A Few of My Favorite ThingsOne of my favorite things about living here is how special the fall season is. Sure, back to school brings more downtown traffic and longer lines at our favorite stores and restaurants, but that’s nothing compared to the energy and electricity of an autumn day in Happy Valley. You might think it’s all about football--and certainly it’s a big part. The Nittany Nation is here in full force on football weekends, like an enormous family reunion, for tailgating, touring campus and town, and cheering on the Lions. But that’s only the beginning. Fall is the best time for outdoor activities,

like kayaking, biking, hiking and more. Fall also kicks off a new season for Center for the Performing Arts, bring-ing, big amazing shows to stages right here in our little town. Farmers’ markets continue with fall harvest fruits and veggies, and opportunities to stock up on homemade jellies, jams, pickles, and relishes. Breweries and wineries offer relaxing atmospheres and locally-made products. There’s so much to experience, in such a short time. Get out, have fun and enjoy it while it lasts!

There are some great new venues, events and activities in the area and in true Happyvalley.com fashion, we’ve put together some perfect combos for a Friday night or week-end day out (we just can’t help ourselves). Check it out!

For the FamilyThe Penn State Arboretum already featured more than 17,000 plants over 35 wandering acres, ponds with lily pads, fountains, and always-free admission. But this spring’s addition of their children’s garden has rendered it utterly magical. First, there’s the name, Childhood’s Gate, taken from Penn State’s Lewis Pattee’s poem: When we stood at childhood’s gate /Shapeless in the hands of fate/Thou didst mold us, dear old State/ Dear old State, dear old State. Then, there’s the garden itself. We went on a hot afternoon and the kids were thrilled with the limestone cave (where they were encouraged to create chalk cave drawings) and wading path they could follow around the garden, ankle deep in water. Everything is larger than life in this area of the arboretum, from the giant climb-able caterpillar to the flowerbeds and water pump where kids can help water flowers to their hearts’ delight. Aptly called a place to ‘wander and wonder,’ this destination is close and free, so you have time to just be and explore. When you’re done, treat the kids to one of the eateries on College Avenue, like Qdoba, where they can custom pick the toppings for their burrito (208 W. College Ave, 814-861-3288) or Rotelli with the best Italian food in town. I mean, how can you possibly go wrong with pizza? (www.Rotellistatecollege.com, 250 E. Calder Way, 814-238-846)

For the Grown-UpsBig Spring Distillery is big news! Any place whose website starts with a tall tale of a local statesman with a question-able past and shady diplomacy skill already has my full attention, but Big Spring Distillery has more than that: a boutique distillery located in a match factory building in the heart of Bellefonte that uses “Pennsylvania’s best tast-ing water” and the finest ingredients from local farmers to craft something truly remarkable. Open Thursday-Sunday, stop in for a taste or tour. Or both. (www.bigspringspirits.com, 198 Match Factory Place, Bellefonte; 814-353-4478). While you are in Bellefonte, grab a bite at The Gamble Mill. On Thursdays, enjoy out-of-this-world burgers for

only $5, and $3 pints. The other days are just as tasty. (gamblemill.com, 160 Dunlap Street Bellefonte; 814-355-7764)

For the AdventurersTussey Mountain has mastered summertime fun with their Go Karts, mini golf, WingFest, and family-friendly Mov-ies on the Mountain. Just one more reason to love it is the new zipline! You have to be between 80-260 pounds to ride, which eliminated my younger daredevils, but fun is to be had for the older tween and up! It’s a twinline, so get a friend to come with you and see Happy Valley as you’ve never seen it before! (www.tusseymountain.com, 301 Bear Mountain Rd., Boalsburg). When you’re done at Tussey, head over to Kelly’s in Boalsburg. Get steak or seafood, which they’re well known for, or keep with it casual with one of their signature burgers, gyros or Reubens enjoyed in their outdoor dining area.

