What brought you to Miraval?I’ve heard many stories from coworkers about twists of fate or an unexpected experience that led them

Andrew Wolf, M.S. Ed.With a master’s degree from UT–Austin, Andrew is an exercise physiologist focused on exercise perfor-mance enhancement as well as diabetes treatment and prevention through enhanced metabolic function.

Why is Miraval a great fit for you?I love what I do. I get to help people daily — peo-ple that desire a piece of my expertise. I got into the

field of exercise physiology because I liked the notion of helping people that want to be helped. My clients want to make a change. They want to learn the science, not just follow the trends.

What is the most popular session or work-shop you teach?Making Weight Loss a Reality. This lecture gets into the science of weight loss — and it’s not really up for debate! Enough of the “exer-tainment.” Enough of trends. I’m not selling you anything. Rather, we focus on setting priorities. Do more of this; do less of that. Then, we can dive into the personal details in a one-on-one session.

Tell us more about the connection between exercise and mindfulness.The mindful part of exercise is stopping to consider “What’s my motivation?” What do you need to do when you aren’t at Miraval to make a habit that actually sticks this time? Almost the opposite of a New Year’s resolution, we need to make mindful, careful decisions so we can engineer an exercise plan that won’t seem like such a dramatic change.

What simple at-home change can make the biggest impact?Let’s think about your horsepower. Most young people can devote a lot of time to low-quality

fitness. Adults, though, patently do not have the time. They aren’t going to go outside and play soccer three times a week. They need a concrete, efficient plan for how they can make their left ventricle pump as much blood as possible in 30 or 45 minutes. It’s simple, but so important.

What have you learned from your time at Miraval?It’s hard to make life-changing decisions when you’re caught up in the daily grind. The 30,000-foot perspective here makes all the difference. ■

Angela Onsgard, R.D.A registered dietitian who specializes in weight loss, food allergies, prenatal nutrition, diabetes, cardiac rehabilitation, kidney disease, sports nutrition, and general healthy eating, Angela is passionate about holistic, integrative, and functional nutrition.

to Miraval. My twist of fate came one morning when a coworker at my previous job asked me if there were many dietitian job openings in Arizona. I went online to take a look and the posting for Miraval was the first one I saw. Working at a place of healing where the clients have a thirst for knowledge and a desire to be well has always been my dream.

What makes you stay? I get a deep sense of satisfaction from knowing that I’m serving my soul mission by providing the tools that will help people to heal themselves. When guests say that learning to eat mindfully has changed their life or that the popular Anti-Inflamma-tory Kitchen workshop helped them to see healthy eating as a method of self-love rather than a burdensome task, I know that this is what I was meant to do and Miraval is where I’m meant to be.

Tell us more about the connection between nutrition and mindfulness.So many people see eating as a task that we need to check off of our to-do list, rather than a joyful experience that we should be fully present for. The Mindful Eating experience teaches us how to let go of preconceived notions when it comes to food and encourages us to eat with intention, attention, and gratitude.

What simple at-home change can make the biggest impact on personal nutrition?Planning ahead! Pick a day of the week to do your shopping and prepping so that you don’t have to scramble to feed yourself during the busy week.

What life lesson have you learned from your time at Miraval?I’ve learned that happiness is a state of mind — our thoughts only have as much power as we choose to give them. If we make the choice to be grateful each day upon rising and to see challenges as a spring board for personal growth, our lives will be filled with joy. I encourage guests to apply what they’ve learned at Miraval to their lives at home. There are no quick fixes. We need to take the time for self-care in order to find balance in our lives. ■

furls as you immerse yourself. It wraps itself around you and allows you to unwind — physically and men-tally — with the unique strength, grace, and softness of silk suspended from the sky (or in this case, the ceiling). Don’t worry, this isn’t acrobatics — the thera-pist uses the material to aid in balance and to better distribute the application of pressure.

