Alcohol: 14.5 % Residual Sugar: 1.97 g/l Acidity: 4.95 g/l pH: 3.64 Harvest: Manual Time in bottle: 12 months Time in barrel: 14 months Type of barrel: French Oak 225 liters Production per hectare: 6.000 kg/ha. Total Production: 750 cases of 9 liters Vineyards: Finca Asti, own vineyards, located in the district of Las Paredes, San Rafael. This wine is made with Cabernet Sauvignon grapes from stony soils and special years. Its vine cultivars were created more than 40 years ago using the espalier system. A sprout and bunch thinning process is done manually so as to obtain a higher concentration of aromas and polyphenolic components. Besides, manual leaf removal tasks are carried out to allow for an adequate exposure of bunches to the sun rays. Fermentation Process: After harvest, bunch selection and destemming, a second grain selection is done before the grinding process, and finally, a partial grinding is made with rollers. Fermentation is carried out with selected yeasts at a controlled temperature not exceeding 28°C and it is completed within the following 3 weeks, extending maceration for one week. By means of the drawing off process the pomace is separated from the wine, and only the pressed liquid obtained from the free drainage is used. Then comes the malolactic fermentation: The wine is matured in French oak barrels of 225 liters for 18 months. Once that period is over, the enology staff meets and conducts intense tasting and comparison sessions to elaborate the final blend, after which, the wine is bottled and aged in our basement wine cellars at a temperature of 15° C. Tasting notes: Deep and intense red color. In the nose, the spicy character of black pepper and paprika notes is provided mainly by the Cabernet Sauvignon, which is the soul of this blend. Likewise, minty sensations of Cabernet Franc are perceived. Ripe fruit, smoke notes, and leather and chocolate as well, stand out thanks to its aging in oak barrels. Wide, with strong and elegant tannins that provide structure, volume and fullness in the mouth. Long lasting finish and fruity aftertaste, with chocolate and roasted coffee notes. A wine waiting to be drank now or else, to be enjoyed with the harmony and elegance signs that some years ahead will bring along.
