ltd.

When deciding on placement,

keep in mind the growth habits of

the plants. Those that are slow-

growing and low should be placed

in the foreground, just like a school

photo, with tall ones at the back.

“Plants of the same kind can be

planted in lines or grouped in a

larger pot for maximum effect.”

He recommends restricting your

choices to evergreens, plants that

need low water such cacti and

succulents and to avoid plants that

shed a lot of leaves and petals.

“One large bonsai on a low table

would be a striking feature and

all that you would need. Bonsais

are not as expensive as was once

thought and in this case cost is

not an issue because you would

only need one plant. For best

results, choose a bonsai that grows

locally, such as a ficus, olive tree or

a succulent such as crassulacea.”

Grasses come into their own in

a minimalist garden. The tallest

are the pampas, followed by

penesetum and carex. All grasses

are extremely low maintenance and

just need to be cut down once a

year.

“The yucca elephantipes is also a

good choice, best if kept in a pot

because if planted in soil it grows

huge and can cause problems. The

only palm that we are allowed to

use because of the red palm weevil

problem is the cycas revoluta. This

is a slow-growing palm tree that

can be grown in pots. Sanseveria,

known as mother-in-law’s tongue,

is a hardy plant and also very

decorative, with its long, vertical

leaves. The echinocactus is a

round cactus that will grow to an

enormous size. It is extremely

ornamental and would be set off

well in tall pots.”

Tranquility in flowering plants

There are only a few flowering plants

that Herman recommends for a

minimalist, low maintenance garden.

tulbachia violaceae, known as society

garlic, works well with grasses and

gives around nine months of lilac

flowers. The garlic-tasting flowers

can be eaten and are

often used in nouvelle

cuisine. Let’s not

forget that cacti

and succulents

have magnificent

flowers too, even if

the flowering season is

short.

“Another flowering plant is the carissa

(above), which everyone knows from

the Corinthia Palace Hotel. It has a

white flower similar to a jasmine and

produces an edible fruit. It is usually

used as a hedge or bush and is

normally chosen for its beautiful deep

green colour. But beware if you have

children because it does have spikes.

“Another striking and low-

maintenance flowering plant is the

strelitzia reginae (bird of paradise).

The larger version strelitzia augusta

has huge white bird-like flowers,

grows very tall and is often mistaken

for a banana tree.

“The trailing geranium pelargonium

peltatum has a simplified flower with

only a few petals, but it makes up for

this by having a lot of flowers.”

Sculptural hardware

Plants are only one of

many elements that

make up a garden. In

a low-maintenance

contemporary garden, the

use of pebbles literally sets

the scene while creating a

carpet-like effect.

Pebbles can also help to inhibit the

growth of weeds if a layer of weed

mat is laid down first. White is still

a popular choice, and simple yet

effective designs can be created

using more than one colour or size. If

the pebbles are to be walked upon,

the smaller size is more comfortable.

To clean the pebbles, use a high-

pressure hose and a garden vacuum

or blower to easily get rid of any

leaves.

Uplighting features look dramatic

on their own account and can also

highlight individual plants. Herman

recommends white, red or green

lights for best effect. They can be

spots or embedded in the soil or

pebbles.

Tall plants need deep soil to anchor

themselves properly, 30cm minimum

and 1m for trees. Herman explains

that if you have no soil, you can turn

to pots, which are no longer playing

second-fiddle to the plant but are

sculptural features in themselves.

“There are so many stylish pots

on the market that you can easily

experiment. Something that is a

novelty is the pot which lights up.

They only come in white. You can

imagine how beautiful it would be to

have three of these pots in front of

a wall.”

While choosing pots, consider self-

watering ones that have a water

reservoir. Another feature that will

make the gardener’s life easier is

automatic irrigation.

Herman explains that the system

can even be installed on your own.

It involves a timer and a few pipes,

with spaghetti tubing that goes to the

individual plants. The pipes can go

under the weed inhibitor mat.

Guide to plant choice.

There is a real Mediterranean charm in having a shot of colour from a single bougainvillea or hibiscus on the façade of a property. When it comes to designing a 3D outdoor space, the task of replicating this simplicity is a little more challenging.

How do you set about creating a striking garden, yard or balcony that is minimalist in both its maintenance regime and visual elements? Sticking to a set of guidelines may sound restrictive, however the result will be more restful and easy to live with than a riot of variety and colour.

