EDITORS The last vestiges of a Wine Country Winter are well and truly behind us and some unseasonably warm days suggest that we may have an especially warm summer in store, which makes outside dining an irresistible pleasure.

This issue celebrates dining in the vineyards. Surely there can be no more relaxing way to spend a leisurely afternoon than kicking back and savouring your favourite wine overlooking the spectacular vineyards, mountain range and rural countryside views. Add in an exceptional meal and good company and suffice to say, life does not get any better than dining Al Fresco in the Hunter Valley! As George Francisco (Roberts Restaurant) says “It’s good for the soul. ”

You’ll find all the best spots to enjoy al fresco dining on page 6.

Another unique Wine Country sight includes the hot air balloon. Get outside early on most mornings and you will see the colourful giants peacefully suspended over the vineyards, while the occupants experience the area from above. October see’s the annual Balloon Fiesta come to town as dozens of hot air balloon enthusiasts take to the sky in a glorious display of colour and pageantry. Read all about the Balloon Fiesta on page 10 and if you would

like to take part be sure to book early as spots will be limited.

Spring is the perfect time of the year to be in the vineyards with the buds developing new shoots and leaves and

the green tinges across the top of the vineyards turning into an

explosion of growth and colour. The 22nd Annual 2013 NSW Small Winemakers Show produced 9 trophies (out of the

14 awarded) for our Hunter Valley vineyards so get out there

and get tasting!

For some reason warm weather, seafood, outdoor dining and white wine all seem to go together - and perhaps more so in Australia than in most other countries, right? This issue includes a guide on matching wine varieties to different types of seafood and is a must-read before heading out to dine this spring and summer.

Our wine variety this month saw it’s origin in France but has been brought to it’s current popularity by the Italians. Can you guess? Check out page 12 to see if you’re correct and get on over to Adina Vineyard to taste this month’s pick of the crop.

October sees the start of concert season in the Hunter Valley with Opera in the Vineyards and Jazz in Vines gracing our outdoor stages in the second part of October. If you’ve never experienced an outdoor concert in the vineyards put it on your bucket list and do it! Enjoy!

WHAT’S ON SHOW?

Cessnock Regional Art Gallery

During October, Cessnock Regional Art Gallery presents Knockout, a photo-documentary exploring grassroots Aboriginal rugby league in NSW.

Photographer Amanda James first attended Aboriginal Rugby League Knockout Carnival at Nambucca Heads in 1986. The carnival, now in its 4th decade, gathers men, women and children from over 60 different language groups to take part. Initially established as recognition of Aboriginal sportsmanship, over the decades the carnival had became an important way to unify people within the communities.

Knockout captures a “behind the scenes” view of community living and active lifestyle, uniting generations and inspiring younger generations to participate in sports and be an active part of the community.

The exhibition runs at Cessnock Regional Art Gallery until 27th October. Entry is free.

Pinot Gris and Pinot Grigio are in fact the exact same grape variety and believed

to be a mutation of Pinot Noir. The grape is said have

originated from the Burgundy region of France

where it is mostly cultivated in Alsace and known as Pinot Gris, while in Italy it is recognised as Pinot Grigio. Although French in origin, it is really the Italians that brought the variety to popularity and global

recognition.

The names Pinot Grigio and Pinot Gris mean

''Grey Pinot'' in Italian and French respectively. ''Gris'',

meaning “grey” refers to the

Pinot GrigioPinot GrigioPinot Grigio

colour of the grapes. As a result the wines often have a slight coppery hue.

Although they are the same grape, the two names have over time come to infer two different styles of wine. Immensely popular, the Italian style Pinot Grigio wines are typically lighter-bodied, crisp, fresh, with vibrant stone fruit and floral aromas and a hint of spice. In contrast, Pinot Gris wines are more full-bodied, richer, spicier, and more viscous in texture. They also tend to have greater cellaring and ageing potential

Today Pinot Grigio / Pinot Gris is planted all over the world in almost every wine-growing region. For the most part these countries are making the more fashionable Pinot Grigio style, which is typically easy-drinking.

Although Pinot Grigio was first introduced into Australia as part of the James Busby collection in 1832, it is only in the last 20 years that it has made its rapid entry into the Australian wine scene and attracted some serious interest. Pinot Grigio is fast becoming an increasingly popular wine with the variety now being grown in most Australian wine regions. In fact if one considered projected grape intake figures, it would not be surprising if in the future, Pinot Grigio became as popular as Riesling or Sauvignon Blanc.