For all the places you could go for your undergraduate education, maybe the best college for you is where you can make happy memories. College ranking sites (like http://colleges.findthebest.com/l/3741/Pennsylvania-State-University-PSU) will tell you Penn State is 37 out of 180 among liberal arts colleges, 93 out of 650 colleges, has a high graduation rate and so on. Penn State is a great and well respected school. So what are the “happy” reasons to choose Penn State, besides being one of the best schools for Big Ten football and Greek life? What matters most to some may not matter as much to others, but the bottom line is this: for the next four-plus years, the college you pick is going to be your first home away from home. How about choosing a school because it’s a place you want to live, come back to, and maybe even stay? Those of us who chose Penn State feel so lucky to have experienced life in Happy Valley that we wouldn’t hesitate to recommend Penn State to you. I asked Penn State alumnae Janet Mazur Cavano and M.A. Mulligan, who were my classmates in the journalism program in the School of Communications and co-writers on The Daily Collegian, how going to school in Happy Val-ley met and even exceeded their expectations. Keep in mind, we went to Penn State about 30 years ago, so we may be the same age as your parents. While a lot has changed in that time, the really important advantages to attending Penn State haven’t. Which is why we STILL are Penn State. Though we left it behind to pursue our careers, we’ve never altogether left it behind. Here are our 10 best reasons why Happy Valley is the place to be:1. It’s close to home for students from Pennsylvania As a townie, Penn State was home for me. Although I considered going out of state, I’m glad I stayed for the outstanding journalism program Penn State offers. Janet and M.A. came to University Park from branch campuses in Erie and Allentown, respectively.2. The people you see and the places you hang out be-come your second family

Despite being a large university, Penn State offers a multitude of opportunities to connect with like-minded students. For us, it was The Daily Collegian, which became our second home on campus. M.A. also found that camara-derie with her fellow residents at Jordan Hall. 3. Penn State is an academic utopia—so much to choose from!All three of us took classes that changed our view of the world, with professors who had a lasting influence on our skills. “It was a mind-expanding experience,” says Janet. “Hav-ing grown up in a depressed steel town near Pittsburgh, I am still astounded by the range of courses offered. “You want to learn outdoor living skills--there’s a phys. ed class that culminates in a weekend camping trip. You’re interested in foreign films -- no problem. If a course in Shakespeare is required for your major--you’ll be placed in a tiny seminar room with a renowned scholar leading you through the Riverside Shakespeare. You’ve never swam in

Such are the advantages of a large university-- the exposure to a range of ideas, philosophies, cultures and people. They really shaped my world view and formed who I am today.”

Just as the ball began to drop in Times Square, almost eerily in sync, so did the Bill O’Brien era for Dear Old State. After a brief push to remain within the con-fines of conformability (our nod to LJ) and a classic one-night stand with something called

the “Golden Era,” all of Nittany Nation suddenly found ourselves tracking a flight out of Nashville, Tenn. Through the eyes of a child, we watched with guarded heart as James Franklin give his first, official, “WE ARE” from the other side of the tarmac fence. The self-pro-claimed “Pennsylvania Kid with a Penn State Heart” hit the ground running faster than a speeding bullet. We saw him dance at the THON and crisscross the Mid-Atlantic shaking hands and kissing Penn State babies. He brought the team “selfie” front and center to State College. He paid homage and respect to a proud past and reminded us all, that WE ARE….Family! In short, the man raised the Penn State flag high, and “Dominate the State” became an instant battle cry. As the rest of us went about our daily winter grind, James Franklin spent the off season bringing back the “cool” to Happy Valley! All of which leads us to where we are today. Standing at the cusp of a new beginning...the FrankLion Era! Early preseason polls have pegged the 2014 Nittany Lions to finish anywhere from within the top 25 to outside of the top 50. In other words, no one truly knows what to expect. With a year of hard-nosed football under his belt, sophomore QB and reigning Big 10 Conference Freshman of the Year Christian Hackenberg sits at the threshold of stardom. It’s no stretch to say that Hack has all the tools to become one of the very best to ever don the classic, plain jersey that defines Penn State. The challenge will be to over-come the lack of depth along the O-line and to replace the production that Allen Robinson took with him to the NFL. In order combat and offset those concerns, new Offensive Coordinator John Donovan will have to earn his paycheck for sure. Lucky for him, the Nittany Lions have their own version of “The Four Horsemen,” the tight ends. “Outlaw”

