This is a great way tostart the new year, andyes, there are plenty ofideas to increase nutri-ents and reduce fat andcalories in the foods youprepare at home. Beloware some favorites, pri-marily from Ohio StateUniversity Extension (see“Modifying a Recipe to beHealthier” at http://ohi-oline.osu.edu and eXten-
sion (see “Recipe Substi-tutions” at www.exten-sion.org
To reduce fat:Use evaporated skim
milk instead of cream.Use 1/4 cup egg sub-
stitute or two egg whitesin place of a whole egg.
In quick breads,muffins, brownies orcakes, substitute half orall of the oil, butter orother shortening withunsweetened apple-sauce, mashed bananasor fruit puree. Note: Mak-
ing this substitution willincrease carbohydratesin the end product —something to be aware ofif you have diabetes.
Use low-fat or nonfatyogurt in place of sourcream.
Use low-fat cottagecheese pureed untilsmooth or low-fat creamcheese in place of full-fatcream cheese.
Try lower-fat or nonfatversions of a variety offoods, especially milk,cheese, cream cheese,
mayonnaise, salad dress-ing and margarine.
Use an air popper forpopcorn.
To increase fiber:Replace half the all-
purpose flour in bakedgoods with whole-wheatflour.
Add oats or finelyground fiber-rich non-sweetened cereal to re-place some or all of thebread crumbs in arecipe, or to the crust orbatter when makingdesserts.
Add beans or barley tosoups, stews andcasseroles.
Add sauteed vegetables— cherry tomatoes,onions, spinach or zuc-chini, for example — toscrambled eggs.
Don’t peel apples, cu-cumbers, zucchini or po-tatoes before eating themor using them in recipes.
Choose high-fiber al-ternatives for cereal,bread and pasta — lookat the Nutrition Facts la-bels.
To increase other nu-trients:
Add cooked andmashed cauliflower tomashed potatoes, or addcooked chopped cauli-flower to macaroni andcheese.
Add chopped spinachor zucchini to pasta
sauce, soups andcasseroles.
For salads, choose ro-maine, endive or otherdark-green leafy lettuceinstead of iceberg lettuce,and include babyspinach leaves.
Increase calcium byadding nonfat milk or drymilk to a casserole’scream sauce or to creamsoups.
Increase antioxidantsby sprinkling hot sauceon foods. The capsaicinin it shows promise inanti-cancer studies,though it may take quitea bit to have a dis-cernible effect.

Snowmobiling en-hances winter tourism.There are over 225,000miles of snowmobile trailsin North America, manyof which interconnect toform a vast network, al-lowing snowmobilers totravel to other towns,states and provinces.Other trails lead to winterdestinations, festivalsand resorts. The markedand groomed trails pro-vide the highest level ofriding enjoyment for resi-dents and tourists alike.
Snowmobilers buildand maintain their trails.North America’s trail sys-tem is maintained by thesnowmobilers themselvesthrough area clubs andcouncils (groups ofclubs). Organized snow-mobilers see a need for atrail, plan its creation,and take on the responsi-bility and the financial
obligation to maintainthem during the year.
Snowmobilers are car-ing neighbors. Snowmo-bilers are involved withcharities throughout theU.S. and Canada. The In-ternational SnowmobileCouncil reported raisingmore than $3 million forcharity last seasonthrough state and provin-cial clubs.
The average snowmo-biler is 44 years old, mar-ried, with an annualhousehold income of$68,000. Eighty percentof snowmobilers use theirsled for trail riding andtouring. Safety is a toppriority for snowmobilers.The snowmobile commu-nity is continually work-ing to highlight safetymessages and enhancesafety education efforts.The Safe Riders! Youmake snowmobiling safe

few home and gardenplaces and nail downwhat you’ll want.
De-clutter. For manyhomeowners, getting ridof excess clutter is themost time-consuming ofall home-sale activities.Start by going throughclosets and toss clothesyou haven’t worn in threeyears, and also reorgan-ize kitchen cabinets.