When it comes to food, these wines pair quite differently. Pinot Grigio, being lighter is perfect when served as apéritif or with lighter dishes such grilled shrimp, seafood pasta dishes, oysters, shellfish or antipasti and garden salads. On the other hand, the more full bodied Pinot Gris styles are well matched with roast chicken, pork or veal, chicken casseroles, many seafood dishes and hard cheeses.

Spring is the perfect time of the year to be in the vineyards with the buds developing new shoots and leaves triggering the start of the grape flowering process. As the days get warmer, the shoots grow longer and the grape flower begins to form grape berries - known as ''berry set''. The vineyard team now get busy monitoring the vines and crop thinning where necessary to meet optimum yield levels per acre.

Good-quality seafood, whether bought or caught, deserves a bit of effort where the matching of wines is concerned. As a general rule, the more delicately flavoured the fish dish is, the more subtle the wine should be.

Pairing wine with seafood isn't a difficult task. When thinking in terms of weight and substance, delicate raw fish and light, shellfish go best with equally delicate, light white wines. Similarly, a piece of grilled swordfish or salmon will go better with a richer, more substantial white. The general view is that white wine should be served with fish and red wine with red meat. While there is some validity to that belief, wine drinkers should not limit themselves to any single category. At the end of the day it is the type of seafood that will determine the best match for the wine glass. Here are some examples to assist with the choice:

Semillon is one of the best-kept secrets of the wine world and also the perfect partner for seafood. A young zesty Semillon is the ideal match to delicately flavoured dishes such as raw and lightly cooked shellfish - especially those with Asian flavours, oysters, fresh crab, clams and sashimi. A rich and complex aged Semillon is more suited to fully flavoured dishes, such as grilled fish (especially grilled salmon) or lobster.

Shellfish such as clams, mussels, scallops as well as crab and lobster tend to call for light whites and sparkling wines. Sparkling wines and oysters are a classic combination. Verdelho is also an ideal wine to accompany shellfish. If the dish is spicy, consider an off-dry Gewürztraminer.

When it comes to lean, simply cooked white fish, the ideal wines to reach for are Chenin Blanc, Pinot Grigio and Sauvignon Blanc. Flounder, sea bass,

cod, snapper, lobster, shrimp, clams, crab, raw oysters, mussels all do well with these wines. Similarly, a light, slightly sweet Riesling pairs well with scallops, clams, grilled shrimp, calamari, trout, or baked oysters

For the more meatier fish such as tuna or swordfish, look to match it with a white wine that has a bit more body such as a Viognier or even a Chardonnay. An un-oaked Chardonnay is especially well paired with creamy seafood chowders, fresh cod or, trout, grilled or poached salmon raw oysters, mussels and even lobster.

Rose is another category that pairs well with seafood, especially with a thicker meatier fish such as tuna or swordfish - especially when adding some spice to the dish.

When it comes to salmon (especially smoked salmon), tuna or swordfish, it pays to look beyond the white varieties and consider a light to medium bodied Pinot Noir or Merlot. The light body and delicate flavours of these wines will not overpower the fish and the fish are meaty enough to match the red wine.

If you can't decide or everyone at the table is eating something different, order a bottle of nice Sparkling wine - it's one of the most food-friendly of wines.

How long

should I

cellar wine

for? Most people assume that the longer that you keep a wine, the better it will get. It is a widely believed misconception that you must age wine. The fact is, throughout the world most wine is consumed within 12 to 18 months after it is produced. While some wines will mature and become better over time, others will not and should be drunk within a few years after they are made.

Wines which are expected to be matured in the bottle before drinking can go over the hill faster if not properly stored. A famous name on the label is no guarantee that the wine will age well. The more tannins that the wine has, regardless of the brand or label, the better it will age. The average number of years for ageing white wines is between 5 to 7 years. Conversely, some red wines can be kept for 30 years and longer.

Unfortunately the only way to really know when a wine is ready is to taste

it. Keep some of these tips in mind when ageing your wine:

Wine should be stored in a cool dark place. The ideal temperature to store wines is between 12-16 degrees Centigrade. However, any temperature between 5-18C (40-65F) will do as long as it remains constant.

A rule of thumb for ageing Cabernet is up to 10 years, Merlot 4 - 7 years and Pinot Noir 4 -5 years. Big Chardonnays can be aged for several years (10 years or more) while a Pinot Grigio can be consumed up to 5 years. Hunter Valley Semillon is one of the greatest cellaring wines in the world and can “live” for a good 20 years.