Jesse James has been labeled a “freak” on the football field, and for all the right reasons. Couple him with Kyle Carter, and you have a one-two-punch that very few can rival in college football. As if that was not enough, Adam Brene-man came on strong, hauling in a touchdown in each of the final three games, and Brent Wilkerson is fully healthy after nagging injuries his first two years in State College. Some summer buzz was generated this summer when highly-touted freshman Mike Gesicki landed in Happy Val-ley. Word is, his strength and athleticism is already enough to warrant playing time. With “The Anchor” Donovan Smith entrenched as the only returning starter on the of-fensive line, and a hodgepodge of youth and inexperience to fill in the missing pieces, these four and possibly five tight ends will be leaned on heavily to keep the pressure off our young QB and give him plenty of options in the short passing game. Like Breneman, Geno Lewis came on strong toward the ends of last season. The sophomore wide receiver appears ready to take his game to the next level, as well as mentor a group of highly touted freshmen waiting in the wings. Running back continues to be a strength. The elusiveness of Bill Belton and the sheer power and guts of Zack Zwinack should be a force to be reckoned with. Akeel Lynch is patiently waiting in the wings and completes a backfield that has been commonly referred to as the “Three-Headed Monster.” On defense, the Nittany Lions seem poised to bounce back after a somewhat off year last season. Since the hire of James Franklin and Defensive Coordinator Bob Shoop, the word we have continued to hear is “aggressive”, and it has been welcomed by all with open arms. Sean “Coach Chaos” Spencer takes over for longtime D-line Coach Larry Johnson, and has experience and potential chomping at the bit. Austin Johnson is slated to take over in the middle with possible “X Factor” Anthony Zettel moving from end to tackle beside him. Deion Barnes is looking to reestablish his freshman dominance at one end with C.J. Olaniyan man-ning the other. At linebacker, Mike Hull takes over the mid-dle and has established himself as the unquestioned leader of the defense. Nyeem Wartman, Brandon Bell and Gary Wooten look to battle it out on the outside. True freshman Troy Reeder and Jason Cabinda will be looked upon to add depth to a thin group and both look ready to be thrown into the fire early on. The defensive backfield is loaded and

features four-year starter Adrian Amos at safety and Jordan Lucas as a shutdown corner. Both have been mentioned as possible candidates to move down to the “Star” linebacker spot to help offset the depth issue. Expect both to be a show of force this year! A welcome change that came along with the new staff was a complete shakeup to the special teams. Sam Ficken returns for one last hurrah and it’s been said he has benefit-ted from the “in your face” style that Franklin has imple-mented. Special Teams Coach Charles Huff has vowed to add speed to the coverage units. Look for freshman DeAn-dre Thompkins to make an immediate impact in the return game. All in all, there is a ton to feel optimistic about this season. The energy and excitement that Franklin and staff brought with them to Happy Valley has been a welcome and well-deserved change over the doom and gloom predic-tions that were forced upon us. Whether that translates to seven wins or 10, the first glimpse of light has begun to shimmer. Success this year truly depends upon the ability to build chemistry and bring all the fresh faces up to speed. Whether that begins in Dublin right away or takes a few games to develop, make no mistake, the 2014 Penn State Nittany Lions will be remembered for laying the founda-tion to a new era of success!

Eric was born in State College and has spent a lifetime calling Happy Valley his “home away from home”. His Penn State fan page, Nittany Nation, was started in January and is widely recognized for its level of fun and participation with the fans, alumni, and both past and present players of Penn State football.

Despite all the changes Penn State football has experi-enced over the past two years, the one constant has been the “fan experi-

ence,” which for many of us is characterized by the Blue Band’s signature Floating Lion, the ringing of the victory bell, a White Out crowd, swaying to the Alma Mater after a win with 107,000 of our closest friends in Beaver Stadium, and of course, tailgating! For seven Saturdays this fall, the once serene and pictur-esque pastures surrounding Beaver Stadium turn into the biggest family reunion the Commonwealth of Pennsylvania has ever experienced. The Penn State Family knows how to tailgate, and the traditions and atmosphere are #UNRI-VALED! Our tailgates are as diverse as our fan base, and our collec-tive game day experiences are engrained as treasured memo-ries of tailgates past and present. My first tailgating experiences date back to my days in elementary school, when on very early Saturday mornings, my dad, two uncles and I would pack a cooler and make the hallowed trek from Wilkes-Barre, Pa. to Happy Valley. As we pulled into the parking fields, my dad would always joke with the attendant about this being the parking for the Grange Fair, and we would set-up shop with a card table, some hoagies, and a few beers (and a soda or two for me). Our tailgates were simple, but as I write this I can almost taste the delicious hoagies we brought from Philadelphia Subs in Wilkes-Barre. As my siblings and I began our college careers at Penn State, our tailgates evolved and included my mom, who was no longer forced to drive carpool for soccer and baseball games. As we parked on the paved lot (a big upgrade from the grassy fields) just a stone’s throw from Beaver Stadium, we would fire up the grill for hamburgers and hot dogs and other typical tailgate fare. But it was still served on those same card tables now with blue and white tablecloths. For the past nine years or so, thanks to dear friends, we’ve upgraded to an RV for our weekly tailgates with all

