My Dad, "Preacher Bill"On May 22, 1931 William

McKinley Jenkins Jr. was born to Bill and Alcie Jen-

kins, better known to me as Granny and Grandpa, on a dirt floor in a tent, at “Stump Town” on “Ugly Creek" in the Crusoe section of Haywood County.

“Stump Town” was owned by the Sunburst Logging Company which clear cut timber for the Champion Paper Fiber Company. My Grandpa cut timber for many years. My dad was 1 of 12 children. I can remember my dad telling me, “I didn’t go to town until I was 9 years old.” It was the big town of Canton, NC. Daddy said, “I felt like I was in New York City.”

My dad’s family grew up very poor. He would always tell me, “If we didn’t kill it, grow it, or go out in the woods and pick it…we didn’t eat.” These skills my dad learned at a very young age; he practiced 'til the day he died and made sure he passed it onto his two boys and grandchildren. He was a great outdoorsman.

My dad was a handsome man. He was 5 feet 9 inches tall with olive skin, dark, wavy hair, and a muscular physique. He was always known for being clean shaven and sharply dressed. When he walked into a room he immediately attracted your attention. He had a magnetic personality. If you met him once you’d never forget him. He was simply a pleasure to be around.

He married the love of his life, Ethel Louise Parker in 1953 and for 57 years their love was neverend-ing. Daddy would always tell me how he loved my mom more and more with each passing day.To me, this was one of my dad’s finest qualities.

In 1955 he answered the call to preach and thus was tagged for the rest of his life as “Preacher Bill.” He earned his Masters in Theology and his Doctorate in Divinity and helped change the lives of thousands of people throughout the Southeast. His name is recorded twice in the

Library of Congress for “Bettering the American Way of Life” and at one time was on the “Who’s Who” list for having the best personality in the South. One of the “coolest” things about my dad was he could talk intellectually about how NASA launches a rocket into outer space or how to field dress a deer. It didn’t matter to him — he just loved people.

In 1961 a son was born to this fine couple. William Richard Jenkins, or as my friends know me as “Rick.” I am one of two sons to be born to this dynamic duo. It was a pleasure growing up in this fine home. There was never any “gray area.” It was either right or wrong, a fundamental that has stuck with me these 50 years. I was taught to live by the “Golden Rule” and that there is a “Higher Power.” While these days this might not be widely accepted, I find that in my life, when this is applied, things seem to go a whole lot smoother.

My dad, “Preacher Bill,” lost his fight with cancer on March 26, 2011. At 79 years old he was still letting me and my brother Randy know that if he can “make it,” anybody can. My brother and I took his words literally. Two ole country boys born and raised in Leadvale, Tennessee have tried to make the best of life. My brother Randy is a family man, retired from the military, and now a deputy working with the Haywood County Sheriff’s Department. I have a beautiful wife of 21 years, three fine children, and a great career with the IWANNA Paper. I am a veteran of Desert Storm, have had a TV show, radio program, hunted and fished for a living, and was even the Vice Chairman for the Buncombe County Republican Party. That’s not bad for an ole country boy.

You see, Daddy, all that hard work has paid off. I have lived for 50 years just to make you proud. You were the greatest teacher. I miss you daily, my memories of you will never fade, and my love for you will never die. 'Til we meet again……Thanks!

Father's Day may include cel-ebrating a number of notable

men in people's lives. Those men can include stepfathers, many of whom step in after a divorce or the death of a parent and play a strong role in their stepchild's life.

One million American children experience divorce every year. Roughly 65 percent of marriages today don't go beyond 15 years of marriage. Of the marriages that end in divorce, statistics indicate that women often gain custody of the

children and remarry within 5 years. A stepdad may become a part of a child's life and blended families are often the norm.

Whether a man is the biological parent or a stepdad, he is often an important figure in a child's life. Come Father's Day, children may want to show their appreciation to the dad in their lives whether or not they share the same DNA or last name. Here are some things to keep in mind.

* If both your biological dad and stepfather are living and in your life, think about setting aside time for

both of them. Perhaps the morning can be devoted to one and the evening to another. Or maybe spend time with your stepfather on the Saturday prior to Father's Day and spend time with Dad on Sunday.

* Create a collage of images featuring you and your stepfather. Present it to him on Father's Day and explain how he has helped shape the person you've become.

* There are cards made specifically for stepfathers. I f one doesn't express the right sentiments, create a handwritten card that offers the right words.

* Children who have not had the coziest relationship with their stepfather should attempt to use this Father's Day as an opportunity to revisit that relationship and spend time together. It could mark

a meaningful turning point for both people in the relationship.

* If your biological dad and stepdad are friendly to one another, think about going out with both of them at the same time. Plan an outing to a sporting event or something they both will have fun doing.

* Stepdads sometimes have to play second fiddle and may not find it easy to blend into an existing family. Make it easy for him — let him call the shots and do something he likes.

Steve Douglas — My Three Sons: One of the longer-running situation comedies of the era, the show about a widower raising triplet sons aired from 1960 to 1972. Frank Costanza — Seinfeld: The show about nothing gave birth to one of television's most memorable supporting players. Frank Costanza was the outspoken, boarish, and overly serious father to Jerry's friend George. Eternally

high-strung, Frank yelled more than he spoke and routinely butted heads with his equally dysfunctional wife Estelle. Fans of Frank Costanza may have enjoyed a similarly quirky character in Arthur Spooner (also played by Jerry Stiller) on The King of Queens.