Don't age your wines so long that you forget to drink them. They are meant to be enjoyed!

It's no secret that the Hunter Valley is fast becoming a ''foodies paradise'' for not only its award winning restaurants, but also its abundance of delightful gourmet food products - largely sourced from family owned and operated businesses such as cheese factories and delicatessens making some of the finest cheese, chutneys, oils, chocolates and other culinary delights.

If you love hand-made cheese products, you now have the chance to sample the tastes of the Hunter and even dine alfresco at The Hunter Valley Cheese Factory located at McGuigan Wine Cellars.

Cheese Affinuer, Rosalia (Rose) Lambert has created a special new menu of cheese and charcuterie boards. ”I have chosen products which I believe reflect the diversity of the area,'' explains Rose, "I then added a few of my own special touches which pay tribute to the region and refines the diners overall experience”.

The menu features Hunter Valley Cheese Factory artisan cheese, olives, oils, fruit pastes, pates, local breads & accompaniments and is made for two or more people to share.

Cheese made on site and seasonally available for selection included Fromage Blanc, Brie, Washed Rind, & Blue Vein Cheeses, a small selection of cheddar and goats milk cheeses are also available.

Wines to accompany the cheese boards include McGuigan Semillion & Pinot Gris or your choice of Espresso Coffee or Tea.

A range of the cheese board ingredients are available for sale in their Cheese & Regional Produce Epicurean Tasting Rooms.

Bookings are not essential (unless the dining party is over 10 persons) and platters are served daily 9am to 5.00pm. If you would like to enquire further please contact The Hunter Valley Cheese Factory on 4998 7744.

If you are looking for something a little bit different then take a drive down Hermitage Rd and visit DenMar Estate where you can taste from a small selection of superb estate grown wines or have a relaxing and casual meal at Cafe DenMar while soaking up the views of the Brokenback range and surrounding vineyards.

The wines on offer at the cellar door include Semillon, Chardonnay, Pinot Noir and Cabernet Sauvignon - all made from grapes grown on the property, making them true 'single vineyard wines'. Their 2009 Chardonnay is exceptional and has just won a gold medal at the Hunter Valley Boutique Wine Show.

From October, Cafe DenMar is open on weekends only and serving a selection of delicious, well priced, light meals such as Atlantic salmon & salad or steak & salad. So make sure you pop in ...it's worth the visit.

The Hunter Valley Steakhouse has to be one of the most refined and enjoyable dining venues in the Hunter - with its modern yet gracious atmosphere and well spaced, white clothed tables and candles - just perfect for setting the mood for a memorable dining experience.

The menu is extensive and provides à la carte menu options as well as a ''table d' hotel'' menu which offers diners a superb but limited number of entrees, main courses and desserts and at a very good price. This is also where French born Executive Chef, Jean Marc Pollet ''struts his stuff''... with a menu that features the highest quality local grain and pasture fed beef along with many other dishes. Whilst the menu is heavily influenced by quality beef, lovers of seafood and pasta will not be disappointed with a large range of enticing dishes to choose from.

And after dinner? Well - why not try the Lodge Bar for an after dinner beverage and see where the night takes you ...

Peter has been making chocolate confectionary at his family business - The Hunter Valley Chocolate Company for almost 16 years but that was not part of the initial career path he had set for himself.

Growing up in the bush around Roma in Queensland and on the beaches of the Gold Coast, Peter's first passion was photography - studying art and photography at Griffith University in Brisbane for 3 years and working as a cadet photographer with the Gold Coast Bulletin for 2 years. His first role as a photo journalist was with the Queensland Country Life Newspaper before deciding to travel to London in 1989 where he lived for the next 8 years. In London Peter worked in a variety of pubs before taking on the role of Area Manager for Samuel Smith Brewery where he was responsible for managing a number of their pubs.

Peters passion for photography continued unabated and he continued to chase work as a freelance photographer in his spare time (when he wasn't playing cricket). Much of his work came from the sport and music industries and Peter would often be busy doing photo shoots of live bands that include The Prodigy, Jamiroquai, Marilyn Manson and Jethro Tull. A major highlight was taking some notable shots of the Rolling Stones.

With things moving in a positive direction, Peter and a college friend made the bold decision to open a photographic studio inside a three-level warehouse in London which once housed the esteemed Hammond Organ Company. They worked from there for a number of years.