the comforts of home in the middle of a gravel lot not too far from Medlar Field at Lubrano Park. We’ve elevated our menus, too! From made-to-order omelets before those early noon kickoffs to our annual Surf & Turf tailgate, our food selections surely have changed. We said farewell to some old friends and gained some new ones, but the opportunity to continue making memories with family, friends, and fellow Penn State fans remains constant. Under every pop-up tent and RV awning, tailgaters have a favorite go-to recipe that becomes a staple of their meal. For us, the recipe epitomizes the fall and comes from family friends, Bob and Pat Ehlers, of Gettysburg. Pat introduced us to this amazing and quick-to-prepare dessert several years ago, and it has become so popular at our tailgate that it appears on the table with the appetizers and is usually gone before dessert even starts.

Caramel Apple Dip1 container of whipped cream cheese1 container of Marzetti’s caramel dip (found near the produce aisle of your grocery store)2-3 Heath Bar candy bars (or several snack size bars), chopped into small piecesDirections: Spread the whipped cream cheese onto a plate. Slightly warm the caramel dip until pourable and spread caramel on top of the cream cheese. Top with Heath Bar pieces. (Note: buy the candy bars and chop them yourself. Some stores sell chopped Heath Bar pieces for baking, but those don’t have the rich chocolate outside found on the actual candy bar!) Serve this delicious Caramel Apple Dip with sliced apples and pears and cinnamon sugar pita chips. Another tip for tailgating: if you plan to slice the apples and pears before you leave home, throw the cut fruit into a Ziploc bag with a good squeeze of lemon juice. The citrus helps the apples and pears from oxidizing and turning brown.

This recipe is a crowd pleaser that once served will become a weekly fan request from your fellow tailgaters! If you share, you are sure to be hit with your tailgating neighbors (and it is so easy).

You already know that Happy Valley is a great place to live and visit all year long. From tailgating in the fall to the nationally-acclaimed Arts Fest in the summer, it has a true myriad of activi-ties to be enjoyed. National magazines have celebrated its stress-free, low-crime lifestyle and high quality of life. Where else can you visit a world-class, futuristic, nanotechnology laboratory and within a 20-minute drive be in the midst of Amish country where the Old Order Plain people live and work (not as tourist attractions but as farmers, cabinet makers, carpenters and more)? You love visiting, and now you’re wondering if this would be a great place to live and raise a family. Before you make that move, you’ll have many questions of course. You want to know about the quality of life includ-ing job opportunities, housing options, schools, health care, recreation, and more. The case for a move to Happy Valley. It all starts with a job. State College currently boasts an unemployment rate of 4.8 percent, the lowest in Penn-sylvania and far lower than the national number. It used to be said that State College is recession-proof with Penn State University as an economic anchor. Of-ten, Penn State research and technology is licensed, but that’s not the only path to success. Great ideas abound in the region and the expertise to get things off the ground exists. Many of Happy Val-ley’s businesses sell products worldwide, and Pennsylvania supports one of the strongest export offices in the nation. Where to live? Happy Valley’s housing market offers a full palette of choices, from million dollar signature

homes and farmettes to units available for $100,000 or less. Chuck Gambone, Broker at Gambone, Songer & As-sociates Realty, notes that the real local estate market is on a gentle upswing. “Prices are rising slowly, and the upper end market -- $500,000 and up-- has been strong since January of this year,” he said. He added that this region did not suffer the great losses in equity that were experienced in many other markets. “Lots of things go into a housing decision,” Gambone said. “Good schools, low crime rate, lots of activities for young people and adults, and more. We’ve got all those things. What could be better? It’s a big, small town, [and] a great place to live, raise a family and grow a business.” Will my kid get a quality education? top universities. The region is also served with many charter schools, a Catholic grade school and St. Joseph’s Academy high school, and the Delta Program for nontraditional students. The healthcare industry is a major plus for the region, served by Mount Medical Center and Geisinger Health System. In fact, Centre County has been named the third healthiest county in Pennsylvania according to a University of Wisconsin study. Mount Nittany Medi-cal Center has experienced remarkable growth in the past few years, includ-ing the building a new emergency and trauma wing and the new Shaner Cancer Center. The system is now comprised of 15 locations throughout the area, including its new neuroscience facility. The Geisinger Medical System, headquartered in Danville, also offers top-quality services in Centre County. Geisinger is a medical center that has been lauded nation-ally for its business model and high quality of service. Lincoln Caverns, Penn’s Cave and Indian Caverns are per-fect autumn destinations. What’s to see at these area caves? Read on! Lincoln Caverns and Whisper Rocks were discovered in 1930 and 1941 and have been enrapturing visitors ever since. Stalactites pour from the ceiling, but don’t worry, they aren’t growing fast enough to hurt you. There is just so much to do here, including panning for gems. There are special events going on all the time. Autumn is particularly spooky and fun with the Ghosts and Goblins Haunted House, Trail and Hayride hap-pening weekends in October. December will see a visit from a bearded guy from up north, Santa Claus! Come to Huntingdon and explore these caverns named for our na-tion’s 16th president. Penn’s Cave and Wildlife Park is underground and all-water. To answer your question, yes, it is exactly as cool as it sounds. There are several touring options, so you can see it many different ways. Tour the cave in a boat and see natural