I have experienced countless massages on a table, my tired body soothed and nurtured and happy to lie still while expert hands worked their magic. At times I have relaxed so much I have fallen asleep. But there’s no sleeping here. This is a different path to bliss.

Instead of lying on a table, you recline on a large mat with cushions on the floor. Hanging on all sides are beautiful, blue silks. You are fully clothed. At times, your therapist will (gently) walk on you, pull an arm or leg in one direction or another, or ask you to breathe in a certain way.

Nâga invites you to leave the World Out There and enter the state of being that is Miraval. The massage is best experienced after a heavy workout or a big hike.

This kind of treatment needs to settle into your body. Do not commit to anything more strenuous than eat-ing or sleeping afterward.

Thai massage departs from traditional bodywork by asking you to remain present, to actively partici-pate and engage in the therapeutic work. “This is a time to let the body open up,” explains Peter, “to re-spond and learn instead of passively receiving. Togeth-er we create a collaborative, intuitive dance of sorts. “

The first time I tried Nâga, I found myself needing to close my eyes — not out of fatigue or sleepiness, but because the mind-body connection was so intense. Somehow I found myself co-creating an intimacy of limb and thought, as if my body had known this secret language of communication — of saying “yes, it’s OK to

move my leg that way or stretch my arm behind my head this way” — but had not found fellow speakers to converse with until this moment.

This strange, silent communion was unexpected, yet felt protective and nurturing. In that same mo-ment, I could feel my frame morph and lengthen, like silken strands being gently and expertly reeled out of their stiff cocoon beginnings.

Afterward, I shared my observa-tion with Melanie that she must have a strong sense of empathy to do this kind of work. Her response is a nod to the Thai people, whose

➤ culture centers on Metta, an attitude of loving kindness and compassion toward others, or loving without clinging. “It is ingrained in their culture in a way that isn’t always empha-sized or encouraged in ours. It is a concept of giving and also receiving that is essential to learning, helping, and healing for both the client and the practitioner.”

The Nâga is the snake that delivers benevolence, never venom. It is a symbol of a treatment at this spa and also pays homage to the organic nature of our states of being, to our capability for change and cre-ative exploration. It reaches beyond the idea of trans-formation and stretches wider. You can be the cobra, invigorated in a heightened state of energy — and the monk, tranquil, mindful, and meditative — both at the same time.

This Nâga may not, as some myths suggest, carry the elixir of life. But Nâga at Miraval can stretch time and spin the stars of our own personal skies. “Rarely do we take time to reflect,” begins Tim. So Pam and Tim start each session by ask-ing circle members to think about something they want to release and something they want to gain. Working around the circle, each participant gives an honest — and sometimes tough — answer. Then, par-ticipants are given neck and knee floatation devices to enable them to lie on top of the water.

A bowl is placed on participants’ chests, and then the sound and vibration begins. Pam and Tim move from person to person, playing different bowls while the sounds radiate. “If seeing is believing, how can your eyes trigger your deepest motivation?” asks Leigh Weinraub, founder of Mind in Motion. “How would your life change if you could physically look down every day at a single word that prompted an emotional shift?”

Mirror MirrorITTING DOWN WITH ANNE Parker, wellness counselor at Miraval, is

learning how to move within. Essential parts of our heads and hearts are stealthy — crouching out of

reach, obscured by the stuff of life. Anne is an expert at finding those hidden pieces and coaxing them out to stretch. They need the workout as much as our muscles do, perhaps more. “Focusing on what is,” Anne says with a pause, “empowers us to act.”

My initial response is, “Yes, but what if I don’t know what ‘is’ is or how to find the parts that need action?”

quieting their constant chatter. She peppers the conversation with references ranging from Jung to Yoda, countering my tenuous, “OK, I’ll try to do that,” with a gentle, “There is no try, just do.” No, she’s not telling me to lift an X-Wing out of a swamp. She is reminding me to see mindfulness as action, not just a concept. To make choices about where and how to focus our minds — how we “do” or approach the challenges we face.