With the New Year already a few days old, I couldn’t help but wonder what will
the future bring? Our president seems to be winning the war about collecting
more taxes, especially from you and me, while hitting the super rich with a big
hike. He stated he will not cut back on spending, in fact, wants to spend more.
Now I know he is a pretty clever politician, but how can we get back on our feet
by borrowing money so that we can give away more than we have? Do we have a
president or a magician?
I often wonder what it will be like in Heaven — while I believe that it will be
wonderful, I have to admit I’m in no hurry to find out. Besides, my wife promised
she is going to bake more apple pies.
I believe J.F. Kennedy was the last president to wear a tall beaver stovepipe hat
when he was sworn in. Is it possible that he was the last, hoping to pull a rabbit
out of the tall hat?
This is a tale about a lovely, yet famous, White House bathtub. In a 1917
column, the famous humorist and writer H.L. Mencken wrote that Millard
Fillmore, a native of Moravia, while President of the United States, had the first
bathtub installed in the White House. This was a hoax. However, the natives of
Moravia assumed the bathtub story was true and introduced wheeled bathtub
races as part of Fillmore Days in his birthplace village.
The President Fillmore bathtub blarney was believed by the good residents of
Moravia and to this day wheeled bathtub races are held each year even though
years later, Mencken fessed up to his line of blarney.
Now more than 160 years after Millard Fillmore’s stay in the White House, a
new line of White House bathroom blarney may be given birth.
It would be easy to columnize our president; President Barack Obama,
suggesting he almost never took a bath in the White House. The question
properly exaggerated could be, “How could he? He is almost never in Washington
long enough to need one.” I believe he is now in Hawaii.
Who says that blarney is wrong? It made both Millard Fillmore famous and
loved. It also added greatly to H.L. Mencken fame and Moravia, New York, is now
in the history books. I believe H.L. Mencken’s column did not appear until 47 years
after the death of President Millard Fillmore. Now I ask you, is that an example
of freedom of the press at its meaningful best? Mencken came up with real
bathtub blarney and the folks of Moravia, rather than taking a bathtub bath, put
wheels on it and go for a bathtub ride.
The old saying, “Experience is the best teacher!” — does this apply to slow learners?
Since the days of President Franklin Delano Roosevelt, nearly every president
has beat his predecessor by spending more right up to and including Mr. Obama.
Now here is the catch. The United States of America was quite possibly the
most successful industrialized nation in the world. Our factories manufactured
clothing, shoes, machinery, household appliances, autos, trucks, airplanes — you
name it — and sold, not only to our own citizens but to consumers throughout
the world.
Now because it costs so much to manufacture here in this country due to
taxes and constantly growing wages, consumers here in this country and the
remainder of the world can no longer afford American-made anything. We raise
wages, then have to charge more over and over again each year.
We have a new policy — expand the number of government employees. We, the
free-enterprise workers, are taxed for, and when those taxes do not cover,
borrow money from China.
I realize we — you and me — are just down-to-earth, hard-working,
tax-paying, American citizens and if we swallow the idea of constantly growing
our government and raising wages, are we not also slow learners?
Last year our government officials and financial advisers suggested we should
learn to tighten our belts, which was a good thing, because what’s happening now
is enough to scare our pants off.
The best that I can recall, it was during the spring or summer of 1947 or possibly
1946, when I overheard my mother and father discussing the possibility of leaving
Middlefield and moving to Cooperstown. Cooperstown was about seven miles away
on the other side of Murphy Hill. That hill was the cause of the move discussion.
During the winter of 1947, I believe in January, Dad was driving home during a
snow blizzard from his place of employment at Bassett Hospital in Cooperstown,
and plowed into a huge snow bank near the top of Murphy Hill. Heavy snow was
falling and the wind made visibility nearly impossible. The 1937 Chevy he was
driving was hopelessly buried with no chance of being dug out. After trying for
over one half hour to dig the snow away from the car, he knew it was useless.
He started walking through the waist-high drifts down the Cooperstown side
of the hill. After a dreadful near one hour, half-crawling and digging his way
through the drifts, he arrived at the Holiday farm which was part way down the
hill. The Holiday’s had grown accustomed to blizzard weather on Murphy Hill,
invited Dad in to their home and gave him a hot dinner and a warm bed to sleep
in. Holiday’s had a telephone and were able to contact Charlie Hearn or Lee
Roberts at the Hearn Store and asked them to contact my mother to say that
Dad was safe in their home and would surely make it back home to Middlefield
the next day.
I believe it was Lynn Wilson, the town of Middlefield Road Supervisor, driving
their huge Walter’s snow fighter snow plow, who found Dad’s car. With his
wingman, he shoveled the snow away from Dad’s car and turned it around and
drove it back down the hill to Holiday’s. Several times Wilson said they totally
expected to find Dad’s body buried in the snow and hoped the huge Big Walter’s
snowplow had not already covered him. Dad spent nearly a week homebound
suffering from hypothermia.
Winter-blizzard stories like this one were common. The weather conditions have
changed in my lifetime. Though we still have some snow and below-freezing
temperatures, seldom do we learn of a snow created disaster except for auto
pile-ups.
When I was a boy, our dairy farm neighbors, on a regular basis had to deliver
cans of milk down to the main plowed road in the village to meet the milk truck
with a team of large work horses hitched to a bobsled with runners, not wheels.
The following is proof that weather is not the only thing that changes. A short-
haired girl said to a long-haired boy on their second car date, “Of course Daddy
doesn’t mind our being alone together. He thinks you are a girl.”
According to the Holy Bible, there is something that never changes. Read John
3 verse 16. I quote, “For God so loved the world that he gave his only begotten
son.”
Turn to Matthew, Mark, Luke, and then John and read
all of John 3:16 and the following verses. I’m sure they will
give you something to study.
Remember to speak well of and to wave or say hello to
your neighbors. God placed all of us near each other for
a reason.