T he globe artichoke

is an ideal vehicle

to describe my approach

towards food. It is one of those

vegetables that most of us

regard as a one-trick pony, only

for stuffing. Yet this is such a

versatile vegetable that it can

be used for many simple yet

sensuous dishes, like carpaccio,

soup, dip and even ice cream.

An artichoke is surprisingly

wonderful eaten raw. When I

lived in Monaco I loved buying

globe artichoke hearts, ready

cleaned in a little bag. I would

thinly slice the hearts, toss them

in olive oil and lemon juice and

leave to infuse for an hour or so. I

liked the rawness, the earthiness,

the coarseness, the pure taste of

nature.

At Palazzo Santa Rosa we

struggle with convincing people

to eat their artichokes raw.

We give them the option of

blanching, where we clean the

artichoke and then simply dip it

in boiling water for 15 seconds.

Back to my food philosophy: if

it is fresh, natural, organic and

edible, it is best eaten raw. My

other kitchen principle is to

try and extend the season of

whatever is available. A large part

of our freezer is taken up by local

produce: leeks, bitter almonds,

peas, fava beans, chestnuts,

tomatoes and garlic. Artichoke

hearts are there with the rest of

the seasonal vegetables.

There are other ways of

extending the length of the

season too. With a little bit of

effort and planning you can have

artichoke dip all year round. It

costs nearly nothing, it tastes

wonderful and it can be used

either as a quick pasta sauce or

as a dip, maybe using crudités

rather than crackers or bread.

ingredients:

rucolababy spinach leaves various lettuce leaves cherry tomatoes raw globe artichoke hearts (one per person for a starter)

½ cup fresh, coarsely chopped flat leaf parsley

The dressing:

fresh lemon juice, from a whole lemon 1 tablespoon Maltese honey4 tablespoons extra virgin olive oil pepperparmesan shavings and toasted pine nuts (optional)

method:

Clean the artichoke hearts and cut in half. Turn the halves on their flat side and cut into thin slices. Soak them in a container with cold water and a half cup of vinegar to stop them from turning brown. Put the ingredients for the dressing in a small jar. Close and shake vigorously. Toss the salad leaves together and then add some of the dressing, just enough to cover the leaves with a thin coating. Add the artichoke slices at the end. Toss further. Serve in a bowl, topping the salad with the cherry tomatoes and if using, the slivers of parmesan and toasted pine nuts. If required, serve the remainder of the dressing on the side.

BeST WiNe aCCOmPaNimeNT: 2008 MALTESE FALCON GIRGENTINA CHARDONNAY MOSCATO I.G.T. MALTESE ISLANDS Whatever your wine preference is for this dish, it needs to be something that is crisp, fruity, clean and fairly light-bodied. All the ingredients have clean, fairly neutral vegetal flavours, together with hints of sweetness from the cherry tomatoes and of course the honey in the dressing. However, depending on how ‘heavy-handed’ you are with the Parmesan shavings or the toasted pine nuts, you might change the overall flavour of the finished dish, so be careful. Personally I would opt for a fruity white that has just a hint of sweetness, which is why I have selected The Maltese Falcon white with its very subtle use of Moscato. If you are a lover of toasted pine nuts you could actually go for a white that is lightly oaked, something like the Victoria Heights Chardonnay.

4 onions, finely chopped2 cloves of garlic, finely chopped6 celery stalks, finely chopped4 carrots, roughly chopped1 small cauliflower, in florets & stalk chopped in cubes 1 head of broccoli, treated like the cauliflower above10 artichoke hearts, quartered3 cups of artichoke purée base (as above)5 cups of the water used to boil the artichokes in100ml extra virgin olive oilchopped parsley and parmesan3 bay leavessalt for seasoning

method:

Fry the onions, garlic, celery stalks and bay leaves. Stir until onions are translucent. Then add the carrots, cauliflower and the chopped stalk of the broccoli as well as the artichoke hearts. Top the vegetables with the 5 cups of liquid and lower the heat. Add a teaspoon of salt and cook for 20 minutes. If the liquid is running low, add more. Now add the broccoli and the purée. Stir. Check for seasoning. Correct. The soup should be rich, chunky, robust and rustic.You can mix the parsley with the soup and serve it topped with parmesan. Alternatively, you can just put the parsley on top along with the parmesan. Serve with good sourdough bread. You might want to drizzle the top of the soup with some extra virgin olive oil.