In our session called Mirror of the Soul, I pick from a range of colors and shapes at a table. Anne asks me to elaborate on a color I don’t like. Instead of accessing my graduate-school vocabulary, I blurt out, “Because it’s yucky.” She smiles. There is humor, laughter here. And the realization that I am reaching into my gut — something we are told to suppress most of the time. This feels silly and serious at the same time.

A new way to look at old things.There is a wall of action figures and dolls that

would make any eight year old squeal with delight. She even has a sandbox. This is not the therapy office. It is a space of discovery, a place to look through new lenses. A route out of my head, into my unconscious, into my feelings. But — hold on, we didn’t talk about my mother, my children, my recent intense grief. No plumbing of personal details, just that this shape made me squirm and that color was yucky and this one makes me feel soft and sleepy or excited or like Wonder Woman or ET.

Anne, always grounded, offers empathic interpre-tation and practical investigation.

All of this means something. She even gives me a map to take

home of my choices and possible patterns they reveal — a blueprint of my psyche and where it is right

now. Not a prediction for the future or a judgment of my

past, just a new way to decode my own nested messages.

We both notice the absence of red in my summary. At first I feel relieved — doesn’t this mean I am not hanging onto anger? Isn’t it all about letting go? Anne counters that red is also the pilot-light of life, the color of excitement, passion, and adventure. She suggests I

let it be, instead. “It’s more practical than letting go,” she points out. “People pressure themselves to let go in the hope that the thing that is bothering them will disappear.” In other words, we need to see things (even if we don’t like them) as they are before we can relate to them in a way that is more congruent with how we want to live.

After I saw Anne, I had the same kind of shift — subtle but still profound — that I had when a brilliant interior decorator transformed my home office. But this time it was inside me. All my stuff was still there, just redesigned to shift it from a place of eternal distraction to a center of discovery. It became a place I

wanted to explore, even though the work and challenges remained the same.

I began to notice the colors of my life in everything from the mittens I wore throwing snowballs with my kids to the lipstick I picked at the makeup counter. Anne helped me see that the pilot-light keeps us vibrant and vital. It is teaching my face how to move toward a genuine smile and that fun is just as important as the fire keeping the soup warm on the stove. ■

Earning a Masters in psychology from Northwestern, Leigh then built a thriving, innovative private practice. Its foundation: pounding the pavement in walk-and-talk therapy. wine pairing? Would dessert be too indulgent? Thankfully the Cactus Flower isn’t your average

restaurant. And this certainly isn’t an average meal. I’m eating in Miraval’s airy and comfortable main din-ing room at the peak of dinnertime, and I’m doing my best to juggle a pen and fork as plate after plate of Miraval’s freshest fare graces my table. It’s a savory and sweet feast, for certain. But what’s intriguing me most is how far it is from the “spa cuisine” I anticipated.

Here, three meals a day — and plenty of bites in between — are flavorful and filling, a little bit daring, and all around delicious. Sourcing is important at Miraval, and ingredients include humanely raised meats, wild or sustainably farmed fish, and fresh, local produce. Some tried-and-true staples show up regular-ly — Huevos Rancheros at breakfast, Vegetarian Chili

at lunch, Carne Asada Tacos at dinner. But newer menu selections might best be described as fusion food, integrating Asian and Mediterranean flavors into the signature Southwestern-French cuisine.

Where the Garden GrowsChallenging the as-sumption that spa food is small and flavorless,

Miraval’s culinary team shows guests that

healthy food is actually more flavorful as natural fla-

vors can stand out when they’re not masked by unnecessary fats.

Fortunately, many of those natural flavors grow just down the road. For the past year, Miraval’s

kitchen staff has worked directly with farmer Richard Starkey, whose garden is five minutes from the resort. All of Miraval’s eggs and a bulk of its produce come from Richard, who picks at 5 a.m. and delivers straight to the kitchen’s back dock.