formations that look eerily similar to various landmarks of national and international significance. You’ll also ride out onto Lake Nitanee, namesake of the Nittany lion. Wear a jacket, as the cave is always 52 degrees. You can also learn about Pennsylvania flora and fauna on the Farm, Nature & Wildlife Tour, and test your skills in the Miner’s Maze, a labyrinth that will challenge you to find a way out! The Cave Rock Mountain Tour takes you from the cave rock to the top of the mountain and over 1,600 acres of beautiful land. They don’t call it Nature’s Rollercoaster for nothing. The Cave Café has tasty grub, so be sure to stop in. Indian Caverns overlooks the Spruce Creek, a wonder-ful source for brown and rainbow trout. The Wertz family has owned this fun place for 85 years. The cave, which is the largest limestone cavern in the state, is located beneath a foothill of Tussey Mountain. The tour will take you on a mile of amazing scenery. There are plenty of options for underground adventure in Happy Valley, you truly can’t go wrong.

Labor Day Weekend starts a little bit early in Happy Valley. That’s because it’s important to celebrate the end of a great summer the right way. It all starts on Thursday, August 28 with the WingFest Finals at Tussey Moun-tain starting at 5:30 p.m.. You’ll be perched on the mountainside to help determine who has the best wing sauce in the area. There will be live music, a setting sun, plenty of wings, other good food and beer. Just be careful, things could get rather messy. Friday night, August 29, Mount Nittany Winery will host their End of Summer Gala at 6 p.m., complete with a jazz quartet to set the mood for the evening. Saturday, August 30 kicks off the 2014 football season bright and early, with an 8:30 a.m. ET game time for the Croke Park Classic. Watch the game in your jammies at home with a cup of coffee in hand, or head to one of the many local bars and restaurants that will be serving up plenty of early-morning specials for this unique kickoff time. Stay tuned to HappyValley.com for a list of estab-lishments and specials. Sunday, August 31 starts early with the Mt. Nittany Marathon. The 26.2 mile race meanders around the beautiful scenery of the mountain. Those who do well enough will qualify for the 2015 Boston Marathon. Run-ners will enjoy the loading up on carbs, compliments of local restaurants, the night before at the Pasta Dinner. The day moves right along, so you’ll have to stay on your toes (but if you’re in the marathon you might be too tired, no need to apologize.) Crickfest 2014 is a fun, family event celebrating the Penn’s Creek Watershed at Coburn Park

from 12-6 p.m. In addition to the food, silent auction, and new informa-tion, there’s a petting zoo. with the Aurigids Meteor Shower, which you can watch at Black Moshannon State Park. This small shower often produces a plethora of meteors, so come prepared to be wowed. Labor Day on Monday, September 1 provides several great options for fun, too. Celebrate the end of summer at Lakemont Park. There will be free ride and slide passes for everyone all day. If that’s not a fantastic deal, I don’t know what is. Del Grosso’s Amusement Park is hav-ing their Labor Day and Customer Appreciation Day for $5.99 all day long. There will be plenty of fun and enter-tainment. At those prices, you can bring the whole family to both on the same day! In addition to the great parks, you can get a little time with nature. There is a Labor Day Float at Bald Eagle State Park that will take you out on a kayak. Experts on natural and cultural history of the area will join the group, so it will not only be fun, but infor-mative. Labor Day Weekend in Happy Valley has plenty for you to do between the picnics.
