Welcome to Variety’s Learning Lunch SeriesVariety the Children’s Charity is an international

charity with more than 55 chapters around the world.

The Chapter in Southeast Michigan was established more

than 70 years ago and annually supports the needs of

tens of thousands of children through the provision

of grants, scholarships and support averaging more

than $2 million each year.

Tabletops 2009 is the second in our series of learning

lunches that features exquisite tables decorated

by some of the area’s finest designers. Our goal for

Variety’s Learning Lunch Series is to provide speakers

on topics that are of interest to women along with

an enjoyable luncheon experience. We are delighted

to have as this year’s speaker, Don Vanderbrook, a

celebrity event designer from Cleveland, Ohio.

We are thankful to all of you who have supported

today’s event. We could not have achieved such great

Don Vanderbrook grew up in Newark, New York, then home of the Jackson Perkins Rose Company. During his employment there, Don hybridized many roses, some of which are still on the market today. Vanderbrook graduated from Cornell University where he studied landscape architecture. Drawn to the artistic side of plants and flowers, he started a floral business with emphasis on creating a “total effect” for weddings, parties and special events. He carved out a niche, and began doing events all across the country. Locally, Vanderbrook has decorated for private parties

in tents and homes, corporate events, cotillions and “coming out” parties for debutants. Vanderbrook Inc. was bestowed a great honor when asked to create the floral decorations for the State dinner honoring Margaret Thatcher at the White House. Some months later he did the decorations for the State dinner for the King of Nigeria as well. Mr. Vanderbrook and his staff spent four days at the British Embassy doing flowers for the special guests and the parties held in honor of the Royal Couple, Prince Charles and the late Princess Diana. He also received a royal invitation to attend the embassy parties, where he personally met Prince Charles and the late princess. Add to these remarkable experiences the privilege of being invited to decorate luncheons and inaugural balls for many of our presidents and one sees a man who, over many years as an event planner and floral designer, made his mark. When Queen Elizabeth paid an official visit, the British Embassy in Washington, D.C., brought in Vanderbrook to provide the decorations. Also, the National Botanical Gardens in Washington D.C. hired him to create a special room for the performance of Johnny Mathis. Special guests at the event included Lady Bird Johnson, Betty Ford, Rosalynn Carter, Nancy Reagan, Barbara Bush, Hillary Rodham Clinton and her husband, President Clinton. Articles and pictures of Vanderbrook’s work have appeared in House and Garden, Bon Appetit, House Beautiful, Architectural Digest, Colonial Homes, Town and Country and many newspaper articles across the country.

Don Vanderbrook lives on a ten acre working farm in Newbury, Ohio. Four of the ten acres have been converted to formal English and wildflower gardens. Garden clubs annually take tours through the gardens where they see unusual flowers from England, Holland, Canada and other parts of the United States.

Emcee - Monica GayleMonica Gayle joined the WJBK Fox 2 News Team in December 1997 as co-anchor of the station’s 5:00 p.m., 6:00 p.m. and 10:00 p.m. newscasts with Huel Perkins. Monica is a native of Seattle and a 1982 graduate of Washington State University where she began her pursuit of a long-time dream of a law career. Halfway through college, after completing a few broadcasting classes, she changed her major to Broadcast Communications.

Monica’s first job right out of college was in Billings, Montana where she describes her position as a “one-woman band”. The TV market was small and she did literally everything – reporting, photographing, editing, producing, and anchoring. She credits this first job for helping her to understand every facet of the business.

From these beginnings Monica went on to become a 5-time Emmy-Winning journalist who worked in a number of markets, including KUSA-TV in Denver and KNSD-TV in San Diego. As a CBS network correspondent and anchor, she had an opportunity to travel overseas and report from London, North Ireland, and Bosnia. Being in a war zone was a life-changing experience for her. Monica returned to Detroit in 1997 when she joined Fox 2 News. She is extremely proud to be a part of the Fox 2 News team.

Monica is also proud of her family. As a wife and working mother, she does the proverbial “balancing act” to meet her professional obligations while spending quality time with her family.