In a ten-gallon hat, over-alls, and a tie, Richard makes you smile. And once he opens his mouth, there’s no ques-tion he knows his stuff. Re-tired from 43 years on the railroad and 18 years as an appraiser, Richard hails from an Oklahoma farming family. Boasting 2.5 all-natural acres of vegetables, 150 fruit

A blended oil is used regularly in the Miraval kitchen, and called for in many of its cookbook recipes. Combine ¾ cup of canola oil with ¼ cup of extra-virgin olive oil, and transfer to a mister or spray bottle. This allows you to dispense small amounts — cutting down on unnecessary fats. The canola can withstand high cooking tempera-tures, and the olive oil adds flavor.

4 oz. cured wild salmon½ slice multigrain bread, cut into quarter- sized rounds4 oz. Neufchatel cream cheese2 tbsp. fresh orange zest¼ c. Agave Thyme Vinaigrette½ tsp. extra-virgin olive oilThinly slice cured salmon. Overlap two or more slices, and then roll loosely to resemble a rosebud. Refrigerate until needed. Toss multigrain bread rounds lightly in olive oil, then place on a baking sheet and bake in 375° F oven until crisp, about 4 to 6 minutes. Remove from oven and allow to cool. In a small food processor, combine Neufchatel cheese and orange zest. Spoon 1 tablespoon of Agave-Thyme Vinaigrette per plate. Spread each crostini with a small amount of citrus cream cheese, and place on the plate. Top the crostini with a salmon rose. Makes 4 servings.

¼ c. rice vinegar1 lemon, juiced, about 2 tablespoons1 tbsp. Dijon mustard½ c. agave nectar⅛ tsp. cayenne¼ c. extra-virgin olive oil1 tbsp. fresh thyme leaves, stripped off stemsPlace all ingredients except olive oil and fresh thyme in blender. Blend to completely mix, then drizzle oil into dressing on low speed until fully emulsified. Stir in thyme leaves, and refrigerate until ready to serve.

tate to say which Miraval memory most stands out. It was her fifth trip to Tucson, and she had a

group of 17 people in tow. Unbeknownst to Jennifer, some of her entourage signed her up for the Quan-tum Leap, a 25-foot telephone pole climb and jump. Absolutely terrified, she considered backing out. But when the time came for the challenge, she knew her group was counting on her.

Soon it was her turn, and with a crowd cheering for her below, Jennifer started shakily climbing the pole. Reaching the top, she put one foot on the silver plate and completely froze. Panicked and ready to quit, she yelled down to her instructor, “I can’t get the other foot up.” Not letting her off the hook, he re-plied, “How disappointed will you be if you don’t?”

With that surge of encouragement, she stood. “And then my entire life flashed in front of my eyes. Everything I used to be told — that I was stupid, fat, not talented — it all came flooding in and I found myself sobbing and sobbing.”

Overcome with emotion, Jennifer turned around, saw the Santa Cantalina Mountains, and gasped at the impact. “I thought, ‘I have come home. Not only am I going to change my life, this is where I’m go-ing to change other peoples’ lives too.’”

And she certainly has. Following her Quantum Leap, Jennifer went back to school and earned a master’s degree in spiritual psychology. She is now a Soul-Centered Life Coach who leads annual group trips to Miraval for guests ranging in age from 18 to 90. “It’s lovely to start young and love your-self, and you never stop learning and growing 90 years and beyond,” she says.

Jennifer’s groups include both individuals and pairs. “Solo journeys are important because if we don’t set aside time at different life points to get in touch with who we are, we can easily forget,” she says. “Likewise, traveling with mothers, siblings, sig-nificant others, or friends allows you to hone in on each others’ real authentic selves — that self that’s hard to tap into in the hectic swirl of home life.”

In her decades as a travel agent, Jennifer — known as “The Spa Goddess” — has frequented top resorts worldwide. And yet it’s Miraval that always brings her back. “The magic starts when the gate opens.