BeST WiNe aCCOmPaNimeNT: 2008 MEDINA CHARDONNAY SUPERIOR D.O.K. MALTA

Choosing a wine to accompany soup is never easy; matching a liquid with liquid can sometimes be a problem. And once again serving a separate wine with a soup dish can be quite extravagant, especially if it is served as an additional intermediate course. For this soup, I would go for a very soft, creamy white wine with fairly low acidity and a nice clean, unoaked flavour. In reality either a dry or an off-dry will probably go equally well but I have selected a dry version with one year’s age. The 2008 Medina Chardonnay wine has softened nicely over the last year and an extra degree of weight and flavour has now developed in the wine.

artichoke Purée Base:

This is a trick that I use in order to achieve a certain creaminess without adding any fat. In the following recipes we will be using this artichoke base.

12 artichoke hearts, the hairy centre removed with the leaves cut off and soaked in water/vinegar solution. When you clean the artichoke, you remove the outer leaves by pulling them off in a ‘love me, love me not’ method. Then with the last few leaves in the middle, the ones that you leave on, you cut off the upper half leaving the stems of the leaves attached to the heart.

Fill a pot of water with about 15cms of water. Bring to the boil (without salt) and put the artichoke hearts to cook for about 30 minutes. It is a lot, I know, but you are not going to lose anything from the nutritional value because we will be using the water as well. The stems of the leaves should be about coming off the heart. Turn the heat off and put the artichokes in a blender and blend until you end up with

a smooth cream. By now it is a bright green colour. If this paste is too dry, add some of the water that was used to cook the artichokes in.

Once you see a truly smooth and velvety guacamole-like paste, stop the blender and run the artichoke paste through a food mill. This step removes any residual fibres and smoothes out the purée completely.

Vegetable stock:

3 litres of bottled water4 carrots, washed and roughly chopped some celery leaves 1 leek, washed and cut down the middle2 onions, including skin, cut in half

Put everything in a pot over a low heat and let it simmer for three to four hours. Keep warm when using for risotto or other dishes.

3 medium sized red onions, very finely chopped1 clove of garlic, whole125gr riso carnaroli2 stalks of celery, finely chopped1 leek, white part only, finely chopped1 carrot, finely chopped1 cup of the artichoke purée4 artichoke hearts thinly sliced100ml extra virgin olive oilsalt and white pepper150gr parmesan8 slices of parma ham cut into fine strips50ml extra virgin olive oil for finishing

The liquid from the boiling process of the artichokes that were used for the purée. (If it has all been used up, use normal vegetable stock)

method:

Heat the oil. Once the oil warms up, throw in the onions, leeks, garlic, celery, carrots and stir gently until the onions become translucent. Then throw in the rice; stir with a wooden spoon until the rice absorbs all the humidity and begins to stick to the bottom of the pan. Add some salt (half a teaspoon) and some pepper (a teaspoon). The sooner you add this, the better. You can always adjust later. Pour in some of the liquid, stir it in and wait until it is absorbed and the rice begins to stick to the bottom of the pan again. After 20 minutes of stirring, throw in the artichokes and the parma ham. Keep on adding stock, stirring and repeating until the rice is cooked. This should take about another ten minutes after you put in the artichokes and the parma ham.

Test the rice is cooked through. If it feels too al dente, do not worry. Take it off the heat – after half an hour, add the olive oil, stir it in, stir in the purée, followed by the parmesan. Cover with a lid and leave to rest until it is time to serve.

BeST WiNe aCCOmPaNimeNT: 2008 GRAND VIN DE HAUTEVILLE VIOGNIER SUPERIOR D.O.K. MALTARed onions, celery stalks, parmesan cheese and parma ham are the flavours to consider when matching a wine with this dish. There will be some very light, low tannic reds or even rosés that will go well here, but because of the artichoke purée in with the carnaroli rice I am going to opt for dry white with lots of weight and flavour. The Grand Vin de Hauteville Viognier is an unoaked dry white wine with enough body and complexity to cope with the stronger flavours in this dish, but at the same time it is refreshing and has enough fruit to complement the whole dish.
