BACKGROUND

Overview : PB Valley Khao Yai Winery is one of the finest

winery in Thailand located in the Khao Yai area

at 300 to 380 meters above the sea level.

In 1989 : PB Valley Khao Yai Winery was established on

a large piece of land with the total area of 320 hectares. 

The Owner : Dr.Piya Bhirombhakdi (PB)

In 1994 : During the construction of the winery

Mr.Prayut Piangbunta was send to Germany under

Scholarship to study Viticulture and Oenology.

BACKGROUND

At the end of 1997 : He came back as a full time winemaker

and a winery manager when winery finished construct.

In 1998 : The first vintage of PB Valley began

under the supervision of Prayut Piengbunta.

They produced 3 varieties for 1998 vintage including

Shiraz, Chenin Blanc and Rose under “Khao Yai” lable .

In 1999 : the second vintage of PB Valley

was still under Khao Yai label but the quality was

much improved comparing to 1998 vintage.

BACKGROUNDIn 2000 vintage : the label was renamed to

“PB Khao Yai Reserve” and this year their first vintage,

Khao Yai Shiraz 1998 and Khao Yai Cheninblanc 1998

were selected to be serve at the royal gala dinner

for Chinese government members.

In 2002 : Khao Yai Reserve Shiraz 1999 was chosen

to be serve in flight on Thai Airways International

economic, business and royal silk first class.

In 2006 : another two product ranges

under Pirom as a premium and Sawasdee as a standard labels were

established.

that have a lot of potential in near by future.

Winery : Khaoyai Winery established in 1997 with

an indoor operational area of 3,000 square metres

and considered as the most technologically advanced

and the largest winery in South East Asia.

From best selected equipment and

machinery imported directly from Italy

and Germany with capability of producing 600,000 bottles

of wine per year make us the leader in Thai wine industries.

BACKGROUND

Overview : The serene atmosphere and

beautiful surrounding of Asoke valley, with its yellow

blossom flowers that are special to this region of

Khao Yai National Park. The Granmonte estate and

its vineyard at 350 meters above see level and

in an area of about 100 rai (approximately 40 acres).

Thailand was established by the owners , Mr. Visooth and

There are 3 main grape varieties that PB Valley wine

makers use to produce wine as following :

Appearance

Clarity: Very bright and pretty clear because it was fermented in only 12

months

Intensity of color: Not intense

Color: Very light gold color

Other observation: We have observed legs of wine which flew down very fast .

Nose

Intensity: Smell of wine is very intense of acidity

Aromas/bouquet: Apple, fruity, honey, grassy and vanilla

Dryness: Very dry

Acid: Very Strong of Acidity

WINE & FOOD PARING

Salmon Steak with Pineapple Sauce & White

wine The tastes of wine before paring with food are tannin, bitter and sour. The smell of wine is so strong.

When we pair white wine with food, all taste such as tannin, bitter and sour are softer than ever. The food can decrease strong smell of wine, while the wine can decrease fishy smell.

When we pair white wine with fruits such as watermelon : there is no sourness anymore but the sweetness come up instead sourness and pineapple increase the sourness of wine.

Tenderloin of Beef with PB brown onion

The tastes of wine before paring with food are bitter, tannin and sure. The smell of it seems like alcohol drinking but softer.

When I pair red wine with salad , the sourness of wine is still exist and salad can decrease the bitterness and tanninness.

When I pair red wine with my food, the bitterness is decreased by beef and I can taste the sweetness from red wine.

Flame Grilled Smoked Pork Chop with Homemade Prune Sauce & Red Wine

The tastes of wine before paring with food are bitter, tannin and sour. The smell of

wine is so strong. When I pair red wine with salad ,

the sourness of wine increase while other

tastes such as tannin, bitter are softer and I can feel the sweetness of wine when I eat with vegetable and some fruits in Salad. When I pair red wine with my

food, all tastes are softer . My food and red wine can go together very well.

TRIP SUMMARY & OUTCOME

We enjoyed experiencing the Western Table Manner at PB Valley.

This gave us the ideas of how to drink wine and how to pair different

kinds of food with different kinds of wine. We also enjoyed tasting

wine and it made us to know that how each grape variety can make

the wine has different characteristics such as color, smell, taste ,etc.

We obtained the knowledge of how to cultivate and harvest grapes

in our tropical country. We also got the ideas of which grape

varieties suit on Thai weather, soil, climate,etc. such as Shiraz,

Chenin Blance and Tempranillo can grow very well in Thailand.

TRIP SUMMARY & OUTCOME

We obtained very useful knowledge of wine making process of both white

wine and red wine at Khao Yai winery. This gave us the ideas that the different

wineries have different process of making wine which depends on the wine

maker.

We also experienced the technique and strategy of PB Valley and Granmonte

of how can they produce a good wine. And how can they make theirs wine to

become a popular wine among Thai people and internal level as they can

proved from many awards they got from international wine association.

After we have tasted the different kinds of wine at PB Valley and Granmonte ,

we have as idea about our favorited wine. Finally, this trip make us have

strong faith in some phrase about wine that “Wine is Arts and Science”.