From Rock to Choc: By 1997 photography was fast moving into the digital era which proved to extremely expensive for photographers who had invested heavily in film photography. Believing that his skills as a professional photographer were becoming obsolete, Peter made the decision to return to Australia.

It just so happened that at that time his parents had taken up the opportunity to set up a chocolate business in the Hunter Valley and Peter was invited to get involved. Peter attended a chocolatiers course at the William Angliss College in Melbourne and shortly after started manufacturing from the Hunter Valley Gardens store before moving to the current location in Lovedale. His life as a chocolatier had begun and for Peter it proved to be an excellent decision as chocolate soon become an integral part of the whole food and wine experience for visitors to the Hunter Valley.

Peter is married to Kate who grew up in Lochinvar and together they have a six year old daughter - Lucinda. When not at work, Peter is chasing waves at Newcastle beach, fishing for flathead around Stockton and the Bay or building ''Fairy Gardens'' with Lucinda.

WHAT’S NEW IN FOOD

Good wine, delicious food and great music just go together. They represent all the good things in life and as a nation of proud wine and food lovers, we enjoy nothing more than a lively festival with plenty of fine wine, delicious food and great entertainment. Individually, they enhance each other. Together they move us to feel more, to feel differently, and to feel better.

As was once famously said by Michael Broadbent - renown British wine critic, writer and auctioneer, ''Drinking good wine with good food in good company is one of life's most civilized pleasures''.

This couldn’t be more true than here in the Hunter Valley. A visit to the Hunter Valley is no longer about just tasting wines. With our award winning restaurants, celebrated chefs, extensive selection of gourmet produce and year long music festivals - food and music now play an integral part of the overall Hunter Valley experience.

Whether it be a music festival in Wollombi, celebrating the June wine and food month, blessing the annual grape harvest, partying at the Lovedale Long Lunch, getting in the mood at Opera in the Vineyards and Jazz in Vineyards, chilling out to the music of local musicians or dancing in front of international artists at an outdoor vineyard concert - it's all taking place in the Hunter Valley - all year long.

This month we have Opera in the Vineyards on the 19th of October. This years event heralds the 18th annual celebration of food, wine and opera, held at the historic Wyndham Estate Winery and presents two of Australia’s hottest singers, the international soprano Anna Leese and the ever popular David Hobson. It is said that even the ‘opera-shy’ will be familiar with the unforgettable masterpieces, brought to vibrant life with a full orchestra under the stars, on the banks of the Hunter River.

Also held in October is the annual Jazz in the Vines music festival held at Tyrrell's Vineyard on October 26th. Jazz in the Vines is about music - jazz, soul, funk, jazz-rock, modern, traditional and enjoying good food and wine amongst family and friends. This years confirmed artists include Marcia

Hines, James Morrison, The Bamboos, Bob Barnard, Jan Preston, The Shuffle Demons and The Admirals Own Big Band.

Each year the Hunter Valley attracts an increasing number of local and international artists to perform in outdoor concert arenas at local vineyards - a fast growing trend in the music industry. This year Bernard Fanning and Sarah Blasco ''kick off'' the concert season performing at Bimbadgen on the 2nd of November as part of the 'Day on the Green Concert Series. They are shortly followed by Fleetwood Mac performing at Hope Estate on the 16th of November. Leonard Cohen makes his second trip to the Hunter Valley performing for A Day on the Green at Bimbadgen on the 23rd of November.

Alicia Keys also returns to the Hunter Valley this year, but this time to perform at Hope Estate on Saturday 14th December.

Bruce Springsteen and The E-Street Band will also be playing at Hope Estate on the 22nd of February next year as part of Springsteen's Australian tour - his second visit in as many years after a decade-plus absence from Australian venues.

One event not to be missed ..... and an event that truly celebrates the joys of great wine, food and music is the annual Lovedale Long Lunch - one of the most well known and popular wine, food and music festivals to be held in the Hunter Valley. Held amongst the picturesque vineyards of Lovedale in May each year, the Lovedale Long Lunch is a wine and food lovers delight attracting over 20,000 people to the two day event. The Lovedale Long Lunch is a once a year opportunity to indulge your senses, taste world class wines, indulge in delectable cuisine and dance the weekend away to some of the best live music in the Hunter Valley.

So mark your diaries and come celebrate all things to do with wine, food and music in Australia's oldest and most well established wine region and enjoy a feast of celebrations and festivals held throughout the year.