As President of Variety the Children’s Charity, I am delighted to welcome you to our second annual Table Tops Luncheon.

I am so pleased that you have joined us for this fun-filled day, but more importantly that you value the mission of Variety the Children’s Charity. For over 75 years you and others have made it possible to provide

thousands of children in Southeast Michigan with significant medical, therapeutic, recreational, and educational needs. You are the reason Variety exists and we thank you.

Also, thank you to co-chairs Lisa Petrella and Karen DeKoker who are the brainchildren of this event. Together they have brought their endless energy, enthusiasm and talent ... and the response has been wonderful.

The committee has worked diligently to attract designers, to create an engaging program and to “fill the house”, and for that I thank them.

As I have said so often, “By what we get, we make a living; by what we give, we make a life”. Thank you for helping bring to fruition the life dreams of so many children in Southeast Michigan.

Variety the Children’s Charity is dedicated to promoting and protecting the health and well-being of children around the world.

It started with one baby…On Christmas Eve in 1928, a baby girl was found abandoned at the Sheridan Theater in Pittsburgh, Pennsylvania. A note was pinned to the

baby’s shirt pleading with the theater people to raise the child. A group of 11 gentlemen affiliated with the entertainment industry agreed to underwrite the child’s support and education. They named the baby “Catherine Variety Sheridan” and thereby founded the first Variety chapter, or “Tent.”

Today…Variety has 58 Tents around the world. Detroit’s Tent 5 was established in 1932 and currently has many volunteers and supporters who raise money to improve and enrich the lives of children in our community.

Every year children are born missing arms and hands. The Variety

Myoelectric Center was created thanks to the vision of Mr. Milt

London in the early 1970’s to develop a myoelectric limb bank in

the Detroit area. Today this center is at the forefront of cutting edge

technology and is the only center in North America.

Prior to myoelectrics, children’s missing hands were replaced with

unsightly hooks and claws which provided minimal function. In

contrast, a myoelectric hand is a life-like flesh colored hand that

moves when an electrode receives a signal, sent by the brain to a

muscle in the arm, to open and close the hand. This opening and

closing occurs at the child’s command, a highly skilled task learned

with the help of an occupational therapist.

The road to the creation of this Center was long, bumpy and filled

with skeptics. Thanks to Mr. London, Dr. Lawrence Morawa, a well

known orthopedic surgeon in the Detroit area and Variety, who to-

gether raised money to create and maintain the Myoelectric Center,

children no longer have to sacrifice doing things other children can

do because of their physical challenge.

Children come from as far away as Hong Kong and France to be fit-

ted and trained at the Center in Detroit. Variety’s Myoelectric Center

at Children’s Hospital of Detroit has fit hundreds of young children

with myoelectric prostheses so they can lead more normal lives.

Ten years ago estimates indicated that more than 24% of chil-dren in Detroit go to bed hungry each night, while at the same time more than 25% of the harvested fruits and vegetables of the Detroit Terminal (Eastern Market) are thrown out each day. In 2001 The Variety Produce Rescue Mission was established due to the efforts of Rob Allen, past President of Variety, and Matthew Prentice of Matt Prentice Restaurant Group. Each day before most of us awaken, hundreds of pounds of almost perfect fresh fruits and vegetables are rescued and distributed across the 5 county metro areas through relief agencies, soup kitchens, shelters and outreach centers.

Currently over 30% of our Michigan population lives with food insecurity. The need is increasing and this program is very success-ful in providing healthy, nutritional food to children who otherwise might go to bed hungry.

Bikes are most often an integral part of youth, but for some kids in our communi-ty, the prospect of owning a bike is only a dream.

Variety, through the generosity of its support-ers, has provided deserving and needy chil-dren with bikes for the past 12 years. Since 2006, the program has expanded to include not only fulfilling the dreams of children involved with Variety-supported agencies, but also special needs children who require specially adapted bikes.

Each year in December, Variety holds a spe-cial “Bikes for Kids” party. Children ages 8 through 14 are given new bikes, helmets and locks. All sponsors are invited to attend and present a bike to a child.