Mike Brady — The Brady Bunch: It takes quite a man to be the father to three biological sons and three adopted daughters, but architect Mike Brady manages to pull it off. Never short of fatherly advice and time for quiet moments with the wife, Brady is a master at balancing work and family.

Dr. Heathcliff Huxtable — The Cosby Show: In this ever-popular primetime show, Cliff Huxtable was the lovable dad who reared his five kids with witty one-liners. With the comic genius of Bill Cosby behind the success of the show, and the endearing nature of Huxtable, it's no wonder the show lasted for eight seasons.

Homer Simpson — The Simpsons:

There are certainly the Jim Anderson's of the "Father Knows Best" variety of TV dads, but Homer tips the dad scale entirely in the other direction. Lazy, gluttonous, and often half-witted, it's a wonder Homer was able to hold down a job to care for his family. But at the crux of this underachiever was a heart of gold ... or doughnuts. Ray Barrone — Everybody Loves Raymond: "Newsday" sportswriter and dad to twin boys and a daughter, Ray's biggest feat was being able to head his family unit despite the interference of his parents — who lived right across the street. Ray was an everyman who navigated his wife's mood swings and family stress with not nearly as much finesse as he showed on the golf course.

Archie Bunker — All in the Family: Loud, bigoted, and conservative, Archie was the complete opposite of his liberal daughter and her "Meathead" husband. Archie's commentary may have been offensive and controversial — especially in the time in which the sitcom aired — but viewers could tell he had his family's best interests at heart.

Tony Soprano — The Sopranos: What's a better ally for a son or daughter than a dad who's other family is a criminal organization? Tony may not have many redeemable qualities, but he did his best to keep the family together amid the pressure cooker that was his life of crime.

Steve Keaton — Family Ties: It's hard being a former hippie and raising a conservative, Ronald Reagan-loving son. Together with his wife, Keaton did a good job at tackling the tough questions of the 1980s.

Al Bundy — Married With Children: Al Bundy served as a role model to all dads out there, showing the world

what NOT to do. Faced with a lousy job, bumbling wife, airhead daughter, and underachiever son, the only thing Al had to look forward to at home was a comfortable couch.

Charles Ingalls — Little House on the Prarie: A hard-working frontiersman, Charles was soft-spoken and always put the needs of his family first. Ingalls showed all dads what it was to be the rock of the family, especially when modern conveniences like running water and cable TV sports were yet to be invented!

While a burger and some fries certainly qualifies as meat and potatoes, perhaps Dad deserves a little more for Father's Day. Here's a meal that seems complicated but really is quite easy to make. Plus, the end product is a dinner that looks like it could be served in a gourmet restaurant.

ingredients:5 lb. pot roast1/2 cup water1 package onion soup mixSalt and pepper, to taste4 large baking potatoes2 slices bacon1/4 cup milk1/2 tsp. chives1/2 stick butter1/4 cup shredded cheddar cheese

Directions:Pre-heat oven to 350°F. In a baking

pan, lay down one sheet of aluminum foil lengthwise and then place on top widthwise so the foil overlaps. Place the pot roast in the foil. Add water and soup mix. Fold up foil to make a steaming pocket.

Place the pot roast into oven and use a meat thermometer to test doneness when thermometer reads medium, after about one hour of cooking.

For potatoes, place cleaned potatoes with skin on a baking sheet. Bake until the potatoes test soft enough when pierced with a

fork. You don't want the potatoes to fall apart.

Remove from the oven and let cool a few minutes. Slice each potato in half. Use a spoon to scoop out the middle of each potato into a bowl, leaving a thin layer of potato on the skin.

Add milk and butter to scooped potato pulp and whip with a hand mixer until fluffy.

In a skillet, brown the bacon slices until crispy. Let cool and then chop into small pieces.

Lay the scooped potato skins back on the baking sheet. Scoop the whipped potatoes into the skins.

Top with the chopped bacon, chives, and shredded cheese. Bake again until the potato tops get lightly browned and are firm to the touch.

Serve sliced pot roast and potatoes with gravy and a vegetable of choice. Dad will have no problem filling up on this yummy home-cooked meal!

ingredients:For the Marinade ~1/2 cup favorite steak sauce or Worcestershire sauce1/2 cup lime juice1 medium tomato, chopped1 chipotle pepper in adobo sauce, chopped1 Tbsp. oil1 clove garlic, minced1/4 tsp. cayenne pepper1/4 tsp. paprika1 Tbsp. brown sugarSalt and pepper to taste

1 flank steak, or favorite steak (about 1 lb.)1 loaf crusty French or Italian breadButter for spreading1/4 cup shredded Monterey Jack cheese

Directions:Mix all marinade ingredients in a

bowl. Reserve about one-third cup of the marinade and pour the rest into a resealable plastic bag. Add the steak to the bag and allow to marinate for an hour or more in the

refrigerator.

Spray the grill with non-stick cooking spray. Heat the grill to medium heat.

Remove the steak from the bag and place on the grill. Allow to cook 17 to 20 minutes for medium-rare doneness, or until desired doneness. Brush the steak while cooking with the reserved marinade — don't use the marinade that was in the bag with the meat.

Remove the steak and let it rest for 10 minutes.

Slice the bread lengthwise and butter each half. Sprinkle on the shredded cheese. Put bread on the grill to toast slightly and melt the cheese.

Slice the meat and place on the bread. Cut into serving-size portions and enjoy with your favorite side dish.
