CROCK POT PORK  by Bill Campbellby Bill Campbellby Bill Campbellby Bill Campbell Winter meals are usually comfort food and using your crock pot is ideal for such a meal. It’s so convenient to prep your food thenight before, or early in the morning before work and come home to a delicious, ready-to-eat dinner. This particular recipe featurespork. All ingredients are cooked together for 8-10 hours, leaving a rich, tasty gravy with powerful flavors. It’s a beautiful thing! Take a pork loin roast, whichever size will fit your crock and season it with your choice of spices. I enjoy a good pork rub. Lemmopepper, garlic pepper, garlic salt, or just plain salt and pepper all work nicely. I’ve also used envelopes of Crockery PorkSeasonings, which make thick, flavorful gravy. In this recipe, which I used New Year’s Day, I seasoned the pork (2 medium-sizedpork loin roasts) with garlic salt and garlic pepper.

Line the bottom of your crock pot with assorted chopped veggies, for example carrots, onions and celery. You can use whicheveryou like. I would have added potatoes, but this tasty concoction was being served with brown rice, so no doubling on starches. Jusay the pork on top of the veggies, cover and set for slow, or 8-10 hours. You do not need to add any liquids. The pork will slice, ohred easily. It’s worth coming home to. Your main course will be ready by dinner time.

Wine Pairings: Pinot Noir or a Zinfandel will complement this meal nicely.

Bonus: There may be enough leftover pork for tacos, fajitas, or pulled-pork sandwiches. I had enough for all of the above.