The Variety Cardiology Center at Chil-dren’s Hospital of Michigan provides the full spectrum of diagnosis and treatment for infants, children, and adolescents with all forms of heart disease.

Using state-of-the-art ultrasonic equip-ment, physicians are able to diagnose most forms of heart disease. To further in-vestigate the details of the condition, car-diologists at the Variety Cardiology Center utilize the most technologically advanced cardiac catheterization laboratory to ac-

quire the necessary information on which to base treatment. This lab, together with the Endocardiology Laboratory and exercise physiology equipment, allows for sensitive diagnoses, safer exami-nations, and detailed evaluations.

Variety has raised and contributed more than $1.75 million to pro-vide this equipment and support the programs that focus on help-ing to improve the lives of children. The Center offers inpatient and outpatient services to over 4,500 children each year.

The Variety 4H Horseback Riding Program is a therapeutic as well as recreational program for mentally and/or physically challenged people. Under the guidance and leadership of trained instructors, horseback riding provides an excellent form of physical and emotional therapy. The goal of the program is an improved self-image for each rider accomplished through reinforcing existing abilities and challenging riders to strive for greater achievements. Even the most reluctant

rider soon discovers that the program is fun.

Each session consists of riding instructions, exercise and games on horseback. Learning to ride is a real confidence builder, which becomes evident when the rider learns to manage the horse. Parents of riders are enthusiastic when describing the physical progress and improved self-confidence of their children in riding therapy.

Variety-FAR Conservatory of Thera-

peutic and Performing Arts is a pri-

vate non-profit organization that

provides creative arts therapy and

recreation services for children and

adults with mental, physical and/or

emotional impairments. Variety-FAR

also promotes public understanding of the abilities and potential of

persons who are mentally, emotionally or physically challenged.

Variety-FAR offers a wide range

of programs in music, art, dance,

ice skating, gardening, cooking,

adaptive swimming, bowling,

hockey, teen and adult clubs.

Private, semi-private and group

sessions are available. All ages,

from preschool to adult, and all

abilities are welcome to enroll.

Pine Lake’s Executive Chef Darnell Richardson

Chef Darnell began his career in 1986 when he enlisted in the United States Marine Corp and worked as a cook for 4 years. During that time he enrolled in classes at the famed Johnson and Wales Culinary School in Charleston, South Carolina.

Upon return to civilian life in 1990, Chef Darnell enrolled in the culinary pro-gram at Oakland Community College to complete his formal education. During that time he worked at Orchard Lake Country Club and rose to position of Sous Chef in 1996. The following year he accepted a position at the historic Detroit Athletic Club. One year later he was offered the position of Executive Chef at Pine Lake Country Club where he currently provides a long term vision for culi-nary excellence at Pine Lake and other events with which he is involved.

Chef Darnell Shares his Recipe For:Parsnip Ginger Bisque

Onion Diced One SmallMelted Butter 4 oz.Flour 4 oz.Chicken Stock 32 oz. Minced Ginger 1 ½ TbspWater ½ cup

Method

In saucepot sweat onions in melted butter until soft and translucentAdd flour to butter & onions and cook 3-5 minutes while stirringSlowly add chicken stock while stirring & cook over medium heat until soup begins to thicken. Reduce to simmerCombine ginger, water and white wine in a small saucepot and reduce to half. StrainAdd strained liquid (Ginger Reduction) and parsnips to simmering soupSimmer soup for 30 minutesAdd heavy cream, white pepper and saltPuree soup until smoothServe and enjoy! SERVES 4

Variety-FAR Conservatory – Providing therapy to more than 1500 physically and mentally challenged children through exposure to sports and the arts. A $750 donation will provide a scholarship to Variety-FAR.

Variety Cardiology Center – Working with Children’s Hospital of Michigan to literally mend the hearts of children in need. A $2,500 donation will sponsor one child for one year.

Variety Myoelectric Center – Providing limbs and therapy to children who have lost a limb. A $5,000 donation will sponsor a child for a year.
